Foodie Tuesday: Pork Chops Go with Everything

There might not be any ‘universal donor‘ food anywhere, the sort of food that’s perfect with all other things and at all times, but if you’re a pork eater, it’s mighty close. Seasoned pork becomes, in turn, seasoning when it’s great bacon, pancetta, guanciale, and that sort of thing. Because it has a very mild flavor on its own, pork takes on flavors of all kinds readily. It’s a culinary chameleon, becoming subtle, spicy, bold, sweet or savory; takes readily to being ground, sliced, shredded; blends with other meats or fruits or vegetables, and once prepared, is delicious cold or hot. Large numbers and quantities of flavoring agents make pork delicious, but it’s pretty grand with very little added as well.

photoSo there’s this dinner, then, where thick pork chops, though lean and not heavily flavored, become the centerpiece of the meal. They’re cooked simply, sous vide, with butter and salt and pepper, and seared at the last. When I cut open the sous vide packets to pat dry and sear the chops, I collected the juices in a pitcher, covered it and microwaved it to cook and thicken them, then blended them with a spoonful of [Kewpie brand] wasabi mayonnaise to make a warm sauce for serving with the pork. Some oven roasted wedges of Russet potatoes with a hint of coconut oil and salt sopped up the sauce that spilled over from the chops. Coleslaw being a consistent favorite in our house (as you’ve undoubtedly figured out long since if you visit here at all often), there was some in this dinner, garnished with black sesame seeds for a little visual pizzazz.

photoFor additional sides, there was a fruit compote of sliced and peeled apples, canned-in-juice peach slices, a little butter, honey and cinnamon and a pinch each of ground cardamom and cloves, and a tiny salad for each diner of avocado mash with lemon, cumin, lemon zested salt and a little bit of butter, each hearty-spoonful-sized helping topped with a small tomato and a dainty flower. Between these, there was a bit of piquancy and juice, color and textural variety so that all of them helped to keep the chops from seeming dull or predictable.

photoDessert couldn’t have been much simpler. Cream, whipped until Chantilly-soft with a touch of almond extract and then blended with an equal amount of lemon curd (I had some ready-made curd in the refrigerator) was served as a lemony mousse topped with a couple of small pieces of home-candied peel and a handful of toasted sweetened coconut. Really heady stuff. The end.

Foodie Tuesday: Fork It Over

photoThe stick-up artist and the greedy eater alike may demand that someone should ‘fork it over‘ or relinquish the object (monetary or comestible) of affection, and that, at speed. But besides cramming edibles into one’s mouth, the fork can serve a number of other useful purposes in the kitchen and at table. Not least of these commendable actions is the release of air. I shall leave it to your imaginations to determine whether some excessively greedy fressers mightn’t do well to have the fork impale them directly and thereby release some of the pent-up methane or other dangerous-to-diners gases, but there are some ways to use a fork for more benign and neighborly expulsions of atmospheric pressure.

photoThe first is to pierce pastry before baking, so that heated air inside or underneath a pastry layer can escape during the process without tearing or exploding the baked goods and their contents throughout the oven or, more excitingly yet, onto unwary bakers lifting said goodies out of the oven. My mother, famous for making what I still believe is arguably the best pie crust in the universe–always exquisitely flaky and golden and crisp and fragile, never soggy or tough–blind baked crusts without ever using pie weights, and only pierced them thoroughly with a fork before the baking. Crust made this way will indeed rise up like an egotist’s inflated chest, but only before those little vents disperse the steam and let the pie crust relax back into the pan just as it should. As far as I’ve been able to ascertain, the added benefit of this approach is that when a filling is added that will bake further in the crust, it leaks into the piercings a little and caramelizes there, both stabilizing the crust and adding a little candy crunch to the pie. In the same way, venting the closed top crust of the pie with a fork before baking it keeps the dough from ballooning explosively (oh, the joy of spurting jammy fruit juices around like candy lasers!), and again, from holding in unwanted moisture that can defeat attempts to have a splendidly juicy pie interior without compromising the extravagant crispness of its crust.

photoBut enough about pie for the moment, I’ll get back to that soon enough, as you’d guess. I always tend to come back to desserts, don’t I.

photoMeanwhile, piercing other foods for pressure-control purposes is pretty effective too. If you happen to like baked or roasted squashes, root vegetables and tubers, I hope you’ve been informed in good time that pricking the skin sides of them before exposing them to high heat is a helpful way to avoid reenacting the demise of the Hindenburg. One of these many dreamy dishes made with the help of the humble fork: Baba Ghannouj.

This venerable meal-starter dip or spread is not much beyond roasted eggplant, crushed or pureed and well seasoned. But, like many classic dishes from around the world, that is an egregious oversimplification of the subtlety, complexity and variability of the concoction. What remains true is that it’s mighty tasty. My personal combo for it would be less garlicky or oniony than some, mainly because of how my kitchen palette has changed since my life became linked with Mr Spouse’s, but also because my personal palate followed suit and, further, because I think heavier, more intense flavors like those, if overused, can mask more subtle and delicate ones. I submit to you a version of it.

Eggplant (1 large), tahini (4 tablespoons), preserved lemon (1/2, diced), fresh lemon juice (2 tablespoons), lemon zest (grated peel of 1 whole lemon), cumin (1 teaspoon or more), olive oil (4 tablespoons) and roasted garlic (1 heaping teaspoon).

If you can, blacken and blister the eggplant’s skin over open flame and then roast it to softness in the oven. For this, preheat the oven to 375ºF/190ºC. If you haven’t flame roasted the eggplant, cut it eggplant in half, lay it on a baking sheet or pan greased with olive oil or lined with a silicone sheet, and pierce its skin all over with a fork before roasting it. Roast until it’s well softened, about 20 to 30 minutes (check with gentle pressure occasionally; you can use the back of the fork for that), and finish by blackening the skin under the broiler.
When the eggplant’s soft, rub off its skin. Needn’t be perfect; bits of blackened skin will heighten the smoky flavor of the Baba Ghannouj. Put the flesh in a bowl, along with the rest of the ingredients, and mash it all up together with the famed fork. Serve garnished with a further drizzle of olive oil, toasted sesame seeds, and a sprinkling of thyme, or a toss of za’atar.

Foodie Tuesday: Come Away with Me

Travel eating can be a horror, of course, since the challenges of being in unfamiliar territory, changing time zones (and therefore, often, the times when we’re hungry or not), having to figure out the differences in price based on a travel budget and possibly foreign currencies and the simple odds of finding great food in a new or different place can all conspire to put us at risk of eating badly, if at all. I can think of a few classic examples in my own history, to be sure. A trip to a certain little (long gone, God willing) Inn that wanted ever so dearly to be thought quaint and Elizabethan and folkloric springs instantly to mind: a speedy glimpse into the dining room should have warned of danger ahead, had either my sister or I bothered to note that the decor included a plate rail circling the room and bearing an ominously vast collection of cartoonish miniature boxes of cold cereal. What followed, since we failed to notice this flagrant danger signal before we’d ordered and waited quite awhile, was remarkable in its weirdness and memorably awful tasting, a meal in which every single ingredient smacked noticeably of the tin from whence it sprang and the pièce de résistance was a salad thus composed: one wet leaf of iceberg lettuce cupping a hard, slightly greenish canned peach half that in turn cradled one whole pitted black olive. If ever a thing eyed me ominously, it was that thing.

But more often than not, lest you think me incapable of finding out the true culinary delights peculiar to any place I visit, I love travel in large (no pun intended) part because I do find and relish such specialties of places-not-my-home.

In Texas, besides the fine variety of regional treats influenced by the mix of whatever native and immigrant populations rule therein, there is almost always some great Mexican and/or Tex-Mex food to be had, not to mention the whole range of beefy, meaty and BBQ-smoky goodness that reigns in the hearts and stomachs of the locals. So you know full well that when my spousal-person and I get to do any wandering in our current state of dwelling, we tend to hunt for those joints where the area’s avid eaters congregate to eat such good and glorious things.photoA trip to the Boston Early Music Festival is reason to rejoice by virtue all of the fantastic playing and singing we hear there. High art and musical culture are always a thrill. But it’s also an outstanding excuse to indulge in Boston‘s superlative food culture. So, given the chance, you can bet I’ll dash to one of the nearest provisioners of provender to order up a beatific lobster roll as soon as I can manage it. If it is repeated numerous times and also happens to be followed by a number of equally fine regional treats, say, a dainty dish of Boston baked beans swimming in molasses-sticky sauce or some spectacular Italian food at the north end of town, why then, I’m all the happier.photoDriving through Oregon wine country is a sure way to enjoy some spectacular scenery, its vineyards interspersed with small organic farms and fruit and hazelnut orchards, but do you think there’s any chance I would settle for merely viewing such glories and not dining on them too? Think again! Would I go visiting in northern Italy and not fill up on ethereal handmade pasta with wild mushrooms? Never! Cross an inch of Hungarian soil without seeking out a good dose or ten of paprikás or gulyás? Perish the thought! This musing is motivated in part, of course, by the opportunity and intent to spend a bit of this summer engaged in this beloved sport of eating-while-traveling. (Or, admittedly, traveling-while-eating.) But if it also serves to move you to further such adventures, rest assured I will be cheering you on all the way. And if I can find you and join you at the table, I most assuredly will.photo

Foodie Tuesday: Composed vs Composted

Many things that taste delicious don’t exactly look as dreamy as they are to eat. Of course, anyone who has eaten in a reasonable number of high-end dining establishments knows that what does look impressive may not live up to its pretensions sometimes, too. But it’s worth trying, at least when serving guests, to make the food look appetizing as well as tasting great, and if guests deserve the respect, why shouldn’t we give it to ourselves?photoWhen I’m cooking in my DIY (more accurately translated in food terms as ‘Dish It Yourself’) mode for varied appetites and needs, it limits what I can do in terms of presentation a little more than usual, but in some ways it can simplify it, too: as long as I’m not dealing with allergy, I can serve foods in proximity that I know not every one will want in the same mix or proportions. So ‘composed’ presentation and ‘deconstructed’ dishes can be a fine and fun way to create something that looks more attractive and inviting than if I go ahead and blend all of the meal’s parts before serving. Case in point: this quinoa concoction, which is basically a confetti-like mishmash if stirred all together before serving, whereas if I simply keep the ingredients a little more separate when plating it all up, suddenly it looks ever so much more like an artful arrangement and a come-hither dish–which is more in keeping with its being a pretty tasty collation, by my standards. So yes, I did even make the pretty composed version when I was the only person showing up at the table. I really do like me that much.photoStrawberry Quinoa Salad

The ingredients for this are quite simple and, as I prefer, completely flexible in terms of trading items in or out of the group and setting the proportions. In this instance, I used the following combination: quinoa cooked in bone broth, sliced ripe strawberries, butter toasted sliced almonds, cubed fresh mozzarella, diced yellow tomato, and minced fresh basil and mint leaves. I kept it all at room temperature and dressed it with my balsamic mint vinaigrette (balsamic vinegar, melted mint jelly, a spoonful of pureed fresh cilantro leaves, and macadamia nut oil blended to taste) and a pinch of crunchy Maldon sea salt, and all together, it was Just Right. And pretty, too. Still and all, when I ate the other half of the salad the next day after having stirred it all together, it was just as good to eat. Guess I’m not too hung up on appearances after all.

Foodie Tuesday: More Sugary Bits

Sweets needn’t be hard to prepare. They’re so easy to eat, it’s only fair that they should also be easy to fix or you’ll undoubtedly end up feeling a little desperate between times. Why risk it?

Especially nice if the treats can require no baking or be super-simple to mix and prep before popping into the oven–like these two:photoChocolate Handy Candy

Combine an assortment of the following ingredients into a dense dough, roll into golf ball shapes or squeeze into similar sized blobs, and chill. Before serving, coat in powdered sugar or cocoa powder; mix in some ground spice if you like.

Melted chocolate (I like to use dark chocolate that I buy in bars)

Coconut oil and/or butter, melted

Pinch of salt (crunchy is usually my favorite)

Flavorings (try ginger with black pepper, mint and dried apple pieces, toasted coconut and rosewater, or toasted sesame seeds and almond bits and a pinch of cloves)

Chopped candied peel or crushed freeze-dried fruit

Crushed potato chips or pretzels or chopped nuts (toasted and salted or spiced/candied)

Once you’ve formed these, refrigerate them, and serve them cold. Easy to make and just as easy to like.

And not long ago I came across another ridiculously simple sweet fix. Nutella cookies. If you don’t already know what Nutella is, you need more help than just an easy recipe to make with the stuff. Possibly a term of Nutella Therapy hospitalization. Ooh, can I have that? I have, thankfully, found some pretty good no-name generic copycat versions of it, so if the real stuff isn’t available in an emergency I needn’t panic. But really, it’d be hard to go wrong with the classic combination of chocolate and hazelnuts.

The recipe in question is so uncomplicated as to be hard to classify as a recipe at all, but I proved it does require a tad of technical specificity, so it’s not quite the throw-and-go ease of the first item here. Still, easy. And oh so sweet. And once again, tweak-worthy. The general gist of this combination is popular, if not prevalent, online, to the degree that it’d be a serious magic trick to track down the original author. If any of you know who developed this I’d be delighted to know!photoImpossibly Possible Chocolate Hazelnut Cookies

1 cup flour (I used gluten-free flour mix) + 1 cup Nutella (or substitute) + 1 egg = dough. Makes a dense dough that’s not hard to mix quickly with your bare hands. Form the dough into a log (about 2″ or 5 cm in diameter) with flattened ends and slice it into 24 pieces. Arrange on a cookie sheet and bake in a preheated oven at 350°F (177ºC) for approximately 6 minutes. My usual issue of owning an overactive oven made my first attempt bake too quickly, scorching them slightly.

That, however, gave me the excuse to play with spice and start thinking of a number of other ways I might happily vary the treat. Version 2 was also easy; all I did was make the cookies as prescribed (while lowering the oven temp significantly, thankyouverymuch) and as I placed the slices on the baking sheet, I sprinkled over them a mixture of copper-colored edible glitter for visual interest and sweet-hot curry powder for additional flavor. Went over nicely with guests, and I found it quite enjoyable.photoFor future versions, I’m thinking of a number of possible enhancements to this delightfully easy cookie dream. I know that it’s also possible to substitute peanut butter and sugar for the Nutella and flour, and I assume one could just as easily use other nut butters. But there are a zillion ways I might play with the existing combination too. Roll the log of dough in finely chopped toasted hazelnuts before slicing into cookies. Add a splash of rum or rum flavoring. Add the finely grated zest of a large orange or a couple of small mandarins; add minced candied peel or ginger to the zested dough. Ice the cookies with a glaze made of pure cherry juice and powdered sugar. Skip the flour and egg and stick the big spoon loaded with Nutella directly in your mouth. Okay, that last one’s not exactly a recipe either, unless you want to call it a recipe for disastrous health, but it’s still probably worth a try. Because it’s sweet, and it’s simple. And when I have a crazy hankering for a bit of dessert in a big hurry, that’s a very fine thing.

Foodie Tuesday: Con Mucho Gusto

So many meals, Latin-inflected or not, are best enjoyed with a nice cold glass or two of sangria. Particularly helpful is the knowledge that sangria has so many tasty potential variations that it can be made the perfect complement to nearly anything. Or substitute for it, if such dire need should arise. But I’ll concede that the many magnificent flavors of the Latin cultures are also, often, what make the sangria so wildly delicious.

In addition, the simplicity of combining the marvelous ingredients for either the food or drink portion of such a meal adds the appeal of quick preparation. While a number of recipes, including many for sangria, are improved by a little time spent melding their flavors together with heat or chilling, the actual labor time might not be terribly lengthy nor the effort especially challenging. Just gather the supplies, put them together in a dish or bowl, and wait for them to come to full fruition. Fruit being, of course, a hallmark of a refreshing batch of sangria.

The dish of the day is so easy it can be assembled and heated in minutes. Even the slowest portion of the prep, the cooking of quinoa, can be accomplished with little trouble, particularly if like me you have a rice cooker. I use a brand of quinoa that requires no rinsing or soaking, and it works easily to prepare it in my rice cooker by combining cooking liquid (usually my ubiquitous homemade broth) with the grain in a 2:1 ratio. I do this in larger batches, refrigerating all but the day’s portion for later meals.photoNestled Eggs [one hearty serving]

In a microwave-proof bowl, put a cup of cooked quinoa and make a hollow in the center of the grain. Break two eggs into the nest and puncture the yolks a little; cover and heat the dish on High for two minutes. [A nice optional variation: stir eggs with steamed fresh spinach leaves that have had the liquid pressed out of them.] Remove the bowl from the oven and top the eggs with a handful of cheese (cotija, queso blanco or sharp cheddar, for example), re-cover, and continue to cook on High for another minute or two, until the eggs are lightly set. Spoon some nice chipotle salsa [see my semi-handmade chipotle salsa hack here] on top, add a tablespoon of cilantro-tequila pesto [just a bunch of fresh cilantro finely pureed with tequila] and some crunchy salt, and serve with a glass of cold sangria.photoCherry-Peach Sangria

Combine a Jeroboam [four bottles] of Cabernet-Merlot blend wine with a magnum [two bottles] of Riesling, one 32 oz bottle of Just Black Cherry juice, 2 cups of dark pure maple syrup, one orange, thinly sliced (including peel), and one 23.5 oz jar of sliced peaches in juice; stir gently to blend, chill, and serve.

Foodie Tuesday: The Fruits of My Labors

photoWhile my labors will always be limited by my well-known lack of desire to actually work, there are certain things I am very willing to get up off of my well padded posterior and Do, not least of all those food-related efforts which will undoubtedly further contribute to my padding. That’s a fancy way of saying that if there’s food involved and I get to eat some of it, I’m more likely to get up and work.

One of the things I’ve found more inspirational in that sense as I get older is my taste for and appreciation of fruits has both deepened and broadened (hence, in part, my own broadening, if that wasn’t obvious enough already). I like a whole lot of them, in fact, and in a wide number of ways. Probably no coincidence that I keep making accidental puns about size, for if I could really get my hands on all of the fruit I craved, every time I craved it, I would probably be as big as houses even though many fruits are dangerous to weight less by virtue of high calories than by the sugary kind of them. All of this being said, however, I am in no way planning to cut down drastically on my consumption of tasty fruit and fruit-filled foods voluntarily. When they’re ripe and juicy, they’re just so irresistible. To wit, one could make, with little effort, a:

Fruity MoussephotoIngredients (this time): pureed fresh strawberries, ripe banana, and pears (peeled ripe or canned in fruit juice); a pinch of salt, a splash each of rosewater, lemon juice, and vanilla, and whipped heavy cream, all to taste. Combine and blend them thoroughly. Thicken a bit more if/as needed by adding a little bloomed unflavored gelatin or agar agar, or a spoonful of minute tapioca, and chill thoroughly until the mousse sets up. I garnished mine with a pinch of pink peppercorns and a few slices of fresh pear.

This sprightly mash-up makes a decent dessert, to be sure, but if like me you’re not about to limit your fruit intake to avoid the high carb and sugar-calorie quantities therein, it also makes a dandy breakfast. Very refreshing, my dears! Well worth putting a lazybones to the tiny bit of necessary effort indeed.photo

Under the Influence

mixed media drawingWhen I hear that phrase, of course I’m immediately reminded of its use to describe those persons, so much dimmer witted than a barnyard fowl, who drive or operate heavy machinery or otherwise behave inappropriately (and most likely, quite dangerously) because they are under the influence [UTI] of drink or drugs. Personally, I would go further, with my concept of UTI encompassing other, equally dangerous things like ignorant social, political, religious or philosophical views that give their disciples delusions of superiority, imperviousness, entitlement, and so forth.

But it behooves all of us to remember that the phrase isn’t inherently negative, for one can be under positive influences as well. Even better if one can manage to be a positive influence. It’s notable enough in a long and active life if one succeeds in generally doing no serious harm (intentional or otherwise, and to be in fact benevolent and able to enact good and fine things, why, that’s remarkable and admirable stuff indeed. I know people who can do so right here in the blogiverse, teaching and leading us all to do and be better versions of ourselves, and doing so not only by sharing their stories but by being living examples of what they teach. My years of classroom teaching proved to me that I was better suited to being a student than a leader, yet tutorial and mentoring settings gave me a much greater level of comfort in that they allowed me to operate as a fellow learner and thus engage more deeply and without as great a fear of steering anyone (myself included) astray.

The bloggers I most admire, immensely entertaining and humorous and dramatic and artistic in ever so many ways, are always, at heart, teaching, whether it’s overtly and with carefully designed pedagogy and prescriptions or it is so inherent in their natures that it comes fully interwoven in the fabric of their posts. These favorites include, but are not limited to, logophilic, ecological, travel-oriented, cuisinal, community-building, arts-centric, historical, and in many cases, wildly multitasking blogs. Some bloggers are small fry like me, known only to a cozy circle of great friends who come by to read and sometimes comment, and some of those I greatly admire are large-scale bloggers, people with lots of published work elsewhere or major accomplishments in their fields (whether related to their blogging topics or not!); a few have multiple blogs and the amount, whether on one blog or many, of posts published varies from one every few weeks to daily. There may, in fact–given electronic media of all kinds nowadays–be people putting up posts every few minutes, but I haven’t the time and energy to keep visiting such volcanic sources and tend to keep to my group of favorites with an occasional foray outward.

So who are my influences among bloggers? Friends who give us invitations to visit them at places like The Bard on the Hill, Spanish-English Word Connections, and Year-Struck, Just a Smidgen, The Valentine 4, David Reid Art, and The Complete Cookbook, like Bardess DM Denton, The Kitchens Garden; like the blogs Cooking-Spree, O’Canada, Nitzus, Peach Farm Studio, and  Bishop’s Backyard Farm, like Blue Jelly Beans, One Good Thing by Jillee, Road Tripping Europe, My Little Corner of Rhode Island, Promenade Plantings, L Scott Poetry, Poetic Licensee, and Gingerfightback, and blogs like From the Bartolini Kitchens, Rumpydog and The Human Picture. There are many more I enjoy and admire, but each of these, whether longtime blogging friends or a site new to me, have proven to be influential and inspirational for me in many ways, both as bloggers themselves and often as encouraging and educational commenters here at my own place. We don’t always agree, which is part of what’s so powerful: the diversity of the world and its ideas and passions and hopes and loves, this potent brew is what makes the fellowship of bloggers such a joy.

That we can share it with so many, most of whom we know only in and through this forum, is a great gift indeed. Also shared among fellow bloggers: awards and recognitions. Some accept them and participate with great alacrity in sharing them, and others are happy to be complimented thus but have no interest in or simply no time for such things. All quite acceptable responses. This post, in fact, is in response to my having been ‘tapped’ by the gracious and yes, influential blogger Samina Iqbal, whose Forum for police support is a notable effort by one passionate blogger to garner greater recognition and appreciation for those who serve and protect the populace as members of the police force–indeed, a job few of us would dare or relish, yet most have great reason to be grateful that there are the admirable folk who do so on our behalf. She was named a Most Influential Blogger and has passed the torch here.

While I think she is over-generous in her estimation of what happens here at my blog, I am happy to carry out the task of sharing the aforementioned blogs and their authors with you, because they really do deserve the attention and I hope you’ll visit as many of their sites as you’re able; you, too, will find many things to influence you: ideas and passions, skills and arts, love and human drama and many a good belly laugh in the mix. Best of all, under the influence of these luminaries you will likely pose no additional danger to the general public if you should, say, get behind the wheel of a car. With the possible exception of the belly laughs, which could cause you to steer right into the ditch. But at least you’d be guffawing all the way to the emergency room, possibly accompanied by some helpful police officers. And don’t blame me!mixed media drawing
