Foodie Tuesday: There’s No Substitute for a Smart Substitution

Nearly every time I get in the mood to bake something I’m missing one or more of the necessary ingredients. This happens often enough when I’m making non-baked goods, but it’s almost a given with baking, because I simply don’t bake all that often: too much wheat flour and sugar makes this sweets-addict too likely to get tummy aches or just plain to overindulge. And the fact that I don’t bake terribly often means that, in that most scientific of culinary skills, I’m the least a genius about getting the fussy proportions and timings and temperatures correct. But I still do like to bake once in a while.

Though I feel pretty safe making all sorts of substitutions in cooked and raw dishes, simply finding analogous items–ingredients that have plenty of similar qualities and can therefore be expected to fill similar roles in the combination–I know less about what the ingredients used in baking are supposed to do, unless you’re talking about spices and flavorings, and so have always been more timid about fooling around with the recipes for baked goods. But lately, I’ve come to be more of a believer that life’s too short not to have a little kitchen adventure more often, and that if I’m not using outrageously expensive ingredients the worst that can happen is that a batch of something goes so far awry that it’s just plain a failed experiment. That’s what trash bins are made for, no? I’ll bet few scientists ever made their paradigm-shifting discoveries without a few boneheaded false starts and cock-ups and misdirections and outright failures along the way either, and, well, brownies are not exactly rocket science.

Texican Brownies

Ingredients: Plain ‘classic’ brownies call for the following ingredients and proportions:

4 squares (4 ounces/113 grams) Baker’s Unsweetened Chocolate–I substituted semisweet baking chocolate. It’s what I had in the cupboard.

3/4 cup  butter–while baking recipes almost always specify unsalted butter, I almost always use salted butter anyway unless there’s a lot of additional salt in the recipe; salt heightens sweetness and intensifies other flavors as well. And I love salt.

2 cups sugar–I substituted dark brown sugar for a deeper flavor.
3   eggs
1 teaspoon vanilla
1 cup flour–I substituted instant masa flour (a fine corn flour usually used for tortilla- and tamale-making)

Then I added a few ingredients of my own to make a darker-chocolate brownie and give it a slight Mexican twist:

1/2 tsp baking soda–since the masa flour wouldn’t have gluten like the wheat flour to make the brownies rise a little, I figured they should have a boost in leavening. Look at me, being all fake-scientist-like!

1/2 tsp salt plus 1/8-1/4 tsp ground black pepper–again, wanting to intensify the spicy chocolate of the brownies–plus 1 large tablespoon Dutch processed cocoa–yet more chocolate boosting–plus 1 tablespoon cinnamon

Directions:

Heat your oven to 350°F–mine runs hot, so I heated it to 325°.

Line a 13×9-inch pan with an oversized piece of baking parchment, folding it at the corners to fit and cover the sides as well as the bottom. One piece, no leaks.

Microwave the chocolate and butter together in a large microwaveable bowl on high until the butter is melted. Stir until the chocolate is melted and completely combined with the butter. Blend in the eggs and vanilla. In another bowl, mix all of the dry ingredients. Add them gradually to the wet mix, stirring until everything melds, and pour the batter into the prepared pan, pushing it into the folded parchment corners to fill them.

Bake 30 – 35 minutes (again, with my super-hot oven, I baked mine for more like 20-23 minutes) or until a toothpick inserted in the center comes out with a few moist crumbs. Better to under-bake these than the opposite–fudgy, chewy brownies are good; dry, not.

The parchment will let you easily pop the whole sheet of brownies right out of the pan.

Makes 24 brownies. Mine were still a little too baked, thanks to the hot-hot oven, so I quite happily compensated for the slight dryness by frosting the ones that weren’t immediately devoured. (A number of them were. Clearly, the over-baking didn’t destroy them so badly that the members of this household wouldn’t cheerfully destroy them in another way.)

No, I’m no fussy decorator. But I loves me some tasty frosting. And I wanted something that was earthy and yet juicy, something that would stand up to the depth of the spiced brownies and still have a little homey heartfelt quality to it, even if it wasn’t very frilly. I chose strawberry frosting; after all, las fresas are a fantastic favorite fruit treat in some of the Latin-American cuisine I’ve had the pleasure of inhaling eating. And this is just an easy take on buttercream icing.

Grind about one cup of freeze-dried strawberries to a coarse powder. I did mine in the blender, but if they’re dry enough you could even crush them with a wooden spoon in a heavy bowl–leaving some bits rough gives a little burst of berry flavor in the finished frosting and reminds us there are real berries involved. Add to the berry powder about a cup of powdered (confectioner’s) sugar, a teaspoon of vanilla, a cup of soft butter, and a tablespoon or two of heavy cream. Blend them together well, adding more sugar and/or cream as needed for flavor and texture. Apply liberally to the brownies, cake, cookies, tongue, etc, as needed for improved state of bliss.

I sprinkled them with some edible glitter just for good measure. A little extra pizzazz never really hurt anything. But you could just sprinkle yours with the stardust of your affection and it’d be just as glamorous and grand.

This whole brownie-baking urge of mine was motivated in large part because I felt like making a sort of Valentine’s Day treat; since we’ll be in the car on a work-related jaunt much of the actual Valentine’s Day, I figured today was a reasonable substitution for the occasion. Since both my husband and I love chocolate and baked treats but do better with less wheat flour, I figured substituting corn flour could be a decent and respectable enough Tex-Mex way of dealing with that part of the equation. And since neither of us is a stickler for celebrating only on the official or ‘correct’ dates for anything, we’re both quite willing to celebrate the American holiday of love-and-romance any old time we can. Because for love, there really is no acceptable substitute.

Foodie Tuesday: Fat & Sassy

In my unapologetically piggy way, I almost always manage to get a goodly amount of delicious fat into whatever food I’m fixing for any occasion. Yes, I do have the proverbial sweet tooth and oh boy do I crave my salt, and surely you’ve noticed that I rarely turn down practically any sort of food on offer at all. But there are some sneaky little biases that tend to recur so regularly that they might be considered trademarks of my taste no matter what dish or meal or bite is the treat of the moment, and tasty fat is one of those delights.

Doesn’t matter what’s the course of the meal or of the day, either one–fat is where it’s at.

Say, for a starter bite. Just putting some nice fatty dry salami together with pieces of dried apricots and chunks of dense, also fabulously fat, fried cheese makes an amazingly great treat that you might not even have to be as big an admirer of fat as I am to enjoy it all.photo

If that’s not fat enough for you (or if, like me, it’s simply not too much and therefore arguably not nearly enough), you can go about pumping up the main dish with some additional lipid-licious treasures. How about a sandwich with a nice thick slab of mozzarella or other mild, thick cheese and a whack of crispy bacon, glued together with a slathering of ginger jam and cradled between two slices of nut-butter based batter bread? All good, I assure you. Probably needed some good greasy chips to go with it, but the sandwich was perfectly serviceable on its own. Enough so that I’ll bet I could have enjoyed it with fruit or vegetables or some other ridiculously healthful and low-fat sides just the same.photo

That’d probably be an even better excuse to have a nice fat slice of sleekly fat dessert, no? Perhaps something like almond cream tart with chocolate sauce. Honestly, not a terrible way to alleviate the shortcomings of a meal that didn’t already have only strictly, gloriously fat ingredients beforehand. I like to keep my arteries well lubricated so my blood will flow nice and smoothly, you know.

Almond Cream Tart (an approximation of a recipe)

1/2 pound melted butter

1-1/3 cups sugar

4 large eggs

1-1/2 teaspoons vanilla extract

1-1/2 teaspoons water

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon freshly ground cardamom

1-1/2 cups almond flour

Blend together thoroughly and divide the batter between two small, greased loaf pans and bake at 300 degrees until ‘sticky-finished’–very slightly underdone, or able to release a test toothpick fairly clean when it’s used to pierce the center of the loaf. Get the cakes out of the pans and let them cool enough to handle. While they’re cooling, line a Springform pan with plastic wrap.

Tear the cakes into large chunks. Distribute the cake pieces evenly in the Springform pan and press them down slightly. Moisten the cake with enough (1/4-1/2 cup of) heavy cream to help hold all of the pieces together. Smooth it out a little and sprinkle 1/2 cup sliced toasted almonds over the top of it. Press the almonds down, pull the plastic wrap over the top, and seal the tart into the pan. Then, into the fridge with it for a few hours or overnight, and when it’s well chilled it’s ready to glaze and serve.

To serve, plate up pretty pie wedges of tart for each diner. Microwave some more heavy cream (1/2 cup or so) together with some pieces of nice dark chocolate (I used Dove Promises) until you can stir them together into a nice smooth chocolate sauce and drizzle it over the top of the slices and take them all out to the table. Everybody stick your forks in and start making silly slurpy sounds. And don’t forget to wipe the luscious fatty residue off of chins, y’all. I may be greasing the skids to perdition, but isn’t it a lovely slide to take?photo

Foodie Tuesday: Ten Thousand Things I’ll Never Know

Okay, you are all very well aware that there are more like ten squillion things I’ll never know, but it doesn’t make for as mellifluous a title, now, does it? Ahem. Confession is all well and good, but I might as well please my inner critic, too.

I am referring, in the title I did choose, to the multitude of cool tricks and fabulous skills I am quite unlikely to learn and/or acquire as a chef in this lifetime. Some of them I could undoubtedly get the hang of, if not exactly master, were I to make a dedicated effort. But I’m such a dilettante by nature and so easily moved to any attractive tangent, that such dedication is a fairly rare commodity in my personal performance toolbox. I certainly admire all of you artistes and culinary technicians who have such an abundance of graces in the kitchen, at the grill, and around any old fire pit you can conjure out of architectural rubble, used tuna tins and flammable leaf-mold. And I’ll leave such things to you.

If I were a serious student I might be able to learn how to poach, candy, spherify, souffle, smoke, sear and pulverize the universe of edible things into perfect submission, but I am instead the kid who sits in the corner and stares alternately out the window and down at my left shoelace until galvanized by the lunch bell, whereupon I am first in the cafeteria line and probably sticking my fork into my food well before I have sat at a table. So my hopes of becoming a great chef are limited at best. Part of the problem is getting practiced and patient enough to merely remember what I just did in preparing a dish to have even the remotest chance of either replicating it at some future date or–if it turns out it’s awful–avoiding said replication, at least by improving those things that were unsatisfactory about it in the event. That makes one of the Ten Thousand Things that ranks very high on my list the ability to prepare and eat the same thing twice.

While I’m all for playing Variations on a Theme and enjoying change and novelty, I’m not entirely free of the rather common human urge to indulge in familiar favorites. That means it’s often wisest not to stray exceedingly far from the few techniques I do know and the moderate batch of ingredients that are well-loved in my cookery adventures, or I’m surely doomed to a perpetual cycle of this battle with my limited memory, always eating whatever random concatenation or ridiculous concoction happened to come out of my latest crash course dans la cuisine.

Today, I was faced with a fair fridge-full of unrelated leftovers that, if I didn’t want them to die of old age, needed to be made into something approximating tastiness that I could at least freeze until we would be home to heat-and-eat them. Combined, there were the makings of a whole simple meal; it only required my ‘repurposing’ everything, if that’s not too odd an application of the term, and the time was decidedly now. Tonight the garbage and recycling bins get put out for morning collection, and if we’re not going to actually eat the stuff, it’s clearly better to cut losses before that cleansing event than after it.

So, since the ingredients presented themselves, I prepped three simple recombined dishes as follows. The main course: a BBQ meatloaf of sorts. Sides couldn’t be simpler than yet another version of my mainstay potato casserole and steamed vegetables, and that’s what we’ll have to feed our hunger and clear out the refrigerator this time. What I’ll do with the leftovers of the leftovers is anybody’s guess. I’m quite sure I won’t remember how they got this way in the first place.

Meatloaf probably sounds a bit better, or at least a little more identifiable, than A Hunk of Barbecue-Sauced Meats Put Together, but either way, it’s the simple truth. This loaf came out very tender, indeed, almost to the point of falling apart, so there’s clearly a spot that I could adjust in the recipe, if there were a recipe. Ah, well. I simply took equal parts of leftover pit ham and roast beef (both thoroughly cooked already, obviously) and a little bit of roasted chicken that I had, too–a little under 3 cups of meat in total, I suppose–and put them all together with about a quarter-to-half a cup of barbecue sauce plus two eggs (raw) in the food processor and chopped them all together into a light minced meat ‘dough’, pressed it into a lightly greased loaf pan, and baked it at 350 degrees Fahrenheit for 35 minutes or so. Pretty nice tasting results for so little effort, really. Even better when I will have only to warm it up when it’s time to eat. And when, of course, I will already have forgotten entirely what I did with what ingredients to have made the food.

Whatever you call me, just don’t call me Late for Dinner . . .

The other food is and was equally easy. The potato casserole this time is a mix of a cup of leftover good french fries (chips) plus one raw Russet plus 1/4 cup of queso blanco, all diced into similar small-sized pieces and mixed with a tablespoon of butter, a handful of shredded Parmesan cheese, and sprinklings of ground black pepper and salt and a small pinch of grated nutmeg and microwaved until the queso was just beginning to melt. I cooled this mix and put it in the fridge, and when it’s time to fix it for eating I’ll put it in a heat-proof container and warm it through thoroughly with a half cup or so of heavy cream. That always gives potato casseroles a nice texture somewhere in between baked and mashed potatoes, both of which I think are pretty fine, and helps the cheeses blend into the mix well.

I’m always making a hash of things . . .

The steamed veg is prepared in the way that makes the dish, if you can even call it that, the easiest of all of them. Carrots and celery, cut into 1″ pieces and steamed with a pat of butter in a half cup of chicken broth (vegetarians can obviously substitute veg broth, wine, water or juice) plus a splash of Limoncello–that’s all there is to it. This one will get salted at the table because I don’t want to get any of that metallic hint of mixing salt and booze in cooked food that can sneak through when the dish is so wholly uncomplicated. The carrots and celery should mostly speak for themselves. And they will still taste pretty fresh and sweet, even in a day or two, rather than wilted and antique as they would have been had I not preemptively cooked them today.

Best defense is a good offense, so I’m told, and nowhere do I see it demonstrated as often as in getting food at least par-cooked before its shelf life has ended. A pseudo-science I learned because, among all of the other kitchen cuteness I will probably never know is the refined art of getting everything prepared and eaten exactly when it’s at its peak, never mind not having odd-lot leftovers or not losing time, tears and groceries if we get invited out to dinner after I’ve half-prepared a meal so it sits around extra days waiting for our attentions. Perfection in the kitchen? No, never. But this old dog does know a tiny trick or two, and that has kept us alive reasonably well so far.

Foodie Tuesday: Even a Classic can Take Plenty of Twists and Turns

Being a fairly dedicated eater and happy to grab my utensils in the blink of an eye almost without regard to what’s on offer, I still do enjoy the familiar and comfortable on my menu too. There are occasions when I just plain crave the known and cozy to fill my plate and my empty stomach. Sometimes nothing will do but the good old-fashioned classic.photoSo when I’ve made a batch of roasted vegetables that I can pop onto the platter at a number of meals in the next few days, it can be nice to tuck it alongside a variety of things while it lasts, just to keep things interesting. However, having some of those many different entrees be lovely old-school stuff doesn’t in any way diminish the range and color of what I’m going to eat. That just makes it doubly fun to puzzle together the menus that, despite a repeating item and a well-known dish, still easily keep their sense of invention and surprise enough to brighten up both the day and the meal.

One obvious way to accomplish that is to introduce minor tweaks: ingredient combination, presentation, and so forth. The simple roast beef from last week gets thoroughly sliced and diced and then piled into buttery grilled french rolls, and finally, dipped in a dense jus reduction of roast drippings, butter and a big slosh of red wine, and served with a touch of horseradish cream (softened with sour cream) alongside side for enhancing either the beef dip sandwich or the roasted vegetables on the way down the hatch.photoA different day, a different tweaked standard: macaroni salad with bacon and eggs. Not sure I’d recommend one of this latest round of tweaks–I tried it with rice pasta (the gluten-free twist on the occasion), which was just dandy when the salad was first made, but in the refrigerated leftover salad soaked up the dressing so thoroughly that the pasta tasted pretty much just like cold rice later. It wasn’t hopeless: I added more dressing each time I went back to it, and I found that it rehydrated decently. But it wasn’t as stable in that aspect as traditional pasta, which I think I’ll still prefer in the long term. The other slight variations, however, I enjoyed very much, and by the way, so did all the others at dinner.photoMacaroni Salad with Bacon and Eggs

Cooked [elbow macaroni–still my favorite for macaroni salad] pasta gets dressed simply with mayonnaise, a good squirt of cartoon-yellow mustard, and cream. A sturdy grind of black pepper gives it a hint of depth, though it’d be great with a splash of hot sauce or a sprinkling of cayenne as well. A big handful of diced pickles playfully zings things up a little; I used half dill pickles and half sweet gherkins. You know me and my sweet-plus-salty fetish. Traditionalists would of course hard boil egg and mince or sieve it before adding it to a picnic salad. Me, I just semi-scrambled the egg until it was just fully set and minced it up. Pretty much the same result, with less time and effort. Lastly, fried up a whole lot of bacon into crispy, smoky pieces.

The end product? About like what you’d expect if waiters carrying platters of the familiar summer macaroni salad and of pasta Carbonara crashed into each other and fell into a breakfast buffet table. But involving a lot less flying cutlery and cussing. Unless you count people diving after the salad avidly waving their forks and yelling, Damn, that’s good! Not that anyone at my table would ever behave in such a reckless and uncouth manner. Well, me, maybe.

Foodie Tuesday: Big Pigs Like Figs

photoBig pigs: who, me? Yes, I’ve admitted to it many a time. Being a food-loving piggy myself, and being terribly fond of the gifts of the pig to food-lovers. I fully understand that vegans, vegetarians, Muslims, Jews, those with health restrictions, and any number of others have valid, legitimate and honorable reasons (philosophical, physiological, religious, ethical, etc.) for not eating pigs; my own litmus test for foods is also personally derived and has much more to do with how much respect has been given the plant or creature in question in its tending while alive, in its preparation when being readied to eat and, especially in how it is used for sustenance and, often, the building of community. So no, I would never dream of knowingly serving pork to any of the aforementioned friends. But I am content to obtain and prepare and consume it myself with respect and gratitude. I have no wish to offend, any more than my abstemious friends would judge me for my being a carnivore. Those who wish to do so are of course very welcome to skip this post entirely.

Meanwhile, back at the board, I will say that I am often quite happy to eat vegetarian style too. I never feel deprived when the food pleases my palate, no matter what the range or contents of the menu, and I can easily be just as blissful about a superb salad, an ounce of outstandingly fresh pistachios, or a pan of colorful mixed roasted vegetables (on tonight’s menu again, as it happens). And good fresh fruit, well since that combines the flavor and vitamins and juicy joys of good health-giving food with the sweetness of dessert, why, you know that I am happy to plunge right into that when it’s offered.

No surprise, then, that I was so delighted when that scrawny little $4 twig I bought this winter first burst into leaf and then, to my great amazement, produced lovely, plump Brown Turkey figs. It inspires me to think that perhaps I shall be able to grow some produce of other kinds if I put my mind to it, despite the challenging temperatures and soil character here in the roasty-toasty land of north Texas.

I am *not* the only ham in my kitchen.

But to return to my porcine loves, I have eaten pork in almost uncountable ways and have loved a great many of them. One standby favorite is a well-made ham. I will happily bypass any of those artificially ‘enhanced’ varieties that are injected with water and so many other, less savory, ingredients and often are processed to the degree that they are no longer recognizable as meat, let alone pork. But a good pit-smoked ham, well, there’s a sweet-and-savory treat of which I am immensely appreciative. I love oven roasted and glazed hams, too, even boiled ones, but I think my affections are most readily given to an unadorned and slightly fumy beauty right out of the smoker.

One of the benefits of being in Texas is that I do have access to a few places that produce such ethereal goodness. As a result, I can often indulge in a meal of simply sliced ham with vegetables or salad or, on a wintry day, perhaps with mashed or roasted sweet or russet potatoes. Or, as I did the other day, with a heap of fabulously fresh and sweet fruits. And of course any leftover bits may be tossed into other welcome meals of the same. Or into sandwich fillings. Or casseroles. Or, as on the day following the feast of ham and figs (and avocado and strawberries and pineapple), next mixed with minced roasted chicken, dill and pepper and stirred into eggs for a quick frittata. Because if ham is good one day in my kitchen, it’s probably a treat for three days in a row if I’ve shopped wisely enough.photoJust now, though, I guess I’d better dash out and check the baby fig tree to see if I can beat the raccoons to the next ripe piece of tree-candy.

Foodie Tuesday: Egg on My Face

I have no particular secrets from you kind people out there in Bloglandia, so it can come as no surprise (especially to those who have seen any of my previous food posts) not only that I am an unreconstructed carnivore but also a generally unrepentant eater of all things–okay, nearly all things–that might be considered decadent if one is of the sort that equates dining habits with morality. I like eating. I like eating lots of different things, and in what even I will readily admit are too large quantities. It’s not good for my health, to be sure, and possibly not best for my soul, but there it is. I love food.photoOne of the things I would be most reluctant to give up eating or cooking with is of course that stupendous universal donor among ingredients, the humbly perfect egg. If I must be limited in my access and opportunities and omnivorous mania, I would proudly and gladly be wearing a nice schmutz of egg on my chops any day. Besides, with my coloring I am very ill-suited to wearing any other form of yellow, so why not embrace the ephemeral form of dressing up in some eggy yellow goodness that can at least be licked off my lips and make my innards very happy if its look doesn’t suit my exterior. I love what the egg can do for a sauce, a custard, a souffle. For baked goods; for dishes where it serves as binder, thickener, garnish.photoMaybe most of all, I love eggs when they star in the show. Their honest simplicity and smooth, creamy deliciousness deserve to be featured and recognized as the wonder that is borne in that beautiful capsule of the egg’s origin. So today I give you one of my very favorite meals, which despite my fondness for all sorts of marvelous mealtime miracles is a supremely simple omelette with grated sharp cheddar cheese melting in the middle, accompanied by some nice crispy bacon with a little drizzle of pure maple syrup, and a fresh, crisp, fabulous apple. I don’t usually mess with eggs much when I cook them, and a nice little cheese omelette like this deserves to be treated respectfully, so the only ingredient in the omelette besides the eggs, lightly beaten, and the cheese is just a nice big splash of melted butter to make the eggs easy to loosen from the pan and fold over when sufficiently set–but just barely set, really. Still light and creamy through the middle.photoI’d go on, but I’d kind of rather dash over to the kitchen and grab an egg or two . . .

Foodie Tuesday: Real Cowboys Do Eat Quiche

When lots of Americans ask 'What's for dinner?' they want to know what *meat* they're getting as a main course, not hear a recitation of all the fabulous accoutrements you are painstakingly preparing for their delight and delectation.

I am antique enough to remember the time when what Americans knew as Chinese food was ‘Chop Suey‘ in a glutinous and sickly-sweet sauce, followed by fortune cookies filled with good-luck predictions that were exciting and interesting only when recited with the popularly immature addendum ‘between the sheets’. When Italian food meant spaghetti, cooked until ‘al dente‘ only to infants under six months of age and smothered in characterless tomato puree with some insipid approximation of a meatball-like object swimming in it and perhaps a halfhearted sprinkling of pretend Parmesan cheese granules from the canister that sat on the shelf until nearly archaeological in quality. And French food was just plain weird, some sort of girly, foofy stuff that, if any man would be caught eating it, he had better be wearing a beret and a pencil-thin mustache and sticking his pinky finger out while wielding his tableware.

Then there was a bit of an awakening. It was slow, to be sure, but meant that people might actually admit that their ancestral foods from the aforementioned regions were ever so much more varied, colorful, flavorful and exciting than the paltry offerings that had been dumbed down to virtual nothingness and blandness and predictability, supposedly to suit the American palate. Of course, that completely ignored the reality that the vast majority of the American populace originated in other countries, on other continents, and eating anything but boring cuisines. And not just Chinese, Italian and French either.

At some point, some wit decided that the US simply needed to be reeducated one dish at a time, choosing the humble yet incredibly versatile vehicle of the quiche as focus, et voilà! The 1970s became the era of the quiche-eaters. Thankfully, many of the quiches promoted were perfectly edible and did in fact counter the myth that ‘Real Men Don’t Eat Quiche‘ (originating in Bruce Feirstein‘s book poking fun at masculine stereotypes) because they were good, tasty, and ultimately satisfying concoctions. Even better, the idea that being a fledgling foodie nation was permissible, even laudable, meant that suddenly a whole host of other delectable cuisines became gradually more familiar, dish by dish and restaurant by restaurant. That’s not to say that every flavor is for every one, by any means.

For some, anything spicier or more exotic than an oven-roasted potato is too wild for the table.

But quiche, as it happens, is such a simple and endlessly variable dish, being pretty much an egg base used to bind and carry any combination of vegetables, meats, starches and other flavors suitable to one’s own taste, kitchen contents and the occasion. Quiche, omelette, tortilla española, frittata; whatever you call it, if you’re not averse or allergic to eggs, the possibilities of a wonderful, simple-to-make meal are endless. If you happen to be an old Texas ‘Cookie’, watching the hungry horde of cowboys close in on your chuck-wagon from across the lonesome plains, it might not be a bad idea to throw whatever you’ve got on hand into those trusty cast iron skillets and pots with some stirred-up eggs and get ’em cooking over the camp fire as speedily as a jackrabbit can dodge your shot. Use some of your biscuit dough for a dumpling-style crust, or just serve the stuff without crust–no one will complain, as long as the food’s hearty and ready when the dust settles around the corral.

Being in Texas, I do take advantage of the ready availability of good beef pretty often, so I end up with a little left over from time to time, and the egg-based dish is a perfectly easy way to make good use of all manner of leftovers. Heck, I even live in a ‘ranch-style’ house, for what it’s worth. So, since I had a whole lot of good eggs on hand at the moment and a very meat-and-potatoes, manly-man sort of collation of ingredients lurking in the ol’ refrigerator, I cooked up a crustless quiche fit for any sturdy appetite, Tex-Mex or plain cowpoke, from hereabouts to, say, Paris, Texas. Being so all-fired Frenchified and all.

Cowboy Quiche

You can layer the solid ingredients for a quiche and pour the egg mixture over them, as I did (wanting the cheese all on top), or you can throw it all together and stir it right up. The end result tastes just as fine either way.

The base, in this case, is nothing but about a half-dozen eggs (I like plenty) and a half cup of thick plain yogurt, stirred together and thinned with a little tiny bit of water as needed to coat the other ingredients well. The rest of the filling comprised about a cup and a half of 1/2″ diced leftover lean beefsteak, two small leftover oven-baked potatoes in their jackets, diced about the same or a little smaller (skins and all), three slices of crisp-cooked bacon, broken into pieces, and a good half cup of grated sharp cheddar cheese.

Between the bacon, the cheese, and the salt with which both the steaks and baked potatoes had been prepared, I didn’t think there was much necessity for added salt (you may gasp with amazement at this salt-aholic’s abstemiousness now), but I seasoned the mixture with a good dose each of chili powder and smoked paprika.

This crustless quiche got baked in a small, well-buttered ceramic casserole, and today it was cooked in a newfangled microwave oven, because even though it does just fine in a conventional oven I was really hungry, cowboy on the plains hungry–somehow breakfast and lunch got forgotten in the midst of other doings today–and I didn’t want to wait any longer than I had to. I’d made up the quiche beforehand and put it in the fridge, so all that was required was to pop it in the oven and hot it up until it wasn’t too wiggly and jiggly anymore. I’m never entirely certain on timing and temperature, so in the microwave I just cooked it for 4 minutes to get the initial cooking underway and then several 2-minute intervals after, cooking it on High for about 8 minutes total and then letting it rest and set up for another five minutes or so.

The quiche comes out of the oven just slightly quavery in the middle, but a few minutes cooling on the counter (so as not to scald your diners) will thicken and set it up further.

To serve it, I went with Tex-Mex favorites, because I like them well and so of course I had them handy. Guacamole, which in our house is nothing more than mashed ripe avocado seasoned with fresh lime juice, salt, pepper, chili powder and lots of ground cumin, lasts longer in the refrigerator than you might think–but only if you make a big batch, because we do eat it in quantity when the mood strikes. Salsa must always be on hand. As I’ve said before, we like a mild chunky-thick salsa, spiced up at home with a chipotle en adobo or two well blended in. Some fresh, bright Mexican crema. A few black olives. I think all I left out of the meal was a nice chilled cerveza, but not every day calls for it. Or does it? I forget. Anyway, there were no other fruits or vegetables today, because that would just be too girly, wouldn’t it!

You know, even with such a frilly sounding French name, a quiche like this ain’t half bad after a long day running the ranch.
