Life is crazy busy these days for the average Jane and Joe. Makes it all the more important to take care of ourselves and even, when we can, enjoy a little something special. When the holidays hit, not least of all that treat-centric spectacle we call Halloween, it’s good to fortify ourselves for every day of intense living with something that makes us happy to be in the midst of it. Here, a simple day-starter of a glass of sunshiny smoothie (juice-preserved apricots blended with whole milk yogurt, coconut water, honey and a dash of cardamom) and some roasted, salted almonds.

An uncomplicated roasted chicken will suffice to get some tasty protein and warmth into the belly and the day. I roasted this beauty simply with salt, pepper and butter and a quartered lemon stuffed inside, but if you don’t have time to roast your own, you can always do as I happily do in those circumstances and grab a ready roasted bird at the grocery store. Anything that makes the day easier while keeping us well fueled through it is a good help.

Any Halloween without plenty of orange is no Halloween at all. But pumpkins are far from the only orange wonders we can enjoy on the occasion, so I am happy to get my Vitamin H (for happiness) from other sources, too, and on this of all days, why not *sweet* orange-ness? Here, I made the carrots from my broth cookery into a not-just-for-babies mash just by adding ginger juice and maple syrup–another great autumnal invocation to the spirit of good taste.

Put that roasted chicken and carrot mash together with some green vegetables and broth-cooked rice, and you have a filling, cheering meal that will keep you fit and friendly even through the longest Halloween wanderings of the neighborhood in search of chocolate.

Unless you’re feeding a large number of people, you’ll have enough chicken left over for another meal, perhaps–as here–a sweet-and-spicy curry made of the cubed meat, ghee-sauteed vegetables, coconut milk and masala and served over fragrant Basmati rice cooked with cardamom, cinnamon, and cloves and garnished with toasted coconut flakes, pistachios and cashews and diced dried apricots or mangoes. Quick, economical and just as flavorful as the chicken was the first time around.

My old standby of peach fluff for dessert can keep you from craving too much of that pan-handled candy at the end of a Halloween outing. It’s easy to make, using either soft ripe peaches or juice-canned ones pureed and blended with something nice and creamy and vanilla-tinged and sprinkled with cinnamon. Want it fat and sweet? Mix it with whipped cream (no, do *not* puree ME and mix me in!), or pour the puree over vanilla ice cream. A little sprightlier? Use yogurt or ricotta or mascarpone. Or skip the fluff and just revel in the juiciness of peaches. They’re orange, they’re fabulous, and they’re probably a tiny bit better for you than a two-pound bag of Kandy Korn poured straight down the gullet, though candy *is* dandy!

And if your holiday happiness can use the enhancement of a bit of adult-beverage encouragement, there are plenty of wonderful cocktails out there full of orange-y joy. Me, I might choose a more *thematically* suited drink, like perhaps the Dark ‘n’ Stormy, which has a faintly orange tint too but even better, has the ability to refresh even the undead on a late, late Halloween night. Treat your boys and ghouls so kindly and they may even refrain from eating your brain.

I’d like to squash you in a big holiday hug with some great traditional Halloween recipes, but really, who needs that when you can easily make treats of any sort with zombie-like gusto and not be sorry. So I hope we can all embrace whatever best satisfies our inner monsters without too much effort or expense, and spend more of our time and energies on just being happy little hobgoblins all!

Foodie Tuesday: Another Birthday, Another Pie in the Face

Ours is one of those households where pie is held in greater reverence than cake. Don’t get me wrong; I can drool over a fabulous cake just as well as the next person. But given that my husband’s grandmother was the sought-after pie maker in town, both at home and at a restaurant, and his mom carried the pie art into his childhood home, and my own mom’s famed pies were also justifiably the stuff of local legend…well, when it comes time to pick the perfect favorite dessert, either of us clearly has good reason to request pie. And since neither of us is particularly fond of clowns, per se, the pie had better be more impressive than a plateful of whipped cream and the delivery system had better be more sedate than the slinging of it in one’s face.photoFor my guy, as I’ve mentioned before, apple is the number one choice of filling, though he’s fond of nearly any sort of good fruit pie in a fine crust, and other staples like chocolate or pecan or Key Lime never really go amiss either. I’m a bit more likely to wiggle and waver about what is my favorite-du-jour, but still as inclined as he to think pie is eminently birthday- and other- celebration worthy. Since His Eminence was the one with a birthday last week, of course the first part of the birthday meal that came to my mind was apple pie. Dessert first, and all that.photoWe had only three apples in the fridge, and I’m trying not to eat wheat [so far, it seems that avoiding wheat decreases my old-lady hot flashes a bit, and that makes it quite worthy of the effort, in my book], so standard apple pie would be a little bit of a problem. When it comes to food, however, my policy has always been to find as many options as possible and choose the best one for the occasion or to, in short, Improvise. So I added the gorgeous pear from our stash to the apples, and worked on an experimental pastry solution. Here’s what I made:

Apple Pear Pie in an Extremely Freaky Flaky Crust

Pastry: Combine 1-1/2 cups gluten-free flour blend, 1/2 cup almond meal, 1/4 cup tapioca flour and 1/8 cup each masa harina and potato flour in a large mixing bowl; add 2 tablespoons granulated sugar and 1 teaspoon salt and blend it all with a pastry blender or fork. I will confess to you right now that I always liked the wire-style pastry blender better than the blade-style one (Mom used the former, of course) until I realized that I was waaay too aggressive in assessing its capabilities and crushed the wires into useless sculpture one too many times to bend them back. I have since seen the error of my ways, and in this ‘recipe’ it really paid. Because the step of adding the fats (1/2 cup each of pure leaf lard and salted pasture butter) is best done with them cold, cold, cold. And if you’ve refrigerated them thoroughly or even frozen them, that’s going to make them hard, hard, hard. Which is great, assuming you use the right tools; using the sturdiest, studliest pastry blender you can find is far easier for making the old standard ‘pea-sized meal’ out of the mix than two knives, the alternative method I see proposed from time to time. Although I’d give good money to see a sword-juggler version of pie pastry making.

But I digress.

The last step in the dough prep [what a nice little jingle that makes] is the addition of some icy liquid, traditionally, water (6-8 tablespoons). I’ve heard many a recipe in recent times suggesting that vodka is a great substitute for the water, because it creates the proper steam for building flaky pockets in the baking pastry but evaporates more completely, leaving things nice and crispy in its wake. My tiny brain said several things in response to this: 1 – if alcohol is good in it, why not flavored alcohol that might add to the pastry’s taste? 2 – apples are spectacularly good friends with caramel; why not something with a hint of caramel to it? 3 – if I use some dark rum and the pastry experiment is a noble failure, will not a splash from the now-opened rum bottle be far better consolation to the birthday boy and me than a splash of ice water???

Well, that’s settled, then. Of course you with any scientific bent whatsoever know that this ‘recipe’ is/was bound for self-destruction, lacking sufficient glutenous binders, but since I am in no way opposed to a good crumb crust, I didn’t worry overmuch that it would be inedible, only knowing that it would clearly be no competition for any of my gifted predecessors’ work. I dutifully froze the pie crust shell when it was formed and docked, then glossed it with some heavily sugared whole-egg wash shellac before putting it in the oven at a moderate temperature [remember, out there, that my oven is a glass-blowers’ kiln wannabe and incinerates nearly all things at their prescribed temperatures, so you’ll have to do your own research for temperature ideas; after all, what I’m describing here is an unsuccessful attempt at GF pastry anyway. Enough dallying; I shall cut to the chase. The crust still melted into inglorious nothingness, and I took it out in its toasty yet depressively slumping state, thought to add another egg and some flavorings and steam that sucker into a semblance of a Hasty Pudding, a last-ditch attempt at forcibly altering its apparent ennui to an ‘Ah, oui!’, if you will. At least I could get some snacking out of the whole mess. Which, naturellement, I could not do in the least, as it was so powdery in its anti-piecrust form that with additives it was bound to simply become cement. Yes, this might have made a fine doorstop, but really, who needs the aggravation.

Though I’d shed any delusions that this pastry was going to be a starry delight, I went ahead and made a pretty fine pie filling and figured we could eat it in, out of, with or instead of a store-bought piecrust when the time came, and given the disaster I’m glad I did. I’m savvy that way.photoThe pie filling: three apples and one pear, pared and cored and chopped/sliced (I like to mix the textures for variety), tossed with a hearty splash of lemon juice, about 2 tablespoons of minute tapioca, a hefty pinch of salt, a teaspoon of vanilla bean paste, a big teaspoon of Vietnamese cinnamon, and small amounts of ground mace and cardamom and cloves. I glued it together with a quarter cup of ready-made all-apple applesauce. Adding, as is my fat-craving wont, a dollop of about 2 tablespoons of butter, I cooked the lot until just tender and left it sitting covered on the counter for later. And yes, because I am also the queen of laziness, I did the cooking in the microwave. It works great and takes the over-the-cooktop sweating out of making pie filling when I’m already busy clowning around with my three-ring circus of a pastry experiment. There’s only so much humiliation any one kitchen fool can take from one simple dish.photoPlus, if there’s no store to be shopped for ready-made pastry and all else fails, a freshly made fruit pie filling makes a really dandy ice cream sauce. And the next best thing on our list of favorite foods is ice cream.

Foodie Tuesday: Getting a Menu Transplant

It’s not what it used to be, moving to a different place. The world is so much smaller than it once was! We talk via computer and cell phone as though we were sitting right next to each other–and sometimes when we’re sitting next to each other. Language and culture and history are all getting a good mash-up in this shrinking world where we live.

One genuinely wonderful aspect of this not-entirely-perfect scenario of homogenization is that we have access to so much that was once unreachable to everyone but the most extremely far-flung intrepid explorers and have commonalities that our ancestors could never have dreamed remotely possible. Not least of all, we can indulge in the joys of cuisines and ingredients from places we can’t even pronounce, let alone afford to visit.

Most of these regional, national, racial, cultural treasures, by virtue of being intermingled with and sampled by so many others to such a degree that sometimes it seems something learned from the Chinese by the Dutch traders and then passed along to their colonial outposts in the south seas, who in turn brought it along when they immigrated to North America, well, these ideas and arts and recipes have been so transformed along the way that they, like the initial message in the old game of Telephone, are utterly new inventions by the time the Chinese ever experience them again. And yet, in a happy twist, we who create and share the first iteration often fall in love with it and repeat and refine it until it becomes part of who we are, so it’s not wholly lost in the translation, either.

For someone who grew up in one part of the vast American patchwork of a country and experienced East Coast specialties, Southern cooking, Midwest traditions, and Southwest cuisine as being no less foreign in their ways to my Northwestern experience and palate, it’s always been a pleasurable study to try out the fabled deliciousness of Other Places. So while I’ve long loved Chinese and Dutch and Polynesian and Italian and German and Thai and Indian and North African foods of various kinds, it’s no less exotic and thrilling and delicious to sample the comestible culture of different regions of my own homeland.

Still, it’s been an entertaining and tasty part of the adventure of moving from Washington state to Texas that I’m experiencing Tex-Mex and Southern and cowboy cuisines in places of their origins and that’s mighty rich learning and dining, too. So I’m more than happy to indulge in all of those special items here anytime I can. But you know me, y’all: rarely do I go into the kitchen without bringing my own machinations and deviations to the party, so I am more than likely to emerge bearing platters and bowls filled not only with classic Texan foods but also with Texan foods as filtered through Washingtonian hands, perhaps with a hint of Chinese cookery here, Dutch baking there, Polynesia and Italy and Germany and Thailand and India and North Africa and all of my other palatable favorites making inroads and appearances whenever I see fit.

Foodie Tuesday: Once Cooked for Eight Equals Four Times Prepped for Two

Roasted cauliflower and red capiscum, sautéed celery, steamed green beans–what do they have in common? A new ‘recipe’ for dinner’s vegetable dish, apparently . . .

The complication, if there is any, of having a household of two (or one) is that so many foods, dishes and meals are easier to prepare in larger quantities than are appropriate or even desirable for a single meal. It’s very easy, if planning isn’t finely tuned, to have things spoil and go to waste before we’ve plowed through them at our own pace. The upside of this very problem, though, is that if I do plan reasonably well (and have a little luck as a side dish) I can make several meals out of little more than one prep.

I do this, in part, via the method of complexification and conglomeration. The one or two elements remaining after one meal get combined with each other, with some new element or ingredient from the next meal’s intended menu, or both. Yes, it’s quite possible and even sometimes preferable to simply repeat a dish as-is, especially if it’s already its own elaborate concoction. But often, things seem a little less tired and tiresome if they appear in new guises each time so as to stimulate the palate, if not the imagination. So the small amounts of leftover vegetables from lunch and dinner the last couple of days may find themselves married in a new mixed-veg medley with a little sauce or seasoning that helps them play together as nicely as possible and suddenly, they’re not just two spoonfuls of This and a handful of That but an actual, sort of, recipe.

photo‘Mains’–the central or focal items on the meal’s menu–are seldom hard to incorporate into some new iteration of a main dish. Even when they have already been prepared with a hard-to-ignore or -disguise sauce or presentation, they can find new playmates on the plate next time they head to the table. Roasted chicken, for example, whether homemade or grabbed ready-roasted on a busy day as one flies through the grocery store, is a truly marvelous ingredient when it comes to flexibility. Once seasoned or sauced distinctively, it can pose a slightly more complicated puzzle for renewal, but even then, if the dish is well liked once it’s pretty likely to be popular on a second visit.

So the chicken, whether it was already dressed in the satay-like peanut sauce–I took a shortcut with a pre-made one this time–or not–we liked it well enough to use the same pre-made sauce at the second meal even though it was not already on the chicken–can be reincarnated as a different dinner altogether simply by changing its context. One day, it’s served with a very simple wedge salad dressed with citrusy vinaigrette and a tangle of Pad Thai style rice noodles seasoned lightly with rice vinegar, a squeeze of lime juice and a splash of soy sauce and sprinkled with black sesame seeds.

photoNext day’s ‘satay’ is served with butter-steamed green beans, fresh cold apple slices and fried rice made from–yes, you guessed it–the fridge stash of jasmine or Basmati rice previously cooked up in broth and now pan-toasted until almost crisping with Persian lime olive oil, soy sauce, a touch of raw honey and a handful of chopped sushi gari (pickled ginger, if you somehow haven’t yet noticed, is one of my favorite seasonings for practically everything!). A sprinkling of white sesame seeds, just for a little visual contrast with yesterday’s offering, and there’s Chicken Pseudo-Satay 2.0 ready to be eaten.

And while there’s certainly nothing that says dessert is a required part of every meal, some of us kind of think of it as a specific food group, so even for dessert it’s nice to have some fine ‘recyclable’ ingredients for whipping up something to finish the day’s eating nicely. One of the things that very regrettably can go to waste far too often in a small household is fresh produce, and when I’ve a beautiful batch of fresh fruit on hand I can’t bear to think it will spoil before we can reasonably eat it all. So a large ‘find’ of sweet fresh strawberries, though it was far too great a quantity for two people on the day it was at its peak, got cleaned, sliced and frozen until the other day when it beckoned to me, siren-like, and I blended it thoroughly with a little whole-milk yogurt, splashes of vanilla and rosewater, a tiny pinch of salt and a bit of honey, poured it into a flat sealable container and froze it until it became a brightly fruity semifreddo or granita of sorts for later consumption.

photoNo matter what the small tidbit, most leftovers that are not on the edge of spoiling really do beg for a kindly reinterpretation before we give up on them. Once I get fully in my Friendly Frankenstein mode and think hard about how to zap new life into worthwhile remaindered ingredients, it’s only a matter of letting the locals trade their pitchforks for dinner forks and we can all remain good friends without fear of monstrosities. Foodie Tuesday: All about the Ingredients

photoI’ve said it before, and lots of food experts smarter than I am have said it lots of times before I ever did: good food preparation starts with good ingredients. No amount of genius and skill will make a great meal out of so-so ingredients, let alone out of bad ones. And me, I have a modicum of smarts and very modest, though for a lazy goof-off like me, surprisingly patient skills. So yeah, I can get the job done, as long as I have some excellent ingredients in hand.

photoStarting with salt. One of the most indispensable of delights in the entire pantheon of foods and culinary assets from its first discovery, good salt in just the right quantity is the First Rule of Yumminess in many, many a dish. But, hang on, salt should still often be the last ingredient applied. Tricky, no?

photoThe meal, however, if it’s with fun guests on hand and stretching a little over the course of the day or evening, well that should begin with a little taste of something nice. For the other day’s dinner guests, who were indeed a whole lot of fun, the starters were simple enough, and already on hand: the crackers I made (and posted) last week, the olives I’d previously bathed in sherry and olive oil, and smoked almonds, plus a few chilled prawns with dill-enhanced cocktail sauce. A fresh, cold batch of light Sangría:

Blushing Sangría

Two 750 ml. bottles dry rosé (I used a nice dry Pinot Noir rosé by Toad Hollow), plus 1 bottle of sweet white wine (I used a bottle of Moscato), 1/4 cup of Amaretto, 1/4 cup of Himbeergeist, 1/2 pint of fresh raspberries, 6 small or 3 large fresh peaches, 1 teaspoon rose-water, 1 teaspoon vanilla, 1/4-1/2 cup of light agave syrup or raw honey. Stir gently and chill thoroughly before serving.

The peaches I bought were an unexpected mix of half overripe and half underripe fruits, so I peeled and sliced the underripe pieces into the Sangría, where I’d already immersed the raspberries, and the too-ripe ones I pitted; I put the mushy peaches and all of the skins from both kinds into the blender with a bunch of the liquid ingredients, blended them all thoroughly and sieved the pulp into the Sangría, so I still got all of the mileage of flavor and color from the peaches, if a little less sliced fruit. In the end, it was plenty drinkable, so all was well in our pre-prandial world.photo

photoThe meal needed vegetable balance, of course, so I kept the ingredients to a fair minimum again and the flavors simple. Why mess with good contents? A mix of heirloom tomatoes and red cherry tomatoes made a simple but flavorful topping for romaine lettuce with a couple of simple salad dressing choices. Sweet corn, freshly pared off of the cob, was gently and quickly warmed in butter. And some delicate asparagus was steamed with a little soy sauce, a little plain rice vinegar, a very small dash of toasted sesame oil and a sprinkling of sesame seeds.

photoThe main dish, which I’ve undoubtedly mentioned in previous posts, was our old favorite household standby of Smoked Salmon Pasta. Not even a true recipe, really. Dearest John, I did not hand-craft my pasta. Yes, I bought refrigerated fresh fettuccine. Would that I’d had you supervising the party, not to mention in charge of the pasta-making, this element would indeed have been more, erm, elemental. Not to worry. Some day I shall reform. Meanwhile, a decent store-bought fresh fettuccine is not such a bad thing when dressed up just a leetle bit with smoked salmon cream. Simmer about a pint of heavy cream until it thickens to a nice sauce thickness, add about 1/4 teaspoon of freshly grated nutmeg and 1/4 teaspoon ground white pepper, 1 cup of broken up [hot smoked] alder smoked wild salmon, and a good splash of lemon juice. Toss gently with the freshly cooked and drained pasta and serve.photoThere are only two main high-quality ingredients needed to complete a pretty good party with all the rest of this, then. Dessert, naturally, should be offered–a bit of sweetness to follow all the preceding, and stretch as far into the evening as can be managed by all. But most significantly, the last essential ingredient of the gathering is, well, the gathering. The good company. We had that. Good enough company to want to stretch out the evening. So there was just a touch of dessert. Fresh strawberries and, you guessed it, chocolate.

photoI never said I was original in my menu planning. But I am really good at putting myself in excellent company, and that’s always what the party is all about. There you go: my real culinary talent is cooking up a right magical blend of outstanding people and enjoying the delights that result from the combination. Too bad there’s no cookbook out there that teaches that–no, wait–every good cookbook in the world gives guidance for just this art. As these good books teach us, choose your excellent ingredients wisely, food or company, and you will brew up a marvelous party.

Foodie Tuesday: The Element of Surprise

One of the particularly attractive things about learning of a new cuisine or recipe is the way that it can introduce unexpected ingredients to mind and palate. Things that seemed commonplace or familiar are suddenly tinged with mystery, filled with puzzles and questions never before imagined. So much recombinant mischief can be made when a new ingredient–or a new use for one I thought I’d known–comes into play.

Tomatillos

I’ve long known the delights of tomatillos. Salsa verde is a pleasurable variant of that endlessly flexible family of Mexican sauces best known in their tomato form, hot or cold. Usually made with chopped or pureed tomatillos in combination with onion, jalapeños, chiles, cilantro and whatever additional spices or lime juice the maker uses for her trademark blend, salsa verde brings a slightly lemony brightness of flavor and a zing of lively green to the plating of whatever magnificent assemblage of Mexican cuisine is in hand. As I love putting fruits of various kinds into my salsa cruda (or pico de gallo, the rough-cut raw and chunky form of salsa) for the bright, colorful, juicy and distinctive twists they can introduce to the party. Fruits are such glorious foils for spicy and savory foods that their addition has been popular for far too long for even a venerable geezer like me to credibly claim credit for pretty much any such combination. This is certainly a great reason to love tomatillos in spicy salsas.

The big surprise, for me (again, blame it on my innocence; blame it on my lack of smarts; blame it on the bossa nova) is that it turns out green is not the only color in which tomatillos ripen. So I bought these seeds for purple tomatillos, too, in high hopes of having an eventual opportunity for making some groovy purple salsa cruda. So cool! Unfortunately, the weather fairies of Texas had a little different slant, this summer, on the whole project and the poor little tomatillo plants, purple and green, couldn’t quite make it to full ripeness while being simultaneously strangled by drought. Pity. But one day I will make it happen. Then you can look for me to side my grilled salmon with a nice salsa cruda compounded of purple tomatillo, fresh peach, jalapeño, cilantro, lime juice and jots of salt, pepper, cumin, cinnamon. Fingers crossed!

How nutty is it that I didn't know people could make and use acorn flour!

There are so many other magical goodies around in the meantime, things not so seasonally sensitive perhaps, that there’s no worry about going hungry while waiting. Flours, for one. Asian, Native American and other foodies have already known for eons that acorns can be a source of jellies, cooking and baking, not to mention much-needed nutrition in times of scarcity. Me, I had no idea that acorn flour is useful for so much in the non-squirrel kitchen. But now I’ve acquired a small stash of the stuff so I can remedy my ignorance soon. Yes, acquired–bought–I have no intention of being so marvelously industrious as is required for the long and involved process of soaking out the tannins and preparing the acorns for consumption when I don’t even know how successfully I’ll use the flour, let alone how compellingly palatable the results will be. Time and experimentation will tell. Promise I’ll keep you posted!

On the heels of that particular discovery, of course, I went off on an alternative-flour tangent and hunted for others of interest. I’ve done a bit of baking with almond flour before (almonds ground up, but not so far as to be turning into almond butter, a whole other sort of ingredient altogether and tasty and useful in its own right) and coconut flour as well, and both are godsend finds for one who’s wanting to reduce or eliminate grain-based flours for any reason in cooking and baking. I certainly like that they’re both mild enough in flavor to work for innumerable purposes and are able to be adapted to a large number of functions in different recipes. The next surprise flour that popped up on my radar was mesquite. Say, what??? Making flour from the leguminous seeds of the nearly unkillable weed tree that drives ranchers ’round the bend with its tire-puncturing spines and water-hogging monster tap-root? Well, proponents say mesquite meal has a nutty, “sweet, earthy taste with notes of cinnamon, molasses, and caramel”hard to argue with the allure of that. Needless to say, I look forward to seeing what can come of such a distinctive sounding ingredient.

A rose is a rose is a remarkable herb . . .

Consider the rose: what has long been one of the most favored flowers, universally admired for its varied beauty, perfume, and rather astonishing adaptability to climate and environs is being celebrated as the herb of the year this very year. Rose water, candied rose petals, rose hip tea, rose petal preserves, classic Turkish Delight–the list of rose-based foods has been building over centuries and only adds to the popularity of this queen of flowers. But most of that sort of thing was far outside the ken of a girl growing up in modest middle-class America, and didn’t really attract my attention until I was well into adulthood. Even then, I learned that as delicious as the rose is, a little can go a long way. So as I was contemplating my angle for this post and thinking about how fascinating it could be to yet discover previously unimagined ways to invite the rose to the dining table and began to contemplate what numinous form that idea might take. What did I do? Like any culinary detective-wannabe of the modern age, I Googled, of course. I typed in “rose as herb” and there before my very eyes appeared a handy page trumpeting the rose as Herb of the Year 2012. You call it lazy detective work, I call it kismet. Po-tay-to, po-tah-to. –Say, wouldn’t sweet potatoes be interesting prepared with a faint infusion of rosewater, some white pepper and a bit of fresh goat cheese whipped in? Or is that all old hat and I’m just showing off my ignorant bumpkin-osity once again? Never mind, I’m going to get me some of that Herb of the Year and have some fun. Ladies and gentlemen, spoons up . . .

Foodie Tuesday: She’s Completely Nutbar, but isn’t She Sweet?

There’s little that can’t be improved by the addition of a sticky slick of raw local honey. I’ll concede that there might be something, but it doesn’t come to mind immediately. I could contentedly eat spoonfuls until comatose if it weren’t for the smidgen of good manners and even smaller atom of good sense preventing it.

Today’s supper was one of the times I restrained my sugar-rush inclinations, since I was making R’s favorite coleslaw and, with him persevering toward complete blood sugar control without the aid of medications, who am I to stand in the way of such valor? So I made the slaw with a natural non-sugar sweetener. But I still slipped just a hint of sugar into the mix, because the salad wouldn’t be entirely his favorite without his favorite add-in. It’s about the easiest ‘dish’ to throw together, if you can actually call something so ridiculously simple a dish. I’m no purist, so if you have strong Feelings about everything being homemade, organic, locally sourced, and so forth, you’ll probably want to squint a little during the next section to avoid unnecessary annoyance and then revise as needed to meet your needs.

Stupid-Easy Sweet Cole Slaw

Throw together everything ‘to taste’: Shredded cabbage (yeah, I’m often wonderfully lazy and use the pre-shredded slaw mix with red and green cabbage and carrots); lime juice, sweetener (honey is, of course, wonderful–or dark agave syrup, or sugar of any kind, whatever floats your cabbage-eating boat); a spoonful of mayonnaise (I’m still fond of good ol’ Hellman’s classic artery-hardener); add-ins.

So: cabbage, lime juice, sweetness, mayo and Fun Stuff.

The add-in of choice in this house is minced pickled sushi ginger.

Other goodies sometimes join the party: sesame seeds, toasted sliced almonds, chopped apple . . . whatever fun yummy junk is on hand, pretty much. It’s the ginger that I think of as the personality of the House Slaw, and anything that complements that is welcome along for the ride. But most of the time, it’s just the basic ingredients chez nous.

It was the other day that I got my honey fix. The day I went Nutbar. When the man of the house is away at any of his various work-related salt mines, I indulge in both foods that Mr Supertaster can’t or won’t eat and also in a bit of sugary madness. I made some chewy granola-style bars that work pretty nicely as a breakfast or brunch munch, especially with a nice spoonful of thick Greek yogurt drizzled with the aforementioned lovely honey and a toss of crispy carrot chips.

You’re going to sense a trend here: I’m all about the lazy approach. I love to eat what tastes delicious to me, but I have to really be in a certain rare mood to get into the groove of fixing super elaborate and labor intensive foods. More often I’m pleased to spend a day or two of heavy lifting in the kitchen in order to ‘put up’ a big, divisible, freeze-able batch of something that we can dig into at will over the next however-long. A slow cooker loaded with broth fixings is a common enough happening, mainly because I can use the resulting broth so many different ways, and also because it takes so little effort in total to throw a batch of prepared bones, roughly chopped mirepoix, herbs and spices and the like into the cooker and let it go for a long, slow simmer. I’ve got the straining thing down to a science, having learned to line a big pasta-strainer pot with a clean flour sack dish towel, spoon the skeletal remains out of the broth with a big sturdy spider, and dump the rest of the crock into the lined pot. Then all I have to do is hoist the pasta strainer high enough to lift out the dish towel by its corners, give that a quick squeeze to get the rest of the soupy goodness to flow through, empty the grisly remains in the trash, and pour up my broth for cooling. Lots of mileage off of a very humble process and the unfussiest of ingredients.

About those Nutbars. Again, easy-peasy. Simple contents, very simply prepared, not difficult to store, and quick-as-a-bunny to grab and nibble.

Going Nutbar

Ingredients: nuts, seeds, dried fruits, butter, spices, whey protein powder and gelatin, sweetening and salt.

I filled my trusty Tupperware 8-cup measuring pitcher with about 6 cups of mixed almonds (whole, raw), roasted/lightly salted macadamia nuts, dried dates and figs and apricots, and a handful of candied ginger, and filled in the gaps between all of them with about 3 good scoops of vanilla whey protein powder, a handful of raw sesame seeds, and a healthy dose of cinnamon with hints of cardamom, mace and cloves. I pulsed all of that mix in the blender in batches until it was all pretty well reduced to a chunky flour. Then I just mixed in as though for a very dense dough: 3 big tablespoons of gelatin melted in water (you can just leave this out or use agar agar if you’re vegetarian, but I like the chew and the added nutrients available in either of the add-ins), a little sweetener (I used a splash of sugar-free hazelnut syrup that I have around, just for the flavor), about 3 tablespoons of melted butter, and a bit of Maldon sea salt. All almost quicker to do than to record here.

The rest is finishing: line a cake pan (I used my ca. 10×14 Pyrex baking dish) with wax paper or plastic wrap, press the “dough” into it evenly, cover with more of the wrap, and (if you’re a little shaggy on the pat-in like I am) give a quick flattening treatment with a jar or can as your pan-sized rolling pin. Stick the pan in the refrigerator overnight and slice the bars up for storage next day. I cut them in granola bar configuration since that’s what they resemble a little. The bit of butter means they don’t stick together very badly, so I laid the bars on edge right next to each other with wax paper between layers. Some are lying in wait in the freezer, and the rest are being gradually eaten out of the fridge, with or without yogurt, honey, carrots . . . .

Did I mention honey? Guess I’m just a sucker for sweet things. Must be why I love you so.
