If It’s Wednesday, This Must be Foodie Tuesday Deja Vu

Shall I compare thee to a summer’s day? Why, yes, if you are a fresh berry. Those sweet little nuggets of juicy goodness are the very epitome of summertime’s joys, and the longer we can extend the berry adventure by means of preserved, frozen or baked goods, the merrier. I’ve already rhapsodized about my mother’s justly famed raspberry pie (the mystic quality of her ethereal pie crusts a deservedly notable part of the equation, in the interest of full disclosure), and she made many a jar of equally brilliant raspberry jam over her wildly productive years of canning and preserving. I will never be her equal in either of these arts.photo

I do, however, have enough fondness for some berries that I will gladly binge on them while their season lasts, and far beyond, in whatever forms are available, because I can practically feel the vitamins rushing into my cells when I do, and more importantly, because they taste so fabulous and are such great utility players on Team Food. On their own, they are magnificent and refreshing. In salads, a divine break from any leanings toward excess of greens. Think, for example, of a marvelous mix of butter lettuce, Romaine, toasted sliced almonds, shavings of fine Reggiano cheese and a generous handful of raspberries all happily commingling with a light creamy fresh thyme dressing. Transcendent! Fruit salad melanges practically insist on having a handful of berries gracing them when the season is right. And I’m told by those who eat blueberries that no berry surpasses them for muffin or pancake making. Me, I’ll gladly stick with Swedish pancakes piled up with whipped cream and fresh strawberries when it comes to the breakfast berry-ations. And of course there are endless possibilities in the universe of fruit smoothies when it comes to berries, whether you’re in the camp that must strain out the seeds or among those who appreciate the fiber therein.

And don’t get me started about desserts! The natural affinity fruit has for sweet foods is showcased wonderfully in so many after-dinner or coffee-time treats that a mere post could hardly suffice to even skim the list. But some goodies do come immediately to mind: strawberries dipped in chocolate; cloudberry cream, as I learned to love it when prepared in the seconds-long fresh season by my brother-in-law’s late mother; blackberry tapioca pudding. Pies, tarts, and crumbles, oh my. A heap of berries and a gentle sluicing of vanilla custard atop a slice of toasted pound cake. Honestly, few ways to go awry.

Still, the berry, with its pristine, bright, zingy flavor, and the hints of sweetness underlying it, makes a superb foil for savory dishes too, not least of all meats and seafoods. One of those ways to slip berry-liciousness into the main dish is to pool any of the multitude of possible berry-enhanced sauces and purees under, over or alongside a portion of entrée. I’m fond of Beurres Rouges ou Blancs made with wine, butter and berries cooked down to dense, flavorful stupendousness. Hard to argue with, say, a blackberry-Cabernet sauce served with lamb or duck, and I can only imagine that a dry, red-fruity Rosé would pair gracefully in such a sauce with raspberries or, dare I say it, salmonberries, to accompany a roasted filet of salmon or breast of pheasant or grilled chicken. Champagne Beurre Blanc is hard to resist with shellfish; why not top that with roasted strawberries and a quick grind of black pepper?

As you can see, what happens when I get the mere image of a berry into my tiny brain is that it plants the seeds for extensive food fantasizing. And that is hardly a bad thing, my friends. Bury me in berries. I could do much worse.

Foodie Tuesday: Once Cooked for Eight Equals Four Times Prepped for Two

Roasted cauliflower and red capiscum, sautéed celery, steamed green beans–what do they have in common? A new ‘recipe’ for dinner’s vegetable dish, apparently . . .

The complication, if there is any, of having a household of two (or one) is that so many foods, dishes and meals are easier to prepare in larger quantities than are appropriate or even desirable for a single meal. It’s very easy, if planning isn’t finely tuned, to have things spoil and go to waste before we’ve plowed through them at our own pace. The upside of this very problem, though, is that if I do plan reasonably well (and have a little luck as a side dish) I can make several meals out of little more than one prep.

I do this, in part, via the method of complexification and conglomeration. The one or two elements remaining after one meal get combined with each other, with some new element or ingredient from the next meal’s intended menu, or both. Yes, it’s quite possible and even sometimes preferable to simply repeat a dish as-is, especially if it’s already its own elaborate concoction. But often, things seem a little less tired and tiresome if they appear in new guises each time so as to stimulate the palate, if not the imagination. So the small amounts of leftover vegetables from lunch and dinner the last couple of days may find themselves married in a new mixed-veg medley with a little sauce or seasoning that helps them play together as nicely as possible and suddenly, they’re not just two spoonfuls of This and a handful of That but an actual, sort of, recipe.

photo‘Mains’–the central or focal items on the meal’s menu–are seldom hard to incorporate into some new iteration of a main dish. Even when they have already been prepared with a hard-to-ignore or -disguise sauce or presentation, they can find new playmates on the plate next time they head to the table. Roasted chicken, for example, whether homemade or grabbed ready-roasted on a busy day as one flies through the grocery store, is a truly marvelous ingredient when it comes to flexibility. Once seasoned or sauced distinctively, it can pose a slightly more complicated puzzle for renewal, but even then, if the dish is well liked once it’s pretty likely to be popular on a second visit.

So the chicken, whether it was already dressed in the satay-like peanut sauce–I took a shortcut with a pre-made one this time–or not–we liked it well enough to use the same pre-made sauce at the second meal even though it was not already on the chicken–can be reincarnated as a different dinner altogether simply by changing its context. One day, it’s served with a very simple wedge salad dressed with citrusy vinaigrette and a tangle of Pad Thai style rice noodles seasoned lightly with rice vinegar, a squeeze of lime juice and a splash of soy sauce and sprinkled with black sesame seeds.

photoNext day’s ‘satay’ is served with butter-steamed green beans, fresh cold apple slices and fried rice made from–yes, you guessed it–the fridge stash of jasmine or Basmati rice previously cooked up in broth and now pan-toasted until almost crisping with Persian lime olive oil, soy sauce, a touch of raw honey and a handful of chopped sushi gari (pickled ginger, if you somehow haven’t yet noticed, is one of my favorite seasonings for practically everything!). A sprinkling of white sesame seeds, just for a little visual contrast with yesterday’s offering, and there’s Chicken Pseudo-Satay 2.0 ready to be eaten.

And while there’s certainly nothing that says dessert is a required part of every meal, some of us kind of think of it as a specific food group, so even for dessert it’s nice to have some fine ‘recyclable’ ingredients for whipping up something to finish the day’s eating nicely. One of the things that very regrettably can go to waste far too often in a small household is fresh produce, and when I’ve a beautiful batch of fresh fruit on hand I can’t bear to think it will spoil before we can reasonably eat it all. So a large ‘find’ of sweet fresh strawberries, though it was far too great a quantity for two people on the day it was at its peak, got cleaned, sliced and frozen until the other day when it beckoned to me, siren-like, and I blended it thoroughly with a little whole-milk yogurt, splashes of vanilla and rosewater, a tiny pinch of salt and a bit of honey, poured it into a flat sealable container and froze it until it became a brightly fruity semifreddo or granita of sorts for later consumption.

photoNo matter what the small tidbit, most leftovers that are not on the edge of spoiling really do beg for a kindly reinterpretation before we give up on them. Once I get fully in my Friendly Frankenstein mode and think hard about how to zap new life into worthwhile remaindered ingredients, it’s only a matter of letting the locals trade their pitchforks for dinner forks and we can all remain good friends without fear of monstrosities. Good eating!

 

Foodie Tuesday: Big Pigs Like Figs

photoBig pigs: who, me? Yes, I’ve admitted to it many a time. Being a food-loving piggy myself, and being terribly fond of the gifts of the pig to food-lovers. I fully understand that vegans, vegetarians, Muslims, Jews, those with health restrictions, and any number of others have valid, legitimate and honorable reasons (philosophical, physiological, religious, ethical, etc.) for not eating pigs; my own litmus test for foods is also personally derived and has much more to do with how much respect has been given the plant or creature in question in its tending while alive, in its preparation when being readied to eat and, especially in how it is used for sustenance and, often, the building of community. So no, I would never dream of knowingly serving pork to any of the aforementioned friends. But I am content to obtain and prepare and consume it myself with respect and gratitude. I have no wish to offend, any more than my abstemious friends would judge me for my being a carnivore. Those who wish to do so are of course very welcome to skip this post entirely.

Meanwhile, back at the board, I will say that I am often quite happy to eat vegetarian style too. I never feel deprived when the food pleases my palate, no matter what the range or contents of the menu, and I can easily be just as blissful about a superb salad, an ounce of outstandingly fresh pistachios, or a pan of colorful mixed roasted vegetables (on tonight’s menu again, as it happens). And good fresh fruit, well since that combines the flavor and vitamins and juicy joys of good health-giving food with the sweetness of dessert, why, you know that I am happy to plunge right into that when it’s offered.

No surprise, then, that I was so delighted when that scrawny little $4 twig I bought this winter first burst into leaf and then, to my great amazement, produced lovely, plump Brown Turkey figs. It inspires me to think that perhaps I shall be able to grow some produce of other kinds if I put my mind to it, despite the challenging temperatures and soil character here in the roasty-toasty land of north Texas.

I am *not* the only ham in my kitchen.

But to return to my porcine loves, I have eaten pork in almost uncountable ways and have loved a great many of them. One standby favorite is a well-made ham. I will happily bypass any of those artificially ‘enhanced’ varieties that are injected with water and so many other, less savory, ingredients and often are processed to the degree that they are no longer recognizable as meat, let alone pork. But a good pit-smoked ham, well, there’s a sweet-and-savory treat of which I am immensely appreciative. I love oven roasted and glazed hams, too, even boiled ones, but I think my affections are most readily given to an unadorned and slightly fumy beauty right out of the smoker.

One of the benefits of being in Texas is that I do have access to a few places that produce such ethereal goodness. As a result, I can often indulge in a meal of simply sliced ham with vegetables or salad or, on a wintry day, perhaps with mashed or roasted sweet or russet potatoes. Or, as I did the other day, with a heap of fabulously fresh and sweet fruits. And of course any leftover bits may be tossed into other welcome meals of the same. Or into sandwich fillings. Or casseroles. Or, as on the day following the feast of ham and figs (and avocado and strawberries and pineapple), next mixed with minced roasted chicken, dill and pepper and stirred into eggs for a quick frittata. Because if ham is good one day in my kitchen, it’s probably a treat for three days in a row if I’ve shopped wisely enough.photoJust now, though, I guess I’d better dash out and check the baby fig tree to see if I can beat the raccoons to the next ripe piece of tree-candy.

Foodie Tuesday: Love is an Everyday Thing

photoOh, yes, Ladies and Gentlemen all, it is Valentine’s Day. At least, here in the good old US of A, where we constantly rebel against being told what to do and how to live our lives but are terrible sticklers for traditions that may or may not even suit our beliefs and needs. Now, celebrating the life–and, let’s face it, not-so-charming-to-celebrate death, since 14 February recognizes the officially accepted date of the martyrdom of St. Valentine by clubbing and beheading–of a possible whole group of Christian martyrs, who all have become conflated in the popular mind as one really nice guy who pitied and assisted the lovelorn, all of that is a matter of personal belief and taste, to be sure. Celebrating the highly adapted holiday of Valentine’s Day is one as well: as it’s been popularized, it’s a day for telling people we love them, filling them up with romantic food and drink and notions, showering them with flowers and sparkly gifts, and paying homage to our love in generally showier ways than usual.

There, my friends, is the rub where this stubborn old lady is concerned. I’m not really as curmudgeonly as all of this sounds however arguable my crankiness is on other topics. It’s just that I feel mighty strongly that if the love isn’t expressed on a fairly constant basis, in (as one might say) thought, word and deed, it means nothing whatsoever on Valentine’s Day, an anniversary, a birthday, or any other celebratory occasion no matter how the gifts and gooey treats are piled up and the lyrical words flow. It’s got to be the real, the every single day sort of deal, or it’s so much useless fluff.

photoThat said, I am among the biggest mush-meisters inhabiting the supposed real world, never tiring of being madly in love with the one person who’s crazy and silly enough to love me back in equal extremity. When we’re sitting at our respective desks down the hall from each other–which we have positioned conveniently so we can see each other across the way while working and maybe sneak a wink for no better reason than that after more than 16 years we still have a school-kid crush on each other–we are both inclined to chirp I Love Yous back and forth at intervals just because we actually do. He cheers me up when I’m feeling low and cheers me on when I’m flagging, chauffeurs me because I’m not fond of driving, works long hours to keep our accounts balanced, and tells me I’m smart and pretty like he really believes it.

So I am delighted to make a favorite dinner for him on Valentine’s Day. Appropriately enough, I can operate on the K.I.S.S. [Keep It Simple, Stupid] principal on this day of romantic silliness, because he likes things unfussy. So all he gets is a slab of tender, untrimmed Texas filet mignon, skillet seared in butter with salt and pepper (my blend of black, white, green and pink peppercorns and whole cloves) and a pinch of ground coriander, a handful of fresh-cut Romaine lettuce and some juicy tomato pieces and a few ripe strawberries, a flute of South African bubbly, and a piece of dark chocolate with toasted almond bits and crunchy salt in it. Couldn’t be easier. No recipes, no muss, no fuss, and because I made big steaks, we both have enough left over for steak and eggs in the morning.photoBecause romance is not a one-day deal, and expressing love should be the most important practice of the everyday.
