Foodie Tuesday: A Balanced Diet

Photo montage: Fun with Fruit & VegetablesI appreciate good health and all of the dietary elements that can determine whether I’m healthy, and if so, just how healthy I am. I know that diet includes not only the things I eat but how I combine them, when I eat, how much I eat, and many more factors that interact to create the ever-changing state of good health I seek. I realize, too, that nutritionists and scientists and other dietary mavens are always learning new things, and nearly always getting new ideas, too, some of which they can prove and others, not so much. That doesn’t stop tons of people, including me, from becoming obsessed, however temporarily, with the latest dietary trends and tweaking our diets without always considering whether those new, however ingenious seeming, ideas have anything to do with how our own bodies operate best.

Huh.

Yeah, I’m always thinking of new and better ways to make my diet more seemingly ideal for me, and I have some goofy thoughts on the subject at the best of times, and that’s the truth. What I can say in my defense is that among the relatively few things I have managed to learn in my lifetime thus far is that there is a whole lot more involved in my health and well-being than food.

I love when I can find the balance I need in any day by eating when I’m hungry, stopping when I’m no longer hungry, and focusing on getting not only a reasonable apportionment between protein and fat and carbs and vitamins and minerals and all of that dandy stuff. I love when it’s satisfying to my taste buds as well. Most of all, I love when that’s all fitted into a balanced diet of being with loved ones, going wonderful places, learning new fun things, and not least of all, of making art. There are always going to be theories, guides, charts, Rules and expectations about what constitutes the ideal way to eat, from the old spa cures that had people eating nothing but blandness or drinking rather large quantities of vinegary-dry white wine to the FDA-approved Food Pyramid, to the various independent dietary regimes from Scarsdale to South Beach, from Paleo to the Perfect Health Diet. I’ll outlive some of them, and many more will follow me. My budget and schedule, my taste preferences of the moment, and the company I keep, will continue to change my dietary wants and needs as well.

As long as I can keep listening to music, writing and drawing, and surrounding myself with great and interesting people, I will feel well fed.

Photo montage: Another Balanced DietI need to tell you that there’s one sure way to have just the right diet, at least if you happen to be me and visiting Vienna. You just wend your way down a couple of funny little narrow byways and find the welcome that waits for you behind the door of the Gösser Bierklinik. That’s right: a clinic dedicated to beer. If that doesn’t make you feel better, you don’t know a healthy diet at all, wink-wink. Hail, Austria! It’s really a lovely old, old restaurant—don’t miss the neatly labeled Türkenkugel, the cannonball reputed to have been shot into the place in 1683 and still enjoying the pride of place where it sticks out of, or into, the wall.Digital illustration: Bierklinik Highlights

But don’t get hung up on ancient history too much, or you will miss out on one of the best Wienerschnitzeln I’ve had anywhere, and I am a fan, so I’ve enjoyed a few. The Bierklinik’s is tender inside, lightly seasoned, crispy on the outside, and unadulterated with anything other than the requisite lemon wedge for squeezing a drop or two of extra sunshine on it. Fabulous. Combine that with some ordinary but blazing hot fries and a bracing drink of anything from water to the titular beer, to what our server assured me was the ‘ladylike’ way to have a beer, a Pfiff mit Schuss, or beer spiked with elderflower cordial—I can’t speak to the waiter’s assertion, not being so incredibly ladylike myself, but it was a light and sprightly accompaniment to the Schnitzel, and given the perfectly convivial group with whom we were dining on the evening I tried it out (my husband and I were with three delightful friends, but also joined eventually in conversation with the marvelous German couple and his parents who were sitting at the next table), it was no more, and no less, effervescent than the conversation. Foodie Tuesday: Breakfast of Champers

There’s an American breakfast cereal whose manufacturer advertises it as the Breakfast of Champions, inspiring many a skinny little kid over the decades to eat monstrous quantities of it in hopes of becoming an impressive physical specimen. The slogan also inspired things as diverse as a Kurt Vonnegut novel by that name and a wide range of decidedly non-healthful sounding food and drink combinations that mock the very idea, not least of all the hilariously infamous day-starter of Little Chocolate Donuts ‘advertised’ by John Belushi on Saturday Night Live many years ago.Photo: Arabic Choco-PuffsGiven how often and how utterly our concept of what constitutes perfect nutrition, health and fitness practices changes over time, it seems incumbent on any of us who care about our own well-being to figure out what suits our own bodies’ needs and wants and not slavishly follow anyone else’s regimen, no matter how magically ideal it purports to be. At the same time, you know me well enough to guess that I think every so-called prescription in the dietary realm—barring allergies or other potentially life-threatening pains—deserves to be broken on occasion. At the start of a day seems to me the perfect occasion for such hijinks, particularly if the breaking of the fast leads to mood-enhancement and a general tendency toward having a sunnier day. There were excellent reasons for the invention of Bloody Marys and Bellinis and Mimosas. Break out the champers for breakfast!

Photo: Holy Toast!Or, if you feel it necessary to legitimize your breakfast playtime further than you can by acknowledging the fruit and vegetable content of the aforementioned drinks (not least of all, the venerable fermented grape), I’m sure you’re as able as I am to find the good in any dish that cries out to you at the break of day. Little Chocolate Donuts? Why, not only do they contain the marvelous seed of the Theobroma cacao, and if you can’t argue for the food of the gods for breakfast, then I think you need more help than a mere menu tweak can give you, but they also contain sugar, a sure source of [however short-lived] energy. If you take things a step further, choosing a raised donut, you can argue that the live culture of yeast that begins raising its inflatable goodness to a frying-ready state is also bound to be fine feed for your inner biome and all its happy bacterial citizens.

Cake? Lest we forget, it very often has the proteins and vitamins of eggs, enriched flours, perhaps some buttermilk for further culture. Why restrict it to after-dinner eating, when we have less of the day in which to burn off its calories and possibly, less appreciation for its magnificence when we’re already full from the main meal? Throw in some nuts or dried fruits, some coconut meat, some cinnamon (who knows how true are the speculations on cinnamon’s superfood status)—and you could practically be breakfasting on medicine and having spa treatment before you even leave the house in the morning. There are plenty of people who have busily experimented their way to cakes and quick breads and donuts and all sorts of treats hiding, in their deceptively yummy midst, many clandestine vegetable and other supplemental ingredients to make them Better for You. So I’m going to keep eating chocolate at any and all hours of the day and night, cake with and without secret good-for-me ingredients, raised donuts and cake donuts, sugary cold cereals, popsicles, custards, ice cream, smoothies disguised as Protein Shakes, and any pretend-breakfast cocktails I can get my hands on whenever I feel the need. Foodie Tuesday: Drink & Shrink

photoWould that I could tell you that today’s post title implies I’ve discovered a miracle diet that allows me to become slinky and svelte by doing nothing but sipping cocktails, yet alas, this most sadly is not so. In fact, it’s a very safe bet that numerous cocktails are, like certain bras, nothing more than alluring cups full of doom, being bad for both health and sanity if sampled in inappropriate quantities and circumstances. But to steer closer to my actual point, I must confess that despite my many food-and-drink-related loves and obsessions, I do get quite hungry and thirsty for a healthier change on occasion.

Like now. I seem to have been on a bender lately, eating too often, too much, and too badly in general, and my body is complaining. It’s not that I have grown morbidly obese, thanks more to good genes and good luck than good behavior, but I have grown a whole lot closer to outgrowing my attire and decidedly closer, as well, to just not feeling so great. It makes me squirm when I think of how unfit I will be in short shrift if I don’t just stop being such a spoiled child around food. And I have it on good authority that being horribly unfit is not the way to insure a longer, healthier life.

Drat.

At least I know that I can still have delicious food, but even if it’s better for me, eating too many helpings of ‘Waldorf’ slaw (sweet cabbage-yogurt salad with chopped apples) is just as dangerous to my eating habits as too many helpings of pretty much anything.

I must throw a bracing dash of cold water on my enthusiasm for overindulgence and get myself closer to optimal comfort. I don’t care if that makes me model-thin or gives me fab abs or any of that superficially pleasing stuff or not; what I want is to feel my best and have a good shot at the whole ‘live long and prosper’ proposition. I know from experience that among other benefits of returning to a more thoughtful eating agenda, my appreciation of all that I do eat and drink increases greatly, to the point where a simple slice of citrus and a glass of pure, clean water is a pleasing sensory experience as well as thirst-quenching, and a complete meal becomes a feast. So much more satisfying in the long run.

And I do want a good long run of it, after all.photo

Foodie Tuesday: Guess My Weight!

photoI’ve always thought of those who focus on weight as being a little bit mean and, no pun intended, narrow-minded. There used to be people at the State Fair whose sole skill was apparently to guess the weight of passersby, and I could never imagine what purpose that served, most particularly what positive purpose it could possibly have. There are still plenty of places, notably supplement, nutrition and ‘health’ stores, that keep scales around for customers’ use, and again, that strikes me as unfriendly, since the aim seems to be to make people aware of their ‘improper’ weight so that they will purchase all sorts of cures and rescues from the proprietors. Yet another cruel use of the scale: humiliation and robbery. All perfectly legal and, the perpetrators would likely argue, well-meaning, as of course their goal is to save lives and make people healthy along the way. Sorry about the miserable portion of the transaction, y’all, but it’s necessary.

Well, yes, sometimes intervention’s the only tenable solution. But not nearly so often as one might think, if only when guided by the popular imagery of skinny-as-beautiful, as successful, as admirable, and anything other than skinny as not so. I’m well aware that to help one achieve and maintain good health over a long life, generally speaking it’s advisable to keep one’s weight in a range that is proportionate in a fairly specific way to one’s height, bone structure, and/or other physical criteria. But it’s also true that not only are there plenty of variables besides weight that are significant parts of the health and longevity puzzle but many people outside the ‘norms’ strictly in weight also survive and thrive and even live very long lives doing so. An additional truth: that beauty is widely, wildly variable in its manifestations, and in how we perceive it.

There is still the business about how my weight makes me feel, emotionally yes but more especially so, physically. I’m one of those fairly despicable people who never struggled with trying to weigh anything but what I did by simple default, but like most people (at least most of the privileged people I’ve known), I find that’s changing little by little as I age. So now, what little my weight changes has a more noticeable effect on how I feel. The bad news is that at long last, I do find it takes a little bit of effort to keep my weight in my own comfort zone. The good news is that, so far, it does take relatively little effort, because two small changes are starting to make it easier for me to predict what will or won’t work for me, in dietary terms.

Two small things: one, that I eat less heavily processed [‘junk’] food and see that more of what I do eat is thoughtfully prepared (i.e., not ‘junked up’ in preparation); the second, that I eat more thoughtfully. I simply don’t need to eat the quantities I eat, nor as often as I do so. Simple. Yet not. Because, of course, I’m your typical habit-ridden, easily tempted, food crazy creature, and I have grown up eating what I wanted, when I wanted, in whatever big batches I wanted, and without many consequences. Now that I’m subject to consequence it’s not quite an instantaneous transition to being smart about my eating, least of all about only eating when I’m genuinely hungry. I’m working on it. I feel better when I stick to it.

And I’m still not going to go hopping on the scale to weigh myself. How many pounds I weigh has nothing to do with whether my clothes fit the way I’d like them to or whether I feel attractive, and less than nothing to do with whether I’ll feel well and be healthy or I’ll survive for many years to come. So many factors play a part in that equation. I just want to help tip the odds a little in my favor if I can by eating a bit less, and a little bit less often, and when I do eat, eating things I really, truly enjoy, with mindful pleasure. More fun, and I hope, for a much longer time.photo

Foodie Tuesday: From GM to GF without Prejudice

photoYou know I’m not a vegetarian, let alone a vegan, nor do I on a regular basis obey or enforce any dietary edicts in my kitchen regarding the consumption of meats, fish, dairy, eggs, or practically anything else in the edible universe. But since I do respect the lives, health and right to believe what they believe about foods that other people have–even if the belief is patently ridiculous, like one that would, say, eat anything but my cooking (okay, there may be fine reasons for that one, too, come to think of it)–well, it means that I do think about what I eat. Surprising though that may be to anyone who has seen me hunched over my food like a half-starved grizzly just because I like it so much. Aside from the notion that I don’t mind being associated with a creature bearing (please bear with me) the wonderfully mellifluous and magical name of Ursus arctos horribilis, I can’t really make that claim. My body does express its likes and dislikes more clearly as I age.

This means that despite my blissful youth of eating every triple-scoop of ice cream that appeared before my glistening eyes without experiencing a noticeable twinge on my elastic waistband, I now find myself questioning whether a single scoop ‘every so often’ might threaten me with an equal and opposite seismic event should I waver too close to any fragile chairs or ice-covered ponds. That a stick of butter should probably no longer be considered an after-school snack. (Well, I thought about it, I’m sure.) Maybe even that the dreaded concept of Portion Control might in fact be a useful, if not lifesaving, one, particularly when applied to foods with calorie counts exceeding the sum total of my age, my IQ, plus my life savings in number. I’ll leave you to contemplate which of these numbers alone is the highest or lowest. And don’t tell me your conclusions, thank you.

Meanwhile, back in my kitchen, I stand contemplating yet another set of conundrums. I’m not convinced that a dramatic decrease in my intake of genetically modified foods is going to wildly affect my remaining lifespan or health, unless foods marked GM are in fact made by General Motors as engine lubricants and exhaust system cleaners. I’ll leave it to the more medically fragile and environmentally astute to deal with those concerns if I must. But I certainly think that if I have a reasonable choice between things grown with or without gene alteration and chemical additives and other forms of production hocus-pocus, I’ll opt for the less adulterated versions. And my gut tells me (this, more literally than might be delicate for full discussion here; suffice to say that I’m talking about both digestion and the expansion of my middle acreage) that wheat is not entirely my friend anymore, if it ever was. This is expressed primarily in a recognition that most of the wheat-based eating I have most loved over the years is also full of (mostly processed) sugar and rather high in not-so-nutritious calories and is therefore wonderfully addictive to me. I just plain eat more of what’s less good for me because it creates further cravings.

I’m gradually working to go gluten-free, or approach it more closely than I ever have before anyway, to see what cutting down on wheat or just plain cutting it out of the diet might do to simplify this one aspect of my food-related health and happiness. I’m learning to work with a number of ingredients that fill most wheat gaps in my taste, and I’m finding new stuff to like. Or is that bad? New foods to like, when I’m so ancient that I can’t just eat willy-nilly and know that there will be no consequences?photo

Here’s a simple little dinner that arose out of the experiment just recently. Small, tender (erm, check out the torn one, damaged by soft pieces of cheese) crepes made of egg, water, a touch of vanilla and a pinch of salt, folded over an uncomplicated filling of cubed roasted chicken warmed with sautéed celery and red capiscum and a whole lot of sliced brown mushrooms, all seasoned lightly with the bacon fat and butter in which they were mingled, a splash of broth, a freckling of black pepper, and a dash of Worcestershire. My beloved dinner companion was not desirous of anything further in his, so mine was the only crepe that had the queso fresco added. I think it works pretty decently either way.photo

For another easy little breath of fresh air besides merely leaving the little bit of flour out of the crepe mix, I varied our frequent-flying slaw addendum to try out a slightly different salad. Thinly sliced celery, shredded carrots and sliced almonds. A spoonful of ginger preserves, the juice of half a lime, and a couple of tablespoons of macadamia nut oil. Crunchy and clean and fresh, and a strong contrast to the soft textures and savory warmth of the crepes.photo

I’m not sure of it, but I think perhaps the meal was satisfying enough that it removed one iota of my natural craving for an actual dessert to follow it immediately. One iota, mind you. I can still envy those who can eat all the floury goodies they want without serious guilt or consequence. But there will be dessert. Many and many a time to come. It’s just that the desserts will be smaller than a triple scoop of yummy scrummy ice cream. And contain lots less wheat, I’m guessing. We’ll just see how all of this goes.photo

Foodie Tuesday: Keeping the Tank Full Makes Me Thankful

Let’s just say I’m not the most compliant or enthusiastic when it comes to trying to eat what I think I ought to eat. It’s not that I don’t love eating practically everything–it’s that I do–limiting my choices to what’s right at the moment seems amazingly hard to manage when I’d rather just eat what I feel like eating, in the largest possible quantities and whenever I’m so moved. Sadly, this is what gradually moves me toward the zaftig and less ‘peep show’ sexy than that of a Marshmallow Peep. While its High Season of springtime is ever nearer on the calendar, I don’t really fancy being the latter shape no matter how popular the treat is with other people as sweet-toothed as I am. In fact, I’d have nightmares about being chased around by lust crazed Sugar Zombies in a yellow snowstorm. The very thought!

So I’m going to see if I can’t reduce my carbohydrate footprint, so to speak, and eat things that stay with me in a more kindly manner, that is, in the form of longer-lasting energy and higher nutritive value and deeper savory satisfaction. Frankly, I’m not as worried about fats as I am about the quantity and quality of sugars I’m capable of packing away and have no real need of, nutritionally. So pardon me while I butter myself up, as long as I can learn to more nearly kick the carb habit.

Today I went for an easy start: steak and eggs, Tex-Mex style. I put a couple of cuts of steak in the Sous Vide cooker last night just before bedtime, and when we got going (at our respective times) today, each of us had a piece of medium-rare beef to sear off in the skillet when we were ready to eat. I browned mine in butter and while it rested momentarily on the plate, deglazed the skillet with some of the bone broth from the last batch, handily waiting for the summons from the fridge, and while the broth cooked down to a thin gravy I poached an egg in it. I topped it with a little gussied up salsa: I often buy a jar of Pace Picante Chunky salsa–a pretty mild type–and stick-blend part of it with a (yes, one) chipotle en Adobo, mixing all together for a slightly smoky kick. Then a spoonful of sour cream (didn’t have real crema on hand) and a spiff each of smoked paprika and some lovely crunchy Maldon sea salt flakes, and immediately stuck my fork in and got to work.

Thankfully, such a hearty brunch (I won’t lie to you about when I got up) holds up well when it comes to that Work thing, so I’m contentedly looking toward a 7 pm supper with nary a twitch. Well, okay, there is that completely hunger-unrelated humming in my candy molars . . .

Foodie Tuesday: The New Miracle Diet that will Give You X-ray Vision, Eidetic Memory and the Pheromones to Attract Every Sexy Human You can Possibly Want!!!

If the Perfect Miracle Food were the food you despised most, would you eat a barrel of it anyway?

I’m beside myself [Ed: yes, right over here] with ecstasy that we live in an age where we’re constantly receiving updates apparently teleported, straight from God’s lips, on new life-saving Superfoods and diet strategies that will bring about world peace and end the shortage of sporty convertibles in our time. I realize that as long as there have been hucksters and hyperbolists that could spell Snake Oil there have been such claims filling the air and jamming our brainwaves with unrealistic wishful optimism. Purveyors of serious science and common sense have both long since given up on the possibility of coming to a definitive answer to the perpetual question of what’s good for us to eat, at least one on which all sentient beings can agree. That never stops anyone from trying either to discover it or to convince us (with our remarkably flexible wallet-hinges) that they have.

But the modern info-bombardment wherein we swim encourages us to see, hear and believe an ever-noisier, ever more enthusiastic and far-reaching set of claims to this Truth. Amazing! Astounding! and the ever-popular exclamation that I so love, Incredible! (As if I can’t tell just from the obnoxious typography of the advert and the hilariously awful before-and-after unretouched photos that there’s nothing remotely credible to be found in the accompanying claims.) Scientists are almost as guilty of outrageous claims as anyone, in this environment where every research program has to compete for every dime with not only every other genuine researcher but also the whole phalanx of false prophets and their wonderful platinum-plated products. It takes only a tiny effort for the completely uninformed amateur to sleuth out at least two diametrically opposed studies on any given dietary claim that have produced what looks and sounds like fairly convincing data, so I am loath to do anything more dramatic than take it all with a grain of salt.

. . . and how do you prefer your sodium chloride: hickory smoked or deep fried?

Which, indeed, is what I will likely do. Hey, there are enough mutually exclusive authorities regarding how much sodium is permissible in whose diet and in what forms to keep a whole herd of elk dying in wait for the salt lick. I’m fond enough of being alive and not feeling like, say, I’m in imminent danger of keeling over with toxins squirting out of every pore of my body while I disintegrate to dirty swamp water like the alien in a 50s B-movie that I do try on the average to put things into my mouth with a modicum of moderation and thoughtfulness. I look for what seems to make me feel my best and work to include that in my meals rather than always succumbing to the lure of the luridly unhealthy.

It just seems to me that we have actually been living for a bit right in the middle of Woody Allen‘s Sleeper. Regardless of your view on Woody Allen movies, I’m nearly at the point where I think all school health classes should be required to see that film at some juncture in their studies just for the scenes where hero Miles Monroe is brought out of his cryogenic sleep and is coached by his attending doctors on how the understanding of health has changed in the two hundred years while he was snoozing on ice. There’s something almost eerily familiar nowadays when reputable researchers and doctors from every corner are admitting that perhaps not all of our longtime religiously held convictions about sugars, fats, proteins and all of those other pesky elements of edibles we fear and worship are exactly the truth, the whole truth and nothing but. That perhaps there is a bit more difference in how one person or another is affected, and how good or evil that might be.

All I can say is, it’s kind of a relief to think that I don’t have total control over my destiny through what I ingest, so I’m going to continue to consider myself a so-far live experiment subject willing to undergo certain tests to see what can be most deliciously survived in my lifetime. Come on over and chow down with me, and don’t get too hung up on it, okay? There’s too much edible, drinkable goodness of every kind just hovering on the edge of my ken for me not to show it some respect and appreciation. Amen, let’s eat.
