Foodie Tuesday: Even a Classic can Take Plenty of Twists and Turns

Being a fairly dedicated eater and happy to grab my utensils in the blink of an eye almost without regard to what’s on offer, I still do enjoy the familiar and comfortable on my menu too. There are occasions when I just plain crave the known and cozy to fill my plate and my empty stomach. Sometimes nothing will do but the good old-fashioned classic.photoSo when I’ve made a batch of roasted vegetables that I can pop onto the platter at a number of meals in the next few days, it can be nice to tuck it alongside a variety of things while it lasts, just to keep things interesting. However, having some of those many different entrees be lovely old-school stuff doesn’t in any way diminish the range and color of what I’m going to eat. That just makes it doubly fun to puzzle together the menus that, despite a repeating item and a well-known dish, still easily keep their sense of invention and surprise enough to brighten up both the day and the meal.

One obvious way to accomplish that is to introduce minor tweaks: ingredient combination, presentation, and so forth. The simple roast beef from last week gets thoroughly sliced and diced and then piled into buttery grilled french rolls, and finally, dipped in a dense jus reduction of roast drippings, butter and a big slosh of red wine, and served with a touch of horseradish cream (softened with sour cream) alongside side for enhancing either the beef dip sandwich or the roasted vegetables on the way down the hatch.photoA different day, a different tweaked standard: macaroni salad with bacon and eggs. Not sure I’d recommend one of this latest round of tweaks–I tried it with rice pasta (the gluten-free twist on the occasion), which was just dandy when the salad was first made, but in the refrigerated leftover salad soaked up the dressing so thoroughly that the pasta tasted pretty much just like cold rice later. It wasn’t hopeless: I added more dressing each time I went back to it, and I found that it rehydrated decently. But it wasn’t as stable in that aspect as traditional pasta, which I think I’ll still prefer in the long term. The other slight variations, however, I enjoyed very much, and by the way, so did all the others at dinner.photoMacaroni Salad with Bacon and Eggs

Cooked [elbow macaroni–still my favorite for macaroni salad] pasta gets dressed simply with mayonnaise, a good squirt of cartoon-yellow mustard, and cream. A sturdy grind of black pepper gives it a hint of depth, though it’d be great with a splash of hot sauce or a sprinkling of cayenne as well. A big handful of diced pickles playfully zings things up a little; I used half dill pickles and half sweet gherkins. You know me and my sweet-plus-salty fetish. Traditionalists would of course hard boil egg and mince or sieve it before adding it to a picnic salad. Me, I just semi-scrambled the egg until it was just fully set and minced it up. Pretty much the same result, with less time and effort. Lastly, fried up a whole lot of bacon into crispy, smoky pieces.

The end product? About like what you’d expect if waiters carrying platters of the familiar summer macaroni salad and of pasta Carbonara crashed into each other and fell into a breakfast buffet table. But involving a lot less flying cutlery and cussing. Unless you count people diving after the salad avidly waving their forks and yelling, Damn, that’s good! Not that anyone at my table would ever behave in such a reckless and uncouth manner. Well, me, maybe.

Foodie Tuesday: Meatless had Better Not be Tasteless

 

photoJust because I am generally an unregenerate carnivore, that does not make me averse to vegetarian delights. I am not so silly as that, really, my dears! It’s still very much about great flavor and appetite fulfillment, is it not? Oh–and that glorious connectivity that occurs at table between friends and loved ones, of course. Of course. Sitting and watching the dragonflies and wood wasps and butterflies tumble through the air outside the kitchen window, and the occasional marvel of a buzzing hummingbird or flashy scarlet cardinal.photoBut those non-meaty treats for eating, they beckon too. Oh, yes they do. As long as they’re loaded with flavor, texture, deliciousness and appeal of their own kinds. It’s not too much to ask. For a simple example, let’s consider having a few crackers or pieces of flatbread to dip in a bowl of easily made eggplant spread. When my girlfriend joined me for lunch, I made it the easiest way possible: I took a jar of roasted eggplant (nothing but salt and a little citric acid, for preservative, added in processing), tossed it in the blender with a good dose each of cumin and smoked paprika, topped it in the bowl with some Thai fried shallots, and we dug in to our lunch. A sort of Baba Ghannouj 2.0, perhaps.photoThe other dish of the day was supremely easy, too. Warm quinoa salad. Quinoa, to begin, naturally. A nutty, crunchy salad, because I wanted lots of texture. Sliced almonds, black and white sesame seeds. And I wanted something fresh and summery in it, and a little chew to complement the toothiness of the quinoa and contrast with the nuts’ crunch. For the latter, small pieces of queso blanco. Too mild for you? Some snappier feta or goat cheese would do it nicely. But I did brighten it up for that summery aspect. Chopped navel orange, some zest from it; juice, too, along with a little lime juice. A bit of Persian Lime olive oil, a little salt and pepper. I certainly could have added lots of possible further tweaks, as could you, my friends: fresh mint, fresh or pickled ginger, toasted pine nuts, dried apricots or figs; preserved lemon, rice vinegar; toasted coconut; chopped fresh tomatoes or cucumber. No matter how composed, very edible. No fuss, lots of taste. Oh, and no meat. Purely coincidental? Karma? Or just good eating? I know where my own inclinations lead. Oh, yessiree, now hurry up and hand over a fork, please.photo

Foodie Tuesday: Big Pigs Like Figs

photoBig pigs: who, me? Yes, I’ve admitted to it many a time. Being a food-loving piggy myself, and being terribly fond of the gifts of the pig to food-lovers. I fully understand that vegans, vegetarians, Muslims, Jews, those with health restrictions, and any number of others have valid, legitimate and honorable reasons (philosophical, physiological, religious, ethical, etc.) for not eating pigs; my own litmus test for foods is also personally derived and has much more to do with how much respect has been given the plant or creature in question in its tending while alive, in its preparation when being readied to eat and, especially in how it is used for sustenance and, often, the building of community. So no, I would never dream of knowingly serving pork to any of the aforementioned friends. But I am content to obtain and prepare and consume it myself with respect and gratitude. I have no wish to offend, any more than my abstemious friends would judge me for my being a carnivore. Those who wish to do so are of course very welcome to skip this post entirely.

Meanwhile, back at the board, I will say that I am often quite happy to eat vegetarian style too. I never feel deprived when the food pleases my palate, no matter what the range or contents of the menu, and I can easily be just as blissful about a superb salad, an ounce of outstandingly fresh pistachios, or a pan of colorful mixed roasted vegetables (on tonight’s menu again, as it happens). And good fresh fruit, well since that combines the flavor and vitamins and juicy joys of good health-giving food with the sweetness of dessert, why, you know that I am happy to plunge right into that when it’s offered.

No surprise, then, that I was so delighted when that scrawny little $4 twig I bought this winter first burst into leaf and then, to my great amazement, produced lovely, plump Brown Turkey figs. It inspires me to think that perhaps I shall be able to grow some produce of other kinds if I put my mind to it, despite the challenging temperatures and soil character here in the roasty-toasty land of north Texas.

I am *not* the only ham in my kitchen.

But to return to my porcine loves, I have eaten pork in almost uncountable ways and have loved a great many of them. One standby favorite is a well-made ham. I will happily bypass any of those artificially ‘enhanced’ varieties that are injected with water and so many other, less savory, ingredients and often are processed to the degree that they are no longer recognizable as meat, let alone pork. But a good pit-smoked ham, well, there’s a sweet-and-savory treat of which I am immensely appreciative. I love oven roasted and glazed hams, too, even boiled ones, but I think my affections are most readily given to an unadorned and slightly fumy beauty right out of the smoker.

One of the benefits of being in Texas is that I do have access to a few places that produce such ethereal goodness. As a result, I can often indulge in a meal of simply sliced ham with vegetables or salad or, on a wintry day, perhaps with mashed or roasted sweet or russet potatoes. Or, as I did the other day, with a heap of fabulously fresh and sweet fruits. And of course any leftover bits may be tossed into other welcome meals of the same. Or into sandwich fillings. Or casseroles. Or, as on the day following the feast of ham and figs (and avocado and strawberries and pineapple), next mixed with minced roasted chicken, dill and pepper and stirred into eggs for a quick frittata. Because if ham is good one day in my kitchen, it’s probably a treat for three days in a row if I’ve shopped wisely enough.photoJust now, though, I guess I’d better dash out and check the baby fig tree to see if I can beat the raccoons to the next ripe piece of tree-candy.

What’s-in-My-Kitchen Week, Day 2: Foodie Tuesday

Having guests for a meal can be a lot of work. Or not. But either way, if it’s mostly ready when they arrive (unless it’s a cook-together occasion), it’s a great time to have fun with friends. Few occasions are as welcome as those that include comestible-related conviviality. Last week’s get-together fun was occasioned by the impending retirement time move to Pennsylvania of our dear next door neighbors, who joined us for dinner just after I’d finished clearing out the dining room and enough of the kitchen from our week’s plethora of minor house maintenance projects to make way for us all to fit comfortably at the dining table.photo

One of the pleasures of having company is the excuse to set a pretty table, even if it’s not at all formal. While we do sit down to a ‘set’ table often enough to pass for civilized, formality of any sort is almost always as far from my modus operandi as one end of the galaxy is from another; still, it’s nice to have a reason to pull out a different tablecloth or put on a seasonal character at the board. For this day I wanted to keep things light, airy and summery, so I started with a small vintage tablecloth of graphic pale yellow butterflies on a crisp dark background and used the plain white crockery. These I enhanced with the  graceful twisted stems of our delicate Hadeland crystal wineglasses in their discontinued ‘Lord‘ pattern–which we were fortunate to have handed down to us by my parents, who in turn were given them by my Norwegian sister and her husband. Every time we use these beauties I am reminded of our family and of our Norwegian roots; at the same time, they are infinitely well-balanced and sweetly appealing to the eye, so they often ‘set’ the table all by themselves, so to speak.photo

Food was kept simple, in my usual adherence to unfussy ways. Having seen a wildly delicious sounding recipe for a California Peach Caprese Salad at the delicious blog A Feast for the Eyes, I was smitten with the idea of feasting, indeed, on peaches and was gifted not only with finding some fine, nearly ripe ones at the same store as a smashingly fat and lovely filet of wild-caught Alaskan salmon, I had the foundation of my meal in mind. The demise of my cooktop and its current unavailability had already inspired me to plan that I would oven-roast some vegetables and fruit to add a sort of barbecue-ish tinge to the meal’s summery theme (we don’t yet have a functional barbecue, latecoming Texans that we are). Thus, a super-plain green salad started things off without interfering with all of the other flavors and colors to be heaped on the table. Romaine, diced glorious avocado and a drizzle of simple Italian-style vinaigrette. I did put out small dishes of pignoli and yes, a chiffonade of fresh basil and mint leaves for those of us who wanted to have a sort of Cal-Italianate hint of the inspirational peach Caprese infused into the meal. Like me, for example.photoThe salmon preparation was something of an experiment: my doctor recommends I limit my soy intake for various reasons, so although I’m often addicted to soy sauce in my fish marinades, I was enamored of a slab of hot-smoked salmon at the grocery and bethought myself to use that as the salinizing element in my salmon prep this time. I laid the filet lovingly in a pan greased with coconut oil and topped it with crumbled smoked salmon, freshly ground black pepper, minced fresh ginger, a splash each of ginger juice and freshly squeezed lemon and orange juices, a faint drizzle of raw honey, and a little more coconut oil on top of it all, and into the oven it went. It was joined there in short order by pans of vegetables and fruits, respectively (hurray for the benison of double ovens!), and there was time during the baking and broiling to hunt up some dessert from the freezer.photo

The vegetables could hardly have been simpler: whole green beans, asparagus, orange and yellow capsicum–those sweet and fruity bell peppers add elements of both color and flavor brightness to a vegetable dish so neatly–and thickly sliced cremini mushrooms. Crystallized salt, pepper, a squeeze of lime, and a slick of my precious Stonehouse olive oil (using their luscious Persian Lime this time) and the whole pan was ready for its oven close-up too. I left the fruit in all its naked glory, except for a little gloss of the aforementioned coconut oil to help protect them from sunburn while increasing their chance of a good brown skin in their broiler tanning bed. I know some folk say to add sugars to build (or to even out) caramelization but I figured the fruits were sugary and ripe enough to take care of themselves: those treasured peaches, a handful of my very first batch ever of homegrown figs, and that living gold of pineapple.photo

The dessert was well into my lazy comfort zone, being a chocolate combination of my nut truffles (a simple mix of melted dark chocolate with a little good butter, a pinch of salt, and finely chopped and toasted mixed nuts of my choosing, set up in a flat pan and cut into small pieces) and my almond-flour brownies that I keep handy in the freezer between times, and the mellow, dense chocolaty goodness played nicely with all of the fruity sweetness that preceded it.photo

Foodie Tuesday: Thirst Quenching

I love food and all of its crunchy, salty, sweet, chewy, tender, steaming, spicy, bold, sour, gooey goodness, but let’s face it, all of that goes down better with a good drink or two. At the moment, I need to behave better than I have for the last number of months, so I’ll be living on the memory of all of the tasty liquid loveliness while sipping lots of cold, clear water for the nonce. This isn’t forever, and I know I feel better when I give my poor beleaguered body an occasional break from the excesses of travel and lazy eating and all of those other happy tortures that tempt and taunt in ever-increasing increments until it’s time for one of these breaks. And believe me, I’ve nothing against a crisp fresh glass of water. Or twenty.

photoStill, I do enjoy the wide variety of ways one can slake one’s thirst beyond refueling the necessary percentage of corporeal content with good old aitch-two-oh. That glass of lemonade made glinting green with alfalfa was a quintessentially Berkeley taste that was remarkably enjoyable in its grassy clean refreshment on a warm sunny day. I’m not sure if I felt more like a retro-hippie or a happy cow while sipping it–not much matter there; the only important thing is that it tastes great.

graphite drawing + textMostly, it’s a grand thing when the drinks complement the context. Sipping ‘hay clippings’ in earthy, counterculture country like Berkeley just feels mighty apropos. Wetting one’s whistle with a gingered Irish whiskey based drink in a pub while nibbling at hot fish and chips works like a, well, a lucky charm. Tipping back a glass of icy white rum with lime when sharing conversation with the cosmopolitan bar owner who made them and hearing about his history as an opposition newspaper editor in Noriega’s Panama, as a banker, and as a descendant of an old family determined to help shape the new Panama by subtler means, through ecological work, by working for social change, and by teaching others both by example and in simple, heartfelt conversations over a drink–that’s a combination perfectly designed to make a moment of what could be mere small talk into a cultural, educational and personal exchange to remember.

photoBecause we all thirst for something to drink. It’s essential that we replenish, you know, our bodily fluids. But far more than that, when we sip we are in communion, in a way. There’s the affinity between the drink and the situation, and between the drink and the food, to be sure. But a drink with another person can easily create, regardless of its contents, a real contribution to building affinities between those who share the drinks. Those that already existed, they can grow stronger. Some meetings of people need that nice drink to invent the possibility of affinity. The raised glass is the opportunity for a new meeting of minds, and maybe of hearts.

Then again, sometimes a refreshing drink is . . . just a drink.

Foodie Tuesday: Pilgrimages

photoSince I have made it clear that I spend much of my travel time and energy on eating and/or thinking about eating (just as I do at home, but more exotically, if you will), then the clear corollary is that I am inclined to travel toward, and for, specific foods and eateries. Returning to my home turf is clearly a time when this is bound to take on a significance and intensity of the grandest proportions. Needless to say, it would be impossible to revisit every place we love to eat in one trip, let alone a fairly brief holiday, but we are dedicated enough to the love of good food to make our best efforts in the attempt.

Spud Fish & Chips is a local landmark institution that predates even my existence by, say, half a length, and its place in my personal registry of notables was confirmed very early not only because it’s a great place to get very tasty, freshly made cod and chips for which people have long been accustomed to queue up around the block and down the street, but one of its four (I think) branches happens to be located about two doors down from where my grandparents had their apartment when I was small. The cod (or halibut or salmon or shrimp, if that’s your preference) is hot, moist and sweet and coated with a lovely, crispy golden jacket that holds the fillets neatly together whilst they are being gently paddled through a bit of sweet tartar sauce or drizzled with malt vinegar en route to their demolition. The fries are unevenly hand-cut so that one gets the meaty, mealy, potato-y big fries and the medium, slightly more greasy ones and the thin, crisp ones all together for fine textural variety.

From the first bite of cod, I was transported immediately to the days when my parents would pile us four girls into the car and head to Grandma and Grandpa’s and at some point we would essay right across the street to Alki Beach (the nicest and most popular tidal beach in Seattle), play until we were sufficiently caked with sand and maybe had had a quick stop to pay homage to the Ice Cream Cone Lady, a 3-meter mini of the Statue of Liberty that stands almost directly across from the apartment on the beach whom I so named for my obvious assumption about that strangely compelling object she lifted in her hand while she hugged what I guess I must have thought was the menu to her bronze breast. After these exertions we would inevitably get hungry for the aforementioned fish and chips, preferably followed by our own ice cream, and that was the heavenly point of the whole outing. Besides Grandma and Grandpa, of course.

photoAnother luscious luxury I crave after too long away from it is the New England style clam chowder at 42nd Street Cafe in Seaview, Washington. In our earlier married years either my husband and I had a whole lot more free time on our hands or (more likely) were willing to cram more into the available time, so we went as often as we could manage for a three- or four-day weekend on Washington’s Long Beach Peninsula. It’s quite touristy, especially in the summer high season, because of the marvelous beaches, the excellent boardwalk, the fantastic biking and walking paths that range all over the peninsula, the usual silly shops, the fairly constant wind that makes it a prime place for kite flyers, and the regularly held classic car shows. Among other enticements. Primarily, though, it’s a place to go and relish the ocean–and, yes indeedy, to eat. For a pretty small set of towns and off-season residents, the peninsula offers a goodly range of fine eating, and we have favorite places and foods to show for it.

Cheri Walker’s glorious clam chowder is one of the many reasons we’ve faithfully, if not obsessively, returned to 42nd Street for all of these years. She somehow concocted the perfect balance of ingredients for a chowder I’ve never tasted anything close to matching, to the degree that while I won’t give many clam chowders elsewhere the time of day anymore after one look at their floury glue-like consistency and paltry pieces of rubbery clam, I would happily eat Cheri’s clam chowder three meals a day when I can get it. Bacon in it. Yes, you are unsurprised that I think this a superb ingredient in a clam chowder. I am nothing if not predictable. A major attraction of her clam chowder, however, is naturally the large quantities of fresh and tender clam bits therein. Little pieces of potato, the soft crunch of celery. That sort of goodness. But what really sets it apart is the light, savory broth, with just the right juices and herbs interlaced with cream and, I suspect, a tot of sherry or cognac to give the finish such sweetness and depth. In any event, heaven.

photoAnd while we’re on the peninsula, we indulge yet another seafood craving, this at another small-group chain restaurant. Dooger’s doesn’t either sound or look particularly impressive other than being a pleasant-looking middle-of-the-road place frequented by the older set and families with lots of squirmy kids. And it is that. There are people who disdain it for its plainness or complain that it’s predictable and dull. But we two have willingly waited at the no-reservations place as long as perhaps an hour on occasion when the crowds are in town. Why? Crab legs. Dooger’s makes the very ordinary extraordinary, at times. So very worthwhile. What you see on this plate is fairly common fare, mainly: a butter and sour cream loaded baked potato, fried white bread, a little plastic cup of very very simple seafood sauce with a hint of horseradish. All well made in their simple ways, to be fair. We always start with the salad-from-a-bag salads because (a) they go through their salads so fast that it’s always fresh greenery on your plate there and (b) it’s piled up high with the sweetest little lightly briny tiny shrimp your heart could desire. A perfectly refreshing start. Followed by this comfort food pile-up of potato and toast and oooooooooh, Dungeness crab leg pieces. Already cracked open for us lazy diners, and as we generally choose them (though you can order them sautéed in garlic butter, steamed, or Cajun spiced, too), coated with the most delicate dusting of flour and deep fried in a flash to meltingly dainty little bites of sheer Northwest nirvana. Try ’em straight up or with a squeeze of lemon.photoI limited myself to the ‘small’ serving shown here only because I decided I would also succumb to the key lime pie which, you guessed it, is presumably made from the recipe right there on the Nellie and Joe’s juice bottle, but by golly has been a popular recipe for eons for good reason. Still and all, next time: just get more fresh, delectable crab legs. Who really knows when I’ll get to eat as many of them as I want again?

Thankfully, I have in no way limited my foodly fun to these few specialties on this trip any more than I would do so at any other time. There was a scrumptious lunch of grilled Tillamook cheddar cheese sandwich also, happily, jammed with Dungeness crab at the charming diner the Beehive in Montesano, Washington (sensing a theme here, are you?) and accompanied by light, crispy onion rings, and followed by a densely packed pie of tiny wild blackberries with just enough sugar to hold them into proper pie form. There was a delectable pub supper at A Terrible Beauty (right in West Seattle) of beer battered salmon and chips. Foodie Tuesday: Pleasing Paternal Palates

photoFather’s Day 2012 arrived on a date when we were both in the same state as our respective fathers. How about that. So it was our pleasure to gather up both sets of parents and the one sibling in close enough proximity and have a meal together.

I know that you all love food, and most of you love cooking and entertaining, too–especially if it’s for loved ones. You’ve told me so on many a Tuesday, not to mention with many a blog post of your own heralding the glories of your hospitality. I appreciate these wonders more than I can express–and the insufficiency of my words to do so is still mitigated, I think, by your awareness of my good intentions when it comes to these things. But being ‘on the road’ and having no kitchen to call my own, I knew it was the better part of valor to find a good meeting place that would supply the edible, drinkable provisions and let us all sit back and do the eating and drinking unencumbered by such worries.

Since all seven of us in the party are fans of various kinds of seafood, we opted for the Father’s Day Brunch at a local waterfront eatery well known for such stuff and let it go at that. Not a bad choice. Buffets are often a dangerous no-man’s-land of dining, to be sure, but a very popular and well-attended one is virtually guaranteed not to have the infamous nastiness of those foods that crepitate tragically on the serving board until petrification or putrefaction begin to gain ascendance over them and everything gets that creepy sheen of something that may or may not have been prepared using automotive lubricants and plumbers’ tools. Father’s Day is clearly one of the Top Five when it comes to holidays associated with hauling the parental units off to an eatery, because of course even the worst cretins among us know at some level that it’s not very polite to ask Dad to cook up his own celebratory treats and not a lot of us have the time, talent or gumption to do the deed ourselves. So we were not remotely surprised to see our restaurant of choice, and all of those we passed en route to it, jammed and jiggling with crowds of hungry visitors.

The buffet was not particularly unusual or even, probably, more sumptuous than many we’ve seen or heard others describe, but it was certainly lavish enough and varied enough to keep all of us from trying very hard to converse in the noisily crowded dining space, but rather left us making cheerily knowing winks across table at each other while cramming yet another tidbit of roasted or sugary whatsis onto a fork and into our grinning mouths. The weather was far more cooperative than predicted, so we enjoyed sunny views out through the expansive windows straight across the Sound to the big city, gulls parked on the old piling remnants of the piers adjacent to us, scudding clouds that failed to reflect in the increasing chop of the water and a few water taxis and ferries cutting through the chop to zigzag from shore to shore.photoWe ate lox and blackened salmon and hot-smoked salmon, fried shrimps and steamed prawns and seafood chowder, crab legs and crab Benedicts and crab salad; fruit and greens and vegetables and pickled goods. We ate roasted potatoes and hashed and steamed and whipped; roasts of beef and lamb and pork, and sausages and bacon; pasta and bread, muffins and scones. Cakes and pancakes, crepes and rolls, desserts and cheeses and so, so much more. Bloody Marys and coffee and tea and liquid chocolate poured from a fountain over pretty much whatever you might opt to stick under the flow. Fingers included, if I judge correctly by the number of small persons hovering near said fountain. But who’s to blame them? It’s Father’s Day, after all, and without those little scarpers there would be no fathers to celebrate, eh.photo

Foodie Tuesday: I Travel on My Stomach

photoYes, I travel tummy-forward. But then, you knew that, didn’t you. Of course food is the center of my travel adventures. It’s pretty much the center of my daily life, as you have seen. So one of the central joys of going on any expedition is guaranteed to be eating related. I am somewhat inclined to plan any trip around the potential dining and snacking involved in the destination of choice. The choice of destination, if I have any, is certainly influenced as well by the quantity and quality of delicious items available in said locale.

photoAs it happens, the point of this journey was determined in advance by the lovely necessity of the Berkeley Early Music Festival and Collegium‘s participation there. It was mere marvelous luck that sent us off to Berkeley, and San Francisco was of course a truly logical pit stop on the way to see our family up north, then, no? As it happens, there’s no end to the glorious eating and drinking you can do in the magnificent Golden Gate city. There are the icons of foodie worship all around that range from the Buena Vista, where Irish Coffee is purported to have been born (and is aging very gracefully indeed, I can tell you) and the venerable eateries of Fisherman’s Wharf (yes, we did pop in to Alioto’s last night and the Dungeness crab Louie was loaded with sweet crustacean dreaminess) to a nearly endless parade of newer delicacies and delicatessens.

photophotoOne thing that could hardly steer you wrong on any expedition, from road trip to round-the-world, is keeping a sharp lookout for good food and drink at every turn. The most logical place to start is any farmer’s market, food hall, CSA, allotment or other magnificent foodie emporium. Say, perhaps, the Ferry Terminal, where just by crossing the cable car line at the Embarcadero you enter into a haven of artisanal glories that will transport you to another plane. There are charcuteries boasting all sorts of exquisite hand-crafted organic meat treats, a creamery or two filled with cheeses ranging from creamy goat cheese or a fromage triple-crème smoothness to the wildest of the contemporary cultured creations and back again to the most scintillating classics like the weirdly beautiful Mimolette (not, as it appears, an alien cantaloupe but a deep orange hearted beauty of a nutty salty cheese) and of course the most glamorous hunks of lovingly aged Parmigiano-Reggiano looking ever so much like a cheesy lunar landscape inviting exploration by hungry adventurers.photoThere are the vegetable stands full of produce and forage unspeakably pristine and desirable in its purity and freshness. Sea beans, anyone? Mushrooms picked from their carefully hidden home turf this morning? Artichokes still small and tender and almost as delicate as to be able to self-destruct in a puff of fairy sparkles? Oh, my darlings, you can see that I’m bound to instantaneous loss of–well, okay, I would lose my composure and maturity if I had any to start. When I get around this stuff it just happens. And I think you do know what I mean. Be nice.photoMeanwhile, I shall be dashing hither and yon to hunt along those pretty, pretty piers of San Francisco, where the fishermen bring in their catch of the moment, just to see what tempts my hungry soul. I love fish. I love shrimp, prawns, scallops, calamari, all sorts of goodies. But what I’m most often and most likely to want any time I can possibly get hold of it is fresh, sweet, insanely delicious Dungeness crab. I will certainly eat it as many times as I get the chance on this visit to the coast. I had it at both lunch and dinner yesterday and it was barely enough to whet my appetite further. Don’t get me wrong: the crab Louis was excellent and the macaroni and cheese with D-crab in it was a dish of smooth, melting yumminess. But life is short and Dungeness far, far away from Texan turf, so I’ve a great need to fill up my innards with as much of this joy-inducing treat as I possibly can. So much work to do. I’ll get back to you later on this.photoWhat are you waiting for? You should be rushing out in search of, at the very least, a good grocery store or picnic ice chest. Get yourself moving. There’s very little time until the next meal, and who knows when it’ll be the last one, really? Hungry, I tell you, hungry and sure that time is seldom better spent in pursuit of grand food and drink than in nearly any other work known to humankind. Be reasonable. It would be quite a pity to let any such fine things go unappreciated, now wouldn’t it.photophoto

Foodie Tuesday: Egg on My Face

I have no particular secrets from you kind people out there in Bloglandia, so it can come as no surprise (especially to those who have seen any of my previous food posts) not only that I am an unreconstructed carnivore but also a generally unrepentant eater of all things–okay, nearly all things–that might be considered decadent if one is of the sort that equates dining habits with morality. I like eating. I like eating lots of different things, and in what even I will readily admit are too large quantities. It’s not good for my health, to be sure, and possibly not best for my soul, but there it is. I love food.photoOne of the things I would be most reluctant to give up eating or cooking with is of course that stupendous universal donor among ingredients, the humbly perfect egg. If I must be limited in my access and opportunities and omnivorous mania, I would proudly and gladly be wearing a nice schmutz of egg on my chops any day. Besides, with my coloring I am very ill-suited to wearing any other form of yellow, so why not embrace the ephemeral form of dressing up in some eggy yellow goodness that can at least be licked off my lips and make my innards very happy if its look doesn’t suit my exterior. I love what the egg can do for a sauce, a custard, a souffle. For baked goods; for dishes where it serves as binder, thickener, garnish.photoMaybe most of all, I love eggs when they star in the show. Their honest simplicity and smooth, creamy deliciousness deserve to be featured and recognized as the wonder that is borne in that beautiful capsule of the egg’s origin. So today I give you one of my very favorite meals, which despite my fondness for all sorts of marvelous mealtime miracles is a supremely simple omelette with grated sharp cheddar cheese melting in the middle, accompanied by some nice crispy bacon with a little drizzle of pure maple syrup, and a fresh, crisp, fabulous apple. I don’t usually mess with eggs much when I cook them, and a nice little cheese omelette like this deserves to be treated respectfully, so the only ingredient in the omelette besides the eggs, lightly beaten, and the cheese is just a nice big splash of melted butter to make the eggs easy to loosen from the pan and fold over when sufficiently set–but just barely set, really. Still light and creamy through the middle.photoI’d go on, but I’d kind of rather dash over to the kitchen and grab an egg or two . . .

Foodie Tuesday: Potato Famished

photoI’m going to keep this supremely simple. I love potatoes. Among my ridiculously long list of edible loves, potatoes rank pretty high on the list. It’s clear that my Viking ancestry designed my particular corporeal form to be composed of 70% potato water, so I’m spending my years just fueling it up as best I can.

Barring allergies or outright dislike, it’s hard not to admire the potato regardless of one’s lineage. It’s one of the most inspiringly versatile foodstuffs on this little old planet. There’s hardly anything that a potato can’t gussy up nicely. Let me just commune with the spirit of the potato here for a moment:

Boiled, roasted, fried, baked, steamed. Even raw. Yes, on rare occasions Mom gave them to us sliced like cold little potato bruschetti, buttered and salted and munched out of hand. Odd, but not unpleasant. Still, I’m a little more of an old stick in the mud and like them best cooked up one way or another. Grated, mashed, bashed, diced. Sliced and made into insanely tasty (and of course buttery as can be) Hasselback potatoes. Cooked and smashed, with lots of gloriously rich cream. French fried, skin on, in beef fat. Scalloped with a passel of cheese. Okay, you caught me. I’m stuck as always on my beloved theme of delicious FATS. Yeah, I yelled. Ahem. Now, back to our regularly scheduled swooning over potatoes. Tenderly toothsome cubes in vegetable soup or clam chowder or some dreamy slow-cooked stew. Crisply golden-browned hash browns tenderly steaming at heart. Silky smooth in a luscious cool Vichyssoise.

And of course, sometimes nothing else can possible compare to a fine and dandy baked potato. Say, served with tonight’s very simply cooked steak and very simply plain romaine and tomato salad. Just halve the russet potatoes, coat well with coconut oil, place cut side down in a baking pan and then stab them thoroughly in the back with a fork or knife to prevent in-oven explosion (or zombie resurrection, if that’s your concern), salt them well with coarse good salt, and bake until they’re tender inside and crispy outside (circa 20-30 minutes, depending on the oven and the size of your potatoes) at 350 degrees Fahrenheit.
