Foodie Tuesday: Monster Salads

I call it Awesome Autumn Salad, not only because it’s impressively tasty but also given the stupendous quantity of it I’m capable of consuming when in the mood.

Fear not! I neither dine with nor on monsters if I can help it. But I will happily prepare and feast on a salad that’s big enough for any monster since I am willfully delusional about salads being lower-calorie options than most other sorts of meals. You will see from my photos and comments that this is clearly a lie: I love to add cheese, nuts, eggs, bacon, leftover casserole hunks, and endless other ingredients that give salads just as much artery-busting potential as any other dish. And don’t get me started ranting about how if a salad dressing’s supposed to be worthy of my salad, it might as well be worth eating (or drinking) on its own, since I will likely use enough of it to make it an actual menu item too.

Given all the disclaimers, you might think I mistook the very concept of Salad for another thing entirely, and perhaps you are right, if we’re going to be all strict about it. But that’s just the point, for me. I like to think of salad as the perfect opportunity for improvisation and combining as many of my favorite edibles in one dish as I like. And if you think I also mistook pulling up a chair to write a post on the blog for walking into a confessional, then you clearly haven’t read around here much before, because that’s no mistake, it’s just the way I always operate.

Enough asides. To food! Salad, or an approximation thereof, to be specific.

The Awesome Autumn Salad above is, like most around our house, Romaine-based. Typically, I like to add an assortment from the following: chopped celery and cucumbers, shredded carrots, sliced yellow or red capsicums, sliced black olives, raw or lightly cooked sweet corn kernels, chopped sugar snap peas, salted sunflower seeds, sprouted pumpkin seeds, and sometimes a bit of chopped boiled egg or grated cheddar cheese. The dressing is really what makes this one for me. It’s a combination of thick, sweet balsamic vinegar and Styrian toasted pumpkinseed oil. Sheer heaven! I usually blend mine with thyme, dill, mustard seeds, and coarsely ground black pepper. I’ll throw a big pinch of Maldon sea salt over the salad and toss it all lightly before eating, and I can put away an astonishing amount of this crunchy madness when I’m good and hungry for it.

This one gets the moniker Bit-Part Salad; greens play only a supporting role in it, and there are bits and pieces of innumerable other goodies piled on it.

While I am worlds away from believing that to be a salad, a dish must have fresh greens in it, I do like the leafy sort. Especially when it’s piled to the skies with all manner of crunchy and flavorful goodness in the range of added ingredients. And particularly-specifically-especially when it contains a refreshing element of contrast.

The Bit-Part Salad here was a room-temperature conglomeration of grainy goodness with veg, fruit, cheeses, nuts, and more. I broth-cooked wild rice in some of my slow cooker broth, the latter made with both marrow bones and chicken wings as a winning combo that came together incredibly richly. And made a monstrous mess of the cooker, the counter, the floor, and my nerves in the process, all during only the second time I used that brand new cooker. Perhaps there was a monster in the kitchen after all. No matter. I made the wild rice, then steamed a batch of quinoa with lemon and orange zests, cinnamon and cardamom and roasted coriander, and then I combined the two with beurre noisette, in case they weren’t already ridiculously tasty. Instead of mashing every other ingredient to an unrecognizable pulp or plating everything together tediously for every eater, I opted for my preferred mise-en-place mode of putting out a counter-full of ingredients and letting each person customize his or her salad.

My Bit-Part Salad was thus: a bed of lettuce and wild rice-quinoa mix. Heaps on top of it. Chopped Bosc pear marinated in elderflower syrup and cardamom; suprêmes of blood orange; pomegranate arils. Toasted walnuts and piñons. Celery, snap peas, cucumber, and a squeeze of lime juice. Minced fresh mint and basil. Grated Reggiano and myzithra cheeses. Coarsely ground black pepper and salt. Triple orange dressing. Enough bits of surprise and pleasure to keep even me guessing, each bite having a different little confluence of flavors and textures and perfumes.

This, perhaps, is the defining character I love most in a salad: that it should offer the ideal counterpoint to the other parts of the meal, or—if it is itself the whole meal—that the salad should be filled with delightful contrasts. Opposites in texture, yes…crumbly, soft, crackling and crisp or smooth or juicy. Contrasting flavor types, from at least a couple of the Five Tastes if not more. I will draw the line at combining things that seem to compete with each other. If one element is overpowering all the others then I’d just say Serve it by itself, let it shine, and don’t waste any other good stuff! If the salad has a noticeable leaning in style or ethnicity, save the alien invasions for another dish, another meal.

I’ve posted about salads plenty of times before and listed for you a number of my preferred inclusions, so this is perhaps only an update. If I say I’m boiling it down to a few choice currencies, fear not; I will undoubtedly be happy to throw actual boiled ingredients in with any others, as well as blanched, fried, steamed, toasted, or smoked ones. But it’s hard to beat the beauty of starting with a lovely heap of raw, fresh vegetables and/or fruits and never a bad idea to do that whether there are add-ins, throw-ons, and other edible accessories and decorations or not.

Or keep it super-simple…flash-fried fresh spinach and basil leaves, topped with a bit of Shichi-mi tōgarashi or plain toasted sesame seeds—or nothing.

Foodie Tuesday: All Good Things Must Come to an End

That, my friends, is how the old saying goes. But it’s not, ahem, the ‘last word’ entirely. Many such good things are followed by other good things, after all!

And there are some, like the end of summer, that not only presage the arrival of such genuinely fine things as, say, autumn, but also can be celebrated at their conclusions with festive eating and drinking and other kinds of pleasurable activities that do much to ameliorate any pain of loss.

Some such celebrations are marvelously simple: when the summer is waning, it’s time to indulge in a last gleeful feast or two focusing clearly on the seasonal joys of fresh produce. It needn’t be any more complicated than a marvelous unfussy riff on classic Caesar salad, a glass of sparkling mineral water, and maybe a slab of rustic peasant bread decked out with cool sweet butter or a nice grassy olive oil.Photo: Great Caesar's Ghost!

One little notch upward might give you a Tex-Mex picnic, also uncomplicated and fresh and easy to eat. My recent one took the Southern familiar pimiento cheese and gave it a slight T-M twist when I blended Tillamook’s four-cheese combination of cheddar, Monterey Jack, Queso Quesadero and Asadero cheeses with chipotle salsa and a little butter to hold it all together smoothly. Then I layered this cheese spread with sliced smoked turkey breast between soft white corn tortillas into a little stacked torta. This little goodie makes a nice treat of a light lunch with some equally Tex-Mex pickled okra and a batch of fresh vegetables and other finger foods like black olives, cherry tomatoes, sugar snap peas, carrot and celery sticks, and so forth. If that’s not quite enough, there is always the warm glow that comes from indulging in the most perfectly ripe and gorgeous late-season produce in all its naked glory. Really, is there anything more soothing and refreshing and lovely than biting into a peak-ripe pear or apple or peach and letting its juice just slide down your throat like a mystical elixir of life?Photo: Peaches

Well, okay, there is that possibility of punching up the effect just a tiny bit further by letting slices of that sweet, juicy fruit swim lazily in a pool of lemon- or limeade, a light and sparkly soda, or (as pictured) a marvelous chilled—even, if it’s as hot outside as it was on the pictured occasion—gasp, iced! rosé or white wine. Sipping the very slightly infused drink until those lovely, tender bits of fruit are easier to catch and eat; that is a mighty nice way to bid a fond farewell to the tag-end of summertime. And if you’re a mom or host who appreciates kids’ need to fish out the pieces of fruit with their already sticky hands, that’s great, but you can always put the fruit chunks on skewers, freeze them into fruit-sicles, and use them first as drink chilling stirrers, then as dainty fruit pops. Foodie Tuesday: A Toast to Skagen

I have not yet been to Skagen, that Danish destiny so alluring to international tourists, fishermen and art lovers, but I have long since had an imaginary affair of the heart with it, thanks to the popular Swedish concoction known as Toast Skagen. It’s quite a simple thing, really, just toast points with a light shrimp salad on them, but when the shrimp are just-jumped-out-of-the-sea fresh and sweet and the preparation of them done with a delicate hand, it’s just about as good as seafood can get. So between visits to Sweden, I pine for the treat. It’s not that I couldn’t make my own facsimile of that assemblage, for even in the heart of north Texas there are places where one can lay hands on pretty good shrimp (at a price), but since the presence of briny air and piercingly radiant northern light and the lilt of Swedish conversation all around are also key ingredients regardless of their absence from the written instructions one might find for the preparation of it, Toast Skagen is still best savored in Scandinavia, and worth the protracted longings between visits.

That is why, if it appears on an even moderately trustworthy menu in Stockholm and its environs, I am likely to order Toast Skagen without even giving much of the rest of the menu a fair study. On the visit that just ended a few days ago, I did just that. Several times. And I was not disappointed—unless you count each time I ate the last bite.

The simplicity of the combination is key, because it must showcase the freshness of the shrimp, but there is room for subtle difference just as there is in any classic food recipe or combination that has survived the twin tests of time and chefs’ egos. The best preparation of Toast Skagen begins with fresh, perfectly cooked cold shrimp, is seasoned with nothing more noticeable than fresh lemon juice and fresh dill, lest the delicate salty sweetness of the shrimp be overpowered, and is bound with mayonnaise and served with or on bread. That’s about it. The subtleties come in with the proportions in the combination, the type of bread or toast, the presentation, and a few possible additional flavors and garnishes that won’t attempt to compete with the simple perfection of the concept.Photo: Toast Skagen 1

On this visit, I managed to taste three slightly different, all delicious, versions within the bounds of our ten days. I’m sure I’d have done more, but I did have to leave room for other favorites, and despite having eaten extensively and often, I did have to accept the finitude of hours in the day. Even though with midsummer daylight, those were admittedly impressive. The version of my shrimp-laden toasty dream that I’d been contemplating for the longest before our recent trip was had on our last day in Stockholm, for we had plenty of other places to go and people to see before then, but we did finally go to Sturehof, a venerable restaurant in a swanky but not stuffy neighborhood only a hop, skip and short T-bana (subway) ride from where we stayed. At Sturehof, I was greeted by lightly toasted points of white bread and a copious hillock of shrimp shaped with the help of a very light coating of mayonnaise. A toss of snipped dill, a mild dash of perhaps Dijon mustard to undergird the squeeze of lemon I’d give it, and a spoonful of Kalix Löjrom (caviar) to give a little snappy texture and sea flavor boosting, and it was a filling but refreshing luncheon to give our last day of play in Sweden a far less melancholy tinge.Photo: Toast Skagen 2

The second version of Toast Skagen was almost an afterthought in the middle of our visit, but far from negligible in the eating. My husband and I went with a dear friend to visit the fantastic Artipelag, part seaside park, part eco-tourist experiment, part art museum and all Swedish brainchild of the inventor of the BabyBjörn line of child care products. Unlike many museum cafes, this place’s eateries are worthy of a visit entirely unrelated to the call to check out all of the other wonders of Artipelag. We didn’t even bother to go up and dine in the restaurant upstairs after having a quick look at the buffet in the less fussy main level. It was an extravaganza of delicious and beautifully prepared traditional Swedish foods and their contemporary companions, and reasonably priced for such a grand meal at that. Among the attractions for me was an early spotting of other visitors parading their plates to the table with enticing spoonfuls of Toast Skagen in their midst, but when I arrived to select my foods at the board, the Skagen bowls were empty. Empty! Thank goodness I noticed that the staff continued to keep most of the dishes there overflowing with fresh batches of food, so I pulled up my fainting spirit and managed to down great quantities of other delectables before going back to find the missing delight replenished.

It was worth the wait, which, given the quantity and quality of everything else I’d been eating quite happily in the meantime, was no small feat. This version of Toast Skagen was either the plainest or the most complex of all, depending upon how one chose to dish it, dress it up, and/or accompany it when choosing from the fabulous array of salmon with baby peas, lovely cool salads, savory sausages, buttery tiny roasted potatoes, and so much more. I opted to keep it somewhat unfussy since it was really the dessert after I’d consumed so much other tasty food. There was splendid chewy, crusty peasant bread to be freshly sliced by my own hand from a warm loaf, so it seemed the obvious thing to merely take a slice or two, give it a slick of good cold butter, because to ignore good cold Swedish butter is very nearly a cardinal sin, and put a fat spoonful of shrimp on top. This variation had the mayonnaise and dill and very little else, but because the shrimp and bread and butter were so fresh and delicious, it was as close to perfect as need be.Photo: Toast Skagen 3

The first, and not least, helping of this craved creation that I had on the journey was on a tour boat that we took with other great local friends, while cruising leisurely through the archipelago‘s canals to have a short walking tour in Sandhamn before boarding for a leisurely dinner cruise back to town. The dinner onboard was a very pleasant, well-prepared selection of Swedish favorites, like the Artipelag buffet, but at this sit-down meal one had the choice of two fixed menus, with or without drinks and dessert, and ours had an option for my object of Swedish shellfish lust on it, so that was a foregone conclusion. This was the prettiest plating of the three, and had a couple of good signature tweaks worth mentioning. Besides the creamy, dill-speckled shrimp salad and a scoop of Löjrom for that snappy seaside pizzazz, there was a small stroke of Balsamic reduction brushed onto the plate and its piquancy gave a sweeter buzz to the usual lemon spritz, the latter still perfect in its way. And the garnishing lettuce and cucumber on the plate were so bracingly fresh that I only barely resisted turning Toast Skagen into Vietnamese-style salad rolls for the occasion. I munched the greens as a mini side salad, instead. Great textural contrast in one uncomplicated gesture.

Now, should you think I was so obsessed with this specific dish and with All Things Swedish All of the Time, I can assure you that my euphoric revisitation of beloved Stockholm and environs was filled with beloved friends, too, and yes, lots and lots of non-shrimp-toast-related food. More on that later. For now, be content that you know a plain yet elegant dish worthy of single-minded pursuit, and go forth in search of it yourself.

Foodie Tuesday: Buried in Berries

Photo: Raspberry BonanzaOne of the joys of the warmer seasons is the abundance of fresh produce, not least of all, those little jewels the berries and close cousins like the aggregate fruits. Having grown up in a region known for fabulous berries, in a valley renowned, in fact, for farming them in its fertile volcanic soil in the Evergreen state, I know well enough the labor that it takes to successfully farm, pick, process and sell them, never mind shipping them intact anywhere, given their tender sensitivity and fleeting prime. But I certainly found my way past the sweaty, low wage, arm-aching, thorn-scratched, and slug-tormented frustrations of a short-time field hand to renew my love of fresh berries.

I have long since confessed to you that, despite their being among the easiest to farm and to pick, blueberries remain my most hated fruit, and I dislike pretty equally their flavor, smell and texture despite all attempts to convince me they are Superfood and worthy of desire. I am not a big fan, in fact, of any of the round, popping sorts of berries that are similar in my mind to blueberries in any way—currants, gooseberries, huckleberries, and so forth. I’m not that egalitarian. But the berries that I do enjoy, I gladly indulge in enjoying in quantity when they’re at their peak. I seldom tire of strawberries or of those magnificent rose relatives, the blackberries, raspberries, salmonberries, black raspberries and all of their delicious ilk. One of the nicest things about really fine, fresh produce, of course, is that it tastes so good whether you do anything to or with it, or not. Straight out of the field, straight into my mouth. Bright, juicy, flavorful little pieces of heaven. Much as I happily enjoyed that dessert combination of my youth, angel food cake with berries and whipped cream, I think I might consider the berries the angel food part more than the cake. Berries in cream, whipped or not, are also a spectacular treat when I can get my hands on a dish, with or without a cake foundation.

The berries are marvelous as individual sorts or in happy combinations. Whole or mashed, sliced or diced. Superb in jams and sauces or salsas. Fabulous in smoothies. Outstanding when added to salads. Unbeatable in pies. One of the most delicious accompaniments to savory foods, especially something like some magnificent wild salmon or game, whether processed in some recipe or just eaten fresh alongside the fish or meat. Sweet and bright.

Oh, and berries make dandy liqueurs. Berries, sugar, vodka. In that order, in declining quantities, in a sealed jar or bottle. Bunch of weeks or months, shaking it up gently from time to time, while keeping it in a nice cool, dark spot between stirrings until the time seems right; strain the niceness and enjoy. Of course, it works fine without booze, too. Berries, some nice sparkling water and some sweetening.

These little gems are delicate. They are so fine in their pristine state that it would be wrong to over-process them. Don’t be a killjoy. There’s really no recipe here for success; in fact, the best so-called recipes for using fresh berries mostly leave them unsullied by cooking and doing much of anything other than stirring them in with other good things. What are you waiting for? If the season’s on, get thee to the nearest farmer’s market and stock up on glorious fresh berries. If they’re not in season, I apologize for your sorrow, but I must encourage you to make the most of preserves and frozen berries. Yep, they freeze well when properly treated. But my friends, do not slouch. Run, quickly, and get some berries. You can thank me later.

Foodie Tuesday: Keep Us Company

Shared companions at their best help to strengthen individual relationships.

This is true of people, any great net of friends and acquaintances woven, knit and spun together making the two people at their center-most intersection better through their support. It’s true, too, of meals, where the cast of side dishes and sauces, condiments and accompaniments all work together to make the main dish better and more interesting than it would be on its own, and make a standard entrée a standout, distinctive and more memorable for the occasion.

Now, when these two instances of the supporting cast making the show coincide, things can be tons of fun. As on our latest anniversary, for example. We enjoy our twosome time immensely, and are glad to celebrate at any excuse, but we’re not sticklers for specific dates or rigorous traditions. So when our anniversary lined up with a rare opportunity to gather with a houseful of students, we merged our various celebratory plots into one plan.

Dinner for any more than four people is inevitably served buffet style when I’m in charge; besides my preference for informality, I like people to be able to sit at tables for ease of dining, and while I can make that happen for up to a couple dozen in our contiguous living, dining and kitchen spaces, it doesn’t leave much spare room for elbows, let alone heaps of serving dishes, on said tables. So it’s easier to concoct big-batch comestibles in big-batch pots and pans and let the guests scoop up platefuls of their own design at will.

This time, the centerpiece of the meal was my lazy version of carnitas, one of my pet make-ahead foods for carnivores, surrounded by a range of things that could keep the vegetarians, the allergic and the whatever-averse all reasonably well filled.

Carnitas de Señora Loca

Take one big, fat-marbled haunch of a pork roast, cut it if/as needed to fit in the slow cooker, and tuck it in for a nice long soak, at least overnight and longer if possible. Its bath should be comfortably Tex-Mex in character: cumin, powdered garlic, chipotle powder or a canned chipotle en adobo, and, if you’re in the mood, some stick cinnamon, all to your taste; equal parts of Mexican [cane sugar] Coke–in my slow cooker, the measure is one individual bottle, orange juice, beer [I generally use either a Mexican beer like Modelo or Corona, or a Texan one like Shiner or Lone Star. I probably should give Armadillo Ale a try, since it’s a new brew produced right here in town. If I want to go wheat-free, I’ll use hard apple cider]. And one more ingredient in equal quantity: lard. Don’t be squeamish; if you’re eating pork, bathe it in the fat with which it was originally designed to be flavored and enriched, preferably great quality leaf lard, expertly prepared. There are plenty of good cooks around who are willing to go to the fuss of rendering their own batches of top-quality lard, but since I have access to grass-fed goodness of that sort I can’t imagine why I should.
A while before serving time, strain the falling-apart pork out of the liquid into a large baking dish, shred it, and put it in a hot enough oven to crisp the top layer, removing it for a toss and redistribution a couple of times so that there are plenty of nice crispy bits throughout but keeping watch to keep the meat generally very moist. Skim most of the fat from the reserved liquids and cook them down to reduce for a sauce while the meat is crisping.
Then pile a bunch of carnitas on your plate and surround it with loads of other food. Eat.

Don’t forget some coleslaw when there’s shredded meat, whether BBQ style or otherwise; the two are simply good friends for a good reason. The version of the day had sliced almonds, black and white sesame seeds, and a light lemon vinaigrette with a dash of honey. See, addicted as we are, I can sometimes vary slightly from my standard sushi ginger flavored creamy coleslaw. The creamy dressing, whether made with mayonnaise or yogurt or sour cream in its dressing, would’ve added elements not all vegetarians like, so I wanted to keep an option or two open. Cheese dip for the vegetable crudites was not going to allow such a thing, including not only the grated sharp cheddar and Parmesan cheeses but also an equal mix of mayo and sour cream, along with a pinch of cayenne and a dash of bacon-flavored salt), and I had asked ahead and was pretty sure I didn’t have any true vegetarians, let alone vegans, coming that day, only lighter meat eaters.

Slaw, of course. Always a good choice, but wait–how to choose its style remains…

Since the non-meatatarians in the crowd might otherwise have been stuck with just salad and fruit, vegetable, cracker sorts of foods, I did make up a big batch of rice without my typical inclusion of homemade bone broth, substituting homemade vegetable broth for the occasion. I credit myself with making a pretty dandy broth, no matter what the kind, so no one was shortchanged in the equation, I hope.

The last side dish leaned back toward the savory and did include a little mayonnaise: corn salad made with fresh kernels of sweet corn, diced tomatoes and avocados, and for those who wished, crisp bacon pieces to sprinkle on top. You know me: if a passel of pork is a good thing as the main dish, why not more pork alongside it?

Besides, it seemed in keeping with the whole theme of the event, that of the constellation surrounding the centerpiece enhancing the latter’s goodness, that our friends enhanced our day, and therefore our happiness, by sharing the time and the meal with us.

Foodie Tuesday: Pizza & Beer

photoOurs is a household that both embodies and defies sex stereotypes. I am a female homemaker whose male partner is the sole income producer for us both. I wear dresses at least come of the time, and aside from academic gowns I’ve never known him to wear one. Though he has great legs and would look pretty cute in any old frock he threw on, I’m quite sure. It’s really not his style, all the same. He can get all misty over a sad movie just as well as I can, but he’s a pants-wearing guy. In food terms, we’re generally fairly well set into the expected tastes of our respective sexes. I like a frou-frou salad with baby lettuces, goat cheese in an almond crumb crust, fresh figs and mint-basil mandarin vinaigrette. My guy is mighty fond of meat and potatoes.

On the other hand, the second time this man who tends to avoid onions and garlic, sour cream and frou-frou salads–whose supertaster status leads to overwhelming visitations from sour or bitter hints in foods that to most others are relatively benign–asked me out to eat, it was for delicately crafted, raw fish and wasabi and pickled ginger filled sushi. And though hops make ‘manly’ beer unpalatable to my beloved, another loved one of mine taught me to appreciate a good beer, and I learned that it was a dandy companion to another famously male-craved food, pizza, and that together they could make this female pretty happy.

So when the opportunity for a really fine piece of pizza is not just sustenance but a great treat, I’m happy to dig in and eat. Especially if the pizza is one that doesn’t have a bunch of bitter or sour or Weird toppings, but rather the much-loved supreme deliciousness of good pepperoni and cheese and a slick of only a well-balanced ripe tomato sauce, the way my excellent spouse likes it best, so I can share it with him. And if I can wash down my tasty pizza with a good beer, then I will happily raise my glass in memory of Granny, who taught me to appreciate that the old-time stereotypical American image of men enjoying their beer and pizza in estrogen-free splendor was far from exclusive. And in memory of Gramps, whose sole-wage-earner retirement money paid for the beer and pizza Granny the homemaker bought for us while I was out with Gramps’s sons and grandsons, my uncles and cousins, practicing the ‘manly’ arts of working in construction as he had done for years before us. Keeping tradition and breaking with tradition. There’s always room in a good family, or a good stomach, for both.photoAll of this being said, with the help of my perspicacious, pizza-loving spouse and some research he’d read, I’ve recently discovered that avoiding wheat, of all things, seems to greatly reduce the hot flashes that have been the bane of my middle-aged existence since well before I was middle-aged. What to do? Wheat is the basis of the traditional pizza crust. Not to mention a key ingredient in lots of tasty beers. What!!! Is the universe spinning out of control???

Fear not, my good friends. I am finding that where there’s a hankering, there’s a way. Besides the existence of a number of flour mixes and recipes for them that substitute quite neatly and directly–and generally must more tastefully than in gluten-free days of yore–for wheat flour, I am also learning that there is an ever-expanding universe of alternatives for those who are forbidden wheat, whether by choice as in my case or perforce as in the lives and kitchens of celiacs, allergy sufferers and others who must avoid the offending grain. Stay tuned for the experiments that are sure to follow: rice and potato and nut crusts, vegetable stand-ins and stunt doubles, and more. Meanwhile, I will not shy away from a cold beer, just check to be sure that it’s a wheat-free variety. And of course there’s always a nice cold cider or lemonade or iced tea, or perhaps a fresh and icy strawberry-cucumber mojito, as they also make quite the dandy accompaniments to a slice of pizza, gluten-free or not, don’t you know. Foodie Tuesday: In Small Doses

Another lunch, another assortment of dishes. I’m not much on trying to unravel what magical single dish or small group of dishes will satisfy every person at the table when I’m serving them lunch, so as always, when I had a few friends over a few days ago, I opted for my usual ‘safe’ approach of a larger number of smaller dishes. As I so rarely use actual recipes, I do tend to make up a menu in the form of simple notes, lists of ingredients, combinations, that sort of thing. Here we go. Imaginary eating is sometimes half the fun!

For the occasion, a bunch of my friends became the LADIES WHO LUNCH.
*‘Virgitarian’ Green Punch
* 1 small honeydew, cubed
* 1 cup finely sliced celery
* 1/2 apple
*1 whole cucumber
* 1 cup water
* 1 bunch of fresh mint
* Juice of 1 small lemon, 1 lime
* 3 cups Stirrings Simple Mojito mix

Foodie Tuesday: I’m Roasting! No, I’m Frying!

 

photoOh, I know, you all thought I was having hot flashes again. [Not that I wasn’t.]

But it’s Food Fun day again, and I’m referring to cooking edibles this time. Old broads still gotta eat.

And since much of the time I am thermostatically challenged myself, I generally try to find ways to make the hot foods I’m preparing require the least possible amount of time putting me in near contact with the oven or cooktop. Why risk further overheating, of either myself or my preparations, should I need to stray far afield from the heated zones of the kitchen.

One fairly easy solution, though it seems somewhat counterintuitive to me, is to roast or fry food. Yes, they’re relatively high heat methods of cookery. But by using them, I can usually evade the stand-and-stir duty: do all of the prep before even turning on the oven, then tuck the food into the would-be fiery furnace, set the temperature and timer, and head off to cooler climes until the alarm sounds for my triumphant return to check and/or finish the dish, and serve and/or eat it. Simple as that.

Roasted beetroot, for example, a nice way to enhance the flavors and textures of a cool late-summer salad, gets cleaned and quartered and then needs nothing more than a small amount of fat and perhaps a tiny bit of seasoning before it pops into the tanning booth. Goat cheese is delicious when lightly coated and shallow-fried, even if like me you’re not quite the culinary artist to present it with perfect Cordon Bleu pizzazz, and it takes no more than a couple of minutes, tops, at the cooker to brown that fine crumb crust.photo

Roasted Beetroot and Goat Cheese Salad

Scrub and quarter a handful of medium-sized beets. (Clean and save the greens and stems.) Toss the beetroot pieces with a little fat (oil or melted butter; I used coconut oil to keep its noticeable flavor to a minimum), salt and pepper and scatter them in or on a baking or roasting pan. Since I was making such a small (2-person) meal, I just made a pseudo-pan out of heavy aluminum foil to keep any juices from dripping around the oven. Roast the roots at 350°F just until tender–10-20 minutes, depending on your oven and the size of the beet pieces.

Meanwhile, pat 1/2-cup batches of cold chèvre (goat cheese) into patties and coat them with coarse almond flour, pressing it in on all sides. Quick-fry these in a little butter in a nonstick pan over medium heat. You can see from my photos that I am far from adept at this part, so mine look less like haute cuisine than like something unearthed at Herculaneum, but I assure you, they taste quite fine.

Using in tandem these two homely yet highly edible items plus a small assortment of others, you can quickly assemble a presentable version of some hotshot chef’s beetroot-and-goat-cheese concoction and your stomach will not be critiquing the view anyhow. My version, this time around, consisted of a few of the tenderer, prettier beet greens pared down to the leaf and laid on the plate, a bit of peeled cucumber slices arranged in a green frame around the rest of the plate, and all topped with the chèvre rounds and roasted roots and a sprig or two of fresh dill. I’m sure that roasting any sweet enough veg or tuber–sweet potato, carrot, pumpkin, parsnip for example–would make a similarly fine complement to the bright, fresh taste of the cheese, which in turn could be substituted for with any nice salty/sour cheese, undoubtedly.

Which of course leads me to another hot-weather or hot-mama advantage of this preparation: the leftovers (if any) lend themselves to innumerable variant cold, cool or room temperature dishes that can be popped out of fridge or freezer next time the climate or one’s overheated innards require such things. Behold tomorrow’s dish: minced beet greens and stems, steamed quickly in the microwave while the beetroot was roasting, and now blended with that remaining diced vegetal goodness, some leftover quinoa, some diced dried apricots, a few pine nuts, a little orange dressing . . . and the beet goes on . . .photo

 

Foodie Tuesday: Pleasing Paternal Palates

photoFather’s Day 2012 arrived on a date when we were both in the same state as our respective fathers. How about that. So it was our pleasure to gather up both sets of parents and the one sibling in close enough proximity and have a meal together.

I know that you all love food, and most of you love cooking and entertaining, too–especially if it’s for loved ones. You’ve told me so on many a Tuesday, not to mention with many a blog post of your own heralding the glories of your hospitality. I appreciate these wonders more than I can express–and the insufficiency of my words to do so is still mitigated, I think, by your awareness of my good intentions when it comes to these things. But being ‘on the road’ and having no kitchen to call my own, I knew it was the better part of valor to find a good meeting place that would supply the edible, drinkable provisions and let us all sit back and do the eating and drinking unencumbered by such worries.

Since all seven of us in the party are fans of various kinds of seafood, we opted for the Father’s Day Brunch at a local waterfront eatery well known for such stuff and let it go at that. Not a bad choice. Buffets are often a dangerous no-man’s-land of dining, to be sure, but a very popular and well-attended one is virtually guaranteed not to have the infamous nastiness of those foods that crepitate tragically on the serving board until petrification or putrefaction begin to gain ascendance over them and everything gets that creepy sheen of something that may or may not have been prepared using automotive lubricants and plumbers’ tools. Father’s Day is clearly one of the Top Five when it comes to holidays associated with hauling the parental units off to an eatery, because of course even the worst cretins among us know at some level that it’s not very polite to ask Dad to cook up his own celebratory treats and not a lot of us have the time, talent or gumption to do the deed ourselves. So we were not remotely surprised to see our restaurant of choice, and all of those we passed en route to it, jammed and jiggling with crowds of hungry visitors.

The buffet was not particularly unusual or even, probably, more sumptuous than many we’ve seen or heard others describe, but it was certainly lavish enough and varied enough to keep all of us from trying very hard to converse in the noisily crowded dining space, but rather left us making cheerily knowing winks across table at each other while cramming yet another tidbit of roasted or sugary whatsis onto a fork and into our grinning mouths. The weather was far more cooperative than predicted, so we enjoyed sunny views out through the expansive windows straight across the Sound to the big city, gulls parked on the old piling remnants of the piers adjacent to us, scudding clouds that failed to reflect in the increasing chop of the water and a few water taxis and ferries cutting through the chop to zigzag from shore to shore.photoWe ate lox and blackened salmon and hot-smoked salmon, fried shrimps and steamed prawns and seafood chowder, crab legs and crab Benedicts and crab salad; fruit and greens and vegetables and pickled goods. We ate roasted potatoes and hashed and steamed and whipped; roasts of beef and lamb and pork, and sausages and bacon; pasta and bread, muffins and scones. Cakes and pancakes, crepes and rolls, desserts and cheeses and so, so much more. Bloody Marys and coffee and tea and liquid chocolate poured from a fountain over pretty much whatever you might opt to stick under the flow. Fingers included, if I judge correctly by the number of small persons hovering near said fountain. But who’s to blame them? It’s Father’s Day, after all, and without those little scarpers there would be no fathers to celebrate, eh.photo

Foodie Tuesday: You are So Sweet!

I love food of every kind enough that I’m often quite satisfied to have meals and days without much sugary content. But my craving for sweet tastes always returns at one time or another, and sometimes in overwhelming fashion, and then I may as well feed the monster with a little bit of indulgence rather than trying to be more abstemious than my nature will long tolerate–that always only ends in the eventual pendulum swing of brazen excess, if my history serves as any example. Besides, I don’t really have to be so very wild to find a little sweet solace.

Sometimes a great piece of fresh fruit will suffice for the need of the moment. Then, though I’m well aware I’m eating nearly pure sugar, it’s not so over-processed and hyper-refined as some treats and I console my conscience, if it’s at all nagging, that I’m getting a few dashes of vitamins or other goodies of however tiny nutritive value, as opposed to simply crunching down a fistful of plain sugar, which, you may be surprised to know, I don’t find all that compelling even when my sweet tooth is aching for appeasement. A glorious, juicy, perfumed peach or pear is pretty hard to resist, though, or a handful of brilliantly sun-ripened blackberries or strawberries bursting with juice. Now, I won’t lie: if there happened to be a piece of dark chocolate to nibble alongside said fruit, I would certainly not offend anyone offering it by refusing such an option, because I’m far too nice for that sort of behavior.

With almonds, black and white sesame seeds, orange segments and pickled ginger and a citrus vinaigrette dressing, salad becomes close enough to pass for dessert . . .

Sometimes even the less dessert-oriented dishes, if I add a hint of sweetness to them, will happily assuage my yearnings for candy-like substances. The cabbage slaws and salads I make are by far most often on the sweet or sweet-tangy side rather than strictly savory, because I love the clean crispness of fresh crunchy cabbage and perhaps a little carrot or celery or cucumber or such when complemented with sweet tastes. A jot of honey or agave syrup, maple syrup (the dark, Grade B stuff, if you please–the whole point of maple syrup is lost if it’s refined to the point of tasting like sugar-water)–these bring so much, even in small quantities, to offset the heaviness or intensity of good fats, savory and umami tastes, and even to enhance them. Of course, if there’s any meat, especially a mild flavored one like pork or chicken, or maybe a nice solid seafood like sashimi grade tuna, wild-caught salmon or big meaty prawns on the plate, these can be so beautifully magnified in their satisfying richness with the addition of a bit of glaze: a sauce or a chutney, for example, with sweet or citrusy fruit, with reduced wine, with floral essences like rose or vanilla, that they can rein in my sweetness-compulsion quite nicely. Until the next time, at least!

Sometimes, of course, only something that seems genuinely like dessert will do. But it still doesn’t have to be an outrageously carbohydrate-centric sugar bomb to be perfectly marvelous and fully delicious. Rusticity, simplicity and even a little hint of good nutritional qualities can win the day when they’re just what I’m craving. Take the little baked custard I made when I was longing for pumpkin pie but really didn’t want to fuss over or consume a floury pastry piecrust: yummy as those can be, I’m finding the disagreement between wheat-based foods and my digestive system just isn’t worth the price of admission anymore. But when I took a plain little tin of prepared (plain) pureed pumpkin, stirred it up with a spoonful of vanilla, a pinch of salt, a good dose of raw wild honey, a couple of eggs and a big powdering of Vietnamese cinnamon, whipped it up and put it in a buttered ceramic bowl in the microwave (I ‘waved it, covered, on High, checking from about 4 minutes on until it was nearly non-wiggly), it came out willing to imitate a freshly baked pumpkin pie quite nicely and the sweet-toothed dragon was greatly mollified by the whole. It may not have been Thanksgiving Day, but I know I for one was thankful enough! And that’s all I really want from a bit of sweetness.
