Foodie Tuesday: Just Shoot Me (Said the Food)

No, my friends, I’m no longer feeling so terrible with the flu that the thought of even writing about food repels me; I am, I believe, fully recovered already. No need to bump me off. Whew! But my appetite is still slightly limited and my interest in slaving over a hot stove, nil.

Lest you be too confused by today’s post title, I am not making a personal request either to be executed or made into a photographer’s portrait subject. Not crazy about either idea. I’m also, for the record, not overly fond of getting shots (except for the knowledge that they usually are meant to help me be healthier), and I can’t recall ever drinking shots. All such nonsense aside, my teasing post title only means to tell you that I’m thinking about food photography and meal-time hunger and how incompatible they are.

*SOOC*? Almost. Light-adjusted for clarity and slightly more accuracy, straightened if necessary, and cropped. But the foods were already pretty attractive. Hence, my firing off a shot or two, tossing the camera aside, and getting down to the real business at hand. Eating and drinking. Wouldn’t you do the same?

Pros don’t need tons of time or patience to suss out the situation, set their cameras on the ideal settings, frame the shot, take it, and abracadabra!, they’re done. Great art, now let’s get down to eating. So unfair. Of course, that’s arguable, because if I spent the time and effort to learn and train properly in how to use a camera of any sort, I might conceivably get decent enough skills to save myself a few frustrations, not to mention gut rumbles.

Fool that I am, I have always let my natural intimidation around all-things-technical (plus, admittedly, fear of a certain unpleasant would-be teacher in years past) scare me out of getting serious about cameras. I’m generally content to let the camera do all of the work for me, at least until I get photos onto my computer where I can play with them endlessly as artworks or, at the least, adjust them so they better fit my idea of what I saw or am trying to convey. Part of my artist persona has always been to edit, tweak, second-guess, and fiddle with images, so it’s not as onerous to me to figure out how to make a photo into what I want it to be—I’m far less interested in documentary accuracy and straight-out-of-camera [*SOOC*] “honesty” than in getting my story told. All photographs were, and are, still only images of what the photographer chose or was able to show us, despite the popular notion that they are “truthful” in ways that other visual forms of data are not. And while I like a Pretty Picture or a dramatic image, what I’m always in search of is illustration that enhances and furthers my storytelling, whether with words added or not.

As a cook, I am in the same category. I love to eat delicious and, sometimes, complicated foods. I enjoy goofing around in the kitchen and, occasionally, discovering something I can make that’s delicious or, rarely, complex. But the very idea of having good technical skills as a cook—never mind chef—is just as unattainable, between my aforementioned phobias and my laziness, as going pro with a camera.

The results of all of this? I blog about food; as an aficionado but never as an expert, I am limited in what I can tell you about food not only in technical terms but in how I show it to you. I shoot as well as I’m able, and if it’s really imperfect, touch up what I shoot until it’s at least marginally post-able. Then I use it. And I blather about what I do and don’t like, how I make dishes or fail in the attempts, stuff I like to eat when I’m out and about, new treats I’ve learned to adore, and other food-lust topics, just as though I had any business doing so. I happen to like documenting my foodly obsessions.

The other thing I do is try to learn along the way. Food tricks, perhaps. Learn from my mistakes. Photographic ones, mostly. Couple of things I’ve learned: find pretty foods to shoot (see above montage). Better chance of getting a good portrait, if you have a good-looking subject, whether conventionally beautiful or just wonderfully interesting. Use as much natural light as you can get. The food can be moved a little to catch the light better but the sun can’t be so easily moved to better suit the food. Don’t get fancy. The food’s already attractive—okay: or horrible, if that’s what I’m documenting, so it’s at least meant to be an interesting subject. No reason to do a lot of fussy setup and presentation extras, since I have limited supplies of tablewares and glamorous shoot venues, so I tend to pay more attention to details of the ingredients or go for a tight shot of the plate rather than overdo extraneous things.

That’s about it. Because, as I intimated in my opening salvo here, even the littlest bit of time spent on the photographic part of the posts is time taken away from my pursuit of eating. Digital cameras are a boon in this regard, of course. Fast, efficient, no waiting. My little old smartphone is helpful as well. As techno-dull as I am, I know very little indeed of what my phone can or can’t do, let alone how to make it do anything for me. But I know how to take the simplest of snapshots, and my phone camera knows how to send them to my waiting computer, and that speeds up the process just one helpful little bit more. So glad to get to the table faster.

More importantly, faster to the table. Most importantly, the food tasted rather good. Mission accomplished, I guess.

Foodie Tuesday: Dangerous Longings & Forbidden Fruit

Photo: Beaver TailsComeuppance. Karma. A need to get way, waaaaay better behaved and healthier after a number of weeks of recklessly overindulgent behavior in the dietary realm. Whatever you want to call it, this is the time when I’m thinking I need to scale back and revamp my approach. For a few days, having returned Monday from the last of the summer’s travels bigger and much less healthy and fit than when I left at the beginning of June, I have been in the mode of, well, repentance.

New plans, however, can be exciting and inviting, too. What I have to try to discover now is what the true sources of my joy are when it comes to eating and how to access those without being so overindulgent and foolish. I know. I’ve promised myself before that I’d behave better, and it’s never stuck all that well, has it. Still gotta try.Photo: Boston Cream Pie

Because there really is a lot of yummy stuff out there, and it’s not all bad for me. What I need to get smarter about is recognizing what leads to my downfall, what I crave and find most compelling, most especially when it seems inaccessible…and figure out all of the best possible ways to assuage my pangs instead of giving in to more self-destructive behavior. We’ll just see how I do.

There are a lot of delicious Beaver Tail fried dough treats out there, lathered up with maple icing or snow-dusted with cinnamon sugar just begging me to break my commitment to reducing my sugar intake and cutting out wheat as much as possible. Creamy desserts are flagrantly showing off their dangerously dairy-rich fabulousness at every turn, egging me on constantly to renew on my promises to myself that I will avoid more milk products that aren’t on the healthier end of the spectrum, say toward probiotic-loaded yogurt or a reasonably forgiving hunk of cheese. Pizza’s beauties are many, but one slice is seldom enough for me, even a slice as big as my head, and the one-two punch of wheat-rich crust and cheese’s oozing gooey goodness are too good at breaking my slim resolve. A magnificent slice of perfectly fresh fruit pie is pretty irresistible to a weak-willed piggy like me, but it’s loaded up with sugar most of the time and one slice—one bite—usually has the power to zap my strength. Now it’s time to embrace the new approach. Self-improvement in tiny, sustainable, and simple increments. Thinking hard for now. What makes me love wheat-based baked goods? Tender plus chewy texture. The scent of yeast. Crazy-good toppings and fillings. Thinking hard about what favorite other things can substitute for the wheat content. What makes me go crazy over creamy treats? Silky, fatty mouthfeel with a mellow sweetness that complements practically everything it touches. Thinking about substitutions. Things I already also love, but that aren’t quite so hard on the operation of my innards and the general shape of my outer shell, too. What is the real allure of sugary stuff? That little rush of energy, even though it is generally followed by a bigger fall-off; the bit of pleasurable serotonin buzzing up in me, and the flavor boost to other seasonings. Thinking, thinking…

Sure is easy to think about food. Now I hope I can think about it in smarter, healthier ways until I form a smarter, healthier relationship with it. But still while having as much fun as possible. Yep, not giving that up anytime soon.Photo: Pie, Baby!

Foodie Tuesday: My Choice of Chowders

Lots of flour thickener = a chowder too glutinous for my taste. Good for installing wallpaper, but not light enough to show off the glam of its clams.

This summer’s travels in the American northeast offered perfect opportunities for me to revisit a dish that is a longtime favorite, be reminded of how much flexibility lies within its simple framework, and how much beauty comes from keeping it relatively uncomplicated in the first place.

Better broth still doesn’t win the day if the clams are hiding under so much greenery I think I’m being served a bowl of lawn trimmings. Herbs are great, but too *many* fresh herbs can still overpower those dainty little fellas.

Not that I have anything at all against varying and playing with food. If it’s a great item, why, it’ll withstand any number of fiddling fools in the kitchen. Sometimes one even invents yet another reason to love the dish. There’s room at the table for as many delicious versions of goodness as there are diners.

For my own taste, I’ve had great Manhattan-style (red broth based) chowders and many fantastic variants of clam, fish, and mixed seafood stews and soups and chowders, a top favorite among them my brother-in-law’s salmon-rich bouillabaisse. Lacking immediate access to that, though, I may be fondest of all of a bisque or a light, creamy New England-style chowder. There are few things I like less than dense, floury heaviness in chowder, but that can easily be avoided by thickening the soup with little or no wheat flour and not using one of the other popular approaches (also wheat-based), that of thickening the chowder with saltines or oyster crackers. I see no reason to include any in it, because another traditional ingredient I do love, potato, adds enough starch itself to keep the chowder from being too thin. If I want mine thicker, I wouldn’t hesitate to mash a bit of the cooked potato into the broth, or simply add a tiny amount of potato flour.

But there is a standard set of ingredients that make bisques and New England style clam chowder the beloved icons that they are, and these give them more clear identity than any technique tends to do. Seafood, obviously, is central, and should be tender and fresh and sweet. Many who make chowder boost the ocean-fresh flavor by adding bottled clam juice, and while I think it tasty, I don’t think it absolutely necessary. If I don’t have any of that, I’m happy to boost the broth with whatever reasonably subtle umami-buzzing jolt I might have handy.

You already know I am far from a purist about practically anything food-related. And while I try to be rigorously appropriate about avoiding the offending blends or ingredients when feeding friends with kosher, vegan, halal, allergic, or other dietary concerns, if none of these are present I am not averse to mixing seafood or dairy ingredients with meats, and so on. First choice for seafood chowder liquid? Uh, is there any question? Seafood broth. If I happen to have seafood parts handy, the shells, skins, and/or bones of assorted fish and shellfish make a marvelous addition and the perfect flavoring agent for the broth.

Lacking that but wanting the flavor to be a bit more complex, I’d still look around my kitchen for inspiration. So if I have it and want to use it, I wouldn’t be afraid to enhance clam chowder’s broth flavor by adding some of my homemade chicken broth to it. Meatless vegetable broth, especially roasted veg broth, might be better, though, mightn’t it. I’ve found that roasting meat bones for my non-vegetarian broth is generally an unnecessary step, since the ingredients tend to rise and caramelize over the long, slow cooking time, so they get browned enough to intensify the flavor if I just give a good stir to redistribute the less-cooked ingredients every once in a while. But vegetables, requiring less simmering time than meaty ingredients, don’t necessarily get quite as well browned this way, so it can be better to go ahead and roast or sauté them.

Imagine the depth of flavor possible when you use the liquid made from simmering a pot full of fragrant, chopped and slow-roasted celery, onions, and carrots, perhaps some shallots or garlic cloves; possibly even sweet corn, red capsicums, and/or mushrooms, along with bay leaves, thyme, perhaps a little dill, and a toss of black peppercorns, then straining it. I prefer to roast veg with a bit of good fat, too, of course, being who I am. If I want to keep the soup meat-free, I’d keep it very mild in flavor, choosing something like avocado or palm oil for the fat. But if I want the intensity of it, this is the one spot where I’d likely cast my vote with those who find bacon an acceptable or even desirable addition to clam chowder.

See, I don’t like the texture of bacon itself when it’s been cooked into wet foods. Might as well be raisins. The latter are, to me, too often bloated and slimy when cooked or even baked. I know, I’m a jerk, hating on poor, defenseless raisins. The flabby and listless look and bite (or lack thereof) of bacon cooked and left in wet food like a chowder doesn’t thrill me, either. But that flavor can be a great complement to chowder, if you’re a bacon fan. So roasting vegetables for veg broth is a perfect way to take advantage of the flavor without the texture, simply by giving the veggies a goodly slick of bacon grease before their roasting. If the broth is being used strictly for seafood chowder, you could even add bottled clam broth to the vegetables right along with the water for the later slow simmer into soup base.

All of this is a kind of long way of saying that what I really crave, when I’m in the mood for chowder, is seafood in a creamy soup base. Not much else. So: broth. Russet or Yukon Gold potatoes, celery, and carrots that have been diced fairly small (about 1/2 inch pieces) and oven roasted or sautéed until crisp-tenderly caramelized in butter, then thrown into the strained broth to bubble into toothsome tenderness throughout. Seafood added, just long enough to cook through (or if precooked, to warm through). Cream or half-and-half added and warmed. For those who don’t mind alcohol, a tot of sherry or brandy is fabulous added now, at the last, or even served at table as a condiment, along with the mill for grinding out fresh black pepper.

Saltines and oyster crackers bore me a little and just get in the way of good chowder. If I want an accompaniment, I’d rather have a nice crispy Parmesan tuile or two, or some straight-from-the fryer homemade potato chips alongside. And a big spoon, so I can sit and inhale tantalizing steam while I wait just until the chowder’s cooled enough to eat.

Enough dream-state ‘cookery’. I’ll end this episode of food fantasizing with the magnificent real-life seafood chowder we ate over the weekend with our superb hosts on a beautiful coastal sightseeing drive from Halifax to Peggy’s Cove, Nova Scotia, and back. Our friend Catherine cooked up a truly gorgeous chowder full of Canadian Atlantic-style goodness—homemade lobster-shell-based broth with white wine and cream and full of perfectly cooked russet potato cubes, tender scallops, chunks of haddock, meat from that freshly prepared lobster, and thyme. Little else. Exquisite. Served with some more (locally produced) white wine, warm bread, and cool butter, it was a spectacular treat. No, it was better than that. Foodie Tuesday: Idola-tree

Photo: Maple Sugar CandyMy love for the maple tree may be a little too intense for polite company. I think it a fine and lovely specimen of arboreal beauty, an asset to the landscape worthy of great admiration and cultivation, to be sure. Its impressively dense, hard-hearted wood is a grand material for the builder, cabinetmaker, and other craftspeople who value its beauty and strength for the long-lived wonder of what can be built from it that lasts for many a generation. Maple trees provide not only shapely plants, much-needed shelter from all sorts of wind and sun and storms, and those delightful little propellers of seed that fill many an hour with wonder for the fortunate child who grows up under the spreading arms of such trees, but also, and this is the crux of today’s paean, they feed me and my fellow maple admirers: their sweet, delicious, delectable life’s-blood; their sap.

I am a sap for maple syrup. And sugar. And pretty nearly all things maple, except perhaps distinctly artificial maple flavors, because why on earth would I want the fake stuff when I’ve supped of the Real Deal? No namby-pamby Grade A syrup, either; I want the darkest, densest, most maple-y syrup I can get, and if I’m not actually eating something like the cute little maple sugar candy lobster pictured above (sigh!), I would just as soon that the sap I’m sipping is as richly maple flavored as it can be.

I had the privilege, tonight, of taking my dessert right in the midst of dinner, in the form of a maple-bourbon milkshake to go along with my seared albacore tuna and grilled salmon entrée. If you think that sounds like an odd pairing, I don’t blame you. But in my defense, I was faced with a fun-filled menu that required getting my sister to agree to splitting our two entrees to share what was already a tough narrowing-down to that number, and my spouse to share the milkshake so that I could still find room to devour all of these goodies in addition to the starter that said sibling and I had already divided, an equally incongruous but also fabulously yummy version of a Caprese salad comprising slices of the biggest, juiciest heirloom beefsteak tomato I have ever seen, lightly salted and peppered, layered with slivers of silky fresh mozzarella, fresh basil leaves, and a small wading pool of olive oil and balsamic vinegar.

Sometimes it’s just too hard to choose one or two things out of the mass of delights on offer, so one is forced to be outrageously excessive in both the quantity and variety of items in which one indulges. Sometimes, I just lean in that direction by nature.

And sometimes, I rejoice that Nature has forced me to fall into a stupor of maple-induced reverie and reverence that says it’s okay to munch on a lobster-shaped hunk of pure sugar until just this side of comatose. Or to drink a wildly sweet, maple-magicked milkshake right along with a mismatched but far from misbegotten dinner. You can decide for yourselves whether this is a criminal level of self-indulgence. Meanwhile, I’ll be over here in the shade of a big old tree, thinking sweet thoughts while I spin its little propellers around to spread the goodness that is maple forestry just a bit further on this earth.Photo: Maple-Bourbon Milkshake

Foodie Tuesday: Lobsterama 2015

Digital illo from a photo: Lobsterama Nobody who knows I just spent two weeks in the northeastern states would have the slightest difficulty, if asked, figuring out what one of my main goals during the entirety of the visit would be: eat as much great lobster as I can find and afford. So yeah, that’s what I did. I don’t eat all-lobster-all-the-time, because it would be bordering on the criminal to ignore the great Italian food in north Boston or the regional favorites in Maine, New Hampshire, Massachusetts, Rhode Island, New York, New Jersey, or Pennsylvania (all of which we either spent time in or passed through on our road trip last week), never mind to skip all of the other fabulous fresh seafoods on offer. Fish and chips, sushi, New England clam chowder, grilled or roasted or sautéed or fried what-have-you. Fabulous, all, when beautifully made by experienced locals.

But lobster. Lobstah, as New Englanders tend to pronounce it. Heaven on earth, I say.

In the Northeast, perhaps the most signatory, elegantly simple, and delicious preparation of lobster is the lobster roll. It’s a sandwich. The standard definition of this is a split-top bun, hotdog style, filled with chunks of lobster meat. The commonest way to prepare and serve this is to either mix the meat with mayonnaise into a lobster “salad” to fill the bun or serve it otherwise entirely plain and put melted butter on it, either mixed in ahead or served on the side. Some restaurants and clam shacks serve this in any number of decorated and variably seasoned ways, the most familiar of which might involve some chopped celery and/or snipped fresh herbs, Old Bay Seasoning, minced onion, lettuce leaves, or some few other well-intended adulterations. Some vary the bread ever so slightly, toasting or butter-grilling its sides, or using something other than the typical soft white bread bun. But not many dare monkey substantially with the daringly exposed combination that is so beloved. One does not defy the gods of tradition with impunity, especially when the tradition involves something like lobster that in its pure form is so delicate and easily overwhelmed by fuss.

The height of northeastern innovation: serve a lobster roll on a *round* bun instead of the traditional split-top hotdog bun. Whoa! What’s *next*???

This year’s first lobster roll stop was at a venerable institution which shall remain nameless, where in times past I had revered the lobster roll as one of the area’s best, and a hidden gem at that, because the house is mainly known for and devoted to quite other culinary traditions. It used to be a butter-grilled roll that, albeit the standard split-top bun, was slathered somewhat liberally in salted butter before being put on the griddle, and then the lobster meat served with nothing more than a small amount of very simple mayo or a splash of melted butter, and if I recall, a nice wedge of lemon on the side. Absolutely ideal, in my view. But new ownership and a new lead cook always like to offer the New and Improved, which is seldom really either, and so it was in this instance, a lobster roll whose newer identity was of a sandwich with chunks of lobster in it, hardly the pristine joy of times past. Ah, well. The meat was reasonably fresh and sweet, and certainly the chance to find a lobster sandwich of any sort under about $30 (USD) in north Texas is not only limited but possibly, ludicrous.

Slaw on the side, fries rather than chips? Getting a little racy, aren’t we. A bit of green *in* the sandwich? My, what slippery slope is this!

After that, it was hit-and-miss hunting time, and the variations, while slim, kept the pursuit interesting. Another commonality when one’s lobster-rolling along is that most are served with french fries, or even more likely, potato chips/crisps, and a drink. Not more. A few places widen their scope to include slaw of some sort or perhaps even a green salad; corn on the cob; some kind of slow-cooked beans. Picnic fare, primarily. You might see hot sauce or ketchup or malt vinegar or other condiments on offer, and the drinks might be any number of things, though probably something equally picnic-friendly like iced tea, sodas, lemonade, or beer is the most popular. None of these is unwelcome, to me, but again, I don’t see any special need for any of them either. There’s a perfectly good reason that the tradition stands firm. Excellence. It’s all in the execution.

Next thing you know, somebody’s serving *plantain* fries (kinda hard, if you ask me, and not especially flavorful—maybe a shot of that Old Bay Seasoning would’ve come in handy there—but kudos for trying) and smoked Spanish paprika in the sandwich mayonnaise. Pretty soon we’ll be seeing cats and dogs living together and the dish running away with the spoon!

And when anyone gets that down pat, there’s no faulting the grandness of the invention. We found lobster happiness in several popular and highly touted locations along our short road trip route, both in towns and seaside, in shabby old rustic sheds and in white-tablecloth establishments. We found slight disappointments in a few, too, though nothing drastic. If we saw something less than enticing in the lobster rolls being served up before ours, we could always opt for any of the other treats I mentioned earlier, and we certainly did, in large quantities. We even discovered one of the currently trendy spots favored for its semi-puritanical goodness, right on the cover of the Sunday supplement.

As usual, of course, the satisfaction of the find was greatest when we listened to a few locals mention in a sidelong way a place that is a genuine jewel disguised as the neighborhood convenience store, truly convenient in that it lay about five minutes by car from one of our rented places. Driving by there, you wouldn’t guess that at the picnic tables by the parking lot, let alone at those tiny tables and chairs squeezed in the back corner of the store by the shelves of motor oil and snack packets and aspirin, you can have what we found to be the freshest, least in need of further elaboration, lobster rolls we’ve had yet. But boy, did we—and that, three days in a row.

When experiencing famous regional classics like lobster roll, one might be compelled to try some other regional specialities alongside. Like the unique Grandma Utz’s Handcooked Potato Chips, fried in 100% lard (yep, porky tasting) and a can of Moxie soda, a gentian root flavored carbonated beverage that lives up to its catchphrase of being Distinctively Different, though I can’t vouch (yet, at least) for its characterization as Nerve Tonic. Unless you count the fact that I’m widely considered to have a ‘lot of nerve’. Never mind the unusual accoutrements: the lobster roll at Libby’s is easily king of all I’ve had so far.

We’d’ve stayed the whole two weeks there (possibly just sleeping under the stock shelves) if we had known. The store owner’s lobsterman husband standing and cracking the just-caught, freshly cooked magnificence just a meter away from the service counter where we were ordering was the clearest possible <angels singing> moment of knowing that when we got our enormous lobster rolls we would be deliriously happy. And yes, we were. Even the “Small” (normal hotdog-sized) roll was jammed with huge chunks of sweet, sweet fresh lobster just faintly kissed with mayo (Days One and Two) or melted butter (Day Three, and the favorite, by a lobster’s antenna). The Medium and Large rolls were, well, too much of a good thing, but not so much so that we didn’t attempt them as well. As one should, because, well…  Lobster. Amen.

Foodie Tuesday: Smoke ‘Em If You’ve Got ‘Em

Fish, I mean. I’ve never had the experience of sucking anything into my lungs through a burning tube of dead plants or any other sort of cigarette, pipe, cigar, spliff, bong, etc, and I feel not the slightest sorrow over that as a loss. But smoky foods? Oh, yes, please! Smoked meats, smoked salts and spices, and especially, smoked fishes.

Smoked cod, like the tenderly delicious star of that long-ago fish-and-chips feast in an out-of-the-way pub in Winnipeg where the air was suffused with the aforementioned kinds of smoke to the point that had my companions and I not been quite hungry and quite at sea about where to find another eatery, we’d not likely have stopped. One had to brave a dank, ill-lit stairwell to the netherworld of an almost invisible below-stairs bar, be “sponsored” by a dear friend to become a member of the joint (the barman was happy to be best friends with all of us), order from the cook who was sitting at the bar eating his own lunch of fried rice or chow mein, and trust that one was actually welcome and about to be fed something good. Happily, all of this oddball expedition led to one of the most spectacularly delicious meals of fish and chips I’ve ever enjoyed, not least of all made special by the cod being smoked rather than merely fresh and perfect.

Kippers and Kedgeree would be hard to beat for a tasty breakfast or light supper, being smoked-fish-centric. Smoked tuna salad is a lovely dip or spread for hors-d’oeuvres and snacks. Fresh bagels are a dream with any good schmear, but possibly best of all with some bright, pure cream cheese and pristinely sweet and salty lox.

And of course, being a good native Seattleite and of Norsk lineage, I am fond of salmon in a vast variety of forms, not least of all the Norwegian version of that Jewish treasure, the cured salmon known as gravlax or any smoked salmon worthy of the name. Growing up with a good supply of Gramps‘s freshly caught fish on the table was not only a boon to the economy and health of the household, but a training ground for the love of that noble fish that only grew over the years and expanded to include the beauties of those cured and smoked varieties. It’s no surprise that I should so often fall back on the inclusion of one or more of these salmon delights when it’s time to make a good meal, whether for just my partner and me or for more sophisticated company.

This time I opted to let several different favorites crash into each other on the plate: double salmon (cured lox plus candied/smoked wild Alaska salmon) blended with a little bit of lemon cream, and firmly tender white wine-steamed vegetables (carrots, celery, and green beans), all scooped on top of a goodly heap of baked macaroni and cheese. They were well enough behaved with each other that I never doubted I’d find them friendly toward me, too, and sure enough, they were. Foodie Tuesday: I was Just Mincing Around the Kitchen, Looking for Something to Eat

But if I’m to be honest—and I should, especially since you all know this full well anyway—not much that I do in the kitchen is what anybody would mistake for culinary sophistication. What I prefer is ease of preparation, a tasty and uncomplicated ingredient list, and food that pleases my mood as much as my palate.

So the recent dish of seasoned lamb mixed with broth-cooked rice and green peas met all of my qualifications, especially as the ground meat in question was the other half of that batch I’d cooked up to fill the Jiaozi-of-Mystery some weeks back, and it had been lurking around the darker regions of my freezer ever since. Lacking great inspiration or quantities of time, I did as I often do…

I made a quick survey of the contents of my pantry: hey, a fresh jar of avocado-oil mayonnaise! I could make a plain mayo-and-honey dressing with a sprinkling of ground cardamom from the shelf next to them, zinged with one little jot of lime juice from the fridge, lightly coating an apple-and-celery salad.

I checked the fridge for the apples and celery: Check! Oh, goody. There’s still some of the rice I cooked up the other day, and it’d be a shame to let that go to waste by waiting for me too long. Guess I might just have to crack open one of the last two bottles of beer, too, while I’m at this Fridge Cleaning thing. Of course that’s the main purpose of all this action. What, you think I do this just because I’m a hungry looter?

I looted (oops!) the freezer next, because after all, I was already right next to it and it would be a terrible pity not to clean that out a little as well. What do you know. Minced lamb. It says Jiaozi Filling on the wrapping, which as you know is the virtual equivalent of telling me  not to make jiaozi with it when I am almost morally opposed to following recipes to the letter. Must be intended for, oh, I don’t know, something…with rice and…look! Over there! It’s a bird! It’s a plane! Nah, different storyline. It’s frozen peas! Yes. I can use peas in this.

I decided a quick return trip to the fridge and pantry stock was in order. Something liquid but not heavy, to tie up the loose ends of a lamb-rice-peas dish that would otherwise taste a little too haphazardly crumbly perhaps. A sort of teriyaki-ish blend of Tamari, lime juice, and ginger syrup? Yeah, that’ll do it. Done and done.

And that’s how a completely nonsensical trip around the kitchen when I’m already hungry and not in the mood to fuss with food prep goes from rummaging to happily eating in about ten or fifteen minutes, give or take an empty cupboard shelf. That’s also how, I’m glad to say, a slightly late post for Foodie Tuesday gets wrapped up when I remember the meal with a certain middle-of-the-night nostalgia that knows it’s too late for snacking. Foodie Tuesday: Keeping Up Appearances

Haphazard cook that I am, I feel compelled at intervals to assess whether the cookery itself is laggardly or it’s only that the presentation needs to be spiffed up a touch. I can’t be an impartial judge of the former, since besides being nearly omnivorous I’m also just lazy and frugal enough to eat almost anything I throw together, and I certainly haven’t the refined or experienced palate of a genuine culinary sophisticate, let alone a food critic. But I’ll allow myself the status of having enough visual experience and training to justify my evaluations of what the stuff I eat looks like and how it’s presented.Photo: Eggs & Rice

So when I get into one of my momentary fits of attempted good posture, whether it’s as a maker of ostensibly edible things or as the artiste plating them and arranging them on the table, I do at least attempt to pay better attention. The other day’s breakfast of broth-and-cheddar rice topped with eggs was, as planned, satisfying, filling, and comfortable, but I’ll admit that it would win no prizes for glamor. It’s not that I believe serving breakfast out of a vintage Hermès handbag would improve either the food or my spiritual character—never mind that I’d have to sell my car and a couple of major appliances to afford it—however, a tiny thing like adding a ribbon of sriracha or a sprig of fresh dill and a few capers would not only boost the actual flavor of the rice-cheese-egg combination to far greater heights but get me halfway there before I took the first bite, thanks to improved appearance and, then, scent. Sometimes the things I’m preparing to eat, whether they’re main courses or side dishes or garnishes themselves, are simply rather homely ingredients that don’t look especially pretty or inviting as they are, and I think it can be fun to fiddle around with them a little to lift the presentation of the whole. A quick pickle à la japonaise is a refreshing add-on when one wants a bit of salutary salivary stimulation, especially with fried or heavily sauced Asian foods. But if you’ve seen one sliced cucumber, you’ve seen them all. So when I make my side of cucumbers, I may score the cucumber’s peel with fork tines before slicing and chilling it in a very light mixture of plain rice vinegar, toasted sesame oil, black pepper, and sugar. Adding whole sesame seeds (plain, toasted, and/or black), ribbons of sushi gari (pickled ginger, natural or pink), crushed red chile peppers can enhance the flavor in so many ways as well as adding color and texture to the meal. And further possible flavoring additions that work deliciously with this kind of instant ‘pickle’ are also attractive visually: thinly shaved red or white onion or thinly sliced carrot flowers or unpeeled Granny Smith apples. Of course, if you go far enough with all of these companionable treats, you’ve strayed far from the realm of pickle garnish and into a full-blown salad bowl, and that’s perfectly acceptable, too.Photo: Food Not Touching

Salads are, after all, commonly the main entrée in many homes, including ours. An easy way to make them more visually interesting just happens to be a better way to serve them  to a picky eater or a group with widely varied tastes or needs, and that is to either plate the dish mostly as a composition or a deconstructed assemblage. The ingredients shine in their individuality. They don’t touch each other as much. I hear loud huzzahs of approval from my spouse and all his kindred out there, and I know that for many this is still not enough. The offending ingredient, if there is such, can at least be discreetly scooted to the side of your plate nearest to the person you know who loves it, and his or her fork, without the loss of any of the parts you like. And the salad doesn’t fit the snarky description infamous in our house on presentation-failure occasions, “are ya gonna eat that, or didja?”

But in seriousness on this topic, the best is always to let each diner serve his or her own meal, because the food-not-touching is an incredibly, truly sensitive, emotional, and even sometimes, ethical or life-and-death issue for more people than anyone can safely guess. I am not constrained by any such inhibitions, loving sweet and savory together, textural mixes, contrasts, and all kinds of things that others might find appalling combined, but then I do consider ingredients’ compatibility in taste before I do in looks, and therein lies the need for me to step back like this occasionally. In the meantime, I’ll say that I’m sorry that others can’t enjoy a melange of ingredients as the symphonic experience I find in them, and just hope that most at least delight in a good solo when they eat their meals one item on one plate at a time.Photo: The House Coleslaw

As for salads, since you know I make our household’s standard version of coleslaw very regularly, they’re not likely to look wildly different, let alone inspiring or exciting, unless I take the time to alter an ingredient or garnish or two. Or, as I did with our good friends coming for dinner the other day, serve it as a composed salad garnished with the starring variants on top and the dressing on the side. Everybody gets the proportions they like of the different components of the salad, and as much or little dressing as preferred. Yes, I did ask them what they could or would eat beforehand. And I’m far more willing to make my friends and guests do some of the work to make their own best choices than to give them something that only a few at table will like or can eat just as it’s served. Most of our friends end up milling around the living and dining rooms and kitchen with glass or dish in hand at some point anyway, so if they choose what they’re carrying, they’re more likely to want to eat it before it drops on the floor.Photo: Mandarins & Snap Peas on Top

The latter being, of course, not at the top of my list of food presentation styles, but hey, if spilled food is really artfully splashed and smashed, I can always make an exciting photo out of it for later inspiration.

Foodie Tuesday: Do Not Refuse to Enthuse

Does my post title confuse? Bemuse? Please, friends, excuse. My moment of enthusiasm is not meant to give you a contusion, it’s only about infusion.

For my infusion effusion: nope, not a solo meatball, but a tea ball full of flavoring goodies.

Putting flavor into liquid without leaving the flavoring agent in it any longer than necessary (or desired) is what one does when one is longing for a spot of tea or a cuppa joe, but it is surprising how seldom we remember the option when cooking. Cooking, as I do, for a mostly anti-veggie person, I find that he objects less to things that have been cooked into a dish or sauce until they’re visibly indiscernible and mild in flavor, so sometimes it’s also nice to infuse the food with flavors but not leave the actual flavoring agent in it at all, so as not to distract my partner from his appointed dining.

Making a mild variant of Tom Kha the other day, then, I used a tea strainer for the green stuff and a few other tasty Thai ingredients, knowing that I could pull out the solids when the liquid was seasoned enough by them. A base of homemade bone broth mixed with coconut milk and a bunch of home-ground curry powder is easy enough to throw together when those are all in the fridge, freezer, and/or pantry, as is almost always the case here, curries being as favored as they are in our house. I filled the tea ball fairly full of my various secret-agent Thai flavors: lots of minced fresh ginger and varying smaller quantities of Thai basil and cilantro leaves, lemongrass, red pepper flakes, and I would usually add kaffir lime leaves too, but had run out. In addition, I poured in a little lime juice (to substitute for that last ingredient) and some Tamari. Sometimes it’s fish sauce, sometimes Tamari.

Strange looking, perhaps, but also strangely tasty.

 

I put some chunky diced carrots and celery and mushrooms into the broth along with the tea ball and the other liquids and simmered them all until they were cooked to my liking, keeping the heat on a very low simmer for a fairly long time. At the end of the process, it’s so easy to toss in, as I did, a big handful of langoustine tails to finish cooking them. Also great as a plain vegetable dish, with tofu (though I’m supposed to limit soy, because of my thyroid meds), with prawns or cubed chicken. Lastly, though it’s hardly a strict adherence to Tom Kha traditions, I do like to either serve the soup like a sauce over rice or add bean threads or, as in this instance, rice noodles.

So easy, so flavorful, so flexible. And such a dish, in turn, infuses my senses with all kinds of pleasant memories, going back to my first tastes of southeast Asian foods, most notably the feasts prepared by my fabulous Thai roommate and girlfriends when we were all in college together. Foodie Tuesday: I Could Just Eat You Up

It’s springtime, and that means I look at my yard with an especially keen eye. Toward eating, of course.

Of course, the herbs—which I inter-plant with the other bedding plants because they’re all pretty together—are an obvious place to start. The parsley, coming into its own in its first full season, leads the way. And that goes with practically any food. If you eat green things, which I do.

Sometimes, of course, I just let green things do their own thing, because that can lead to *other* green things when they go to seed and have babies. Nice of them to keep on feeding me, all the while looking interesting in new and different ways as the seasons go. Kale: great texture and color as a leafy plant, great food as a picked or cut bunch of leaves, great branching, spiky verticality as a flowering and pod-producing biennial.

The rosemary out by the road is thriving and makes not only a lovely shrub but great perfume, too, when I walk by and can’t resist drawing my hand through it in passing. And there’s *plenty* for flavoring and garnishing everything I like.

Mint. Of *course* the place where money is produced should be named after this valuable herb. One of the best, most deliciously versatile green things around. Grows like a literal weed back in the northwest, where I grew up, but it’s a little harder to get going here in my Texas garden, so I’m thrilled this little colony is getting itself established under the backyard pear tree. Hurray for refreshing mint!

Many of the plants I’m nursing along in my nursery won’t pay off for a while. Some, maybe not until I’m not living here anymore. A baby grapevine is happily starting its way twining up the pruned-back holly I use as a support for the hummingbirds’ trumpet vine, too. Hope they’ll play well together as co-attractants for honeybees, lovely leafy, blooming, and fruiting plants when they grow up a bit more.

This little figgy went to market…as a feeble looking $4 stick in a pot on the discount rack. That was a couple of years ago, and the little fella has had a couple of rough years since being rescued. But it’s determined to live. See? Once again, leafing out from its tiny, twiggy stem. *Someday* it’ll bear fruit, I very much hope. But for now, it’s symbol of determination and a little spot of green, and that’s good enough to eat.

Even the front corner, out by the road, is a good place to put some high-contrast, shapely stuff that’ll be edible extroverted one day as well. Salvias, fringe flowers, irises and…rhubarb? Why not!

And of course there’s a rhubarb doppelgänger that is beautiful in the garden any old time, too, and is about as versatile as they come, a milder-flavored version, I suppose of the parsley and kale back in the first photos. Salad, cooked greens, garnish: chard. Silverbeet. Oh, yeah, and snazzy looking in the flowerbeds, too.

Food for me, yes, but gardening is also for the birds. No, literally. Sunflowers getting ready to bud for flowering joins sorghum grass that will seed for the avians in the late summer and fall. And below, those decorative squashes and pumpkins I piled up in the fall are not only leafing out profusely but bursting into flower to set up more fruits. The squashes and pumpkins will be nice, I’m sure, but I’ll probably indulge in eating some of the yummy blossoms as well.

And while we’re on the subject of edible blooms, there *are* some that are delicious (Hemerocallis/daylilies, which taste to me a bit like snow peas) might escape my jaws unless they bloom really prolifically. But of course, I do think they’re tasty…so perhaps…. Time for a sunny floral salad again?
