Foodie Tuesday: Rinse and Repeat

You all know what a fan I am of leftovers and ‘repurposed’ ingredients. Most of the foods I’ve been fixing lately have been a continuation of that tradition of mine, especially because it’s been a particularly busy time around our place. We’ve had the usual spate of spring concerts and recitals, more than the usual number of social and business-social events at home and other places, and planning and preparation for a large quantity of upcoming happenings. The garden’s been coming in at top speed. I’ve been trying to clean house more seriously than I had in a long time, because it’s really overdue and I’d love to sell off and give away a lot of underutilized Things. Oh, and I’m trying hard, really I am, not to fall behind with my writing and artwork.

That latter means, naturally, keeping my blogging current, but in addition it means working on two art commissions—one a super-fast turnaround project I just got a few days ago. It also includes attempting to continue with the development of several books to follow up on the one I published in January.

I’m neither complaining nor bragging, just stating a truth that is pretty much like the daily one facing the majority of people I know, each with his or her variations on the details. And it reinforces my attachment to quick, simple, reusable and flexible ingredients and dishes more than ever. Today, for example, I made and froze what will (I’m certain) be a delicious potato side dish for later this week, when friends are coming over for a casual dinner visit. I used a combination of a smashed microwave ‘baked’ potato, a handful of chopped and mashed leftover french fries—good hand cut ones from our favorite old school steakhouse—a handful of crushed leftover potato chips, and enough leftover pimiento cheese from the batch I made for our party the other night to make it all into a cheesy potato casserole. I had some crisped bacon in the fridge, so the casserole is topped with that for the finish. It doesn’t look like so much yet, being in the freezer and all, but I’m expecting to enjoy it quite a bit, along with whatever else I manage to put together for the occasion.photo

Confession: I got an itch to do something trendy, despite being so rarely trendy myself, and I made a lattice out of the bacon. Silly, but kind of fun. And if one is going to wrestle with trying to cook a little in the midst of lots of real life busyness, shouldn’t there be a little bit of silly fun involved? No, wait: a lot?

 

Will the Blooms Return?

I’m thinking about flowers. [I’m not talking about my cousin’s family, though they’d be a welcome sight in this part of the world as much as any!] Perhaps it’s because, here in Texas, signs of sprouting, budding and even outright blooms are beginning to show all around us: the flowering pear trees are starting to burst like giant batches of popcorn, my infant fringeflower is sporting a deep fuchsia-colored tassel or two, and even the local redbud trees are bravely showing off glimpses of their own hot pinks and purples. It may also be that the influence of a few days spent recently on seasonal cleaning and prep in our yard brings, along with the seasonal sneezing and watering of the old eye-bulbs, the welcome scent of earth and sightings of green specks that seem to increase in size while I watch, reminds me of spring and summers past and favorite blossoms I eagerly await on their return. The recent speedy trip to San Antonio, just enough farther south from us to be a week or two ahead in the race to renew its flora, certainly enhanced my longing for the sight of flowers while it was giving me its own preview. And of course, there’s simply the persistent infatuation with all-things-growing that grips me year-round that might be one of the main instigators of this present hope.

Foodie Tuesday: Pretty as a Picture

photoThere’s an almost unbreakable rule when it comes to sensory perception and food: if it looks bad, it’ll taste bad. People will eat the most strange-smelling stuff–witness durian, any number of aged cheeses, fermented foods, and a large number of culture-specific items from around the world that, to anyone not either genetically inclined to be attracted to it or else remarkably brave and adventuresome, will yell at the lizard brainPOISON! POISON!’ The emetic reflex is, indeed a powerful thing when triggered by smells, but somehow a vast quantity of people have not only overcome that response but embraced the non-toxic results of the experiment. But things that look unpleasant are often a much harder sell. We humans respond intensely to appearances.

That’s not to say that we won’t eat things that look fairly nasty. The first person who looked at a monkfish probably didn’t say to himself, ‘gosh, that looks inviting,’ so much as something like ‘good thing I’m starving here!’ and the famously slimy strands of nattō (compounded, I’m told on good authority, by a perfume that’s fully its equal for off-putting qualities) were unlikely the source of its original appeal. In our household, the favorite rude comment if food has a notably unpalatable appearance is, ‘are ya gonna eat that or did ya?’–to which my response is generally to spoon up a big bite of it, because I’m almost always the one who eats Weird Things and I’m also a petulant show-off.

But for the most part, looks are terribly important, not only because in the rawest sense they can mean the difference between safe and unsafe eating but also because ultimately, we like food to stimulate our pleasure centers. So it’s not the worst rule of thumb to look around, when seeking ingredients and recipes, for things that have the inherent beauty we will respond to most happily, and that can sustain their loveliness throughout the prep and presentation arrangements.

Sometimes, of course, the best rule of thumb in the event is to simply eat the food as we found it, because if it looks pretty to start with it probably doesn’t need any plastic surgery from us ordinary non-chef mortals. See it, eat it. Pretty good recipe, pretty often.

Foodie Tuesday: A Little Latin Love

photoIt was Tapas Tuesday today. Since we were having the Collegium crew over after their performance of the exquisite Requiem that concluded the compositional career of the magnificent Spaniard Tomás Luis de Victoria, it seemed only appropriate to feed them some Spanish-influenced food and drink. I am neither a Latina–though much of my Norwegian ancestry did come from the southernmost part of Norway, so that makes me virtually Mediterranean, no?–nor knowledgeable about Spanish cuisine, but I took my usual loose and playful approach and didn’t get any complaints.

It’s wonderful to start learning a cuisine by means of a party rather than a full meal, to be sure. Numerous bite-sized dishes offer a much more forgiving palette for pleasing a large number of guests. Among the attendees were some who needed vegetarian, peanut-free, and gluten-free options, a couple of underage visitors and a nursing mother, all of whom would be needing non-alcoholic drinks–and then there were those for whom none of that was relevant. Again, the variety of items possible in a tapas party easily lends itself to such flexibility. It’s no wonder hors-d’oeuvres and cocktail parties and bar menus have remained tremendously popular since their inception.

What I don’t wish to do is to attempt to be all-things-to-all-people. It’s futile. It’s overly precious and annoying anyway. I’m just not willing to attempt that in any aspect of my life, least of all when I rather hope that people are visiting us at home because they actually want to visit with us, not because they’re looking for some mythic party experience. The funny (and not at all surprising) thing about it, of course, is that it still took me all day to get ready for the shindig before my husband got home from school to get ready and head over for the performance before 6 pm. Because, large or small, food and drink items take some prep work.

I did want to squeeze in some time for house tidying, at least in the rooms we were using tonight, and of course there was a load of laundry to be done and a kitchen-full of dishes to be washed and put away, a batch of bone broth to set to cooking, and oh, yeah, some errands, some garden watering. You know, the usual. Which is all to say that there is a reason or two that it’s a shade after midnight, and yes, I can tell time, so I know it’s not Foodie Tuesday, strictly speaking, anymore. Therefore I’m just posting this with a teaser photo or two (murky and fuzzy at that) to assure you that tomorrow I will tell a bit more about what I made for today. Come to think of it, perhaps I’ll get to eat some of it tomorrow. Because as you all know, when you spend the whole day fixing things for a party and then have fun people show up for the event, chances are pretty good that you’ll go to bed without having actually eaten any of what you fixed, other than a quick taste here or there while in mid-prep.

But I got to meet a few new people, or at least visit with some I’d not yet gotten to chat with before, and hold the exceedingly charming 5-month-old daughter of one of the singers. So I’m not complaining in the least! Still, it’s past my bedtime and well past when I would like to have posted this, so I’ll just bid you all a good night and sign off until tomorrow. Foodie Tuesday: Nothing Sexier than Proper Mise en Place

Ready for mirepoix-making?

Let’s face it, I’m as predictable as romantic comedies when it comes to many things, not least of all, choosing the path of least resistance when fixing food. If there’s a shortcut to the shortbread, lemme at it. If there’s a snappier way to trim snap peas, I’m on board with that. But if there’s one thing I know is worth any amount of trouble, it’s prep. It’s not glamorous, I’ll grant you, and sometimes gets mighty tedious, especially when there’s a sizable party or elaborate meal on the horizon. But there is nothing that makes the rest of the time in the kitchen more tolerable, even enjoyable, than having the best of mise en place at my fingertips.

I did my time as a house painter, back in the misty distance, and I learned tout de suite that there was no substitute for careful first steps when it came to a fine finished product; I spent some time laboring backstage and behind the scenes in theatres and found that what’s seen when the curtain’s rung up is about a thousandth of what’s been and being done for the production. Of course, my conductor husband works in a discipline where the inexperienced concert-attendee would be wildly off base to think that all performers do is get up onstage and wave arms or pipe on musical contraptions or flap tongues. Even if they have an inkling that rehearsals are necessary, they haven’t imagined the tiniest increment of blood, sweat and tears that went into a performance. And I’m fairly certain I haven’t come across any other field in which that doesn’t generally hold true. What goes on before-hand is such an essential and formative part of what comes out of the proscenium or oven that sometimes I think we’re guilty of assuming everyone would just plain intuit that. We need to tell the inexperienced what a beautiful thing is that dull seeming preparatory work, what glorious jewels are the salt-cellar and oil bottle and dishes of neatly diced Tasso and shredded Reggiano and chiffonaded basil.

Even the finished dish may not look particularly artistic, unless it’s something generally far more designer-iffic than what I’m likely to produce at my board, but it is an infinitely greater pleasure to prepare and serve food that was made easier to prepare and serve by having arranged for good mise en place in good time. There’s both the initial set of ingredients and tools that ought to be at the ready, and then there’s the lineup of Parts that precedes the final plating for presentation, and both serve to wonderfully streamline the efforts.

The cranberry-mandarin-maple relish that will add a note of piquancy to the Thanksgiving plate is nothing much to look at, but will add its own essential character to the plate . . .

Part of the effectiveness and pleasure of mise en place for a visual obsessive like me is that it allows me to ‘paint’ with the food, whether in creating the individual dishes or in building the presentation, modest though it might be, by considering not only all of the flavors and practical characteristics of the ingredients but also their colors, shapes, visual textures and other attributes that can contribute to the integrity and–God willing–deliciousness of the whole.

So this is why, on the Tuesday before Thanksgiving, I’ve been brewing broth for gravy, concocting relishes and garnishes, butterflying the turkey and brining it (tomorrow it bathes sous vide, Thursday gets its high-roast crunch on!), roasting potatoes so that they will make heavenly light mash despite the added gallons of cream and pounds of butter, and all of that other ‘peripheral’ stuff. It’s not much to look at, to be sure, but I think I’ll manage to get a pretty fair showing out of it all eventually, because I’m laying the groundwork and setting the foundations first. Amen, let’s eat!

Best-Laid Plans, Like Best-Laid Eggs, Gang Aft Agley

Robert Burns evidently knew it as a long-established fact, so I think it’s safe to assume that the unexpectedness of the turnings in life’s wonderfully wiggly path long predates Bobby and me and pretty much anyone else I could look to for a quick peek in the crystal ball. The day will always just take me where it takes me, and I will consider myself to have done well even if I can only keep going with the flow of it and not just plain get knocked down and run over. Most of the time, the moment’s, day’s, or year’s destinations are far more interesting than those I thought I’d plotted out in the first place.

Even thoughts are often just fly-by evolutionary phases waiting to develop into something more meaningful . . .

Yesterday, for example, I thought I’d post my Wednesday-night drawing exercise, but I was startled by the arrival in my inbox of a lovely gift and task in the form of pay-it-forward blogger recognition into doing something entirely different than my first intention predicted. In the process, I discovered not only a renewed interest in visiting and catching up with various of my previous favorite bloggers‘ sites but a whole cadre of new blogs and bloggers with whom I will now be sharing this adventure. Much better than the stodgy post dedicated to yesterday’s-drawing.

On the other hand, what it brought to mind along the way was that there are few, if any, of us that understand any of ‘what happens behind the curtain’ in anyone else’s world. Non-musicians think that because almost all human beings can make sounds, most of them in some controlled form, that a singer is just someone who opens up and pretty sounds come out rather spontaneously, not that he or she would spend years learning how to breathe properly, read music, stand, sit, move and (when necessary) act in the ways demanded by the particular repertoire. That singers have, in fact, to learn a large amount of repertoire over the years, getting to know texts, languages (pronunciation and nuances of meaning), rhythms, techniques for singing faster passages or long-drawn-out notes well, and a million other aspects of musicianship that non-singers will never know.

I think it’s hilariously misguided how readily we assume that if something is done well by another person, it must come naturally or easily, and not that–as is far more often the case–it has been honed through the now-famous 10,000 hours of practice that Malcolm Gladwell posits in Outliers as requisite for gaining expertise in one’s field. Any one of us knows from experience that things being easy and “natural” from the start is rare almost to the point of nonexistence. From bronc riding to ballroom dancing, from puzzling out the intricacies of quartz crystal cutting to those of quantum physics, there’s no place that one becomes expert or even experienced at first try, or probably tenth.

So I think it’s only fair that we teach each other what we know of these behind-closed-doors mysterious labors. You see my writing in a somewhat raw form, granted, on a daily basis because I committed to posting daily and that means I can’t spend unrealistic amounts of my waking time fussing over rewrites and editorial doctoring or the house will fall into ruin around my ears and we’ll eat nothing but what comes in random order out of the fridge at every meal. Not to mention that I won’t fit in even my Wednesday evening drawing time, let alone go on photographic wanderings or any other creative tangents.

The drawing, though, you don’t see in process or very often in its developmental stages. I draw enough stuff that I don’t have to let you see my “underwear” like this, but as I say, being a fairly truthful person I think I owe it to you to show you that not everything gets finished to the same degree or as successfully. I wouldn’t claim any of my work at all as Perfect (and where would be the fun in that, anyhow?), but there are degrees of relative completion and appeal, even in my playtime stuff. So the sketches above give you some sense of process in my case. They are literally bits pulled from my carry-around sketchbooks, and show that while I’m in a particular mode I might be working out issues not only of technique and medium but also of style, mood, intended story content (if any) and so forth, until they might gel in a drawing of the sort I’m more often going to publish here or even want people to see when they peer over my shoulder at my work.

The result of recent noodling over bird stories (yes, birds are about as recurrent as the proverbial fish and pencils in my work) in my sketchbooks led to this Wednesday’s drawing session in which I imagined what would happen if a pair of birds found one of the Easter Bunny‘s plastic eggs and raised it as their own. I’m pretty sure this is the actual origin story of marshmallow Peeps.

Given how generous, collaborative and creative the blogging world is, I expect that eventually there will be a bit of lessening of the information gap that lets us naively believe that anything we don’t understand but someone else is good at doing must just spontaneously spring into being for them. Much better to acknowledge and admire the immensity of learning and effort that devoted practitioners devote to their wide world of doings, and the great gift that having others so dedicated and skilled around us is to us all.

Just think: if some poor cave-dwellers hadn’t squatted nekkid around the cooking fire with a fat-spitting hunk roasting over it about ten thousand times too often, we would neither have the knowledge of how to have sputtery, juicy fun at the cooker, nor would we have the majestic modern beauty and wonder of aprons.
