Foodie Tuesday: Pretty as a Picture

photoThere’s an almost unbreakable rule when it comes to sensory perception and food: if it looks bad, it’ll taste bad. People will eat the most strange-smelling stuff–witness durian, any number of aged cheeses, fermented foods, and a large number of culture-specific items from around the world that, to anyone not either genetically inclined to be attracted to it or else remarkably brave and adventuresome, will yell at the lizard brainPOISON! POISON!’ The emetic reflex is, indeed a powerful thing when triggered by smells, but somehow a vast quantity of people have not only overcome that response but embraced the non-toxic results of the experiment. But things that look unpleasant are often a much harder sell. We humans respond intensely to appearances.

That’s not to say that we won’t eat things that look fairly nasty. The first person who looked at a monkfish probably didn’t say to himself, ‘gosh, that looks inviting,’ so much as something like ‘good thing I’m starving here!’ and the famously slimy strands of nattō (compounded, I’m told on good authority, by a perfume that’s fully its equal for off-putting qualities) were unlikely the source of its original appeal. In our household, the favorite rude comment if food has a notably unpalatable appearance is, ‘are ya gonna eat that or did ya?’–to which my response is generally to spoon up a big bite of it, because I’m almost always the one who eats Weird Things and I’m also a petulant show-off.

But for the most part, looks are terribly important, not only because in the rawest sense they can mean the difference between safe and unsafe eating but also because ultimately, we like food to stimulate our pleasure centers. So it’s not the worst rule of thumb to look around, when seeking ingredients and recipes, for things that have the inherent beauty we will respond to most happily, and that can sustain their loveliness throughout the prep and presentation arrangements.

Sometimes, of course, the best rule of thumb in the event is to simply eat the food as we found it, because if it looks pretty to start with it probably doesn’t need any plastic surgery from us ordinary non-chef mortals. See it, eat it. Pretty good recipe, pretty often.

DI-Why-Not

Here at the ol’ Sparks Ranch (well, just a ranch-style house, but we are in Texas after all), DIY projects happen for a variety of reasons, but there are three main motivators that have the best chance of eventually getting me involved in them. The first is that I get, ahem, the spark of an idea for something that could be better than it is. The second is that I don’t often have the moolah to purchase such an item or bit of action ready-made and fabulous. And the third is that sometimes just the right piece of the puzzle arrives on my doorstep to nudge me into  motion after all.

These three inspirations converged recently when my longstanding desire to spiff up our built-in bar–an item I’d never been accustomed to having in my home, but what the heck, it came with the house–complicated by my unwillingness to spend much on the project, met with the gift of our renovating next-door neighbor’s removal of the built-in bottle and stemware rack from the bar in her house. (Thank you, LM!) As our houses are of similar vintage and share close cousins of the woodwork stain variety, the ejected cabinet was a close enough match to those already in the lower half of our bar to make a fine fit.

What began as a modest set of lower cabinets, a set-in [and nearly stainless] bar sink with a cheap but functional faucet, a nasty very fake looking ‘wood’ laminate countertop and some glass shelves on a simple bracket style rack is now, I think a reasonable bit better: it’s both a fair amount more functional and a little less sketchy looking, and I think I won’t be quite so worried about keeping it closed constantly as I had been in its shaggier state.

Now, with more storage! And a little bit more finished look, despite its humble beginnings.

What I did: first, I remembered that I’m now over half a century old and therefore should not lift a couple-hundred-pounds cabinet up and bolt it into place solo, something I would undoubtedly have been dumb enough to try in times past. Okay, and I was silly enough to lift the thing onto the counter by myself before I decided that not being hoist on my own petard was a really appealing concept. So after I cleared all of the previous bits out of the spot and plugged up the screw holes from the old shelves, I hired a carpenter friend to come and heft the oak box up, herk it into position, and bolt it generally in place with me. I’m cheap but not [entirely] insane.

I masked off the space and did the most gruesome part of the job: prepping and spray painting the countertop and the lower half of the walls, along with the sink and faucet, with my old friend Hammerite paint in the bronzy brown hammered finish. The walls and hardware (including the light switch and outlet) were all in extremely rough shape and it seemed to me the better part of valor to just embrace the rugged look and be a tiny bit old-school industrial in style. Then I brought in all of the scraps of trim and moldings I had left over from our previous reno projects here, along with my little hand-saw and miter setup, and pieced together some legs to support the front of the already weighty empty cabinet and horizontal supports for shelves over the sink, cut two short shelves out of a couple of old bookshelves no longer in use elsewhere, and then trimmed out the whole conglomeration. Under all of the paint, if you look too closely, you’ll see that it’s one wild concatenation of mismatched trim profiles and caulked, spackled, sanded and glued odd parts, but I did my best to pull it all together with the finishes by painting the bottom half all in Hammerite and the top half (including the ceiling) in plenty of primer and a finish coat of satin latex in simple cream.

I borrowed a couple of unused curtain rod finials to hide some of the weirder joinery at the corners and loaded the cabinets, and I believe I’m now within an nth of Done with this particular DIY. Or, if I’m to be honest, I suppose I should admit it’s DIM (Did It Myself–and yes, dimly enough). I just took the globe off of the ceiling light and stuck a reproduction Edison bulb in the fixture for now; eventually, I’ll want to either move the fixture itself or get a swag to relocate the bulb over the sink, so it doesn’t sit right next to the wine rack and heat it up, however briefly I keep the light turned on in there. And I’m going to put some of those little chalkboard labels on the front of the ‘new’ cabinet in those flat spaces so I can write in what’s in the rack and change it as the inventory changes. At the moment, I’m done with what I have materials on hand to do, so I think I’ll just enjoy it. Probably ought to sit down and have a drink!

I am So Very Thankful

Today marks the official national celebration of Thanksgiving in America. I am truly grateful every single day that I have such a wonderful, rich, happy and blessed life, but it’s a fine thing too to have occasional designated moments to devote to recognizing what I’ve got to appreciate.

So I must say once again how glad I am to have you, my readers and commenters, those of you whose blogs I so enjoy visiting when I can as well, and all of you who have become dear friends to me through our correspondence and sharing of ideas and delights through blogging. This is a gift by which I never imagined, those 520 or so days ago when I first started daily posting, I would be so enriched and in which I would find such pleasure and inspiration. Thank you, every one.

I am also humbly grateful for the unearned joys of good health that I have, and for the comforts of a well-fed, cozily sheltered and remarkably stable daily life. I am grateful as can be for having a superbly generous and warm and colorful and downright fun family. And most of all, I am grateful beyond all words for the love and friendship and constancy of my dear life partner, my spouse, my goofy comrade-in-silliness and my tender and unfailing support, the guy with whom I first went to dinner and a performance (however blithely ignorant I was of the earth-shaking import of the occasion at the time) seventeen years ago this weekend. Foodie Tuesday: Same Song, 99th Verse

Ingredients are finite. The possible ways to combine them and make them play together, not so much. I’ve found that true as a visual artist and as a cook just about equally, and in both cases it was clear from very early that I could choose between endlessly repeating myself and looking for fresh and interesting ways to play with the possibilities. Having finite resources of money and groceries complicates the cookery. Having finite tastes and interests as an eater takes the complexity further. I congratulate myself on being nearly omnivorous, but yeah, there are things I don’t want to eat. Blueberries (I can  never explain this idiosyncrasy to the hordes of blueberry aficionados in the world, I guess). Organ meats (whether of organs one can or can’t live without in one’s own inventory, I generally don’t want them between my teeth). Super stinky cheeses (sorry, Francophiles). Snails (slugs are slugs, whether they’re well dressed or nude, my friends). Being married to a fella with even more limited tastes than mine, well, that’s yet another challenge thrown into the mix. So it may take a tiny bit of puzzling to decide what to prepare and how to blend the available goods into a welcome meal that we’ll both like, never mind how tasty others will find it.photo

But really, when we’re hungry, it’s not exactly hard to find something that will please a whole range of palates, even if the something needs to come from that aforementioned short list of potential parts. Sugar snap peas: they’re not so specific in flavor or texture or mode of preparation that they can’t be tweaked to fit a huge number of meals and dishes. Raw and plain, they’re sweet and crisp and refreshing. Steamed, they can take in a wide variety of flavors and complement yet more. They work in salads, in hot dishes, and on their own. Hard to go wrong. Meats: beef as a classic steak or roast is no worse or better, no more or less flexible in company with other ingredients or dishes than if the beef is stewed or ground, served spiced or more simply flavored, hot or cold. Bits of food from one recipe that, left over, become the heart of another: orange peel remaining from the peeled supremes used in a salad gets cooked down with stick cinnamon, crushed pods of cardamom and some whole cloves (all, in turn, saved from a baking project or two) and sugar water to make syrup for spiced wine or to be chilled for sodas. The avocado that didn’t get used alongside yesterday’s meal, that one gets put into a smoothie.photo

Or a tasty banana pudding. Or used as a chopped salad ingredient. Mint frosting base for brownies or a chocolate cake. Who knows. I might even make a dish of avocado with peas, beef, and whatever other readily available ingredients come to mind, because that’s the way I tend to cook. And eat. And it never really gets old.

Mama’s Girl

Yeah, I’m a big baby.

I’m past the half-century mark, don’tcha know, and yet the older I get the more I realize how much growing up I have yet to do, not to mention how much I am shaped by my genes and my formative years. And unlike many people, I find I am heartened and grateful when I look in the mirror and see my mother. There may still be hope I’ll turn out well.

It’s not just that I’m pleased to start looking more like Mom, though that wouldn’t make me sad in the least; I think my mother’s beautiful. But since we’re a pretty close-knit family, I like to think that enough of her more objectively wonderful qualities will have rubbed off on me over the years that I have a chance of continuing to improve with age in many other ways as well. To grow into some semblance of her patience and compassion, her grace and gentleness and big-hearted love is certainly a gift to be fondly wished.

Meanwhile, however, it’s Mama’s birthday. It’s she who should be getting gifts. But then, given my mom’s character, having her children turn out well ought to be just the sort of pretty good present she’d like most, and if my seeing her in my mirror confirms that the best I can turn out is as a good imitation of her, why then I’ll keep working and hoping and trying what I can to head in that direction. Hmmm. Maybe I should bring her a box of candy or something just in case.

Foodie Tuesday: What’s the Difference between an Old Smoothie and Desiccation?

What does it matter whether I’m an old smoothie or just desiccated with age?

There’s no time of year that’s wrong for a tasty smoothie. Since these little flavor powerhouses can be packed with vegetables, fruits, dairy or non-dairy liquid goodness, and countless herbs, spices, elixirs and sweeteners of choice, why not occasionally enjoy a few of the day’s nutrients in a deliciously sippable form? And why not, while I’m at it, sometimes enjoy them in an outright ridiculously dessert-sweet version right in the middle of the rest of the meal? Behold the Peach Pie Smoothie. It knows no season, being easy to make with canned peaches–home canned being the loveliest, if one happens to have access to them. Never having embraced the thrills of home canning myself, I’m satisfied with finding ready-made canned fruits that are preserved in fruit juices (their own or mild flavored companion ones) rather than the heavy syrups that merely mask flavor and put the fruits into suspended animation that extends beyond their shelf life.

Peach Pie Smoothie [for one]

1/2 cup canned sliced peaches in fruit juice
1/2-3/4 cup cold water
1/4 cup whole milk yogurt
1 T honey
1/2 tsp vanilla
1/2 tsp Saigon cinnamon
pinch of salt

Blended together until smooth, this combination becomes a potable pie–and probably every bit as sugar and calorie laden as its forebear, so I’d better not make it a habit–that adds a happy note of variety to the meal of the day, whatever it is. I’d add a dollop of whipped cream to the top, given its rich dessert-like nature, but that would surely spell doom for my chances of minimizing the habit. When I say ‘that’s how I roll’ it begins to have a whole different meaning than I’d hope. Meanwhile, I’m too busy slurping to stop and whip the cream anyhow, luckily for me.

Besides this, there’s the sure knowledge that there are other sweet delights out there waiting for me all the time, and they’re not necessarily terrible for me either. The addition of salt–as you know, one of my favorite things on earth–to this smoothie has a specific purpose and reminds me of another grand feature of food that can be captured with little effort when one’s in the mood. Sweetness through the contrast with other types of flavor: sour, bitter, umami, or in this case salt. The enhancement of sweetness can also be relatively easily achieved by means of concentration.

No, I’m not referring to thinking-makes-it-so, though I have been known once or twice to furrow my brow in deep cogitation over whether I mightn’t be able to find more ways to bring out the sweetness of a dish or ingredient. My furrowed brow, however, hints at the other means to which I’m referring, because let’s face it (no pun intended), as I get older and my youthful juices start to dry up, my face does get more creased and crevassed. And desiccation is precisely what I’m talking about. Concentration sounds much cheerier, perhaps, but the meaning and effect are generally the same: to reduce or remove the liquids rounding out an ingredient or dish in order to enhance the detectable presence of the remaining portions. Salt, as a natural desiccant, can do this by means of leaching out juices as well as by its own salinity contrasting with other kinds of tastes. Evaporation, however, is another option and, though it’s a slower process than adding a bit of salt, depends on the ingredient itself to take the forefront, so to speak.

Let me just say that if anyone should call me a prune I would consider it highly complimentary, a tribute not only to my maturity but an indirect admission that I’m sweeter than most of those undeveloped youngsters out there.

Drying fruits in particular is a great way to pack concentrated, deeply flavorful sweetness into them. It seems only in the fads of recent years have we returned to a fuller appreciation of how marvelous that magic is, as evidenced in the skyrocketing prices and popularity of dried fruits of every sort, not to mention the pastes, candies and preserves we can make of them with little further effort. To wit:

Foodie Tuesday: Un-, Ex-, De-, Out-

We are leaving one season and entering another. Time to divest ourselves of pretense and the impulse to be over-elaborate when making a change. I see people all around me worrying that their Thanksgiving menu isn’t finalized, their Fall-themed altar of mantel decor not as impressive as the next neighbor’s, and their Halloween costumes not thrilling and polished enough to accompany their hundred handmade sweets for the twenty-seven tiny Monsters who will come knocking. Better, sometimes, to enjoy simpler approaches and simpler pleasures! Autumn can be:

Uncomplicated.

Extricated from fussiness.

Demystified.

Outrageously edible.

photoAt the change of each season I do have a tendency to shift in my flavor preferences. When it’s been summer-hot out and finally becomes cool, those warming, earthy, old-fashioned and evocative spices and scents of Fall–cinnamon and cardamom, roasted roots and mushrooms, sweetly freckled pears and chalky-skinned, slightly scabby McIntosh apples (not the electronic kind, mind you) begin their annual siren songs of woodsy, sit-by-the-hearth allure. And I can go a little crazy.

It’s easy to go a bit wild, to be the over-swung pendulum flying to opposite extremes, when one has been long immured in the cooling pools of summer’s lovely seasonal foods and beginning to long for something different. But of course delicious flavors needn’t be exaggerated to be glorious. Sometimes the over-the-top approach is indeed precisely what I desire, since I’m a more-is-more kind of person in general, but sometimes a little subtlety is also a welcome thing. A restrained hand in the kitchen can allow a smaller assortment of lovely notes to interplay beautifully, and the pleasure of savoring one gorgeous individual taste at a time, too, can provide moments of sublime happiness that stretch well beyond the culinary.

I know this stuff perfectly well in my head, but my heart frequently scarpers off with my stomach quick as the dish with the proverbial spoon, and once again I have to calm myself and remember that there’s plenty of time in the season for me to slow down and savor the flavors before the next change arrives. It happened again last week, and I had a narrow escape from the annual autumnal overkill. I pressed aside my rabid plans for the sort of dangerously delirious feast that would’ve kept me comatose right up until the next fit of wildness did hit me at Thanksgiving. Fanning myself thoughtfully with a big spatula, I got busy making a much less complicated, sautéed and simmered, soup treat and found it as satisfying as could be.photo

Hearty Cauliflower & Mushroom Soup

Simmer 1 bunch of fresh sage leaves in 1/2 lb of pastured butter (I use salted–I’m very fond of my salt, thankyouverymuch) until the butter’s golden brown and fully infused with the herb and the leaves have given up their moisture. Strain out the leaves onto paper and let them crisp up nicely, giving them an additional sprinkle of salt if desired for crunch. Sauté 2 cups cauliflower florets and 1-1/2 cups sliced brown mushrooms (both can be fresh or frozen) in plenty of the sage butter until they’re soft and caramelized. Add a little liquid–water, dry sherry, broth, buttermilk or cream as you blend it all with a stick blender. No need to get it thin or even quite smooth: this is a rustic Fall soup, after all. Garnish it as you wish: a swirl of buttermilk or Crème fraîche, some crumbled crispy bacon, some deeply caramelized onions, or just a generous toss of those crisped sage leaves.

There’s only a little bit left to complete this recipe: take your bowl of prepared soup, curl yourself in the arms of a big, well-worn overstuffed chair, bundle up in that wonderful old afghan lap-rug your granny crocheted for you in your youth, crack open a musty classic book, and lap up your thick soup with a big, deep spoon. Sigh, turn page, sip, repeat. Winter’s just a few chapters away.photo

Here in My Safe Little Place

graphite drawingComfort and security, that’s what I want. And I think I’m hardly unusual in that urge. Aside from the rare adrenaline junkies whose craving for danger and life on the edge knows no bounds, most of us like to have at least one place in life, on earth or in mind where we can crawl in, curl up and feel like nothing and no one can assail us there.

While I adore travel and I treasure those people and experiences and grand-and-glorious places that it has brought to my acquaintance, there’s at least a small part of me that may always be leaning toward Home. I don’t think of myself as an adventurer by any means at all, but I’ve grown a bit more attracted to the happy mysteries of the unfamiliar or even the exotic as I’ve gotten older, and I can appreciate much better how much wealth and delight the new and unexpected can often bring into my purview. Now, what I must keep in mind instead of a constant combat against my natural urge to shun all movement outward from my safe, soft center is that my concept of that person-place-or-thing identifiable as Home has changed, and can change, and certainly will change, because that’s exactly the sort of surprising flexibility that an even minimally worldly human can experience, once the crying need for total security is breached satisfactorily.

So here goes: once more I shall leap outward in hope and expectant happiness, and all at the same time remain busily, constantly honing the cozy little hideaway that will shelter my spirit and, if need be, my self when the adventures get a little overwhelming. With a cheery wave, when I’m not too tightly coiled up with my security blanket there, I shall ever bid you all a fond goodbye, farewell, and goodnight–and see you in the morning.

Foodie Tuesday: In Which I Give Myself the Raspberry

 

photoFor those of you not familiar with the colloquial phrase ‘giving the raspberry’, let me clarify that in this instance of usage it means that I am placing my tongue between my lips and phonating a prolonged rude, snort-y sound, something like PLPLPLPLPLPL, whilst gazing upon my own absurdity in the mirror. Because today I pushed the ‘Publish’ button at just the wrong moment as I went through my digital file of written posts and, instead of putting up my usual Foodie Tuesday item, managed to poke that don’t-touch-it’s-dangerous red button belonging to the cyber equivalent of the Eject switch on my little laptop fighter jet.

Oops.

Needless to say, my interest in food has not flagged, nor has my penchant for posting about it ebbed. So tomorrow I’ll fill you in on a more palatable form of raspberries (and other berries), because they do deserve their recognition, even though their season is quickly ending even here in warmer climes. Hang on to your spoons, my friends, and I’ll give you the raspberry tomorrow. Wink, wink.

 

Foodie Tuesday: *Arroz* by Any Other Name

It is conceivable that by now you have figured out that I am mightily fond of Mexican, Tex-Mex, Mexican American and Mexican influenced foods and flavors. Having grown up in rich farm country where the migrant workers not only settled eventually but brought a veritable second-town of family and friends to join them over time, I was blessed to be fed by a number of eateries in our area run by the fantastic chefs all trained by one little lady in their hometown. By rights, she should have a whole county in Western Washington named after her at the very least, though I might suggest a shrine as more appropriate, because thanks to her a whole lot of us have faithfully eaten exceedingly well on both roots food from her teachings and wonderful inventions and innovations based on them.

Having moved to Texas might even be considered a logical next culinary or at least dietary step in my lifelong love of La Cocina Mexicana.

In any event, I will keep today’s post simple but say that once again I was influenced by that saintly lady’s culinary offspring when I entered the kitchen to begin dinner prep. I had intended to make something with the big gulf shrimp I had tucked into the freezer, but until it was really dinnertime I wasn’t sure but that I’d repeat the recent quick, hot-weather meal of the previous week, where I simply poached the cleaned shrimp and served them as part of a sort of deconstructed Louis or Cobb salad cousin.photo

Which would’ve been fine.

But, you know, I opened the refrigerator and saw a carton of leftover broth-cooked rice and suddenly I got all faint and dreamy-eyed and (cue theremin music and wavy-screen fantasizing-fade here) thought with longing of one of Our Lady of Mexico‘s disciples’ lovely Arroz con Camarones–that beloved combination of rice and shrimp favored by all of the Latin coastal cultures–this one a favorite version I miss from back in Tacoma.

So this day’s shrimp were coarsely chopped and kept on hand with a finely-slivered slice of leftover ham (to add some bacon-y goodness, and to help clear out the fridge) while I sautéed about a scant cup each of julienned carrots, sliced celery and chunky-cut mushrooms in some flavorful bacon fat just until crisp-tender with a little black pepper and some cumin, added the freshly squeezed juice of one big orange and about a cup of slightly drained crushed tomatoes (I used Muir Glen‘s fire-roasted tomatoes, since I like the flavor spike they add) and cooked the vegetables and sauce until slightly thickened, adding the prepared shrimp and ham just long enough to lightly cook the shrimp through. Served over the warmed rice, and with a dollop of whole yogurt to stand in for the absent crema, it was almost as good as I remembered.photo
