Foodie Tuesday: Ploughman’s Lunch & Cavegirl Quiche

I want to eat joyfully and intently and live a long, healthy life, then die and get recycled.

You know that although I respect veganism and the very solid reasons millions of people have for choosing not to eat animals and animal products, I am, like some other animals, an omnivore myself. Like these brother animals, I am okay with eating my fellow creatures. Hopefully people who respect animals’ right to be carnivores can respect a human’s wish to be a carnivorous animal as well. Yes, I want animals to be treated with great care and respect while they live, and yet I know that they’ll die; I expect no less on either count for myself. I would love to know that when I die it would be permitted, instead of my personal-leftovers having to be buried in a state-sanctioned impermeable box to take up prime real estate in perpetuity, for the aforementioned detritus to be left in the woods for some nice creatures to eat up, and what remains to fade into the grand recycling unit of the forest. Short of that, I have arranged with my loved ones to cremate what-was-me [after any possible organ farming is accomplished] and put my ashes into garden-feeding, where at least I will fertilize feed for ruminants and so serve as a smaller part in earth’s renewal. That’s what I think we’re all designed to do. Carbon to carbon. So whether I get eaten or make a less obvious contribution as a small pH balancing agent in the dirt, I plan to return the gifts that others, animal and plant alike, have given me in my life. This is not particularly meant to be a political or religious statement on my part, as I apply it only to myself, and I don’t begrudge anyone’s disagreement with it, it’s just a worldview that seems pragmatic to me. I am not saying this to court condemnation or controversy (you know I despise them) but simply to be honest with myself as much as with you.

So my protein preferences arrive as fatty and delicious nuts, eggs, seafood and, indeed, meats. I tend to be very old-fashioned in that way, following the path of my workman ancestors, and even their ancestors back in the hunter-gatherer days. I am enormously (no pun intended) grateful for the gifts of the earth that keep me not only alive but healthy and even well fed, and I don’t want to squander or be thoughtless about such magnanimity. Hence my determination to eat more deliberately and moderately as I grow older, and also my penchant for being ever more inventive in refusing to waste the goodness of any part of my personal food cycle. The recent posts about rescuing broth-making remnants are a tiny testament to this commitment. I’m a junk food junkie like everybody else, loving stuff that’s far from good for me, but I’m gradually learning to lean a bit further toward the less trashy ways to enjoy those elements that are the true reasons I like junk, not the addictive formats in which they’re presented to us by commercial producers and retailers so that we’ll just treat them–and our bodies–like garbage by over-consuming them thoughtlessly.

A couple of the variant meals I based on my recent beef ginger mousse making fed both my frugal and my treat-hungry sides. Having the pre-made avocado mash around amped up both aspects as well, and the addition along the way of some other easy-to-keep ingredients made it all pretty much homemade fast food without the related regret.

Another day, another ploughman’s.

Ploughman’s lunch, that great English enthusiasm for serving and eating what’s essentially deconstructed sandwiches–bread, cheese, chutney, pickled goodies, and so forth–are pretty common around our house. The differences in our tastes, multiplied by the number of friends sharing the meal, makes it easier to stick to assemble-it-yourself service for so many things that the logic of the operation is obvious. Since I’m generally weaning myself from wheat, that makes a hands-on, fork-in version of the Ploughman’s even more useful. Beef mousse and avocado mash make this easy. Hard boiled eggs are a grand addition, but a quick scramble or fry is fine as well. Chutney or jam alongside? Oh, yeah. Pickles of any sort are a plus. Add the crunchy pleasures (and instant utensils) of carrots, snap peas, celery, apples, jicama, radishes or any number of other good crudites and you’ve got all you can handle, short of a cold cider, iced tea, beer or lemonade. Filling, varied and delicious.

For a cave-dweller-pleasing rearrangement of the same essential ingredients, I stacked it all up and sliced it into a semblance of a pie, first as a single layer and then as a double-decker version. Rather than baking it all up as an actual crustless quiche or omelet, which should be simple and tasty with the addition of some beaten eggs (and if I had some on hand, a bit of shredded cheese), I ate it cold and was not sorry to have the quicker version either. This one, given my previous pseudo-recipes on the topic, can be pretty easily illustrated in assembly by pictures only. What you choose to do with it is up to you! As long as you don’t disappoint me by wasting it. [Winking broadly.]

What We Can Learn from Dogs

So it’s Monday. All. Day. Long. One of those times when you can easily believe in the purported accursedness of the day; one unlucky, frustrating, impossible thing after another and not a coffee break in sight. We’ve all had ’em. Rotten, rotten Mondays, no matter what day of the week in reality, are the bane of humankind.

Dogs, however, rarely let a Monday take their essential doggy happiness away. It takes, in fact, quite a lot of horribleness to take the equanimity and enthusiastic canine capering down to a level recognizable as sad, and once cheered up again, dogs are remarkably good at forgiving and forgetting. Barring ill-treatment or illness, every day is the greatest day ever to your average dog.

Why lie around counting the time until your human will take you walking farther, when you can back-scratch your way headfirst right down the hill?

It’s not that dogs are stupid. Far from it; some dogs I’ve known would beat some people I’ve known at any IQ test, and the average dog is a pretty clever problem solver and able to perform all sorts of magnificent deeds, accomplish numerous astounding feats. It’s more that dogs, simply, seem to have a highly developed power for living in the moment, finding the good in the small and ordinary and letting unpleasantness drift past them as quickly as the turning of the world will allow. They’re not much on sulking, self-pity, or wallowing and very rarely hold grudges–and these, as far as I’ve seen, only when pressed to it by persons or events truly deserving of their scorn.

What dogs seem to hold among their many fine and useful instincts is the one that tells one to be thrilled when a maple seed helicopters out of a tree in his path, to slurp lustily at a handy puddle of water when thirsty, and to leap into the air rather than toddling through the weeds when crossing the parking strip to get to the park for a romp. The wisdom to nuzzle the hand that pets him, to lie like a shaggy, comforting blanket on the cold feet of a human companion when he’s sad and to shoot across the house like water from a fire hose when the other human gets home from her long day at the office. All of this is noble work, and keeping as busy at it as any good dog does makes him far too busy to mope and snarl and bemoan his bad fortune. Even on a typical Monday.

It’s Early Yet

graphite line drawingBeing an inveterate late riser, and a crabby one when forced to get up before I’m ready, no matter what the hour, I am flummoxed for the most part by those who tout the glories of the break of day. I say, for the most part, because even I have been known to admire the sunrise, and even in my worst and most heel-dragging, snarling moments can see how incredibly pretty and magical the beginning of the day can be. In fact, I can outright admire and relish the whole thing if I know I get to watch the show and go instantly to bed again until I’ve had my requisite number of hours abed.

I’ve a fairly wide variety of reasons for not having children, too, not least among them my aforementioned monstrosity in the beginnings of the day, a time when babies and young persons of all persuasions and personalities are apt to be chirping and squealing adorably and performing all manner of gymnastics and, just possibly, noisy and/or noisome bodily functions that would demand kind attentions from me. I am not that nice at the best of times, never mind any time before I’m willing to rise up and be Awake. You can imagine how the very prospect of pregnancy and its sleep disruptions, and those only leading precipitously to years more of the other sort, would seem to me, most particularly as I was already sliding off the back five of my fourth decade of life by the time I got married and thus would have had any hope of an ongoing partner in the proceedings.

You must know, however, that I think children are a very fine invention and well worth the trouble, and also that I have nothing but the greatest admiration for that mystical marvel that occurs when the tiniest edge of the sun peers over the horizon and then in seeming seconds is blazing up the morning sky. It’s just that I am content to leave all of the heavy lifting in those categories to finer beings for as long as I can. My siblings and other relatives and friends have gifted me with an abundance of outstandingly beautiful, brilliant and engaging children to admire, cuddle, tease, flirt with, trade tall tales with or about, and otherwise delight in before handing them back to their parents just in time for any less scintillating activities to be addressed more expertly and semi-willingly than I would do. And dawn, well–that will likely become part of my repertoire when I hit that Certain Age incapable of sleeping massive amounts any longer, but until then, it belongs to others, except in my imaginings or when I am dragged out of repose by duty or airport hours or some other sort of the unavoidably morning-oriented difficulties life presents.

So I am quite content to enjoy a made-up version of sunrise, even making a picture of it with a very slightly baby-shaped mother-to-be washed in its dainty light as she lingers in some little secret garden. I am not designed either for motherhood or for getting up at the first whisper of dawn, but that needn’t prevent my admiring them both from a safe distance. I can assume my odds of conceiving a child at this advanced age have shrunk to a manageable nothingness by now, and I will count on the passage of my hours, days and years to prepare me for that unthinkable morning when I might willingly resurrect my carcass from the pleasant dead-of-bed state before daybreak. Meanwhile, my fancies are large enough to amuse and amaze me, and I thank the rest of you who have so kindly practiced and reported on either of the foregoing astonishing activities and reported back to me for my edification and vicarious enjoyment. I may get back to you with my own first-daylight infatuations someday, but it’s early for that yet.digital illustration

Foodie Tuesday: Gallimaufries and Slumgullions

Easy Chocolate-Raspberry Mousse, made with 1 avocado or the equivalent in pre-made avocado mash, 2 ripe bananas, 1 cup frozen raspberries, 1/2 cup almond butter, 2 tablespoons clarified butter, 1/4 cup Dutch processed cocoa powder, 1 teaspoon vanilla paste, 1/2-1 teaspoon real almond flavoring, and a pinch of salt, all pureed together until smooth and chilled thoroughly.

I’ve soliloquized on leftovers here many a time, because few of us don’t have, and use, them with a certain amount of frequency. It can be, as I’ve mentioned, something that lives on only as the humorously known YMCA (Yesterday’s Muck Cooked Again), or with a little thought and effort, it can be a whole new being. It can be a watery mishmash of tasteless goo, a slumgullion, or with some inventiveness and luck, a tasty new experience in and of itself. My recent post on rethinking the remains of broth-making is one example of happily finding the latter.

In addition to making use of the extant collection of remains on display in the museum of the refrigerator and cupboards, one can always prepare those foundational foods that become ingredients for a gallimaufry of further dishes and meals. It’s a sort of slower or longer-term version of mise en place. One that has proven particularly useful to me is the simple fix of mashing a few ripe avocados with lemon or lime juice and a pinch of salt and keeping them in the fridge in a zipper bag. In a two-person family that lives in a warm climate, it’s hard to keep whole avocados fresh for any length of time, so since this particular family is also a one-car family and I don’t wish to finagle grocery shopping almost daily, this simple avocado mash stores, unchanged, in the icebox for a fair length of time while I take out daily bits, squeeze the air out of the bag and seal it, and chill it again until the next use.photoThat easy fix for my avocado problem (you can decide whether that means spoilage or addiction in this case) has presented a whole world of possibilities not previously quite so accessible. Straight out of the bag, the mash can go directly into any number of dishes, both savory and sweet: add a little cumin and chipotle and cilantro, and it’s guacamole; mash in a ripe banana and some cocoa powder and vanilla and honey, and it’s chocolate pudding. Or the avocado can just go directly into my mouth, because lemony avocado mash is a delicious accompaniment to all sorts of good meals.

The broth-offspring remix turns out to be pretty versatile, too. The second time around, instead of making separate dishes of carrot pudding and beef pate, I combined the two ingredients into a different sort of pate that gave me nearly two weeks of very flavorful protein that I could eat in a wide variety of ways. The first time, I ate it simply as a room temperature mousse, sprinkled with a little cinnamon, and it was very satisfying not only because I liked the taste and the creamy texture but because I knew it was a reasonably good source of protein and a great way not to waste–you guessed it–leftovers. Unfamiliar to my palate and yet instant comfort food. Easy to fix even the first time around, too; the broth itself, while it takes a little forethought to stock up the slow cooker with the mix of veg and bones and spices that I like, just tends itself for the long cooking, other than the occasional stir to keep all of the ingredients dunked in the liquid. Straining the finished broth and picking out the parts takes some time, yes, but the process of recombining those parts into the new mousse iteration is really pretty easy and fast work, and getting a couple of weeks’ eating (or one big party’s hors-d’oeuvre spread) out of it is a rather fine payoff.photoBeef Ginger Mousse

This, given the leftover-centric nature of the concoction, was a truly approximate recipe. I used about 1 cup each of leftover beef bits/marrow and carrots from beef broth making, 3 tablespoons of clarified butter, 1/2-3/4 teaspoon of ground cinnamon, 3-4 eggs, a sprinkle of salt, 2 tablespoons of ginger juice and 1/2 cup of the beef broth. I pureed it all thoroughly until it was the consistency of a creamy pudding, spooned it into buttered small casserole, set that casserole on top of a clean dish cloth in a larger casserole, set the rig on the middle rack of the oven, filled the larger pan with an inch of water, and baked it like a standard custard. Given my oven’s unconventional concept of temperature, I recommend to anyone attempting replication of this ‘recipe’ that you use your own time-and-temp standards for custard making and just watch the progress until the mousse responds properly when the pan’s given a slight jiggle. Lightly set, neither wet nor dry. Serve room temperature, or chill for future use.

Huntin’ ‘n’ Fission

I’m told that it’s both fun and useful to have hobbies. There are certainly plenty of books, magazines, news articles, classes, clubs and social organizations devoted to leisure-time pursuits, all of them trumpeting the value of such avocations. Some of them are decidedly age-specific: I haven’t seen a large number of free solo rock climbing promotions aimed at senior citizens, for example. There are hobbies considered preferable to persons of certain economic strata, fitness levels, sexes, nationalities and any number of other identifying categories, some active and some quite passive or spectatorial, some of them expensive to learn and requiring extensive training and practice and others free and simple to master. Regional favorites abound, like, say, noodling (catching catfish by hand), which would be hard to enjoy in desert climates unless you happened to be both a big fan of the sport and dedicated enough to stock your own evaporation-protected pond. Some of the more intellectually stimulating hobbies, like competitively designing robotics for cage fights or nuclear plants for home use, are highly entertaining to their practitioners but utterly escape the attentions of us more modest-brained folk as either too highfalutin or just plain incomprehensible. Sudoku, popular with millions of people cleverer than I am, falls into that too-challenging category for me since I’m so mathematically unfit, but I do like some kinds of word puzzles reasonably well if I’m in that rare mood.

Should I take up golf, having decided to move (when my spouse gets around to retiring) to a place on a golf course partly for its–surprise!–affordability and its location in a great town in a great part of the country, and in no small part as well for its great view into the green and leafy first fairway of the course? That would require my learning which end of the club is the grip and which the head, not to mention a whole bunch of other stuff, and on top of that, paying dearly for the privilege.photoWhile I’m still living in Texas I’d certainly be in a logical place to take up hunting, but that doesn’t appeal to me at all, unless it’s with a camera. For that matter, I’m more inclined to practice target shooting with a longbow, something I’ve enjoyed briefly in the distant past, than with a gun as well, being mighty skittish about those things. Being on the fast track to old age, I could probably pick up something more sedentary like knitting and crocheting if I had the patience. My single brief fishing moment post-childhood actually garnered me a cute little throw-back bass (as a kid I never caught anything but one big scary looking White Sucker that even my older boy cousins wouldn’t touch) and was enjoyed in good company while sipping a fine Texas brew; maybe that should inspire me to get busy with fishing.photoThat’s the thing, though: I just don’t enjoy games and sports, puzzles and pastimes much at all. Whether this arose or was reinforced by my longtime social phobias, perfectionistic fear of being seen as incompetent, dyslexic inability to keep anything I’m doing on a standard track, hilariously hideous sporting skills or any combination thereof is probably irrelevant. You see, there’s no separation of church and state in my life. I spend my days and evenings doing the very things that lots of folk can only do on an occasional basis and to fill their free time.

If I took up drawing, concert-going, reading and writing, cooking, DIY projects, gardening, photography or collecting weird bits of Stuff as a so-called hobby, what would I do with my day job? The truth is simply that I’m a fully fledged frivolous person. If eccentric creative activities and ways of thinking are on the periphery of real life, then I am a bona fide fiction, an imaginary character myself. If on the other hand art is, as I’m convinced it should be, central to existence and well-being, why then I’m just ahead of the curve; I won’t need to retire to any old rocking chair or go in a desperate search for something to keep me occupied, because I already have too many fun and pleasing things to do. Either way, I’m keeping busy.

Defeating Nightmares

Their tormentors may be superior powers, but in truth, it may well be the simplest and smallest, most innocuous detail that thwarts the fiercest monster.

It might even be me.

Twists of Fate

It shouldn’t surprise me, as little sense of direction as I have and as seldom as I have an inkling where my path is leading, that I end up in some weird and completely unpredictable spots at times. Take the time I was at a luncheon with the queen and king of Norway. It’s entirely safe to say that they forgot the occasion right about the minute their motorcade zipped off with its Secret Service escort to ship them back to the White House for their next performance. Having lunch with a bunch of foreign academics, even if it’s coupled with getting a doctoral degree (Queen Sonja was receiving an honorary doctorate for her humanitarian work) and having a permanent outdoor sculpture dedicated in your honor is so yesterday. Like that kind of stuff doesn’t happen to royals every day of the week. I, on the other hand, don’t have that sort of thing occur very regularly in my life and found the events of the day pretty memorable.

It was amusing to take part in the bizarre hoopla that takes place when an assembled group of citizens in a country that takes itself far too seriously as being above such things as royal-worship (erm, Have you not looked into the mirror, O nation of celebrity-slavish fools?) gets a chance to suck up to the high and mighty of another nation. To experience the hilariously artificial and probably pointless stiltedness of security instruction from our friends the Feds; to shake hands with other humans who have been designated super-important and wonder why they would bother to shake hands with me–or, admittedly, I with them–and to hear all of the earnest speech-making and watch the well-meaning maneuvers; all of this was really educational indeed. That it was so for me in the context of the university where I taught was certainly not lost on me. I almost felt like I should get some undergraduate credit in sociology or anthropology for being involved in my little way.

But I’ll admit that most of all, it was entertaining to realize that through no particular virtue of my own I had once again stood in a spot that others might envy and reaped unearned rewards that would remain in my memory-book for a long time to come. Just call me Lucky.

Foodie Tuesday: Autumnal Comforts

You know that I love the Fall season, even though it’s very late and short here in Texas. Perhaps it benefits from my love of seasonal change in general, but I think the romantic leanings that come in autumn, that sense of impending death softened by the comforts with which we pad ourselves and by the death-defying renewal of the beginning of school and art seasons, have their own peculiar attractions. And of course, there is the bounty of foods that are best appreciated as we slide from the fall equinox to the winter.photoThe World in Autumn

photoOne of the delights I most admire in this season is earthy flavors. An abundance of root vegetables and mushrooms signals time for soups, stews and sauces whose savory riches warm body and soul and recall me to the embrace of home and childhood in many ways. A simple creamy soup loaded with mushrooms is hard to beat for succor on a grey and blustery day. A bouquet of cauliflower roasted with nothing more than a quantity of butter and salt and pepper until just-right is heavenly; adding sage leaves to the butter and a handful of shredded Reggiano to the top of the cauliflower just when they’ll have time to crisp and brown lightly moves the easy dish to a higher floor in the heavenly skyscraper.photoRoasted vegetables of any kind are especially welcome in the cooler seasons, and so easy to toss together with a little olive oil or butter in the oven while everything else is being prepared for the table that it’s almost a crime not to put them in the oven. Throw a chopped lemon in to roast with them and they are sauced in their own juices. Put the remains (if any) the next day into a bowl with a cup of hot homemade broth and a poached or soft-cooked egg or two, add cooked rice or noodles if you like, and, bibbidi-bobbidi-boo, (or bi-bim-bap!), you have a bowl full of nutritious, delicious, and not at all ambitious goodness right in your own little corner of this magical autumn season.

If You can Read This, You’re Already Contaminated

When is an advertisement not an advertisement? A warning not a warning?

When bad signage happens. And oh, boy, does it.

It looks okay from here, but if it’s installed in a corner that cannot be seen from across the sidewalk when approached from the correct direction on a one-way road, it loses something in the translation.

Sometimes it’s the glaringly obvious kind of crumminess that comes from ugly design, inaccurate information, typos, misstatements and inappropriate imagery that destroy the intended impact of signage. Sometimes it’s subtler stuff, though. To install signage in the wrong place–or not in the right place–or backward or upside down or in a hidden spot is not only unproductive, it’s counterproductive. It sends people the wrong direction down one-way streets, makes them turn machines on when they’re supposed to be turned off, and lets them walk past the place they seek six times before realizing that what looks like a reflection in the window is actually the back of the sign.

Sometimes, not maintaining the signs properly leads to, erm, lead poisoning, if the sign cautioning that toxic lead is present is no longer readable until one is actually in the toxic zone. A neon sign in my longtime home of Tacoma was half unlit for months on end, supposedly inviting visitors to come to a cheery little mini-mall near the freeway, but I often wondered how many people who didn’t already know the place were actually enticed by the come-hither sign winking at them, ‘COMA PLACE’. There was a family near another home of mine who liked to let everybody know which was their house, so they put up their name by the mailbox in a beautifully scripted plaque proclaiming their home the location of ‘The Balls of Bothell‘. I’m a little surprised that the city didn’t cite them for indecent exposure.

Funny how much we read into these things. I realize that my eyes aren’t what they used to be, but I hope that anyone wishing to tell me anything in print, whether as sign or label or translated instruction book, would take into consideration that bad signage can make bad things happen to good people. If nothing else, you’ll save one life when I don’t have a pulmonary infarct from laughing too hard at those grocery labels you put in the display uncorrected to sell me ‘Semen Tea’ and ‘Mini Bums’.
