Foodie Tuesday: Warm Up the Winter

There are plenty of good reasons to love winter eating. Every season has its particular pleasures and what appeals and tastes best varies with the weather, activities particular to the time of year, and winter–whatever challenges the season may present in terms of work and play–is rich in favorites too. What I tend to love in winter is mostly the kind of food and drink that spells comfort in colder weather: roasted, fried, grilled, hearty, spicy and/or deep flavored comfort is particularly welcome at my table.

Roasted squash stuffed with artichokes and sage is complemented by roasted beetroot and rosemary. They can all go in the oven at the same time, too, with just a little supervision!

Shredded slow-cooked or roasted meats like spicy chicken or [pork] carnitas are filling and satisfying. If there were roasted vegetables yesterday, a mash or puree of them can make a lovely accompaniment to today’s entree. Simple, silky carrot puree with lemon juice and butter, for example, works in companionable comfort with the coarser mash of guacamole–the latter, easily made on the fly when I keep some mashed avocado handy.

A moist and tender pork roast, with a half avocado, some pan-fried green beans and red capiscum slivers, and potatoes roasted in the oven with butter, salt and pepper, smoked paprika, mustard seeds, and crushed cheddar cheese puff crumbs, makes a grand and gratifying meal.

A good curry (at our house, nearly always nothing more than good coconut milk spiced with homemade sweet curry masala*) is a great way to combine any sort of roasted, grilled or sauteed vegetables, with or without seafood or meat. A couple of pieces of grilled citrus for drizzling into the curry to taste, adds a nice bright note that can bring a dash of sunshine to the winter, too.

KINCURRY

I think Q would approve of my sharing this, since he was generous enough to share it with our family in the first place!

4 T (tablespoons) ground turmeric
3 T ground coriander
2 T ground cumin
2 T ground ginger
1 T ground cardamom
1 T ground mace
1 T whole white peppercorns
1 T whole cloves
1 T whole fenugreek
2 tsp ground cayenne

Grind the spices together and store carefully away from light and heat; I use a dedicated small coffee grinder for my spices. That’s all there is to it! This masala freezes well, if you’re not fast enough to use a whole cup of it up quickly or are planning to give some away. I like to make a double batch (about 2 cups) since it does keep. It’s wonderful toasted in either a dry pan or a little ghee before adding to various dishes, savory or sweet.

Even the standard steak dinner, sided with rice and vegetables, can be jazzed up a little for winter with some seasonal fruit favorites as garnish. Here, a perfectly ripe pear and a handful of brightly-sweet pomegranate arils please the eye as wonderfully as they do the palate.

Things I Used to Know

In olden times, when I was young and Apatosaurs snacked on the treetops, I knew stuff. I’ve forgotten more since then than most sentient beings learn in a lifetime, although in fairness to them and to my own addled and limited brain capacity, much of that was only memorized and not really understood or applied. And what little I have learned or known has mostly long since been reduced to dribbles and scribbles and other forms of rubble.

digital illustrationI once knew how to ice skate and roller skate. Not particularly well, mind, but I could stay upright and toddle around a rink or lake without breaking ice or ankles, which for a person of limited grace and less skill is good enough. I could ride a bike, row a boat and climb a tree. I read books intended to make me smarter and ones intended only to amuse me, and a fair bunch that had the possibility of doing both simultaneously. I sang in every section of a choir that would let me in, played the piano poorly but enthusiastically, and learned about four chords on the guitar from Dad.

Much of this is gone, forgotten or so rusty that it would be somewhere between horrifying and laughable, or possibly both, if I were to try my hand at any of it now. And I’m not proud of that. But I’m not too worried about it, either, nor am I ashamed. I’m probably not all that different from most people when it comes to such things. I wouldn’t mind, though, if the opportunity arose to revisit any of those things and I discovered that (a) it’s true what they say about bike riding coming right back as though I’d never left off the practice, and (b) everything else I’d ever once loved doing would come back as easily as zipping around on a long-neglected bike. Before all the rest of me freezes over, as it were.

I also used to know how to leave the house without much thought of what lay outside its doors or worry over what I was to avoid and/or accomplish before returning to its safety. I had a firm grasp of many, many things that didn’t matter in the slightest in keeping the earth rotating properly or making my part of consumerism fully sustainable, let alone in achieving and maintaining world peace. As a supposed grownup, I learned to worry and fuss a great deal over that sort of stuff, even (or especially) when I knew full well I hadn’t any hope of challenging my born impotence in these matters.

But one thing I have learned as an adult that is remarkably useful–assuming I can keep it in mind, an increasingly slippery endeavor as I age–is that no individual human ever did really have any control over anything of this great importance. Occasionally, one of our kind manages to break through the barriers or even simply to fall into a solution by being in the right-or-wrong place at the right-or-wrong moment, but most of us are not able, alone, to learn or do anything much more complicated and meaningful than reading or singing or ice skating. And most wonderful of all, I’ve learned that that’s okay. It’s important to care, and to do and be the best that I can, but it may be equally needful that I grow wise enough to stop banging my head against any brick wall that practice has taught me will never actually budge and, yes, be content that I made the effort, not carry around pointless guilt that I’m not killing myself with further useless striving and angst.

As much as I loved ice skating when I was young and owned skates, and lived near a park where I could use them in winter, I don’t feel terribly cheated that decades later I’m fairly certain I couldn’t even remember how to skate. I’m happy to hang up those old blades and let someone newer and nimbler learn how to ice skate, and finally to get old enough to forget it too, in turn. Oops! I outfoxed myself. I was so distracted by the odd weather we’ve been having here lately and all of the ways it’s unexpectedly altered our calendar and our plans (though my birthday came today right on schedule, wink-wink) that I completely forgot last night to put up the day’s post. So I did it today. A two-fer. Just to remind all of you how much I love you. Thank you for your patience. I may be getting a little absent-minded in my old age, but I still think the world of y’all. In Rust I Trust

It doesn’t really matter all that much what I’m doing or where I am; two things almost always grab my attentions, whatever I was supposed to be focused on at the moment. Is it a shiny, twinkly, sparkling object? Oh, yeah, that’ll catch my magpie eye. I adore that kind of stuff. But I love its polar opposite, too. I am as easily distracted and attracted by rusty, crusty, crumbling, peeling, decrepit things as by the polished and gleaming ones.

You already knew these things. What can I say? The world is just so ridiculously full of prettiness.photo photo photoIt’s a great source of happiness for me. I’m simple in that way. Among many others.

A Musical Tradition

The office where my esteemed spouse performs many of the studies and administrative duties comprising his workload outside of the conducting element at the church where he’s now interim chancel choir director hasn’t got a lot of stuff in it other than a big desk, a small piano and a couple of bookshelves. Most of the books that had filled the shelves went away with their owner, the previous director; a few that go with the office itself remain on the shelves, and all by themselves they tell quite a story. That’s the way of books in general, isn’t it.

It’s all the more so in this instance, by virtue of the books’ being vintage hymnals. The history of the United Methodist Church at large is in their pages. The history of this specific congregation within the UMC is there, too. And there’s a great deal of Protestant church history, Wesleyan history, English and American folk music and even larger and older parts of the musical tradition. All right there in the pages of some rather small, rather worn books that just happen to be full of hymns.

There are libraries; there are Protestant theological resources; there are music collections; there are history books. All of them are in this one room, in a handful of little old books. And that, in itself, is the nature and long-lived tradition of printed music in general. So much has been passed down in the oral traditions of so many cultures and religions and peoples, but there’s an enormous amount that lives on and grows and inspires because of those amazing repositories that exist in the written music that survives everyday use, one generation after another. I only hope that all such traditions can be preserved and enjoyed far beyond our lifetimes, whether in temples or towns, religions or regions, families or foundations, schools or individual choirs. Beyond inspiration or even enjoyment, these are great containers of food for thought.digital collage

Country Comforts

It’s easy to indulge my love of the bucolic and pastoral when I live where I do in north Texas. This county is full, as it has been for generations, of farms and ranches of all sorts that intermingle freely with the towns, cities and suburbs of the area. Whenever we take a drive or go running errands, we’re just as likely to see fields full of sorghum or corn, red or black Angus cattle, or sleek tobiano horses as we are shops and schools and natural gas pumping derricks.photo montagePlenty of relics and remnants still stand that tell me it’s been this way for a very, very long time. The little bronze school bell and windmill that remain standing right next to the old Ponder schoolhouse’s clapboard walls seem perfectly ready to go back to work (with just a tiny bit of functional renovation first, of course)–or to transport me instantly backward into the nineteenth century. A small private herd of longhorns spends its days in a cozy paddock that sits directly next door to a modern brick housing development, and on the other side of it is a stretch of fields full of wildflowers and prickly pear, punctuated by the occasional gas well and electrical tower, the latter often populated by small flocks of turkey vultures.photoAll of this makes an atmosphere highly conducive to my happiness: the conveniences and riches of contemporary urban existence, conveniently interspersed with spirit-soothing farmland or ranch and historic pleasures. If I play it right, I can feel like I’m on vacation no matter which world I happen to be in at the moment.

Light in Dark Places

photoWhat possible purpose can Daylight Savings Time serve in this day and age except perhaps the most mercenary sort? I really dislike the artificial shifting of the daily schedule (time itself being quite independent of our constructs meant to explain and regulate it), with one small but significant exception. That little thing?

Knowledge of the power of the tiniest speck of light against the dark.

When the days become naturally short, night long, because of the turning of the earth on its axis and the change of the seasons, the sense of being trapped in almost-perpetual darkness inevitably begins to creep upon me; add to that the government-mandated spin of the clock to steal yet another hour of sunlight, and I begin to wither and feel a little like sorrow and solemnity, gravity and groaning will also steal my sense of belonging to the day at all. This spell of coldness and heartless eternal night could certainly drive a person mad.

And yet, the smallest spark renews my will and hope. One little star piercing the indigo sky becomes a beacon bright and powerful enough to pull me from the dark and back to day. That winter’s also the season when so many cultures, faiths and kinds of people find new reason to light more than a candle, more than a fire, and call upon the grandest graces of their inner best is no mistake or accident. The contrast with that terrible beauty that is felt and seen in lightless space is something far beyond the sun of day–against the coal mine dark, a pinpoint is all it takes to seem a seam has opened into warmth and goodness once again. And in my little heart, I do believe that any one of us determined enough can learn to be that tiny, so-essential fleck of light.photo

Peter Pan vs. Mother Earth

Maturity is a hard concept to nail down. So few of us would willingly embrace the larger idea of maturity after all: the implication is too much doused with the odor of aging and the loss of innocence, playfulness and joie de vivre.

But if I can move away from those irksome, unflattering aspects of maturation, there is a whole world of better and more admirable traits awaiting me. To refuse to grow up, as so famously done by Peter Pan, one has to reject all of those pleasures and opportunities afforded only to those willing to submit to the passage of time.

I will continue to avoid becoming ensnared in the traps and trials of aging as long as I can get away with it, and probably further. Who wants to become exclusively serious, constantly responsible or particularly predictable? Not I! Age may force me to slow down my physical pace or even make me willing to concede that there is such a thing as a skirt too short or heels too high or a blouse too fitted to be quite seemly for my years, never mind that choosing certain forms of entertainment or places to go or goals to achieve are not particularly well suited for me anymore.

But I am also glad to let down the barriers to other aspects of maturity, and to embrace my aging with a certain relief when it comes to those. I care less and less, for example, about whether I look fashionable or impressive, so the heels and hems can be whatever altitude suits my comfort and mood. I’m happier in my own skin with every year spent getting to know and define and design it.

That, my friends, is the greatest gift of aging: I am freer from the worries, demands and expectations of the world around me and can work at shaping who I am, what I want, and how I feel more deeply and contentedly than when I thought there was a greater need to conform. Youth is not nearly so unfettered as we idealize it as being; so long as more mature people own our territories of home, school, work and even play, they also rule our lives. So long as we concern ourselves with comparison, competition and popularity, we let others have the power as well. When we learn to fit in and find community by being our truest selves, it changes the tune entirely. This is the richness, ripeness and harmony–within and between–conferred by true maturity.digital illustrationAnd while I’m thinking about musical metaphors, I really must give you a link to my husband’s latest YouTube appearance, conducting the beautiful and magical Monteverdi Vespers of 1610 with the Collegium Singers and Baroque Orchestra of the University of North Texas, with some tremendous guest artists singing and playing alongside the artful student and faculty musicians. This production was the premiere performance of the new edition of the Vespers that was developed by UNT professor Hendrik Schulze and ten of his graduate students, and among the instrumentalists playing on marvelous period instruments were some of the greatest players now gracing the halls and stages of the Early Music genre. Foodie Tuesday: Having a Desperate Moment

Sometimes when I’m hungry for something particular, especially something I either don’t know how to make or simply don’t have the ingredients and/or time to make just then, I feel just a little bit panicked. Is it wrong to let someone else rescue me with food? When I was little, I envied the kids at school who had Store Bought stuff in their lunch boxes because I was one of those underprivileged children whose mother filled her kids with wholesome and delicious homemade stuff all the time. Poor, pitiful me!photoWhen I grew up and learned that it was I who had been the spoiled one, it seemed all wrong and backward to get store-bought foods, particularly ready-made things of the sort I actually knew how to make (often, thanks to Mom’s tutelage).

I’ve pretty much found my happy medium, thank goodness. I am pleased to be able–and willing–to make many things on my own, things Mom and other good cooks taught me how to make, things I figured out how to make through trial and error and weirdly wonderful experiments, and things that occasionally just happened on the way to an entirely different recipe or menu. But I have no compunction anymore about letting the experts hand me their delicious culinary artworks any old time, too. Most especially so, when I feel I’m in a little bit of a jam, a pickle or any other variety of a hungry fix.photoAm I hungry now, you ask? Am I ever not, I ask you? Perhaps it’s bed time at the moment, but surely by tomorrow I’ll be ready to get some cookery underway. Or stop by the nearest patisserie or butcher’s or greengrocer’s and do some foraging for what pleases.photo
