Huntin’ ‘n’ Fission

I’m told that it’s both fun and useful to have hobbies. There are certainly plenty of books, magazines, news articles, classes, clubs and social organizations devoted to leisure-time pursuits, all of them trumpeting the value of such avocations. Some of them are decidedly age-specific: I haven’t seen a large number of free solo rock climbing promotions aimed at senior citizens, for example. There are hobbies considered preferable to persons of certain economic strata, fitness levels, sexes, nationalities and any number of other identifying categories, some active and some quite passive or spectatorial, some of them expensive to learn and requiring extensive training and practice and others free and simple to master. Regional favorites abound, like, say, noodling (catching catfish by hand), which would be hard to enjoy in desert climates unless you happened to be both a big fan of the sport and dedicated enough to stock your own evaporation-protected pond. Some of the more intellectually stimulating hobbies, like competitively designing robotics for cage fights or nuclear plants for home use, are highly entertaining to their practitioners but utterly escape the attentions of us more modest-brained folk as either too highfalutin or just plain incomprehensible. Sudoku, popular with millions of people cleverer than I am, falls into that too-challenging category for me since I’m so mathematically unfit, but I do like some kinds of word puzzles reasonably well if I’m in that rare mood.

Should I take up golf, having decided to move (when my spouse gets around to retiring) to a place on a golf course partly for its–surprise!–affordability and its location in a great town in a great part of the country, and in no small part as well for its great view into the green and leafy first fairway of the course? That would require my learning which end of the club is the grip and which the head, not to mention a whole bunch of other stuff, and on top of that, paying dearly for the privilege.photoWhile I’m still living in Texas I’d certainly be in a logical place to take up hunting, but that doesn’t appeal to me at all, unless it’s with a camera. For that matter, I’m more inclined to practice target shooting with a longbow, something I’ve enjoyed briefly in the distant past, than with a gun as well, being mighty skittish about those things. Being on the fast track to old age, I could probably pick up something more sedentary like knitting and crocheting if I had the patience. My single brief fishing moment post-childhood actually garnered me a cute little throw-back bass (as a kid I never caught anything but one big scary looking White Sucker that even my older boy cousins wouldn’t touch) and was enjoyed in good company while sipping a fine Texas brew; maybe that should inspire me to get busy with fishing.photoThat’s the thing, though: I just don’t enjoy games and sports, puzzles and pastimes much at all. Whether this arose or was reinforced by my longtime social phobias, perfectionistic fear of being seen as incompetent, dyslexic inability to keep anything I’m doing on a standard track, hilariously hideous sporting skills or any combination thereof is probably irrelevant. You see, there’s no separation of church and state in my life. I spend my days and evenings doing the very things that lots of folk can only do on an occasional basis and to fill their free time.

If I took up drawing, concert-going, reading and writing, cooking, DIY projects, gardening, photography or collecting weird bits of Stuff as a so-called hobby, what would I do with my day job? The truth is simply that I’m a fully fledged frivolous person. If eccentric creative activities and ways of thinking are on the periphery of real life, then I am a bona fide fiction, an imaginary character myself. If on the other hand art is, as I’m convinced it should be, central to existence and well-being, why then I’m just ahead of the curve; I won’t need to retire to any old rocking chair or go in a desperate search for something to keep me occupied, because I already have too many fun and pleasing things to do. Either way, I’m keeping busy.

The True Breakfast of Champions

Foodie Tuesday: Half Baked Ideas

photoAlthough I know that sometimes it’s nicer to avoid stuff that we like but can’t have, when I’m not able or supposed to have something either for a period of time or ever but I really enjoy it, I can find comfort in fixing it for others. So, under a directive to avoid both flours and most sugars and yet invited to a potluck, what did I want to bring? Cookies. I didn’t really want to just show up with an armful of nothing but store-bought treats, because it wouldn’t involve any hands-on fun or creativity, but it was as usual too hot to want to stand around the oven’s radiant dragon-breath all through the midday.

Solution: fill and fiddle with ready-made cookies.

So for the UNT Collegium Singers’ choir party I bought a batch of sugar cookies, some also-ready-made filling and icing and decorating goodies, and grabbed a few things around the kitchen and got going.

photoOne bunch of the cookies I treated as traditional iced sugar cookies. Thankfully, as I’m anything but a pastry chef, I’m utterly skill- and experience-free in creating traditionally iced sugar cookies, so mine are distinctly individualistic, though perhaps far from artful. Hey, they’re decorated with love. University of North Texas green and white love.photoAnother number of the cookies were made into salted vanilla creme sandwich cookies. The scraggly would-be letters on top of those were brushed on using and ‘ink’ of just vanilla bean paste mixed with food glitter and food coloring. The filling is just another ready-made cookie filling, sprinkled with a tiny pinch, in each sandwich, of crunchy Maldon sea salt.

photoThe other sandwich style cookies were filled with a spread of–you guessed it–ready-made lemon curd, with a dose of ginger juice stirred into it. I used the remainder of the lemon-ginger curd, mixed with more edible glitter and food coloring and a quantity of powdered confectioners’ sugar and piped it into some free-form treble clefs to top those cookies.

Opportunity to have vicarious dessert meets low-maintenance approach. Works for me!

Foodie Tuesday: More Sugary Bits

Sweets needn’t be hard to prepare. They’re so easy to eat, it’s only fair that they should also be easy to fix or you’ll undoubtedly end up feeling a little desperate between times. Why risk it?

Especially nice if the treats can require no baking or be super-simple to mix and prep before popping into the oven–like these two:photoChocolate Handy Candy

Combine an assortment of the following ingredients into a dense dough, roll into golf ball shapes or squeeze into similar sized blobs, and chill. Before serving, coat in powdered sugar or cocoa powder; mix in some ground spice if you like.

Melted chocolate (I like to use dark chocolate that I buy in bars)

Coconut oil and/or butter, melted

Pinch of salt (crunchy is usually my favorite)

Flavorings (try ginger with black pepper, mint and dried apple pieces, toasted coconut and rosewater, or toasted sesame seeds and almond bits and a pinch of cloves)

Chopped candied peel or crushed freeze-dried fruit

Crushed potato chips or pretzels or chopped nuts (toasted and salted or spiced/candied)

Once you’ve formed these, refrigerate them, and serve them cold. Easy to make and just as easy to like.

And not long ago I came across another ridiculously simple sweet fix. Nutella cookies. If you don’t already know what Nutella is, you need more help than just an easy recipe to make with the stuff. Possibly a term of Nutella Therapy hospitalization. Ooh, can I have that? I have, thankfully, found some pretty good no-name generic copycat versions of it, so if the real stuff isn’t available in an emergency I needn’t panic. But really, it’d be hard to go wrong with the classic combination of chocolate and hazelnuts.

The recipe in question is so uncomplicated as to be hard to classify as a recipe at all, but I proved it does require a tad of technical specificity, so it’s not quite the throw-and-go ease of the first item here. Still, easy. And oh so sweet. And once again, tweak-worthy. The general gist of this combination is popular, if not prevalent, online, to the degree that it’d be a serious magic trick to track down the original author. If any of you know who developed this I’d be delighted to know!photoImpossibly Possible Chocolate Hazelnut Cookies

1 cup flour (I used gluten-free flour mix) + 1 cup Nutella (or substitute) + 1 egg = dough. Makes a dense dough that’s not hard to mix quickly with your bare hands. Form the dough into a log (about 2″ or 5 cm in diameter) with flattened ends and slice it into 24 pieces. Arrange on a cookie sheet and bake in a preheated oven at 350°F (177ºC) for approximately 6 minutes. My usual issue of owning an overactive oven made my first attempt bake too quickly, scorching them slightly.

That, however, gave me the excuse to play with spice and start thinking of a number of other ways I might happily vary the treat. Version 2 was also easy; all I did was make the cookies as prescribed (while lowering the oven temp significantly, thankyouverymuch) and as I placed the slices on the baking sheet, I sprinkled over them a mixture of copper-colored edible glitter for visual interest and sweet-hot curry powder for additional flavor. Went over nicely with guests, and I found it quite enjoyable.photoFor future versions, I’m thinking of a number of possible enhancements to this delightfully easy cookie dream. I know that it’s also possible to substitute peanut butter and sugar for the Nutella and flour, and I assume one could just as easily use other nut butters. But there are a zillion ways I might play with the existing combination too. Roll the log of dough in finely chopped toasted hazelnuts before slicing into cookies. Add a splash of rum or rum flavoring. Add the finely grated zest of a large orange or a couple of small mandarins; add minced candied peel or ginger to the zested dough. Ice the cookies with a glaze made of pure cherry juice and powdered sugar. Skip the flour and egg and stick the big spoon loaded with Nutella directly in your mouth. Okay, that last one’s not exactly a recipe either, unless you want to call it a recipe for disastrous health, but it’s still probably worth a try. Because it’s sweet, and it’s simple. And when I have a crazy hankering for a bit of dessert in a big hurry, that’s a very fine thing.

Foodie Tuesday: Con Mucho Gusto

So many meals, Latin-inflected or not, are best enjoyed with a nice cold glass or two of sangria. Particularly helpful is the knowledge that sangria has so many tasty potential variations that it can be made the perfect complement to nearly anything. Or substitute for it, if such dire need should arise. But I’ll concede that the many magnificent flavors of the Latin cultures are also, often, what make the sangria so wildly delicious.

In addition, the simplicity of combining the marvelous ingredients for either the food or drink portion of such a meal adds the appeal of quick preparation. While a number of recipes, including many for sangria, are improved by a little time spent melding their flavors together with heat or chilling, the actual labor time might not be terribly lengthy nor the effort especially challenging. Just gather the supplies, put them together in a dish or bowl, and wait for them to come to full fruition. Fruit being, of course, a hallmark of a refreshing batch of sangria.

The dish of the day is so easy it can be assembled and heated in minutes. Even the slowest portion of the prep, the cooking of quinoa, can be accomplished with little trouble, particularly if like me you have a rice cooker. I use a brand of quinoa that requires no rinsing or soaking, and it works easily to prepare it in my rice cooker by combining cooking liquid (usually my ubiquitous homemade broth) with the grain in a 2:1 ratio. I do this in larger batches, refrigerating all but the day’s portion for later meals.photoNestled Eggs [one hearty serving]

In a microwave-proof bowl, put a cup of cooked quinoa and make a hollow in the center of the grain. Break two eggs into the nest and puncture the yolks a little; cover and heat the dish on High for two minutes. [A nice optional variation: stir eggs with steamed fresh spinach leaves that have had the liquid pressed out of them.] Remove the bowl from the oven and top the eggs with a handful of cheese (cotija, queso blanco or sharp cheddar, for example), re-cover, and continue to cook on High for another minute or two, until the eggs are lightly set. Spoon some nice chipotle salsa [see my semi-handmade chipotle salsa hack here] on top, add a tablespoon of cilantro-tequila pesto [just a bunch of fresh cilantro finely pureed with tequila] and some crunchy salt, and serve with a glass of cold sangria.photoCherry-Peach Sangria

Combine a Jeroboam [four bottles] of Cabernet-Merlot blend wine with a magnum [two bottles] of Riesling, one 32 oz bottle of Just Black Cherry juice, 2 cups of dark pure maple syrup, one orange, thinly sliced (including peel), and one 23.5 oz jar of sliced peaches in juice; stir gently to blend, chill, and serve.

Under the Influence

mixed media drawingWhen I hear that phrase, of course I’m immediately reminded of its use to describe those persons, so much dimmer witted than a barnyard fowl, who drive or operate heavy machinery or otherwise behave inappropriately (and most likely, quite dangerously) because they are under the influence [UTI] of drink or drugs. Personally, I would go further, with my concept of UTI encompassing other, equally dangerous things like ignorant social, political, religious or philosophical views that give their disciples delusions of superiority, imperviousness, entitlement, and so forth.

But it behooves all of us to remember that the phrase isn’t inherently negative, for one can be under positive influences as well. Even better if one can manage to be a positive influence. It’s notable enough in a long and active life if one succeeds in generally doing no serious harm (intentional or otherwise, and to be in fact benevolent and able to enact good and fine things, why, that’s remarkable and admirable stuff indeed. I know people who can do so right here in the blogiverse, teaching and leading us all to do and be better versions of ourselves, and doing so not only by sharing their stories but by being living examples of what they teach. My years of classroom teaching proved to me that I was better suited to being a student than a leader, yet tutorial and mentoring settings gave me a much greater level of comfort in that they allowed me to operate as a fellow learner and thus engage more deeply and without as great a fear of steering anyone (myself included) astray.

The bloggers I most admire, immensely entertaining and humorous and dramatic and artistic in ever so many ways, are always, at heart, teaching, whether it’s overtly and with carefully designed pedagogy and prescriptions or it is so inherent in their natures that it comes fully interwoven in the fabric of their posts. These favorites include, but are not limited to, logophilic, ecological, travel-oriented, cuisinal, community-building, arts-centric, historical, and in many cases, wildly multitasking blogs. Some bloggers are small fry like me, known only to a cozy circle of great friends who come by to read and sometimes comment, and some of those I greatly admire are large-scale bloggers, people with lots of published work elsewhere or major accomplishments in their fields (whether related to their blogging topics or not!); a few have multiple blogs and the amount, whether on one blog or many, of posts published varies from one every few weeks to daily. There may, in fact–given electronic media of all kinds nowadays–be people putting up posts every few minutes, but I haven’t the time and energy to keep visiting such volcanic sources and tend to keep to my group of favorites with an occasional foray outward.

So who are my influences among bloggers? Friends who give us invitations to visit them at places like The Bard on the Hill, Spanish-English Word Connections, and Year-Struck, Just a Smidgen, The Valentine 4, David Reid Art, and The Complete Cookbook, like Bardess DM Denton, The Kitchens Garden; like the blogs Cooking-Spree, O’Canada, Nitzus, Peach Farm Studio, and  Bishop’s Backyard Farm, like Blue Jelly Beans, One Good Thing by Jillee, Road Tripping Europe, My Little Corner of Rhode Island, Promenade Plantings, L Scott Poetry, Poetic Licensee, and Gingerfightback, and blogs like From the Bartolini Kitchens, Rumpydog and The Human Picture. There are many more I enjoy and admire, but each of these, whether longtime blogging friends or a site new to me, have proven to be influential and inspirational for me in many ways, both as bloggers themselves and often as encouraging and educational commenters here at my own place. We don’t always agree, which is part of what’s so powerful: the diversity of the world and its ideas and passions and hopes and loves, this potent brew is what makes the fellowship of bloggers such a joy.

That we can share it with so many, most of whom we know only in and through this forum, is a great gift indeed. Also shared among fellow bloggers: awards and recognitions. Some accept them and participate with great alacrity in sharing them, and others are happy to be complimented thus but have no interest in or simply no time for such things. All quite acceptable responses. This post, in fact, is in response to my having been ‘tapped’ by the gracious and yes, influential blogger Samina Iqbal, whose Forum for police support is a notable effort by one passionate blogger to garner greater recognition and appreciation for those who serve and protect the populace as members of the police force–indeed, a job few of us would dare or relish, yet most have great reason to be grateful that there are the admirable folk who do so on our behalf. She was named a Most Influential Blogger and has passed the torch here.

While I think she is over-generous in her estimation of what happens here at my blog, I am happy to carry out the task of sharing the aforementioned blogs and their authors with you, because they really do deserve the attention and I hope you’ll visit as many of their sites as you’re able; you, too, will find many things to influence you: ideas and passions, skills and arts, love and human drama and many a good belly laugh in the mix. Best of all, under the influence of these luminaries you will likely pose no additional danger to the general public if you should, say, get behind the wheel of a car. With the possible exception of the belly laughs, which could cause you to steer right into the ditch. But at least you’d be guffawing all the way to the emergency room, possibly accompanied by some helpful police officers. And don’t blame me!mixed media drawing

Super Chicken

mixed media artworkMy superpower, if I could be said to have any, is being supremely ordinary. Yeah, I’m really, really good at that. Now, you may think it’s not impressive that I’m good at being so-so, and you could be forgiven for thinking it. And yet . . .

Besides that it requires massive numbers of us mid-range sorts to keep nature in a sort of balance with the various human outliers at the top (and bottom) of the spectrum, there’s also the comfort and safety of being able to travel under the radar of scrutiny and pressure to which both kinds of exceptional people are exposed.

What on earth does this mean I am good at doing, at being? Why, I do what’s expected. I go to sleep; I wake up. I eat and I walk and I get dressed and undressed, and the world carries right on around me. And though I don’t at the moment have employment outside of our home, my current occupation being Homemaker, I spend myself and my efforts, rather, on doing the small and yet significant things that might not be essential to keeping the world operational but grease the gears, instead. And keeping the cogs working relatively smoothly is as useful in its own way as being the driver, the engineer or a cog myself. I go to meetings and do Projects, too, to be sure, but mostly what I do nowadays is fix a meal, repair a door-jamb, ferry my spouse and a student to a rehearsal. I do laundry; I prune the plantings near the window. Glamorous? Just exactly enough.

Because the luster of the day comes not from being admired and lauded but from being appreciated, even if it’s hardly necessary to hear that announced constantly–after all, the proof of its value is in plain view if the needful things get done. Any reward lies in the belief that I make life that one tiny iota smoother and pleasanter for that one brief instant, even if only for this one other person. It’s borne on the smile of relief worn by him whose sheaf of office paperwork got filed at last when he couldn’t get to it himself, or whose old slippers have been mended by the time he gets home from the office at the end of the day. It’s in the neighbor being glad to have the excess garden supplies or box of art materials I’ve collected to send to school with her. It’s with me when I arrange the chairs alongside the singers before a rehearsal when I come by to listen to their work. It’s mostly in knowing that the stuff needed to keep quotidian action on course is being looked after, bit by little bit. And that I’m the person for the job.

I don’t do this selflessly, of course, because I would hardly keep it up for long if it weren’t so simply and inherently rewarding. And it certainly bespeaks no genius or courage on my part that I do it, for clearly it takes greater skill and ingenuity and bravery to do all of the shiny, showy things for which I provide my atoms of encouragement from the periphery. Maybe a jot of courage only to admit to being a homemaker and loving it. So many who haven’t the privilege of the life seem to disdain it and misconstrue its meaning, especially if it doesn’t have either children or wealth as part of the equation. I am far more fearful of having no sense of purpose than of being thought unimportant by anyone else; I care more about feeling my own worth than having it validated by any outside agents.

So if I seem to anyone to be afraid of taking a larger role in the Real World as they see it, I suppose I ought to admit that in one sense I am. I know that having this Job for a few years has given me new strength and the ability to go out in the wider world for a so-called Real one again when the time comes, yet I do dread leaving this role that has given me a feeling of vocation more than anything else I’ve ever done and risking the dimming of any of the self-worth I’ve garnered or the value I’ve learned to impute to the tasks of being normal and simple and everyday, which I’ve learned to see as so much deeper and richer than they’d seemed until I tried on the role of their custodian myself. I do, at the end of it, think that if I’m a dull, bland or unimportant grease-monkey to the cogs of the world, I’m a damn good one, and if I’m scared of giving up that high honor, then I at least credit myself with being a superior variety of chicken.

Foodie Tuesday: India Calling

Who needs call centers in India, I ask you. India calls me all the time, without any help from batteries of trained phone service representatives, using only its myriad delicious foods. Works all the time!photoFor a recent sit-down, for example, I was lured by the siren song of Tikka Masala. Too short a lead time for cooking on the occasion meant I’d need to doctor up some ready-made sauce, and there are certainly plenty on the supermarket shelves, so I picked out a jar and took it home to sauce some leftover roasted chicken and serve over leftover chicken broth rice. On tasting, the sauce proved to be a bit insipid and not quite what I had in mind, but it served as a fair base for a good dish with just a few little additions.  A bit of tweaking with cloves, cardamom and cayenne got it going slightly more brightly. A toss of coconut is seldom amiss, so yeah, I threw that on top.

Buttery peas, freshly cooked pappadums and a spoonful of raita rounded out the meal. I was delighted to discover that ready-to-fry pappadums from the grocery could be easily prepared in the microwave, of all things, which made my dinner’s trip over from India just that much shorter, a good thing indeed. Raita is such a grand condiment, jazzing up many a different dish or meal with its cool and refreshing blend of plain yogurt with a few flavor enhancers like, in this instance, finely diced cucumber, dill, fresh mint and a touch of salt and pepper.photoThe leftovers, since the raita was eaten and gone after the first day of this batch of Tikka Masala and there wasn’t a lot of chicken left in it either, got further doctoring. I added some plain yogurt directly to the dish, and a good sprinkling of my favorite homemade curry powder along with some brown mustard and black sesame seeds. I didn’t want to fix or add more chicken at the moment but wanted to expand the dish enough to fill me up, so I thought I’d love some palak paneer alongside. I love that spinach puree with farmer’s cheese in it, but, erm, it’s hard to make when there’s no spinach around. And no actual paneer, either, it turns out. So I took the similarly slow-melting cheese I did have on hand and cubed it directly into the sauce along with the chicken and peas. I’m pretty sure that this iteration of mine departed so far from true Tikka Masala dishes that it would be virtually unrecognized by any real Indian cook (no matter how far the true Indian versions vary, from what I’ve heard), so I guess India can’t be blamed for what I have perpetrated. But then again, the inspiration, the motivation–that’s all India’s fault.photoAnd I, at least, thank her.

Foodie Tuesday: Orange Foods for Your RDAF*

I guess you know by now that I have a Thing about orange. Among the many orange-obsessions in my color-hungry psyche, and far from least, is the love of orange foods, whether naturally that way or made that color by virtue of their preparation or combined ingredients. Oranges, tangerines and kumquats, for example, have the advantage of already being that eye-catching hue, as do carrots and cantaloupes, peaches and apricots and a long list of other vegetable and fruit delights. Then there are the lovely delectables tinted with turmeric, annatto, saffron, onion skins and other strong yellow dyes combined with various companion colorings to create all of those edible paints that make cheeses and egg dishes and breads and cakes and so many other desirable comestibles burst out in alluring orange flame. It’s often a bonus attraction of particularly succulent foods that they call to us first with this beacon of color.photoMirepoix, for example, is not only a magnificent contributor of flavor and texture to a vast palette of palate pleasers but brings the come-hither warmth of the carrots’ orange to add visual appeal to those dishes. It takes very little besides to make, for example, a simple omelet or frittata both delicious and pretty, and they can be further customized with many ingredients that will further both the orange coloration and the flavor with a happy boost, as in the case of the one seen here that added only a pinch of dill and a toss of finely diced summer sausage (a.k.a. beef stick), whose fat when heated usually oozes with orange glory.photoMany orange-colored foods are not only intensified in flavor but also in their punch of sunny hue by the concentration of the drying process. Dried apricots benefit in both ways from gentle dehydration. The brand of boxed chocolates I grew up enjoying (See’s), includes in its roster of stellar treats a juicy little bite called Apricot Delight that is so good it actually deserves a place in a box of chocolates–and you know my religious beliefs about chocolate: that’s a massive concession–so recently I bethought myself to attempt a sort of replication of its goodness. I think I did a pretty fair job, but will leave it to you to decide. I think these could be made by hand mincing, crushing and chopping, but by far are best made in a food processor or powerful blender.photoApricot Slice Candies

Equal parts of plump dried apricots, toasted sweetened, shredded coconut and roasted and salted pistachio nut meats–in this instance, about a cup of each–go into the processor with about 2-3 tablespoons of butter (or, if you prefer, solid coconut oil) and a handful of candied citrus peels. Whirled together until the solids become a coarse sandy mixture, they should have enough butter in them to become a tender but malleable dough (add more butter if needed) that can be formed into a log (about 2 inches in diameter), rolled into parchment and refrigerated until serving time. To serve, simply slice the chilled dough into 1/8 inch thick coin slices. I found these addictive enough as they were, but surely there would be no harm in adding candied ginger to the peel or throwing in a pinch of cayenne, a little splash of rose- or orange-blossom water or almond extract, or some sesame seeds, to name a few possibilities. Why, even some dark chocolate mini-chips thrown in after the blending or melted to coat the coins might not be amiss and could conceivably satisfy the diehards who mightn’t be as forgiving as I’ve been about finding these beauties in the box of chocolates, but I’m content to let them shine in all of their orange cheeriness, after all.photo

Foodie Tuesday: Savory, then Sweet

Dinner and then dessert. That’s the way I was raised, and I think a zillion other people had the same, despite the urge most children I know have always had to eat dessert first–and possibly, to stop there. Now that I’m wonderfully old, I can do that, and don’t hesitate to indulge now and then. But along with my well-known love for combining the sweet and savory together, whether it’s merely by adding a bit more salt to desserts or it’s designing a meal to have a wider range and greater balance between the savory and the sweet, there are plenty of times when a semblance of conformity to the old norm is perfectly satisfying to both my empty stomach and my sweet tooth.photoThere is much that I love about the simplest of meals, not only because it pleases me that they’re easy to prepare but because they also allow–nay, invite–the savoring of their few and uncomplicated parts. A chicken-and-noodles dinner, for example, can be barely more than those two ingredients and fill me comfortably and contentedly. Chunks of roasted or baked or fried chicken tossed in with fresh fettuccine that has been cooked in rich chicken broth (this time until the broth was thickened to sauce, but other times, just as a dandy bowl of chicken & noodle soup) need little but a helping of vegetables or two alongside and they become both welcome nourishment and a little trip down memory lane. My hunger is sated and I am reminded of many a happily simple meal gone by.

But then I succumb, more often than not, to thinking that if this meal is a little like those my mother made, why then it ought to end in dessert as well. And as citrus so complements chicken in nearly any guise, why not make a citrus dessert to follow a chicken dinner? I could certainly opt for the ever-lovely lemon bars that brighten many a table, yet I am not exactly known for coloring inside the lines when it comes to an entire menu, so on the most recent chicken-noodle dinner occasion, I took a slight deviation from that norm. [I took my first cue from a recipe for ‘instant’ lime curd made in a Vitamix so I could skip the slow and attentive cookery most curd recipes require. Our household blender is nothing so sophisticated–or expensive–as a Vitamix and doesn’t reach that machine’s level of heat, but since I was using the curd mostly for these cookie bars where it would subsequently be baked (and because I have no fear of eating raw eggs anyway), I went ahead with the blender I have. Needless to say, besides my alteration of the process I changed the ingredients to the point that you’re now getting my recipe, not that lovely published one I found elsewhere.]

Lime-Coconut Curd (Makes 6 servings.Theoretically.)

In the blender, whiz 3 whole eggs until frothy, adding ½ cup sugar + 1 hefty pinch of salt and ½ teaspoon of vanilla as you go; add ½ cup melted, very hot coconut oil in a thin stream, followed by a stream of ½ cup fresh lime juice, and keep blending it until it’s good and smooth or you think your blender and you will both swoon from overheating.

Set the curd in the refrigerator if you’re taking very long to prepare the rest of the cookie bar recipe, but if you’re like me, it’ll already be in the fridge from a couple of days ago when you made a double batch and spooned out a few helpings of the curd, plain, to snack on between times. As one sometimes must do. And I think you do know what I mean. Meanwhile, let us return to our cookie bar recipe.

Lime-Coconut Bar Cookies

[I am told I will be a complete failure as a human being if I don’t add the curd to a warm, just-baked crust layer, so I conform to the Rules at least that far. And I lined the bottom of the 9″ x 13″ pan with a single piece of baking parchment so that I could easily lift out the bars when ready.]

Okay, I can’t resist adding a dash of additional crunchy salt on top some of the time. Whether I eat them in any particular order or together, I do love both the savory and the sweet.

To make the crust, blend 1 cup flour (I used gluten-free flour), 3/4 cup coconut flour, 2/3 cup confectioners’ [powdered] sugar, 1/4 cup cornstarch, 3/4 teaspoon salt, 1/4-1/2 teaspoon ground cardamom and 1/4-1/2 teaspoon almond extract. Cut 3/4 cup [yes, really! What, you think I’d lie about adding lots of good fat?] of cold salted butter into this dry mix until it becomes a crumbly, sandy blend and then press it evenly into the pan. Refrigerate this for 30 minutes. Preheat the oven to your equivalent of 350°F [as you know, my oven has its own ideas about what that means, so I adjust accordingly]. When the crust has chilled, pop it into the oven for about 20 minutes or until it’s beginning to brown lightly. Out of the oven it comes. Reset the oven to 325°F, stir up the curd

, spread the curd over the crust, and pop the pan right back into the oven, for about 20 minutes or until the curd has set when gently touched. Almost done, now. Turn off that oven of yours before you forget, let the pan cool on a rack for about another half hour, and then you can take a quick swipe around the perimeter of the bars with a knife tip to loosen any stuck things before lifting them out in their parchment sling. These, like any citrus curd topped bars, are pretty to serve with a final dusting of powdered sugar on top, but any you’re saving for later should get dusted directly before serving, as it’ll absorb into the bars in the meantime. If, however, you’re going to devour the entire pan in one sitting, who am I to blame you? Powder up, my friends. Life is short and dessert is long-awaited.

Or there could be pomegranate and pistachio, for a change . . .

The second time around, I decided to try the bars with a little north-African influenced twist: substituted salted, roasted pistachios (ground to flour) for the almond flour in the crust, decreasing the added salt to 1/2 teaspoon; made the curd with pure pomegranate juice and butter instead of the lime juice and coconut oil, and because the curd wasn’t quite as bright in either flavor or color as the original recipe, made a little layer of zing from 1/4 cup each of pomegranate juice and ginger preserves, pureeing them together completely and softening a tablespoon of gelatin in them to thicken slightly, and finally topping the bars with whole pistachios and a dusting of powdered sugar and edible glitter for a dash of, well, dash. Messy, yes. Edible? Oh, yes. You people do know how I like my variations on a theme! And if we’re going to have dinner first, then I’m not opposed to two desserts to make up for the waiting . . .
