Foodie Tuesday: Savory, then Sweet

Dinner and then dessert. That’s the way I was raised, and I think a zillion other people had the same, despite the urge most children I know have always had to eat dessert first–and possibly, to stop there. Now that I’m wonderfully old, I can do that, and don’t hesitate to indulge now and then. But along with my well-known love for combining the sweet and savory together, whether it’s merely by adding a bit more salt to desserts or it’s designing a meal to have a wider range and greater balance between the savory and the sweet, there are plenty of times when a semblance of conformity to the old norm is perfectly satisfying to both my empty stomach and my sweet tooth.photoThere is much that I love about the simplest of meals, not only because it pleases me that they’re easy to prepare but because they also allow–nay, invite–the savoring of their few and uncomplicated parts. A chicken-and-noodles dinner, for example, can be barely more than those two ingredients and fill me comfortably and contentedly. Chunks of roasted or baked or fried chicken tossed in with fresh fettuccine that has been cooked in rich chicken broth (this time until the broth was thickened to sauce, but other times, just as a dandy bowl of chicken & noodle soup) need little but a helping of vegetables or two alongside and they become both welcome nourishment and a little trip down memory lane. My hunger is sated and I am reminded of many a happily simple meal gone by.

But then I succumb, more often than not, to thinking that if this meal is a little like those my mother made, why then it ought to end in dessert as well. And as citrus so complements chicken in nearly any guise, why not make a citrus dessert to follow a chicken dinner? I could certainly opt for the ever-lovely lemon bars that brighten many a table, yet I am not exactly known for coloring inside the lines when it comes to an entire menu, so on the most recent chicken-noodle dinner occasion, I took a slight deviation from that norm. [I took my first cue from a recipe for ‘instant’ lime curd made in a Vitamix so I could skip the slow and attentive cookery most curd recipes require. Our household blender is nothing so sophisticated–or expensive–as a Vitamix and doesn’t reach that machine’s level of heat, but since I was using the curd mostly for these cookie bars where it would subsequently be baked (and because I have no fear of eating raw eggs anyway), I went ahead with the blender I have. Needless to say, besides my alteration of the process I changed the ingredients to the point that you’re now getting my recipe, not that lovely published one I found elsewhere.]

Lime-Coconut Curd (Makes 6 servings.Theoretically.)

In the blender, whiz 3 whole eggs until frothy, adding ½ cup sugar + 1 hefty pinch of salt and ½ teaspoon of vanilla as you go; add ½ cup melted, very hot coconut oil in a thin stream, followed by a stream of ½ cup fresh lime juice, and keep blending it until it’s good and smooth or you think your blender and you will both swoon from overheating.

Set the curd in the refrigerator if you’re taking very long to prepare the rest of the cookie bar recipe, but if you’re like me, it’ll already be in the fridge from a couple of days ago when you made a double batch and spooned out a few helpings of the curd, plain, to snack on between times. As one sometimes must do. And I think you do know what I mean. Meanwhile, let us return to our cookie bar recipe.

Lime-Coconut Bar Cookies

[I am told I will be a complete failure as a human being if I don’t add the curd to a warm, just-baked crust layer, so I conform to the Rules at least that far. And I lined the bottom of the 9″ x 13″ pan with a single piece of baking parchment so that I could easily lift out the bars when ready.]

Okay, I can’t resist adding a dash of additional crunchy salt on top some of the time. Whether I eat them in any particular order or together, I do love both the savory and the sweet.

To make the crust, blend 1 cup flour (I used gluten-free flour), 3/4 cup coconut flour, 2/3 cup confectioners’ [powdered] sugar, 1/4 cup cornstarch, 3/4 teaspoon salt, 1/4-1/2 teaspoon ground cardamom and 1/4-1/2 teaspoon almond extract. Cut 3/4 cup [yes, really! What, you think I’d lie about adding lots of good fat?] of cold salted butter into this dry mix until it becomes a crumbly, sandy blend and then press it evenly into the pan. Refrigerate this for 30 minutes. Preheat the oven to your equivalent of 350°F [as you know, my oven has its own ideas about what that means, so I adjust accordingly]. When the crust has chilled, pop it into the oven for about 20 minutes or until it’s beginning to brown lightly. Out of the oven it comes. Reset the oven to 325°F, stir up the curd

, spread the curd over the crust, and pop the pan right back into the oven, for about 20 minutes or until the curd has set when gently touched. Almost done, now. Turn off that oven of yours before you forget, let the pan cool on a rack for about another half hour, and then you can take a quick swipe around the perimeter of the bars with a knife tip to loosen any stuck things before lifting them out in their parchment sling. These, like any citrus curd topped bars, are pretty to serve with a final dusting of powdered sugar on top, but any you’re saving for later should get dusted directly before serving, as it’ll absorb into the bars in the meantime. If, however, you’re going to devour the entire pan in one sitting, who am I to blame you? Powder up, my friends. Life is short and dessert is long-awaited.

Or there could be pomegranate and pistachio, for a change . . .

The second time around, I decided to try the bars with a little north-African influenced twist: substituted salted, roasted pistachios (ground to flour) for the almond flour in the crust, decreasing the added salt to 1/2 teaspoon; made the curd with pure pomegranate juice and butter instead of the lime juice and coconut oil, and because the curd wasn’t quite as bright in either flavor or color as the original recipe, made a little layer of zing from 1/4 cup each of pomegranate juice and ginger preserves, pureeing them together completely and softening a tablespoon of gelatin in them to thicken slightly, and finally topping the bars with whole pistachios and a dusting of powdered sugar and edible glitter for a dash of, well, dash. Messy, yes. Edible? Oh, yes. You people do know how I like my variations on a theme! And if we’re going to have dinner first, then I’m not opposed to two desserts to make up for the waiting . . .

Foodie Tuesday: Creamy & Dreamy

Given my love for dairy, eggs, sauces and the like, it can come as no surprise to anyone that I’m an incorrigible fanatic about puddings, custards, soufflés and their numerous smooth, fluffy, and plush cousins. They are not by any means created equal, of course, and my desired version changes with the weather, the occasion and a whole lot of other variables, so I’m very happy to sample the dish-of-the-day any time I can. Still, I’m very glad to have the best of the best, whatever the treat: great ice cream beats good ice cream, don’t you know. I was reminded of how much impact the slightest differences can have, even when I’m enjoying something I like very well, when I had a cone of soft-serve ice cream the other day and it turned out to be surprisingly thin and lacking the usual dense and creamy mouth-feel of the best stuff. Didn’t stop me from eating an ice cream cone, mind you, only it wasn’t close to the best I’ve slurped.

Ice milk isn’t my idea of true soft serve, but it can at least cool me and fill me up with a bit of good vanilla flavor . . .

Certain of those creamy, dreamy treats that tickle my fancy are pretty reliable even in the strictly mass-produced and store-bought kinds, once I find the brand or sort I fall most in love with eating. A nice, thick and lightly tart Greek style whole milk yogurt is hard to beat, particularly when I blend in some good cinnamon and strong local honey or perhaps a tot of dark maple syrup and a sprinkle of cardamom. Pure, smooth happiness. It’s a good facsimile, when sweetened a bit, for another grand favorite, pudding or custard that’s softer, not set up quite like the also-lovable flans and baked custards and burnt-creams.

If yogurt’s made into a low-fat version by adding thickeners, it has neither the same texture *nor* the same lusciousness. Go fat or go home, that’s my motto!

Frankly, that’s where a good mousse, fool, whipped cream or smoothie might wiggle its way into my heart as well. I’ve heard for some time that coconut milk makes a reasonable facsimile for whipped cream when chilled and whipped, so I decided to give it a go today, though I didn’t exactly follow the protocols I’ve seen online either–another unsurprising bit of my kitchen personality if you’ve read any of my other Tuesday posts! To make my own version of Coconut Cardamom Pudding, I mixed about 1 cup of chilled coconut milk, a half cup or so of cream, a tablespoon of plain gelatin (could easily use agar for setting the custard, if you’re vegetarian) that I bloomed on top of the liquids, plus a teaspoon of vanilla, a pinch of salt, a couple of tablespoons of honey and a teaspoon of ground cardamom, and beat them all until creamy, poured the custard into little ramekins, and popped them into the fridge for testing tomorrow after supper. I can’t speak for the texture until then, but as for the taste, it’s quite mild and subtle but a friendly grouping of flavors that I think will be just as tasty even if it doesn’t quite set up to flan texture by dinnertime. Never know until I try, anyway! Which, as you well know, is a pretty fair summary of my attitude toward most things edible.

Tomorrow will tell whether the coconut pudding experiment ‘stands firm’ custard style or gets altered one way or another next time, but it’s a spoon-able dainty today . . .

Drizzling just a bit more honey on top is rarely the wrong thing to do with a cloud-like dessert (here, garnished with a pinch of pink peppercorns to bump up the floral spice of the cardamom in the pudding). But I think I’d better stop talking about it now or I might not wait until tomorrow to see if the texture changes. The thought of any kind of yummy, airy, smooth and creamy dessert tends to have that sort of effect on me.

Update: after refrigeration, the coconut concoction set up as a very light, very fluffy mousse. Just enough heft to sit on the spoon for as long as it took to take a quick photo! The texture remains faintly grainy with the coconut base, but overall mouth-feel is smooth, feather-light and slightly buttery [grins shamelessly], and the flavor is very delicate. So I ate two servings. [Grinning again.]

Foodie Tuesday: There’s No Substitute for a Smart Substitution

Nearly every time I get in the mood to bake something I’m missing one or more of the necessary ingredients. This happens often enough when I’m making non-baked goods, but it’s almost a given with baking, because I simply don’t bake all that often: too much wheat flour and sugar makes this sweets-addict too likely to get tummy aches or just plain to overindulge. And the fact that I don’t bake terribly often means that, in that most scientific of culinary skills, I’m the least a genius about getting the fussy proportions and timings and temperatures correct. But I still do like to bake once in a while.

Though I feel pretty safe making all sorts of substitutions in cooked and raw dishes, simply finding analogous items–ingredients that have plenty of similar qualities and can therefore be expected to fill similar roles in the combination–I know less about what the ingredients used in baking are supposed to do, unless you’re talking about spices and flavorings, and so have always been more timid about fooling around with the recipes for baked goods. But lately, I’ve come to be more of a believer that life’s too short not to have a little kitchen adventure more often, and that if I’m not using outrageously expensive ingredients the worst that can happen is that a batch of something goes so far awry that it’s just plain a failed experiment. That’s what trash bins are made for, no? I’ll bet few scientists ever made their paradigm-shifting discoveries without a few boneheaded false starts and cock-ups and misdirections and outright failures along the way either, and, well, brownies are not exactly rocket science.

Texican Brownies

Ingredients: Plain ‘classic’ brownies call for the following ingredients and proportions:

4 squares (4 ounces/113 grams) Baker’s Unsweetened Chocolate–I substituted semisweet baking chocolate. It’s what I had in the cupboard.

3/4 cup  butter–while baking recipes almost always specify unsalted butter, I almost always use salted butter anyway unless there’s a lot of additional salt in the recipe; salt heightens sweetness and intensifies other flavors as well. And I love salt.

2 cups sugar–I substituted dark brown sugar for a deeper flavor.
3   eggs
1 teaspoon vanilla
1 cup flour–I substituted instant masa flour (a fine corn flour usually used for tortilla- and tamale-making)

Then I added a few ingredients of my own to make a darker-chocolate brownie and give it a slight Mexican twist:

1/2 tsp baking soda–since the masa flour wouldn’t have gluten like the wheat flour to make the brownies rise a little, I figured they should have a boost in leavening. Look at me, being all fake-scientist-like!

1/2 tsp salt plus 1/8-1/4 tsp ground black pepper–again, wanting to intensify the spicy chocolate of the brownies–plus 1 large tablespoon Dutch processed cocoa–yet more chocolate boosting–plus 1 tablespoon cinnamon

Directions:

Heat your oven to 350°F–mine runs hot, so I heated it to 325°.

Line a 13×9-inch pan with an oversized piece of baking parchment, folding it at the corners to fit and cover the sides as well as the bottom. One piece, no leaks.

Microwave the chocolate and butter together in a large microwaveable bowl on high until the butter is melted. Stir until the chocolate is melted and completely combined with the butter. Blend in the eggs and vanilla. In another bowl, mix all of the dry ingredients. Add them gradually to the wet mix, stirring until everything melds, and pour the batter into the prepared pan, pushing it into the folded parchment corners to fill them.

Bake 30 – 35 minutes (again, with my super-hot oven, I baked mine for more like 20-23 minutes) or until a toothpick inserted in the center comes out with a few moist crumbs. Better to under-bake these than the opposite–fudgy, chewy brownies are good; dry, not.

The parchment will let you easily pop the whole sheet of brownies right out of the pan.

Makes 24 brownies. Mine were still a little too baked, thanks to the hot-hot oven, so I quite happily compensated for the slight dryness by frosting the ones that weren’t immediately devoured. (A number of them were. Clearly, the over-baking didn’t destroy them so badly that the members of this household wouldn’t cheerfully destroy them in another way.)

No, I’m no fussy decorator. But I loves me some tasty frosting. And I wanted something that was earthy and yet juicy, something that would stand up to the depth of the spiced brownies and still have a little homey heartfelt quality to it, even if it wasn’t very frilly. I chose strawberry frosting; after all, las fresas are a fantastic favorite fruit treat in some of the Latin-American cuisine I’ve had the pleasure of inhaling eating. And this is just an easy take on buttercream icing.

Grind about one cup of freeze-dried strawberries to a coarse powder. I did mine in the blender, but if they’re dry enough you could even crush them with a wooden spoon in a heavy bowl–leaving some bits rough gives a little burst of berry flavor in the finished frosting and reminds us there are real berries involved. Add to the berry powder about a cup of powdered (confectioner’s) sugar, a teaspoon of vanilla, a cup of soft butter, and a tablespoon or two of heavy cream. Blend them together well, adding more sugar and/or cream as needed for flavor and texture. Apply liberally to the brownies, cake, cookies, tongue, etc, as needed for improved state of bliss.

I sprinkled them with some edible glitter just for good measure. A little extra pizzazz never really hurt anything. But you could just sprinkle yours with the stardust of your affection and it’d be just as glamorous and grand.

This whole brownie-baking urge of mine was motivated in large part because I felt like making a sort of Valentine’s Day treat; since we’ll be in the car on a work-related jaunt much of the actual Valentine’s Day, I figured today was a reasonable substitution for the occasion. Since both my husband and I love chocolate and baked treats but do better with less wheat flour, I figured substituting corn flour could be a decent and respectable enough Tex-Mex way of dealing with that part of the equation. And since neither of us is a stickler for celebrating only on the official or ‘correct’ dates for anything, we’re both quite willing to celebrate the American holiday of love-and-romance any old time we can. Because for love, there really is no acceptable substitute.

Foodie Tuesday: Birthday Dessert (and Boy, Wouldn’t This Taste Great with Some Chocolate Ice Cream!)

He’s a wacky fella, my dad. One of his finest features has always been his excellent and distinctive sense of humor, and there was never any question that having a father who’s delightfully silly is one of the finest advantages a kid could have in her upbringing. No surprise that, with Mom being the sort of hospitality genius that everyone loves and Dad providing much of the comic relief in that hospitable package, our household was always a popular place among the friends and classmates of all of their children. Both were also compassionate and reasonable and practical parents, and I don’t have to tell you what a rarity that is in general, so our home was a kind of hangout-central among the school-kid cognoscenti.

Since today is the anniversary of the birth of that Hardest Working Dad in Showbiz, I am drawn to reminisce on the many years of service that my father has given as the resident chief goofus in our family.photoThat in itself is gift enough, but his life of service has always been so much broader and deeper than mere lightheartedness. As a pastor, as Chairman of the Board of Regents for a university, as bishop, and as president of a hospital board, among many other roles he’s filled in his life’s work, Dad has never taken his labors lightly, even when the best tool he had for doing any or all of these jobs may have most often been the humor he brought to the table. He’s just never been one for sitting around and letting the world rush on around him.

photoI wish I could say that I inherited a tenth of his sense of humor, let alone a hundredth of his ambition and work ethic. Instead, I guess I should thank him once again on his birthday for not only being a dandy dad but also helping to fill the requirements of the universe in these services where I may have left some gaping gaps. So thanks, Dad, from the bottom of my full heart, and may you have not only a very happy birthday but all the warmth and laughter that can be wrung out of many more years. Oh, and cake. And, since you clearly are your father’s son when it comes to all of the characteristics noted above and we all know Grandpa would have felt the cake was best completed with some, have your cake with a couple of sizable scoops of chocolate ice cream.

Okay, this one’s not ice cream, but it’s chocolate dessert and it’s homemade. And it tastes pretty great, if you ask me. (1 ripe avocado, 1 ripe banana, 1 heaping tablespoon of cocoa, 1 teaspoon of vanilla, a pinch of salt, and honey to taste, all blended together until the pudding is smooth.)

Foodie Tuesday: Drink Me

photoShe may have had quite the colorful and sometimes even delicious adventures, but Alice never had so much good fun in Wonderland.

At least, it couldn’t have quenched her thirst in the same delightful ways. Because, of course, what I’m talking about is the titillating tipple. And perverse or subversive as that sounds, I mean only that I’m referring to some scintillating drink. There are a lot of versions of it out there! Many of them are ones I’m very happy to taste, test and share whenever I get the chance. There are even some standouts I’m willing to admit are probably quite fantastic even though I’d rather never drink them myself.photoThing is, I think few of us are as adventuresome as we ought, perhaps, to be. We don’t put as much thought into what we drink as we do into our eating. More’s the pity, my friends. Why on earth should we be dullards about food or drink when there is so much tremendous, dreamy, splendiferous stuff for the choosing? Me, I’m rather chuffed when I manage to remember not only to pay attention to the details but to enhance the food and drink by finding a great complementary pairing of them. Good food? Good! Good drinks? Goody! Good combination? Better yet!photoStill and all, I must say that no amount of clever combining will save the day if the drinks aren’t magnificent right from the start. Yes, let’s just get cut to the chase: good drinks are a benison and a crowning glory and a celebration altogether. Alcoholic or not, indeed. And I adjure you, when you are serving non-alcoholic drinks at the same time as alcoholic ones, be sure to make the ‘dry’ ones as pretty or impressive as the boozy ones or someone will feel slighted. Kids, especially, but why encourage either children or sober guests to covet that which they oughtn’t have? Differentiate clearly so that those who aren’t meant to have the tipsy treats can’t mistake them for the abstemious ones. But give everyone something equally delicious and glamorous-looking, and they’ll all be happier. I know I would, anyway.

Some drinks are so lovely as-is that they require no further doctoring than to get them, one way or another, from container to mouth. Even purely good, sippable liquids, though, can be friends in combinations that make them that much more spectacular.photoThis includes liquids that are stellar as individual drinks, from water right on up through numerous juices and nectars to the top of the drink charts. It would also, of course, include in my estimation a number of brews and elixirs and decoctions that combine those original ‘root’ ingredients aforementioned into singular teas, wines, liqueurs, beers or liquors that are magnificent drinks in their unadulterated forms. But sometimes I think people get a little too prissy, if not ossified, in their reverence for such beautiful things, thinking it sinful to even consider enjoying them in new ways or combinations. Even a modestly fine Scotch, for example, is often pretty expensive and gets people intimidated out of being imaginative with it when in a fabulous mixed drink it can actually get a little life-extension by sharing the stage with other ingredients and yet still be admirably present in the mix. And as for cocktails and any other kind of mixed drinks, I have the same attitude I was taught for food appreciation: don’t put into a recipe anything (with very few exceptions) that you wouldn’t happily eat on its own. Seriously–don’t put corn syrup based imitation stuff in front of me and expect me to choose that over pure maple syrup. (And while you’re at it, gimme Grade B–the more intense the maple flavor, the better I like it.)  Don’t cook with a wine you wouldn’t drink! Don’t make a cocktail with cheap and dirty booze! Garbage in, garbage out!

Bentley Cocktail: 1 part Calvados or apple brandy + 1 part Dubonnet Rouge
on the rocks. That’s the simple classic version. But why not play with the idea and enjoy the apple aspect further by garnishing with a sprinkling of apple pie spices? Or serving the drink with salted dried-apple crisps? Or, as with many apple-eating delights, by offering sharp cheddar crisps (did you know you can make those by simply oven-browning small heaps of grated cheese and cooling them on a rack or paper to absorb released fats?) alongside to complement the apple sweetness? You can make a fair non-alcoholic facsimile of a Bentley simply with substitutions of, respectively, strong freshly pressed apple juice (I’d use unfiltered for the fullest flavor) and cream soda or birch soda.

Gimlet [‘Vodka & Lime’, as it was introduced to me in London when I was a stripling, is my favorite version rather than the gin original]: 1 part Tito’s vodka + 1 part Rose’s lime juice on the rocks. This is essentially a grownup version of a very old-fashioned fountain drink that I loved as a kid and still love, the Green River Phosphate. So for nonalcoholic versions of it you can easily either buy Green River soda right off the grocery shelf, make a homemade version with any of the online recipes easily found, or you can even be more extravagant and make homemade lime simple syrup, simmering both juice and zest into the sugar water, and mix it with carbonated water or soda. If you’re going that far, it only makes sense to use the same lovely syrup for both the ‘hard’ version and the other drink, no? And again, why not emphasize the clean lime taste with a little complement or contrast, and consider visual impact as well as taste; classic presentation is not the law, only a set of codified cues. I’m not against even playing with frozen slices of carambola (star fruit) for the rocks in a gimlet because they have a bright citrusy taste with the added element of a surprising grassy note, they look like stars, and they keep the chill in the glass in a cheery green way without diluting the drink as they thaw. The kid in all of us, alcohol-aged drinkers or not, likes a starry surprise once in a while. I can imagine it being both entertaining and tasty to put together a simple little tribute to the tertiary color triad: a sprightly, lime-y Gimlet garnished with a bold twist of orange zest and served with a batch of sweet and salty beet crisps.

Scotch and Ginger: 1.5-2 oz. Scotch poured over ice in a tall glass, then filled with ginger ale or ginger beer (sodas, sometimes fermented). When going to have a Scotch and Ginger, I’ve seen folk shudder with horror at the very idea of adulterating decent Scotch with soda, but as you can see, my attitude toward such things is more of the [OK + OK = just more of OK] vs. [Good + Good = Better] variety. The optional iterations are so many that one could drink nothing but S&G and hardly ever have the same drink twice. I think perhaps my top choices for experimentation with this might be something like the following:

S&G 1: The Macallan 12 year old Sherry Oak Scotch + GuS Grown-Up Soda Extra Dry Ginger Ale vs.

S&G 2: Laphroaig 10 year old Scotch + Vernors ginger ale (a particularly sweet and gingery soda, it’s the oldest US ginger ale still in production)photoThese are, of course, existing and well-known mixed drinks, and among the simplest of them as well. The more numerous the ingredients, the more a drink recipe can be tweaked for fun and pleasure. It’s no wonder the new recipes never cease to, ahem, pour forth. And luckily so: I know I’ll always be thirsty for more. Here’s looking at you (through the bottom of my glass)!

Foodie Tuesday: From GM to GF without Prejudice

photoYou know I’m not a vegetarian, let alone a vegan, nor do I on a regular basis obey or enforce any dietary edicts in my kitchen regarding the consumption of meats, fish, dairy, eggs, or practically anything else in the edible universe. But since I do respect the lives, health and right to believe what they believe about foods that other people have–even if the belief is patently ridiculous, like one that would, say, eat anything but my cooking (okay, there may be fine reasons for that one, too, come to think of it)–well, it means that I do think about what I eat. Surprising though that may be to anyone who has seen me hunched over my food like a half-starved grizzly just because I like it so much. Aside from the notion that I don’t mind being associated with a creature bearing (please bear with me) the wonderfully mellifluous and magical name of Ursus arctos horribilis, I can’t really make that claim. My body does express its likes and dislikes more clearly as I age.

This means that despite my blissful youth of eating every triple-scoop of ice cream that appeared before my glistening eyes without experiencing a noticeable twinge on my elastic waistband, I now find myself questioning whether a single scoop ‘every so often’ might threaten me with an equal and opposite seismic event should I waver too close to any fragile chairs or ice-covered ponds. That a stick of butter should probably no longer be considered an after-school snack. (Well, I thought about it, I’m sure.) Maybe even that the dreaded concept of Portion Control might in fact be a useful, if not lifesaving, one, particularly when applied to foods with calorie counts exceeding the sum total of my age, my IQ, plus my life savings in number. I’ll leave you to contemplate which of these numbers alone is the highest or lowest. And don’t tell me your conclusions, thank you.

Meanwhile, back in my kitchen, I stand contemplating yet another set of conundrums. I’m not convinced that a dramatic decrease in my intake of genetically modified foods is going to wildly affect my remaining lifespan or health, unless foods marked GM are in fact made by General Motors as engine lubricants and exhaust system cleaners. I’ll leave it to the more medically fragile and environmentally astute to deal with those concerns if I must. But I certainly think that if I have a reasonable choice between things grown with or without gene alteration and chemical additives and other forms of production hocus-pocus, I’ll opt for the less adulterated versions. And my gut tells me (this, more literally than might be delicate for full discussion here; suffice to say that I’m talking about both digestion and the expansion of my middle acreage) that wheat is not entirely my friend anymore, if it ever was. This is expressed primarily in a recognition that most of the wheat-based eating I have most loved over the years is also full of (mostly processed) sugar and rather high in not-so-nutritious calories and is therefore wonderfully addictive to me. I just plain eat more of what’s less good for me because it creates further cravings.

Well, let’s get to the cheerier part of this equation, at long last. Dessert again, if you will.photo

I’m gradually working to go gluten-free, or approach it more closely than I ever have before anyway, to see what cutting down on wheat or just plain cutting it out of the diet might do to simplify this one aspect of my food-related health and happiness. I’m learning to work with a number of ingredients that fill most wheat gaps in my taste, and I’m finding new stuff to like. Or is that bad? New foods to like, when I’m so ancient that I can’t just eat willy-nilly and know that there will be no consequences?photo

Here’s a simple little dinner that arose out of the experiment just recently. Small, tender (erm, check out the torn one, damaged by soft pieces of cheese) crepes made of egg, water, a touch of vanilla and a pinch of salt, folded over an uncomplicated filling of cubed roasted chicken warmed with sautéed celery and red capiscum and a whole lot of sliced brown mushrooms, all seasoned lightly with the bacon fat and butter in which they were mingled, a splash of broth, a freckling of black pepper, and a dash of Worcestershire. My beloved dinner companion was not desirous of anything further in his, so mine was the only crepe that had the queso fresco added. I think it works pretty decently either way.photo

For another easy little breath of fresh air besides merely leaving the little bit of flour out of the crepe mix, I varied our frequent-flying slaw addendum to try out a slightly different salad. Thinly sliced celery, shredded carrots and sliced almonds. A spoonful of ginger preserves, the juice of half a lime, and a couple of tablespoons of macadamia nut oil. Crunchy and clean and fresh, and a strong contrast to the soft textures and savory warmth of the crepes.photo

I’m not sure of it, but I think perhaps the meal was satisfying enough that it removed one iota of my natural craving for an actual dessert to follow it immediately. One iota, mind you. I can still envy those who can eat all the floury goodies they want without serious guilt or consequence. But there will be dessert. Many and many a time to come. It’s just that the desserts will be smaller than a triple scoop of yummy scrummy ice cream. And contain lots less wheat, I’m guessing. We’ll just see how all of this goes.photo

In the Shadow of The Mountain

Perhaps this is true of other places, but I only know my hometown’s version of it: in Seattle, or pretty much anywhere in southwest Washington, Mount Rainier is frequently known simply as The Mountain. Yes, we call it by its full name, or by its ‘patrinomial’ ID of Rainier, and sometimes even by its graceful older name Tahoma. But its dominance of the skyline when visible, and of the ethos–the spirit–of western Washington thanks to its potent influences on geography and geological and meteorological character, not to mention the power it has to wipe out half the state should it decide to wake from its long dormancy, all mean that whether in plain view or not it has a hold on the hearts and minds of the locals like no other single force, natural or otherwise.photoSometimes when flying in to SeaTac airport the mountain is not only clearly visible but brilliantly etched and jutting boldly through the clouds, if any. SeaTac International Airport sits between Seattle and Tacoma, and the zone so called for its equidistance was finally officially given that insipid and cheap-sounding name some years ago–don’t get me started on it–but it’s well worth flying to a place with any ridiculous name you could conjure if and when you get the right weather, enough sunlight, and an accommodating pilot who appreciates Mt. Rainier’s beauty enough to tip a wing to the mountain’s flank and give the passengers a clearer view.photoTruth be told, we’ve seen precious little of the mountain on our current visit. It’s been pretty overcast much of the time, including when we flew in, so yes, the photos here are from other times. I’ve known of visitors who left disbelieving we even have a Mount Rainier, never having glimpsed that big white heap of sugar in weeks and weeks of waiting. The fabled wet weather of the Northwest can indeed curtain off our magnificent totem from view for seemingly interminable times and make us long to be reminded ourselves that it wasn’t all an hallucination or a passion-fueled fantasy. Even when visible, Rainier very often sports a ‘hat’ or veil that keeps a little mystery close by; being large enough to create its own weather, this geological behemoth seems to be quite often crowned with a companion cloud that rarely moves very far off or disappears entirely.photoDespite all of this hide-and-seek, the imminent danger we all know quite well as natives makes us bolt, strap, glue and otherwise thoughtfully position many of our tall or breakable belongings as though to protect them from a petulant child, because we’ve been through enough minor earthquake shakers in our lives to know preparedness pays. Still, while rainy Washington makes floods a real and frequent possibility, if that dormant volcano in our midst gives the really big belch geologists tell us is historically overdue, whatever isn’t swept off in the violent and instantaneous post-blast lahars [pyroclastic mudflows] that will likely submerge the surrounding valleys (the primary lahar channel of which was home to my family for most of my youth) will be treated pretty much like a snow-globe being handled by a curious Godzilla. Game over.photoSo we have a certain amount of respect for The Mountain, never mind it being such a fixture in our existence. No, I don’t know anyone who’s ever grown jaded about seeing it, no matter how long he or she has lived in its shade. This is not your typical mountain, looking pretty but losing its allure gradually as you realize you’re rather close and it’s stopped looming higher. It’s set in a fairly impressive range of mountains yet is so much bigger and more prominent than the rest that once the sky clears you just plain can’t miss it, and that sight quickly makes its mark on you. In snow-time, its blue-white flanks rise up to pierce the sky and look so sharply delineated you think you could stick your hand out and grab a fistful of super-vanilla ice cream from just behind that house over there across the street. As the snow melts, streaks made of billions of evergreens and a few exposed rocky prominences reflect sun and sky and passing clouds’ shadows in a changing array of colors that tease you with seeming first as near as your own breath and then suddenly as far distant as a too-sweet dream. Driving there can nearly drive you mad: you look to your left and it’s sitting right across the closest pasture; round the curve and it has shot away as far as the moon; over the next hill, in an instant it almost seems you’ll crash into the bank of snow just ahead of your front bumper.photoEventually you get onto the foot of Mount Rainier, yes you do, and you realize it’s so huge that you can still have a view of the peak that seems remarkably like the distant view of the whole that you had from an hour and a half’s drive away. The flora and fauna of this glorious bump on the earth have changed relatively little in millennia, and just being in their midst for an afternoon’s traipse along the trails makes you think both that your own sort might go on forever and that if the mountain is really going to blow, perhaps its taking you along for the ride in instant smithereens might not be altogether the worst thing. That’s how magical The Mountain is, even after all of these years of living at its foot. It might kill me, but if it does it will have fed my spirits incredibly well for a very long time indeed. That mountain there, she may keep her chapeau of a cloud-let coquettishly low on her brow for long periods of time, but when she finally does doff it, Holy Mother of Gleaming Glaciers, she’s a beauty.
