Foodie Tuesday: Composed vs Composted

Many things that taste delicious don’t exactly look as dreamy as they are to eat. Of course, anyone who has eaten in a reasonable number of high-end dining establishments knows that what does look impressive may not live up to its pretensions sometimes, too. But it’s worth trying, at least when serving guests, to make the food look appetizing as well as tasting great, and if guests deserve the respect, why shouldn’t we give it to ourselves?photoWhen I’m cooking in my DIY (more accurately translated in food terms as ‘Dish It Yourself’) mode for varied appetites and needs, it limits what I can do in terms of presentation a little more than usual, but in some ways it can simplify it, too: as long as I’m not dealing with allergy, I can serve foods in proximity that I know not every one will want in the same mix or proportions. So ‘composed’ presentation and ‘deconstructed’ dishes can be a fine and fun way to create something that looks more attractive and inviting than if I go ahead and blend all of the meal’s parts before serving. Case in point: this quinoa concoction, which is basically a confetti-like mishmash if stirred all together before serving, whereas if I simply keep the ingredients a little more separate when plating it all up, suddenly it looks ever so much more like an artful arrangement and a come-hither dish–which is more in keeping with its being a pretty tasty collation, by my standards. So yes, I did even make the pretty composed version when I was the only person showing up at the table. I really do like me that much.photoStrawberry Quinoa Salad

The ingredients for this are quite simple and, as I prefer, completely flexible in terms of trading items in or out of the group and setting the proportions. In this instance, I used the following combination: quinoa cooked in bone broth, sliced ripe strawberries, butter toasted sliced almonds, cubed fresh mozzarella, diced yellow tomato, and minced fresh basil and mint leaves. I kept it all at room temperature and dressed it with my balsamic mint vinaigrette (balsamic vinegar, melted mint jelly, a spoonful of pureed fresh cilantro leaves, and macadamia nut oil blended to taste) and a pinch of crunchy Maldon sea salt, and all together, it was Just Right. And pretty, too. Still and all, when I ate the other half of the salad the next day after having stirred it all together, it was just as good to eat. Guess I’m not too hung up on appearances after all.

Foodie Tuesday: The Fruits of My Labors

photoWhile my labors will always be limited by my well-known lack of desire to actually work, there are certain things I am very willing to get up off of my well padded posterior and Do, not least of all those food-related efforts which will undoubtedly further contribute to my padding. That’s a fancy way of saying that if there’s food involved and I get to eat some of it, I’m more likely to get up and work.

One of the things I’ve found more inspirational in that sense as I get older is my taste for and appreciation of fruits has both deepened and broadened (hence, in part, my own broadening, if that wasn’t obvious enough already). I like a whole lot of them, in fact, and in a wide number of ways. Probably no coincidence that I keep making accidental puns about size, for if I could really get my hands on all of the fruit I craved, every time I craved it, I would probably be as big as houses even though many fruits are dangerous to weight less by virtue of high calories than by the sugary kind of them. All of this being said, however, I am in no way planning to cut down drastically on my consumption of tasty fruit and fruit-filled foods voluntarily. When they’re ripe and juicy, they’re just so irresistible. To wit, one could make, with little effort, a:

Fruity MoussephotoIngredients (this time): pureed fresh strawberries, ripe banana, and pears (peeled ripe or canned in fruit juice); a pinch of salt, a splash each of rosewater, lemon juice, and vanilla, and whipped heavy cream, all to taste. Combine and blend them thoroughly. Thicken a bit more if/as needed by adding a little bloomed unflavored gelatin or agar agar, or a spoonful of minute tapioca, and chill thoroughly until the mousse sets up. I garnished mine with a pinch of pink peppercorns and a few slices of fresh pear.

This sprightly mash-up makes a decent dessert, to be sure, but if like me you’re not about to limit your fruit intake to avoid the high carb and sugar-calorie quantities therein, it also makes a dandy breakfast. Very refreshing, my dears! Well worth putting a lazybones to the tiny bit of necessary effort indeed.photo

Foodie Tuesday: Make Believe Meals

I’m generally in favor of good nutrition, in theory at least. But let’s be honest: I’m neither an actual nutritionist nor so dedicated to good health and sensible behavior that I will go to any particular lengths to insure that what I’m eating is always appropriate. You may, just possibly, have noticed that even before I stated it so shamelessly. Yeah, I’m a little kid.*

So if I can make entrees and side dishes that have any value as sustenance and taste enough like dessert so as to make myself feel I’m misbehaving a bit, so much the better. The particular good news in this is that with a whole lot of tasty ingredients, it’s not all that tough to accomplish the task. I mean, if you can take advantage of the Maillard reaction and make sweet caramelization happen to cruciferous vegetables and, yes, even meat, that’s proof enough for me that we are meant to enjoy dessert as any course of a meal. Sexy seared chops and steaks and fish filets, here I come! Succulent Brussels sprouts? But of course! Life is good.photoAnd why limit myself to drawing out the sugars in seemingly non-sugary foods when I can embrace the vitamins in vegetables and, what the heck, throw more sugar and spice on top just because I can. Rather delightful, if you ask me, to occasionally set aside the usual mashed potatoes in favor of what is essentially pie filling. So with those juicy sweet chops, I might give in to the urge to treat them and myself to a scoop of deconstructed dessert thus:

Sweet Potato Pie Mash

Take one peeled sweet potato or yam and an equal amount of carrots, and put both raw vegetables into a food processor or heavy-duty blender with a few friends and blend the whole concatenation into fluffy oneness. My choice last time of company for the two cups’ worth of aforementioned sweet spud and carrots: 2 tablespoons butter or coconut oil, half a teaspoon of salt, half a teaspoon of ground cinnamon, a splash of vanilla, one egg and, for added sugar, half a cup of ‘natural’ (handmade) small marshmallows. Because I had them around. Because I have a slight sweets addiction. Because, and I may have mentioned this before*, I’m a little kid. Last move with this mash is to heat it up–just bake or microwave it in a greased heat-proof dish long enough to heat it through fully, and it makes a delightful pie-like accompaniment to practically anything, including, well, a plain old spoon. Candy, I tell you. But chock full of vitamins. Or close enough to encourage me to absolve myself of any misdeeds until the next over-the-top meal.

Yes indeedy, I *did* pour a little cream on the mash, too, because it tasted so much like pie. But then again, I have been known to put crisped bacon or (as here) chicken cracklings on top for a savory finish. Am I a dietary lost cause? Perhaps. But a happy one.

Foodie Tuesday: India Calling

Who needs call centers in India, I ask you. India calls me all the time, without any help from batteries of trained phone service representatives, using only its myriad delicious foods. Works all the time!photoFor a recent sit-down, for example, I was lured by the siren song of Tikka Masala. Too short a lead time for cooking on the occasion meant I’d need to doctor up some ready-made sauce, and there are certainly plenty on the supermarket shelves, so I picked out a jar and took it home to sauce some leftover roasted chicken and serve over leftover chicken broth rice. On tasting, the sauce proved to be a bit insipid and not quite what I had in mind, but it served as a fair base for a good dish with just a few little additions.  A bit of tweaking with cloves, cardamom and cayenne got it going slightly more brightly. A toss of coconut is seldom amiss, so yeah, I threw that on top.

Buttery peas, freshly cooked pappadums and a spoonful of raita rounded out the meal. I was delighted to discover that ready-to-fry pappadums from the grocery could be easily prepared in the microwave, of all things, which made my dinner’s trip over from India just that much shorter, a good thing indeed. Raita is such a grand condiment, jazzing up many a different dish or meal with its cool and refreshing blend of plain yogurt with a few flavor enhancers like, in this instance, finely diced cucumber, dill, fresh mint and a touch of salt and pepper.photoThe leftovers, since the raita was eaten and gone after the first day of this batch of Tikka Masala and there wasn’t a lot of chicken left in it either, got further doctoring. I added some plain yogurt directly to the dish, and a good sprinkling of my favorite homemade curry powder along with some brown mustard and black sesame seeds. I didn’t want to fix or add more chicken at the moment but wanted to expand the dish enough to fill me up, so I thought I’d love some palak paneer alongside. I love that spinach puree with farmer’s cheese in it, but, erm, it’s hard to make when there’s no spinach around. And no actual paneer, either, it turns out. So I took the similarly slow-melting cheese I did have on hand and cubed it directly into the sauce along with the chicken and peas. I’m pretty sure that this iteration of mine departed so far from true Tikka Masala dishes that it would be virtually unrecognized by any real Indian cook (no matter how far the true Indian versions vary, from what I’ve heard), so I guess India can’t be blamed for what I have perpetrated. But then again, the inspiration, the motivation–that’s all India’s fault.photoAnd I, at least, thank her.

Foodie Tuesday: Savory, then Sweet

Dinner and then dessert. That’s the way I was raised, and I think a zillion other people had the same, despite the urge most children I know have always had to eat dessert first–and possibly, to stop there. Now that I’m wonderfully old, I can do that, and don’t hesitate to indulge now and then. But along with my well-known love for combining the sweet and savory together, whether it’s merely by adding a bit more salt to desserts or it’s designing a meal to have a wider range and greater balance between the savory and the sweet, there are plenty of times when a semblance of conformity to the old norm is perfectly satisfying to both my empty stomach and my sweet tooth.photoThere is much that I love about the simplest of meals, not only because it pleases me that they’re easy to prepare but because they also allow–nay, invite–the savoring of their few and uncomplicated parts. A chicken-and-noodles dinner, for example, can be barely more than those two ingredients and fill me comfortably and contentedly. Chunks of roasted or baked or fried chicken tossed in with fresh fettuccine that has been cooked in rich chicken broth (this time until the broth was thickened to sauce, but other times, just as a dandy bowl of chicken & noodle soup) need little but a helping of vegetables or two alongside and they become both welcome nourishment and a little trip down memory lane. My hunger is sated and I am reminded of many a happily simple meal gone by.

But then I succumb, more often than not, to thinking that if this meal is a little like those my mother made, why then it ought to end in dessert as well. And as citrus so complements chicken in nearly any guise, why not make a citrus dessert to follow a chicken dinner? I could certainly opt for the ever-lovely lemon bars that brighten many a table, yet I am not exactly known for coloring inside the lines when it comes to an entire menu, so on the most recent chicken-noodle dinner occasion, I took a slight deviation from that norm. [I took my first cue from a recipe for ‘instant’ lime curd made in a Vitamix so I could skip the slow and attentive cookery most curd recipes require. Our household blender is nothing so sophisticated–or expensive–as a Vitamix and doesn’t reach that machine’s level of heat, but since I was using the curd mostly for these cookie bars where it would subsequently be baked (and because I have no fear of eating raw eggs anyway), I went ahead with the blender I have. Needless to say, besides my alteration of the process I changed the ingredients to the point that you’re now getting my recipe, not that lovely published one I found elsewhere.]

Lime-Coconut Curd (Makes 6 servings.Theoretically.)

In the blender, whiz 3 whole eggs until frothy, adding ½ cup sugar + 1 hefty pinch of salt and ½ teaspoon of vanilla as you go; add ½ cup melted, very hot coconut oil in a thin stream, followed by a stream of ½ cup fresh lime juice, and keep blending it until it’s good and smooth or you think your blender and you will both swoon from overheating.

Set the curd in the refrigerator if you’re taking very long to prepare the rest of the cookie bar recipe, but if you’re like me, it’ll already be in the fridge from a couple of days ago when you made a double batch and spooned out a few helpings of the curd, plain, to snack on between times. As one sometimes must do. And I think you do know what I mean. Meanwhile, let us return to our cookie bar recipe.

Lime-Coconut Bar Cookies

[I am told I will be a complete failure as a human being if I don’t add the curd to a warm, just-baked crust layer, so I conform to the Rules at least that far. And I lined the bottom of the 9″ x 13″ pan with a single piece of baking parchment so that I could easily lift out the bars when ready.]

Okay, I can’t resist adding a dash of additional crunchy salt on top some of the time. Whether I eat them in any particular order or together, I do love both the savory and the sweet.

To make the crust, blend 1 cup flour (I used gluten-free flour), 3/4 cup coconut flour, 2/3 cup confectioners’ [powdered] sugar, 1/4 cup cornstarch, 3/4 teaspoon salt, 1/4-1/2 teaspoon ground cardamom and 1/4-1/2 teaspoon almond extract. Cut 3/4 cup [yes, really! What, you think I’d lie about adding lots of good fat?] of cold salted butter into this dry mix until it becomes a crumbly, sandy blend and then press it evenly into the pan. Refrigerate this for 30 minutes. Preheat the oven to your equivalent of 350°F [as you know, my oven has its own ideas about what that means, so I adjust accordingly]. When the crust has chilled, pop it into the oven for about 20 minutes or until it’s beginning to brown lightly. Out of the oven it comes. Reset the oven to 325°F, stir up the curd

, spread the curd over the crust, and pop the pan right back into the oven, for about 20 minutes or until the curd has set when gently touched. Almost done, now. Turn off that oven of yours before you forget, let the pan cool on a rack for about another half hour, and then you can take a quick swipe around the perimeter of the bars with a knife tip to loosen any stuck things before lifting them out in their parchment sling. These, like any citrus curd topped bars, are pretty to serve with a final dusting of powdered sugar on top, but any you’re saving for later should get dusted directly before serving, as it’ll absorb into the bars in the meantime. If, however, you’re going to devour the entire pan in one sitting, who am I to blame you? Powder up, my friends. Life is short and dessert is long-awaited.

Or there could be pomegranate and pistachio, for a change . . .

The second time around, I decided to try the bars with a little north-African influenced twist: substituted salted, roasted pistachios (ground to flour) for the almond flour in the crust, decreasing the added salt to 1/2 teaspoon; made the curd with pure pomegranate juice and butter instead of the lime juice and coconut oil, and because the curd wasn’t quite as bright in either flavor or color as the original recipe, made a little layer of zing from 1/4 cup each of pomegranate juice and ginger preserves, pureeing them together completely and softening a tablespoon of gelatin in them to thicken slightly, and finally topping the bars with whole pistachios and a dusting of powdered sugar and edible glitter for a dash of, well, dash. Messy, yes. Edible? Oh, yes. You people do know how I like my variations on a theme! And if we’re going to have dinner first, then I’m not opposed to two desserts to make up for the waiting . . .

Foodie Tuesday: Thai Me up in Noodles

photoRice noodles + ginger = Asian-flavored happiness. Hard to go wrong with a fresh southeast-Asian tinge when starting with those two elements as inspiration, not least of all when there are a few other appropriate ingredients lounging around on all the pantry and refrigerator shelves just leering at me suggestively. So as soon as I start salivating over this stuff, I must head for the hob and get cooking up something semi-respectfully enthusiastic in its homage to the marvels of the Asian-inflected kitchen.photoThis expedition can lead down byways as remote and convoluted as any of my other forays into cookery, but on a recent occasion I hewed just a little closer to the genuine article, ending up with a peanut-sauced noodle dish that was definitely reminiscent of those subtly spectacular and deliciously heartwarming feasts my Thai college roommate (Hi, Beautiful!) and friends fed me years ago.photoThai-inspired Peanut Noodles

Starting with a combination of homemade broth (about 3 cups) and 1 8 oz. can of coconut milk, I added about 2 heaping tablespoons of diced ginger root (I keep a jar of it in vodka in the fridge), another tablespoon of preserved kaffir lime leaf shreds (bought jarred), yet another spoonful of minced preserved cilantro, a scant half teaspoon of ground black pepper plus about 1/8 teaspoon of cayenne pepper, and a tablespoon of fish sauce (I use Squid brand because it’s the one I ‘learned’ from my roommate), and lastly, I added about 8 dried Shiitake mushrooms. All of this simmered over low heat until it reduced by about 50%, and then I strained it. The strained broth went into a broad saucier, where I cooked the handful of Pad Thai-style (though in this instance Vietnamese) rice noodles until done. I tossed a heaping two tablespoons of creamy natural (only salt added) peanut butter into the pan and let it soften while I was raiding the freezer, and by the time I got back with a 1-cup packet of frozen peas, the peanut butter was soft enough to stir in along with them.

My spousal-person was happy to keep the dish as served, not adulterating it with the garnishes a strange creature like his wife would add, but I was happy, on the other hand, to reintroduce the kaffir shreds and the ginger–this time in the form of my old favorite, sushi gari, also shredded thinly–and to top it all off, a nice sprinkling of sesame seeds. But however it gets to the table, this little concoction is a pleasant quick trip to southeast Asia that even those who can’t tolerate air travel can afford.

Foodie Tuesday: Clean Hands and a Cooked Chicken

 

photoNo fingers must be licked for chicken to be considered notably delectable. Still, being no stickler for any particular sort of manners, I am not averse to slurping at any remnants of good food stuck to my fingers no matter what they are or, possibly, where I am. And I find that some of the appeal of eating chicken is that it lends itself to an enormous range of edible iterations that are a pleasure in the making, in the dining, and in the finger-licking aftermath of it all. Chicken plays such a lovely supporting role to any number of costars among the pantheon of possible flavorings and ingredients that it’s never difficult to imagine yet another wondrous way to enjoy a chicken dish. Add to that the potential for re-imagining the chicken in numerous follow-up dishes if there should happen to be any left over from dinner, and you’ve got one fine, fine companion in the kitchen.photoOur friendly chicken on this occasion, a handsomely fat-breasted creature of purportedly wholly organic origins (and who am I to argue), was gently consigned, in a Dutch oven larded with a generous quantity of sweet pastured butter, and wearing a good dusting of homemade lemon salt and pepper, to lie on a bed of neck and giblets, celery chunks and quartered limes that suspended it above the cupful or so of white wine pooled underneath. The oven, set at about as low a temperature as it could sustain below the mere warming of its interior light could generate, brought the chicken up to moist-cooked interior temperature over a long, slow afternoon before being brought out from under its protective lid for browning under the broiler at the last moment. Not the fast food version of ‘finger-lickin’ good’ but rather a lengthily slow-cooked bit of tenderness that deserves hand-cleaning after the fact all the same.photoThe simple sequel to this supper can come from any number of inspirations. On the latest occasion it was pairing the chicken with some crisp-tender hash browns, along with warming some leftover marinara sauce, butter-cooked mushrooms and herbs together to create a facsimile of Chicken Parmigiana. Rather than create the breaded cutlets in the traditional style, I simply layered the slices of moist chicken next to the potatoes, spooned on some mushroom marinara, sprinkled on some shredded Parmigiano, and melted the cheese just a little to round out its flavor. Far from the heights of authentic Italian culinary art, but let me tell you, it wasn’t hard to eat all the same. Might be having some again soon, since there’s still more of that nice chicken that I cut up and popped in the freezer after roasting it the other day. Of course, I could veer off toward some Tikka Masala . . . or chicken noodle soup . . . or quesadillas con pollo. photo

Foodie Tuesday: Hospitality as Apotheosis

photoBeing good and doing well make us just a little bit more like angels. Making good food and treating guests well is just that much better. It’s a feeding not just of the stomach but also of the spirit. It puts one in a state of grace that can be earned, but at the same time is the richer for being given without thought of such recompense. A simple cup of hot coffee proffered with kindness becomes through this transubstantiation the elixir of joy.

Today I woke up thinking of such hospitality as I was remembering a time thirty years ago when I was the fortunate beneficiary of it. I was a recent college graduate, working for my uncle’s construction company while I paid off undergraduate loans and contemplated the prospect of taking out more for grad school, and I was sent out with a couple of fellow workers to spend a few days laboring on the repair and renovation of a hundred year old farmhouse out in the country. The weather was pleasantly warm and the house only moderately shaggy for its vintage, and the owners were friendly on our arrival.photoThe work, still, was dirty enough–removal of and repair from exterior dry rot and moss that was encroaching on the northerly upper story window frames and trim, and some interior rebuilding that the lead carpenter on the team would start framing in as a new arch between living and dining spaces as soon as the group effort of tear-out was finished on the second story outside. It was a pretty and classic old farmhouse, with a wraparound porch hugging it so that we were able to set up on the porch roof’s venerable cedar shakes to do our second-story work without having to run our ladders the full height from the ground. But therein lay the problem: by the end of the first day of demolition, the aforementioned carpenter was almost demolished too when the footing he’d installed on the roof for his ladder gave way, the ladder went flat with its top end spearing through an upstairs window and its base making a perfect slide for said gentleman to go shooting straight, if uncomfortably, off the roof.

The other guy and I were close by on either side of Chuck, but neither Jake nor I could, in the split second it took for this to happen, stop the ladder or him from going straight down into the gloom below. There was a terrible moment of near-silence while we scrambled over to the gutter to see whether we could get to him; the first thing we could see was the steel post of the truck bed spearing upward menacingly right about where he’d fallen, so we were breathless with horror as we peered over the edge into the dusk. To our immense relief, Chuck was lying in the spiny shrub next to the truck bed, where he’d slid instead, and though he had some impressive bruises afterward, he’d neither been impaled nor broken a single bone. Needless to say, there was a different wrap-up to the day than we’d planned, what with boarding up a broken window for the night and assuring the owners of the house, who’d come running at the crash, that all was going to be fine. No deaths, no lawsuits from either side, and an even better-repaired window, since we’d now rebuild the thing and re-glaze it rather than just scraping and painting.

Perhaps it was a bit of bonding brought about by the emergency that made them adopt us afterward, the homeowners, but whatever the cause, our next few days were among the most pleasant I ever spent on the job (along with those spent working in the house of the lady who afterward became another uncle’s life partner!), and the sweetness of it lingers in my memory. The second day was such a benevolent spring day that I opted to stay on the roof and eat my lunch while reading an Agatha Christie novel. That worked out remarkably well, for when the man of the house came out to see why I hadn’t come down with the others, he chatted me up about my enjoyment of British mysteries, disappeared, and reappeared later with a grocery bag crammed with said delicacies. It turned out that he was an English professor at the University and taught a course in this very topic, and that along with the house’s ‘issues’ for which we’d been hired there was one of steadily decreasing bookshelf space thanks to his and his wife’s reading habits.

The next day, there was to be no reading on the roof. All three of us workers were summoned into the house at lunchtime and seated at table. While the Professor expressed his kindliness in the gift of books, his wife expressed hers in culinary largesse. I had already thought her a very beautiful woman, with her elegant and mysteriously foreign-looking features, deep-set warm black eyes and smooth brown skin and all, her patrician carriage that belied a gentleness of manner, and her sleek black hair, but I think I fell in love with her more than a little when she put the food in front of us. It wasn’t terribly complex, perhaps, this meal, but it was heavenly. She served us robust bowls of satin-smooth potato-leek soup with slices of dark pumpernickel bread covered in rich Brie. When we thought we might be entirely filled up, we made room for more, because she came back to the table with a freshly baked, perfectly spiced apple pie.

It may be that these things have long since disappeared from the minds of all of the other players (though I find it hard to imagine Chuck has forgotten his scary adventure entirely), but the beauty of that meal so suffused me with happiness that I find it coming to me intermittently still, after all these years. I have no idea who the Lady and the Professor were and don’t even know precisely what became of Jake and Chuck, so I can’t check my facts let alone repay the kindness. I can only hope to pay it forward. I do have some of my home-brewed chicken broth in the fridge; might have to fix someone some soup soon.

Potato-Leek Soup (as remembered)

Boil a few medium-sized potatoes in enough well-seasoned chicken broth [vegetable broth, if you’re not a meat-eater] to cover them fully. While the potatoes are cooking, saute a bunch of sliced leeks in butter with a little bit of salt until melted. Deglaze the pan with a hearty splash of dry Sherry or brandy or whatever dry white wine happens to be handy.

(If you have to open the bottle for the occasion, why then you’ll probably have to have a sip whilst you cook. This is all the better if you have a friend or acquaintance standing by for the meal; you’ll enjoy the visiting all the more.)

When the potatoes are cooked and softened through, add the leeks to the pot, along with (optionally or–if you ask me–optimally) a splash of cream. Using a stick blender, puree the lot until as smooth as possible, adjusting the thickness with any of the three previously introduced liquids as desired, and tasting for seasoning. If you don’t have a stick blender, a regular blender will do as long as you take the necessary precautions against blending hot foods–or just use a potato masher and have a more rustic soup. This soup won’t lend itself perfectly to chilling like a Vichyssoise, because the butter and cream can curdle or separate, but warm or hot it should certainly be filling and definitely warm the spirits.

Foodie Tuesday: Fat & Sassy

In my unapologetically piggy way, I almost always manage to get a goodly amount of delicious fat into whatever food I’m fixing for any occasion. Yes, I do have the proverbial sweet tooth and oh boy do I crave my salt, and surely you’ve noticed that I rarely turn down practically any sort of food on offer at all. But there are some sneaky little biases that tend to recur so regularly that they might be considered trademarks of my taste no matter what dish or meal or bite is the treat of the moment, and tasty fat is one of those delights.

Doesn’t matter what’s the course of the meal or of the day, either one–fat is where it’s at.

Say, for a starter bite. Just putting some nice fatty dry salami together with pieces of dried apricots and chunks of dense, also fabulously fat, fried cheese makes an amazingly great treat that you might not even have to be as big an admirer of fat as I am to enjoy it all.photo

If that’s not fat enough for you (or if, like me, it’s simply not too much and therefore arguably not nearly enough), you can go about pumping up the main dish with some additional lipid-licious treasures. How about a sandwich with a nice thick slab of mozzarella or other mild, thick cheese and a whack of crispy bacon, glued together with a slathering of ginger jam and cradled between two slices of nut-butter based batter bread? All good, I assure you. Probably needed some good greasy chips to go with it, but the sandwich was perfectly serviceable on its own. Enough so that I’ll bet I could have enjoyed it with fruit or vegetables or some other ridiculously healthful and low-fat sides just the same.photo

That’d probably be an even better excuse to have a nice fat slice of sleekly fat dessert, no? Perhaps something like almond cream tart with chocolate sauce. Honestly, not a terrible way to alleviate the shortcomings of a meal that didn’t already have only strictly, gloriously fat ingredients beforehand. I like to keep my arteries well lubricated so my blood will flow nice and smoothly, you know.

Almond Cream Tart (an approximation of a recipe)

1/2 pound melted butter

1-1/3 cups sugar

4 large eggs

1-1/2 teaspoons vanilla extract

1-1/2 teaspoons water

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon freshly ground cardamom

1-1/2 cups almond flour

Blend together thoroughly and divide the batter between two small, greased loaf pans and bake at 300 degrees until ‘sticky-finished’–very slightly underdone, or able to release a test toothpick fairly clean when it’s used to pierce the center of the loaf. Get the cakes out of the pans and let them cool enough to handle. While they’re cooling, line a Springform pan with plastic wrap.

Tear the cakes into large chunks. Distribute the cake pieces evenly in the Springform pan and press them down slightly. Moisten the cake with enough (1/4-1/2 cup of) heavy cream to help hold all of the pieces together. Smooth it out a little and sprinkle 1/2 cup sliced toasted almonds over the top of it. Press the almonds down, pull the plastic wrap over the top, and seal the tart into the pan. Then, into the fridge with it for a few hours or overnight, and when it’s well chilled it’s ready to glaze and serve.

To serve, plate up pretty pie wedges of tart for each diner. Microwave some more heavy cream (1/2 cup or so) together with some pieces of nice dark chocolate (I used Dove Promises) until you can stir them together into a nice smooth chocolate sauce and drizzle it over the top of the slices and take them all out to the table. Everybody stick your forks in and start making silly slurpy sounds. And don’t forget to wipe the luscious fatty residue off of chins, y’all. I may be greasing the skids to perdition, but isn’t it a lovely slide to take?photo

Foodie Tuesday: Same Song, 99th Verse

Ingredients are finite. The possible ways to combine them and make them play together, not so much. I’ve found that true as a visual artist and as a cook just about equally, and in both cases it was clear from very early that I could choose between endlessly repeating myself and looking for fresh and interesting ways to play with the possibilities. Having finite resources of money and groceries complicates the cookery. Having finite tastes and interests as an eater takes the complexity further. I congratulate myself on being nearly omnivorous, but yeah, there are things I don’t want to eat. Blueberries (I can  never explain this idiosyncrasy to the hordes of blueberry aficionados in the world, I guess). Organ meats (whether of organs one can or can’t live without in one’s own inventory, I generally don’t want them between my teeth). Super stinky cheeses (sorry, Francophiles). Snails (slugs are slugs, whether they’re well dressed or nude, my friends). Being married to a fella with even more limited tastes than mine, well, that’s yet another challenge thrown into the mix. So it may take a tiny bit of puzzling to decide what to prepare and how to blend the available goods into a welcome meal that we’ll both like, never mind how tasty others will find it.photo

But really, when we’re hungry, it’s not exactly hard to find something that will please a whole range of palates, even if the something needs to come from that aforementioned short list of potential parts. Sugar snap peas: they’re not so specific in flavor or texture or mode of preparation that they can’t be tweaked to fit a huge number of meals and dishes. Raw and plain, they’re sweet and crisp and refreshing. Steamed, they can take in a wide variety of flavors and complement yet more. They work in salads, in hot dishes, and on their own. Hard to go wrong. Meats: beef as a classic steak or roast is no worse or better, no more or less flexible in company with other ingredients or dishes than if the beef is stewed or ground, served spiced or more simply flavored, hot or cold. Bits of food from one recipe that, left over, become the heart of another: orange peel remaining from the peeled supremes used in a salad gets cooked down with stick cinnamon, crushed pods of cardamom and some whole cloves (all, in turn, saved from a baking project or two) and sugar water to make syrup for spiced wine or to be chilled for sodas. The avocado that didn’t get used alongside yesterday’s meal, that one gets put into a smoothie.photo

Or a tasty banana pudding. Or used as a chopped salad ingredient. Mint frosting base for brownies or a chocolate cake. Who knows. I might even make a dish of avocado with peas, beef, and whatever other readily available ingredients come to mind, because that’s the way I tend to cook. And eat. And it never really gets old.
