Foodie Tuesday: For Which I’m Very Thankful

Not as much as I enjoy eating, or I’d probably bother to get chef training and go to work as a cook somehow, but I do enjoy time well spent in the kitchen. Still, I am ever so glad to let other, and very often better, cooks feed me. I was delighted, for example, to let the hotel staff in New Braunfels (Texas hill country) put together the meal my darling spouse and I shared with a ballroom-full of senior citizens and a small handful of their child and grandchild youngsters on Thanksgiving day. The food wasn’t especially gourmet, being an all-day buffet of extremely familiar and generally uncomplicated dishes long associated here with the holiday, but it was satisfying and traditional, and I didn’t lift a finger to help in its preparation, unless you count buttering my own bread. And I loved that—especially at the end of a long no-breaks haul for my hardworking husband, and in the throes of freshly hatched holiday colds for both of us—we could pay someone else to feed us. I’m grateful every day that I can afford to eat, and nearly always whatever I want to eat, and that sometimes others will do the fixing for me.

I’m also pleased to have access to foods that are, when I do want to cook, easy to make into something nice to eat. Vegetables almost never miss the mark in that realm for me, even though the aforementioned darling isn’t quite so hot on so many of them as I might be. It still fascinates me that he has, thanks to being a supertaster, an arguably restricted palate, but likes some foods that one might never expect a picky eater to like. He is an avowed avoider of things garlicky and onion-heavy, yet numbers among his joys when choosing a meal such famously garlic and onion friendly cuisines as Italian, Thai, Mexican, Indian, and of course, Tex-Mex. It’s all about how the ingredients are prepared, integrated, and combined, isn’t it. This guy who despises Weird Foods (and to him, they are myriad) will happily eat raw fish—not so familiar at all in America until recent decades—if it’s in the form of well-made sushi. As we draw near to the two-decade mark of marriage ourselves, I still do not presume to read his mind, culinarily speaking, accurately at all times. Not that this assures I can’t or won’t eat what I please, when it pleases me, but it’s easier to accomplish when dining out than when I’d have to prepare separate dishes for us, a thing I’m willing to do only occasionally. While I’m on the subject of vegetal delights, let us then ponder some specifics. And why not start with garlic and onions? The flagrantly fragrant lily relatives are amazingly versatile, able to range from hot and spicy to mellow, even to sweet; in texture, they can be soft, chewy or crispy, depending on their preparation. They can add color and pattern to a dish with their concentric layers, their bulbs and leaves, or they can melt right in and disappear, leaving only their flavor to remind of their presence. Thanks to my partner’s tastes, it’s rare that I’ll indulge in any of the more potent forms myself unless he’s out of town for a length of time, but I still remember how to use them in gentler ways when I’m in the mood. For example, two very different kinds of soup starring alliums: French-style Soupe a l’Oignon, and a Creamy Leek & Potato Soup.

The Creamy Leek & Potato Soup is simple enough to make, but should be done rather slowly to get the best out of the ingredients gently. Leeks must be cleaned very thoroughly to get the sandy dirt and grit out of their layers, and an aggressive approach to the cleaning is fine when they’ll be pureed anyway. So start by trimming the leeks’ green ends well and removing their root ends, then split them in half lengthwise and soak them in a basin or sink filled with cool water before hand-checking them for any remaining dirt. Meanwhile, clean, chop and boil an equal amount of potatoes (skin on or off, depending on the variety and your wish) in water with a couple of bay leaves and a dash of salt. Drain the rinsed leeks, reserve a small handful, then chop the rest into pieces about an inch/2 cm long, and soften them until they’re melting with a slow sauté in lots of good butter. Slice the reserved leek pieces as thinly as possible and fry them until crisp for use as garnish when the soup’s ready. When the potatoes are fully cooked, remove the bay leaves from the water, pour in the buttery leeks, and puree the water, leeks, butter, and potatoes into a thick soup, thinning it to your preference with cream or half-and-half. Season to taste with salt and pepper, top with a spoonful of sour cream or creme fraiche, and sprinkle some of the frizzled leeks over that before serving.

Soupe à l’Oignon is delicious when made with a chicken broth base. I know, I know: many traditionalists insist that beef broth is the proper foundation for French onion soup. But I always found chicken broth (especially my own homemade stuff) the best fit for the soup’s overall flavor profile. I might even go strictly vegetarian rather than use beef broth in it, knowing how I tend, and if so I would definitely opt for adding some powdered Cremini mushrooms and a splash of Tamari to the roasted mirepoix mix in my veg broth simmer to make it a little more robust before straining it. But my basic recipe always started with the onions. I like plain yellow onions, and slice them into about 1/2″ (1 cm) thick slices after cleaning them. If I’m making the broth on the occasion of the soup itself, I’ll throw the onion skins into it for the beautiful amber color they lend. A nice big pot (even a half-full slow cooker) full of sliced onions with a pinch of salt and a lot of sweet butter can cook slowly and beautifully into a smooth, jammy confit, and that can be used in any number of dishes later, if you save some by vacuum-packing or freezing it.

Last-minute prep of this beauty is simple. Heat the number of desired 1-cup (or so) servings in a heavy pan, and when the onions are just about to stick to the pan, deglaze it with a good splash of dry sherry, broth, or water. Spoon each helping into a heavy bowl, mug, or ramekin. Barely submerge the onions with a helping of broth, whichever kind you have in mind. Top each helping with a slice of well grilled dense, chewy peasant bread. Top the bread with a hefty slice of Gruyère cheese, broil until bubbling and golden-brown, and it’s ready to serve. Not quite ready to sip, though. Try to wait until you won’t get broiled by the hot cheese yourself. Worth the wait. It’s kind of like growing the vegetables in the first place. In this regard, there’s a whole range of marvels in the vegetable world that are only made more lovely by roasting the veg. Take fennel. The homely bulb is somewhat celery textured and mildly licorice flavored in its garden-fresh state. Generally speaking, I hate licorice. But with a light roasting in a bit of oil (preferably olive or avocado) or butter, fennel becomes an ethereal and delicate variant of its former self that I really do enjoy in small amounts. Swell in a combined vegetable roast; fabulous in a bouillabaisse or cioppino. Throw some herbs, carrots, and onions, along with masses of seafood, in the tomato-based broth, and with that whisper of perfumy fennel as a top-note, you have some magical brew.Photo: Radishes

Beetroot is a master of flexibility, whether as the star of the moment or as a sweet and sultry mystery ingredient in a dish. Even the homely radish raises the possibility of delicious dining, when kindly handled. The old standby of a radish sandwich (just thinly sliced, lightly peppery radishes served open-faced on sturdy but refined white sandwich loaf slices, heavily buttered and lightly salted) is a fine place to start. An icy-spicy salad of sliced radishes, fresh mint chiffonade, and sliced sweet apples (something like Fuji, Jazz, or Pink Lady) in a light dressing of rice vinegar, macadamia oil, sugar, a grind of black pepper, and a pinch of salt. Of course, I can’t give you actual recipes for my foods, being almost constitutionally incapable of replicating the quantities and combinations of any dish I’ve made. I vary what I’m preparing based on what’s on hand, and I’m awful at following existing recipes, so you should take what say with a pinch of salt, too. Something that rarely hurts the preparation of a fine vegetable, by the way, a pinch of salt.

The other instructive clue I’m happy to share with you about vegetable preparation today is, of course, the efficacy and beauty of somebody else doing the work. Works for me!

Foodie Tuesday: Worth Getting Out of Bed

On some rare occasions, it’s actually worth getting out of bed before noon-ish. When the breakfast is that good, you know you’ve accomplished something, because I have no intention of cracking my eyelids open any earlier than I absolutely must. Sleep is the one thing I crave more deeply and often than food, and you all know how much I covet good eating, so it takes the prospect of great culinary splendor to drag me from the comfort of my bed one minute before I am good and ready to do so on my own.Photo: Breakfast in Budapest

Since I’m generally the one responsible for putting breakfast, if any, on my own plate, you can guess how often I’m likely to spring into action to see such a meal prepared and presented. I may have some lovely dreams about breakfast, but I prefer to enjoy them while still firmly ensconced in bed. When I do break my fast, it’s far more likely to be with brunch or even lunch than anything earlier, given my druthers.

I tend to make exceptions when I’m traveling. Often, the causes for the expeditions are beyond my hourly control, so if I have to be up before my internal alarm is interested in my arising, I will generally take advantage of any good food being offered by my hosts, whether they’re homeowners hospitably letting me invade their personal space or hotels with in-house breakfast accommodations. These pictures, for example, come from the summer’s travels and represent foods that went a long way toward ameliorating the agony of having to get out of bed before it seemed the rational thing to do. If anyone is to have half a hope of maneuvering me out of a comfy sleep any time before my body would grudgingly agree to that negotiation, it had better be, at the very least, with a magnificent cardamom roll (bottom photo, from Sandhamn, Sweden). Or perhaps the mind-bendingly gorgeous and seemingly endless spread offered in the palatial breakfast room (top photo) of our hotel in Budapest this summer. Otherwise, you can trust me when I tell you that it’s advisable to let sleeping dogs lie.

Foodie Tuesday: Chili with a Chance of Quesadillas

Photo: Slowpoke ChiliIn the cooler parts of the year, my fancy often turns to chili. It’s hot and hearty, filling and lightly (my versions) spicy, and it can be made in big batches and frozen in smaller ones for later ease of meal preparation. And I am quite open-minded when it comes to chili. I say this with full knowledge that as a Texas immigrant I risk censure, if not being thrown bodily into someone’s smoker. But of course, one has only to do a quick online search for Texas Chili to discover that while there are certain characteristics generally accepted as required for any chili to qualify for the Texas stamp of approval, the variety of actual recipes is just as broad and full of little surprises as the flat and arid plains of West Texas. And trust me, that’s going some.

The central tenet of Texan chili religion, as far as I can tell, is that it is meat-centric and it contains no beans. Northerners and other heathens are quite accustomed to thinking of meat as just another potentially wonderful addendum to a stew-like, tomato-y dish characterized by its spices rather than its more concrete contents, and I confess that I find it a little surprising and somewhat confusing to see “chili con carne” listed on a Texan menu, under the circumstances, but meat does seem to be the universally assumed Truth about good Texas chili. I am happy to make or eat all-meat chili, but I’ve nothing against chili with beans, with or without meat, or even a lot of other sorts of chile spiced vegetarian dishes. The latter are rarely what I would consider chili, myself, but if the texture and flavor profile of the concoction suggests that identity, I’m not going to waste valuable eating time on arguing the point.

You notice that I do differentiate between chili and chile, but that’s a simple linguistic issue in which the tongue plays only a minor role, not the happier and more significant one of tasting: chili is the dish seasoned with chiles, the spicy peppers or capsicums. Many use the spellings interchangeably, and there is no problem with that in my mind, either; I am always more interested in how these things play out on my palate than on my linguistic palette. In any case, it is the flavor of these deviously delicious capsicums, combined with a few other characteristic tastes, that most readily identifies a dish as chili to me.

I have nothing against making what I call ‘instant chili’* when time is short and the appetite yearns for that warming food. Since it’s the spice blend that carries the main weight of the dish’s identity, as long as I have that handy I can make what I think is a pretty fine facsimile of the long-cooked treat. So what are the flavors that I most want my chili to have?

Chiles. My favorite ways to introduce them to my cooking include, at various times, a number of possible dried, crushed, and/or powdered versions of capsicums, sold by spice companies as Chili Powder or Red Pepper Flakes or, simply, as individually named ground peppers or whole dried pods. While the pods of dried capsicums can certainly be made into a nice dusty powder in a good mortar, or can be rehydrated and pulverized to a paste (with a stick blender or food processor is most efficient), they are easier to keep whole and ground to powder in a dedicated spice grinder, like my tiny and cheap old electric coffee grinder that has never even met a coffee bean. I always have my go-to chipotle-spiked salsa in the kitchen, and that’s an easy ingredient to use as well. My favorite, though, is to mash or blend chipotles canned en adobo. I find San Marcos brand delicious even though they have never deemed it worthwhile to change their misspelled label. See? I’m not that picky about linguistics.

The other spices and flavors that I most care about putting in my chili are cumin, smoked paprika, a bit of black pepper, garlic powder, freeze-dried minced shallots, and usually a bit of oregano (Mexican oregano, if I have it). Cumin is the second-most characteristic spice flavor in this and many other Tex-Mex or Mexican foods, and having a kitchen bereft of that spice would leave me feeling like half a person. So make sure there’s plenty of warming, soul feeding, earthy cumin in my chili. And salt! But I don’t add much of that during the process, because of course one of the other secrets to chili is its long, slow melding of flavors, and if I’m making ‘instant chili’ it’s going straight to the bowls of individuals who will choose how salty they like it.

What is this ‘instant’ chili*, you ask? Just a quick fry-up of ground meat (usually beef, but whatever minced meat I have on hand, mixed or singly) with the aforementioned spices, dosed with enough tomato sauces (salsa, tinned tomato sauce/puree/pieces/paste) to make a nice thick stew, and if I want them, tinned beans—black beans, kidney beans, pintos or black-eyed peas or (a little White Trash favorite of mine) field peas, whatever shelled, cooked beans I’ve got on hand. When one has oodles of time, one makes the real, slow-cooked stuff in quantity. You could call it a name I think appropriate enough:

Slowpoke Chili

I start mine with a batch of homemade bone broth. Then, after preparing dried beans (I like to mix black beans, pintos, and small kidney beans for a fun range of colors and textures), I cook them in some of that good broth. Meanwhile, the meat chili is essentially a separate preparation: I like to put a batch of beef in my slow cooker, well covered in more of the same broth and seasoned with the spices and peppers I choose for the occasion. I use a mixture of coarsely ground beef and cubes (about 2 cm or 1 inch) of stew beef, and the amount of fat in even high-percentage ground meat is generally balanced out by the lean toughness of stew cuts, so I don’t need to skim the cooked meat-broth combination at all. If I’m putting any vegetables into my chili, those will almost always be mirepoix and sometimes, sweet capsicums. I’m less of a fan of green capsicums (bell peppers) than of the milder, less burp-inducing red, orange and yellow ones, but if bodily noises were really a serious issue, I’d hardly be making chili at all, would I. Wink-wink. Preparing the beans properly, if they’re included in the mix, does make a difference in that regard, anyway.

When I have vegetables to add to my chili, I pre-cook them with a slow sauté in butter, both enjoying the bit of caramelization and the butter itself as added flavor elements, and then they can jump in the pool with the meat. Whether with vegetables or without, the meat is likely to cook at a very low heat for at least 24 hours, if not more. I enjoy the freedom to potter around and do other household tasks while sniffing that great perfume for a long time, as it builds the appetite while infusing the flavor. Somewhere in that day or three, the meat (and veg) will have absorbed most of the broth, and I’ll add my tomato elements. While the spice blend is perhaps the identifying signature of chili, it’s no chili to me without good tomato flavor, so again, I add about enough to make a fairly soupy spaghetti sauce consistency, knowing that eventually the cooked beans will be added, or in the absence of beans, the meat and veg will soak up yet more of that tomato goodness.

This is less of a recipe, as you know is pretty typical of my approach in the kitchen, than a guide to possible combinations that will please me. The proportions are different every time, and whether I add beans, or even vegetables, is a matter of mood and company more than a matter of Texan patriotism; I am, after all, a Northern invader. But I can tell you, it’s generally pretty darn good stuff. Add a few tender corn tortillas that have been layered with salsa or tinned enchilada sauce, plus cheese: cheddar, Monterey Jack, Cotija, Queso Blanco, or any such blend or substitution of similar types of mild and sharp, melting and melt-resistant chewy cheeses that suit your fancy and then heated through. Foodie Tuesday: Medium Rare

I know all thoughts hereabouts turn to turkey at this time of year, but not everybody (even the meat-eaters among us) craves turkey, whether they’re celebrating Thanksgiving or not. Why ever eat something that you’re not wild about or hungry for just because tradition seems to dictate it? You’re free to be just as thankful for a fabulous steak dinner as for a roasted turkey, especially if you consider how little our modern image of Thanksgiving turkey dinners probably resemble the original feast they’re meant to commemorate.

And a good steak needn’t be a terribly rare thing. I used to avoid serving it not out of dislike but because I was sure it was too hard to prepare it nicely. Somewhere along the line, fortunately, somebody set me straight on that. If I can heat a pan to just slightly over medium high heat and own a timer, there’s not much excuse for being fearful about it.Photo: Medium Rare

What I learned was so simple that it seems laughable, but then that’s how I operate in the kitchen. This self-educated cook has a doofus for her teacher. Here are the incredibly easy things I learned to do that make steak dinner—with a fairly perfectly medium rare steak in the midst of it—a possibility simple enough I don’t hesitate anymore.

Let the steak be the star. Get the nicest quality cut you can afford for the occasion, at best a well-marbled 1 to 1-1/2 inch (2-3 cm) thick grass-fed beauty; pat it dry, coat it liberally [no matter what your political leanings] with salt and coarsely ground black pepper, or a spice rub if that’s your wish, and let it sit a few minutes absorbing that seasoning while you heat up your heaviest skillet on a middling-hot flame or burner. I love my cast iron skillets best of all for doing steaks. Melt a big dollop of good fat to coat the already fabulously seasoned skillet, and when it’s rippling with heat (but not smoking), gently lay in those steaks. One massive one that almost fills the pan can of course be cut up afterward for sharing, or several smaller ones put in together; just make sure that whatever’s in there has room—if it’s crowded in the pan it’ll steam rather than sear. That would be sad.

When the skillet has been made hot enough for the fat to shimmer in it and the steak is in place, expect it to act like a slightly irritable cat: that steak and the frying fat will hiss and spit a little. You might want to stick a splatter screen on top if you’re fussy about stovetop cleanliness, but it’ll wash off easily enough later if you don’t care in the meantime. What fat should you use? Avocado oil is great, if you can get your hands on some, as it has a high smoke point; for straight-up beefy flavor, you can hardly beat clean beef tallow, but it’s not too common to have that on hand (I keep the skimmed fat from my bone broth for such things at times); bacon fat is a flavorful alternative. Ghee or clarified butter is probably my favorite. Whatever you choose, I recommend something with a high smoke point to give you the ability to get a good, caramelized sear on the exterior of the steak without turning the inside of your house into a smelly barbecue pit full of tarry smoke.

But enough about heat and smoke and fat! The steak, still, is your starring player. What to do with that loveliness? Not much. Leave it alone! When it’s in the skillet, let it sit and sizzle completely untouched for about 4 or 5 minutes. The bottom edge should show you just a hint of the beautiful dark brown crust building below, and you’ll flip it over and do the same thing. The next thing you do is: some more Nothing. When you get a whiff of that superb, incredibly tempting scent of beef perfection as both sides have browned gloriously, you will want to stick your fork right into it, but don’t. Wait. Take the steak out of the skillet and let it rest on a warm plate for at least five or ten minutes while it finishes cooking from residual heat, and reabsorbing the juices that will all run right out of it if you cut into it too soon.Photo: Skirt Steak

When you think you have suffered enough, wait thirty seconds more, and then you can pounce on that steak. While I’m waiting for my steak to be ready, I distract myself to prevent premature steak attacks. I deglaze the pan with a splash of Jack Daniel’s black label tastiness and a smack of salted butter, as often as not, to pour every bit of remaining goodness back onto the steak with a lagniappe of kindness. I make sure the salads, sides, and other accoutrements of the meal are all at table and all ready to play their supporting roles to the marquee meat. If all of that hasn’t kept me in check for quite long enough, I’ll just have to risk it, because I’ll have been sniffing the air like an unchained werewolf, and y’all had better get out of my way now and settle down to your own plates of steak and we’ll all be safe and happy, at least until the next full moon. Or steak dinnertime.

Ever Heard of Foodie Thursday?

It’s been a busy autumn chez Sparks. No excuses: in the flurry, I flat-out forgot to put up my food post on Tuesday. Sigh. I didn’t stop being food-obsessed, just being on schedule. What I meant to say on that long-ago-seeming-day-which-was-Tuesday, was that I do like this time of year in particular for its masses of officially sanctioned excuses for partying. There are of course the big national and international celebrations of things spanning from Halloween/All Saints/Dia de los Muertos to Thanksgiving, Diwali, Christmas, Hanukkah, and the various New Years; in my family, five out of the six of us have winter birthdays as well. It’s not that my family and I are in any way averse to celebrating with a good meal, a party, or any other excuse for eating and drinking good stuff at the drop of a hat, but it’s extra nice when nobody else questions the need for such an occasion either.

My parents upped the ante this winter by both entering the glorious ranks of octogenarian excellence, so since my three sisters and I don’t all live close to them anymore, we’d long since all agreed it made sense to look toward next summer (2015) for a family get-together to mark their ascensions to this great new height. All the same, nobody in our clan has any respect for leaving an excuse for a party just lying there unused. So Sisters 1 and 3, who do live near Mom and Dad in Seattle, helped them plan a big party on Mom’s birthday weekend so that our parents could have their local siblings, nieces and nephews, and a few special friends together. I made up the digital invitations, since I could do that from my remote location, and because I’ve long done such design tidbits for family events as a way to be involved when I couldn’t otherwise be on hand to participate. But our Seattle sisters did the yeoman’s work on the whole thing.

We kids did up the ante a little, though. Sister 4 and her husband sent an email to the other three of us a couple of months ago, announcing that they had bought plane tickets to fly over from Norway for the November party and surprise Mom and Dad. We sisters were surprised, too! My husband, with three concerts and more rehearsals to conduct on either immediate side of the party date, couldn’t get away, but with a batch of saved air miles, I could, so I planned to fly up from Texas and join in the fun. Once all of our tickets were bought and the wheels set in motion, the real challenge was not only to see if there were any small things 4 and I could do from our bases of operation but to see if we and our partners could keep a secret for seven or eight weeks, a dubious probability at the best of times with our talkative bunch.Photo: Pink and Green Bouquet

We did. We let one of Mom’s sisters in on the secret so that she could help get our parents in the right place at the right time when the day arrived, and my spouse’s parents knew, because they were invited too, but despite a couple of close calls, nobody slipped up irrevocably. Part of the larger plan, once we’d decided to add in this surprise element, was that there would be an immediate-family-only lunch on Mom’s actual birthday at Sister 3’s house. Dad, Mom, Auntie and Uncle, and sisters 1 and 3 were to have a nice, low-key luncheon date to mark the day and wrap up any last-minute details for the bigger open house party the next day.

Sister 4 and her husband and I flew into Seattle on Thursday the 6th. It was wonderful to have a reunion of the four sisters, our first in at least a couple of years, and to convene a few other members of the immediate family—3’s husband and one son, with the other son flying in from college on Friday—that night and to laugh up our collective sleeves over our plot. In keeping with the family tradition of combining food with fun, this first evening was spent at 3’s house, slurping bowls of a beautiful, creamy winter sweet potato, kale, pasta, and sausage soup (based on Martha Stewart’s recipe) while taste-testing a couple of good single-malts the Norwegian contingent had picked up on a duty-free spree en route.

On the 7th, Mom’s birthday, we got lunch ready and in the oven and fridge and then spent a little while nervously skulking past curtained windows to escape any unexpectedly early arrivals’ discovery, and as the parental entourage at last approached, three of us ducked into the back bedroom, where we giggled like little kids and perched on the bed to avoid making the creaky hardwood floor give away our presence. Auntie got Mom settled into her favorite armchair so we wouldn’t have to explain her absence at the next day’s party as the result of an aneurism, and we finally strolled out to say Hello to our startled parents. Lunch broke that spell. We feasted on marvelously simple steak, lemon-dill oven-roasted salmon, salt-baked potatoes, green salad with a fresh blend of herbs and creamy lemony dressing, green beans, and buttered peasant bread. Classic, delicious, and with a handful of their kids on hand to help, an easy way to feed our parents well on a meaningful day. We worked a bit more on the details of Saturday’s open house event, but 1 and 3 had covered all bases so thoroughly that we were all able to make an early evening of it and rest up for the main event.

Sister 3 had found a wonderful venue, a community center run by the parks service in a beautifully renovated vintage power station right next door to the church where our dad had grown up. All five of Mom’s siblings and Dad’s only sib, his brother, and all of their partners, were on tap to come. So did some of the sibs’ kids, and even a handful of grandkids joined the gang; with the friends who came, we totaled just over fifty in attendance. We saw many relatives we’d not seen in years, many of them as surprised as our parents at seeing us there like long-distance apparitions. I think I can safely say that the party was everything Mom had wanted, that Dad was also happy, and that we all felt pretty chuffed at pulling off a great success, especially at not blowing the surprise.Photo: Birthday Buffet

But again, food was central to the grandness of the day, and once more, that was thanks to the wise planning and [literally] tasteful choices made by our Seattle sisters. The buffet spread’s main dish stars were ginger beef and sweet walnut prawns from our favorite local  Chinese restaurant, accompanied by a wide range of finger foods and sweets, many of them bought ready-made from various shops and stores. We had just about enough food on hand to feed 250 guests. So we kept up that family tradition, too. And we all left the tables full and fulfilled.

Who knows what we’ll get up to next summer. Only sure that it will include much eating and drinking. And probably lots of childish giggling and telling secrets, which I think are a mighty nice lagniappe for the whole meal, whatever it is.

Foodie Tuesday: Swim for It

If left to my own devices to raise or, more difficult yet, forage and hunt for all of my food, I’d soon enough be a non-meatatarian. I haven’t the patience or the skill for any sort of animal husbandry, nor the remotest chance of outsmarting anything sentient in order to catch it. But despite my pitiful showing as a junior fisherman alongside Gramps in days of yore, I think I could pull myself together enough to learn how to fish and forage the sea enough to keep my love of seafoods at least occasionally treated. Good protein, too.

Sometimes I am happy enough to have a rather plain fried, roasted, baked, steamed, raw, or poached piece of fish. When it’s pristinely, spankingly fresh and sweet, fish should probably not be made too fancy. Why mask perfection? At most, a dash of fresh herbs or a little zip of some lovely masala ought to be plenty of interest to vary the day’s meals. Even I have been known to identify and safely pick and consume wild sorrel, which is an excellent companion to fish in modest amounts. And of course, there’s nothing friendlier with a piece of salmon than citrus or ginger root or plain black pepper, if the foraging can extend as far as a grocery store. One thing I do think well worth the [negligible] fuss if I’m preparing salmon with its skin is to sear it, lightly salted, in butter or a high smoke-point oil before I cover its pan to finish cooking it through on cooktop or in the oven, because crispy salmon skin is delicious and its crunch a wildly beautiful complement to the velvety tenderness of the flesh. Once my palate was introduced to this marvel, I wondered how I had managed to enjoy salmon so much, so often, without having known what I’d been missing. Salty, slightly fat, salmon-flavored, and crispy? How could I not love it!

Of course, there are innumerable other outstanding ways to enjoy and indulge in seafood, if one does happen to have access to plenty of other ingredients. Seafood fried rice is one very flexible, quick to fix, and reliably delectable way to enjoy such things. Salmon in bite sized pieces, for one seafood treat, goes quite well with the contrasting grains of rice, lovely with rich that’s been cooked in either broth or coconut water or milk and filled with a delicate confetti of diced celery, carrots, onions, bell peppers, or peas, whether shelled or in sugar snap or snow pea form. But as you can see in the accompanying photo, I enjoy, along with salmon or other kinds of fish, those admirable insect imitators the crustaceans. Hardly anything, sea-based or otherwise, is more enticing in fried rice than crab (naturally, I vote for Dungeness first, every time), lobster, langoustines, or shrimps of various sizes. I would guess that some tiny, tender clams might be more than acceptable in this sort of dish as well, but truthfully, I doubt I’ll ever get quite that far, as long as any of the usual suspects are available. Never say never.

Meanwhile, back at the fried rice, I am still an old Occidental renegade when I make it, cooking it much too slowly for a wok-master’s taste and throwing in whatever I have on hand and am in the mood to eat, from the aforementioned vegetable ingredients, crisply sautéed, to seasonings like Tamari or soy sauce, citrus juice, fresh or candied or pickled ginger or ginger syrup (or all four, as I am an unregenerate ginger fiend), honey, shallots, and/or chile pepper flakes. All of these cook in gently, over low heat, while I’m stirring in an egg to scramble into shreds, and then letting the rice slowly develop a good crust amid copious lashings of fat—coconut oil, avocado oil, ghee, whatever I have on hand. All of this, until I can’t quite wait any longer. Must keep that seafood delicate and fresh. Until I can devour it, anyway.

Foodie Tuesday: Advantageous [Gifted] Food

Starting the preparation of a meal with fabulous leftovers given to me by friends after I’ve dined at their place is truly one of the most cheering and hunger-encouraging ways to go to the task. Food that was delicious in itself, made more so by having been prepared for me by good friends, and now the excess of which has been gifted for yet another meal’s foundation, becomes an almost perfect centerpiece for another delicious and happy meal.

The gift that shaped such a duo of meals recently was grilled pork tenderloin. Our friends served it hot from their patio grill along with an assortment of glorious side dishes and the grand finale of homemade pie, all of this well-seasoned with beautiful, comforting, joyful good company. Fresh garden salad, baked potatoes, vegetable crisps, and that succulent, clean-flavored pork tenderloin. My version of the meal went in a little different direction, any attempt to copy that event exactly being doomed from the start, but I knew I wanted to keep the simple excellence of that roast’s flavor as the centerpiece. It was made for such things. I already had a variant sort of loaded-baked-potato in my refrigerator, so I used the cheese, cream, and bacon filled mashed potatoes, deepened with smoked paprika, there as the stand-ins for the day. Not having had any success with growing greens, I thought store-bought ones might seem like a little bit of a come-down after the previous dinner’s, so I skipped salad. Peas, instead; peas barely cooked in a batch of brown mushrooms that had been marinated and cooked in Tamari, dry sherry, and butter and then cooked until hot enough to warm the peas without further time on the cooktop.Photo: Mushrooms and Peas

I made a compote of fresh pears with lime juice, maple syrup, and butter and seasoned them with a splash of homemade vanilla, a pinch of salt, and a healthy pinch of ground cardamom. I guess I must’ve been in mashing mode after the potatoes, so I just cooked the pears down until they, too, could be mashed, and I finished the pork the same way I’d finished the peas: got the pear sauce good and hot, laid the slices of pork loin on top of it, put the lid on the pan, and took it off the burner, letting the sauce steam the meat through to warm it once more. Foodie Tuesday: To Quell Your Fears

I suppose it’s only natural that if one is expecting a visitation from anyone scary or spooky, one might require a good drink to calm the nerves. After all, one of the most predictable symptoms of fear and trepidation is a dry mouth and that tends to heighten the other signs of nervousness in turn. One can quickly devolve into a quivering heap of ghostly dust at the mere thought of being stalked by ghouls and goons. And of course, the arrival of  the Halloween crowd is a virtual guarantee that such terrors will appear on the doorstep.Photo: Keep Your Glassware Handy

So I recommend that you keep your shelves of glassware well lighted for the occasion, and have a dram or two of life-saving elixirs handy as well. The thirty-first is nearer than you think, and close on its heels, a horrible horde of wandering souls planning to maraud your home and demand a ransom from your candy-related treasury in exchange for safety from their pranks.

For the dedicated defender of the home barricades, it might be apropos to do up one’s home like that belonging to the landlady of Hänsel and Gretel‘s nightmares, the formidable cannibal who lured them in with the decorative delights of her gingerbread cottage. One could sit on the porch of such a candy-dandy place and leer meaningfully at passers-by over the lip of a neat little glass of Hexenblut. While that might be a counterintuitive choice for threatening them, it could also be seen as a warning that you’re so tough you slurp up your own wicked witchy sisters’ veins just as readily as any flimsy little trick-or-treaters’.Photo: Hexenblut

Me, I tend to be content to assuage my fears far more moderately and without putting up such a frightful front. I’m more inclined to turn off the front porch light and hole up in the back room to watch a nice double feature of, say, The Innocents and Gaslight or perhaps Bunny Lake is Missing and What Ever Happened to Baby Jane?, all while drinking a nice soothing glass of dry white wine or Scotch. The family label of “dry Riesling” from the Hungarian Count and Countess Károlyi’s estate that we visited this summer is not a bad choice for a light counterpoint to some delightfully creepy movies, or if I want something to warm my chilled heart better, I can opt for a short medicinal snifter of Bushmills 1608 or the Macallan 12 year old single malt.Photo: Karolyi Trocken

Naturally, there are times and places and people not requiring the nerve tonic of alcohol. In that case, there’s nothing more quenching and comforting than the old standby of spiced cider. Nothing warms the cockles of the heart better while simultaneously moistening the dry and gibbering lips of a scaredy cat like me than a nice steaming mug of that stuff. I like mine very well when I get some beautifully unfiltered apple cider (happily, I’ve some on hand right now) and mull it well with stick cinnamon, whole cloves, and pieces of ginger root, but this too can be made more festive if one wants to get a little more playful with it or, when necessary, make it a more potent potion for warding off baleful beasts and cryptozoological creeps. One could, for example, add some black peppercorns to the spice blend for a little more bite. (Take that, ye murky monsters!)

Still, there are so many delicious directions to go with a mulled cider it can be hard to choose: add sliced whole [seedless] oranges, especially of course beautiful blood oranges if you can get them in late October; melt in a dollop of dark molasses before adding the spices to create a little liquid gingerbread effect; serve simple hot cider with hard caramel lollipops as stirrers, if you’d like to drink a caramel apple; and of course, you could go for all-out reassurance and flavor the apple brew, instead of with spicy flavors, with dashes of rose-water and almond essence and a steeping quantity of green tea leaves for something much gentler to soothe your quaking spirits. For spirits will, one way or another, abound on this night.

Foodie Tuesday: A Balanced Diet

Photo montage: Fun with Fruit & VegetablesI appreciate good health and all of the dietary elements that can determine whether I’m healthy, and if so, just how healthy I am. I know that diet includes not only the things I eat but how I combine them, when I eat, how much I eat, and many more factors that interact to create the ever-changing state of good health I seek. I realize, too, that nutritionists and scientists and other dietary mavens are always learning new things, and nearly always getting new ideas, too, some of which they can prove and others, not so much. That doesn’t stop tons of people, including me, from becoming obsessed, however temporarily, with the latest dietary trends and tweaking our diets without always considering whether those new, however ingenious seeming, ideas have anything to do with how our own bodies operate best.

Huh.

Yeah, I’m always thinking of new and better ways to make my diet more seemingly ideal for me, and I have some goofy thoughts on the subject at the best of times, and that’s the truth. What I can say in my defense is that among the relatively few things I have managed to learn in my lifetime thus far is that there is a whole lot more involved in my health and well-being than food.

I love when I can find the balance I need in any day by eating when I’m hungry, stopping when I’m no longer hungry, and focusing on getting not only a reasonable apportionment between protein and fat and carbs and vitamins and minerals and all of that dandy stuff. I love when it’s satisfying to my taste buds as well. Most of all, I love when that’s all fitted into a balanced diet of being with loved ones, going wonderful places, learning new fun things, and not least of all, of making art. There are always going to be theories, guides, charts, Rules and expectations about what constitutes the ideal way to eat, from the old spa cures that had people eating nothing but blandness or drinking rather large quantities of vinegary-dry white wine to the FDA-approved Food Pyramid, to the various independent dietary regimes from Scarsdale to South Beach, from Paleo to the Perfect Health Diet. I’ll outlive some of them, and many more will follow me. My budget and schedule, my taste preferences of the moment, and the company I keep, will continue to change my dietary wants and needs as well.

As long as I can keep listening to music, writing and drawing, and surrounding myself with great and interesting people, I will feel well fed.

You just wend your way down a couple of funny little narrow byways and find the welcome that waits for you behind the door of the Gösser Bierklinik. That’s right: a clinic dedicated to beer. If that doesn’t make you feel better, you don’t know a healthy diet at all, wink-wink. Hail, Austria! It’s really a lovely old, old restaurant—don’t miss the neatly labeled Türkenkugel, the cannonball reputed to have been shot into the place in 1683 and still enjoying the pride of place where it sticks out of, or into, the wall.Digital illustration: Bierklinik Highlights

But don’t get hung up on ancient history too much, or you will miss out on one of the best Wienerschnitzeln I’ve had anywhere, and I am a fan, so I’ve enjoyed a few. The Bierklinik’s is tender inside, lightly seasoned, crispy on the outside, and unadulterated with anything other than the requisite lemon wedge for squeezing a drop or two of extra sunshine on it. Fabulous. Combine that with some ordinary but blazing hot fries and a bracing drink of anything from water to the titular beer, to what our server assured me was the ‘ladylike’ way to have a beer, a Pfiff mit Schuss, or beer spiked with elderflower cordial—I can’t speak to the waiter’s assertion, not being so incredibly ladylike myself, but it was a light and sprightly accompaniment to the Schnitzel, and given the perfectly convivial group with whom we were dining on the evening I tried it out (my husband and I were with three delightful friends, but also joined eventually in conversation with the marvelous German couple and his parents who were sitting at the next table), it was no more, and no less, effervescent than the conversation. Foodie Tuesday: Figs and Fika

Despite the present day craze for all things piggy when it comes to meats, bacon inserted into every imaginable recipe—and some not even possible to get my brain wrapped around at all—and the undeniable fabulousness of a grand Black Forest classic, a clove-studded Virginia ham, a spiral-cut, home glazed ham, or the umami-loaded and thus much-lauded and wildly expensive jamón ibérico, what I grew up with at home, as I recall, was that differently seasoned and prepared, smooth textured, Danish ham (as my family knew it then, whether that characterization was entirely accurate or not), and I loved it. It’s on the sweet side, generally, and usually subtler than the more intensely flavored aforementioned hams. Truthfully, I love them all, as long as they’re not those tinny, watery, pallid objects of pseudo-meat that have been processed to the point of looking and tasting like cartoon food.

I also, as you well know, am fond to an obsessive degree of salty-and-sweet combination treats, and hams are very compatible with sweet foods, whether in the form of a glorious, uncomplicated afternoon bite of perfect prosciutto wrapped around a melon slice or as a bone-in beauty bathed in fruit compote for the spring table.

Danish ham isn’t my only foodly fanaticism derived from Scandinavian roots. Here’s another thing I’ve learned from that region to love when it comes to food: the Swedish tradition of fika. Not so different in origins, perhaps, from the Italian treat Tiramisu, wherein a tradition of stopping for coffee and a sweet was the perfect pick-me-up in an afternoon or way to meet with a friend for a bit of refreshment, and eventually the practice became the name of the treat itself—the Italian Tiramisu translating roughly as, yes, “pick-me-up” and the Swedish fika deriving, ostensibly, from a syllabic reversal of “kaffe” (coffee). Not that it matters hugely to me, but I do always love an excuse to sit down at the table not only for a full meal but for the more relaxed atmosphere of a break for, say, a bite and a drink, some appetizers and a cocktail, or tea and dessert.

For a recent casual evening with friends, I got the urge for a ham-and-sweetness starter that would be extremely quick and easy to fix but bring out the simple flavors of the ingredients pretty smartly. I think I did well enough with it, because between the five of us we polished off all but a couple of small corner pieces from a whole cookie sheet’s worth, along with the actual roast beef dinner and dessert; but you can be the judge, if you like. It couldn’t be simpler to make, so there’s no excuse not to join in the testing.

Four ingredients: puff pastry dough, ham, fig jam, and Parmesan cheese. One pan. One swift browning in the oven. Slice. Eat.

I wanted to make this with fresh figs, but couldn’t find any at the moment that were in nice enough shape, so I used a small jar of store-bought fig jam that worked quite nicely. Had I used fresh figs, I would have chopped them roughly and mixed them with some honey, maple syrup, or ginger syrup as the delicious glue for the hors-d’oeuvre topping, but jam had that binder handily built right in, so if you’re unable to find fresh fruit, jam is clearly a convenient and equally tasty alternative. I did buy one package of frozen, pre-made puff pastry dough (lazy me) and about a half pound of thinly sliced ham (I chose the deli’s maple glazed version on this occasion). I had shredded Parmesan cheese in the refrigerator. The process was easy-peasy.Photo: Ham & Cheese with Figs

Ham & Cheese Bites with Fig Jam

Set the oven to heat at 400°F. Lay out all of the puff pastry dough needed to cover it (with a single layer) on a large cookie sheet pan with edges. This could get sticky if you don’t contain the food! You should have a little dough left over: I had about an eighth of the dough remaining and set it aside.

Mix equal amounts of chopped sliced ham—mine, when the thin slices were cut into about 1/2 inch (1 cm) squares, amounted to around a cupful of loose ham pieces—and shredded cheese with gently heated and liquefied jam (the jam I used took between a quarter and a half cup to blend the ham and cheese. Glued together like this, the ham, cheese, and jam mixture was probably about a scant two cups’ worth of topping and was easily distributed and spread evenly by spoonfuls over the whole pastry base. I cut the remaining pastry dough into 1/2 inch by 1-1/2 inch rectangles and I twisted each once to make a little bow and stuck those around on top of the jammy mixture. The whole sticky delight went into the oven for perhaps 14 minutes or so, and once it was golden, was ready to be cut into small rectangles that could be easily handled for eating.

Then, of course, we ate them. Whenever I make them again, I will try pre-baking the puff pastry and simply adding the jam blend for a final, melting warm-up just before serving. Crispier results, I should think. But even with a slightly chewier texture…we ate them all.
